A wonderfully clean and semi-exotic Colombian, washed processed coffee, so not exotic by means of overly fruity or ferment, but picks up some spice notes not usually seen in Colombians. Versatile from light to dark, we thought best at the lighter roast levels. Crisp, clean, sweet, with a ton of flavor depth. The cup has a little fuller body and in mainly a nutty and chocolate like cup. Medium acidity, gives a little citric/fruit twist at lighte roast levels. Some unique tea like spice notes mainly in the aftertaste. Be sure to hit a medium to dark roast if you do not like a little crispness in the cup. Lighter roasts promote a sweeter more delicate cup, a touch of fruitiness among the citrus/floral, while a medium to dark roast accentuate the spice tones and turn the cup more semi-sweet bakers chocolate like.

Super light roasts risk a little grassy/herbal but it straightens out at a city+ (medium) and holds up as dark as you want to take it. Good from light to dark but we thought best at a strong medium to dark roast. A good bean to go after a rich and semi-exotic chocolate tone with some wonderful aromatics and a bit of spice. Light roasts are more citric and floral with wonderful aromatics and a sweet edged, a bit punchy in the citric department and contrasts with a bit of nutty/herbal/grassy undertones. Works well but needs a much longer setup time bring out smooth and clean tastes, sharp and grassy/herbal if drank too soon. Medium roasts will bring some lovely balance to the cup and provides a clean tasting brew without waiting a week to drink it. One starts seeing the chocolate aspect but will still pull some balance with the citric and floral. Less aromatic than the light roasts, but you can still tell you have a nice Ethiopian with one sniff. Darker roasts touching or into second crack are real robust, strong and semi-sweet, more bakers-chocolate like with tea like spice in the aftertaste.

Bigger bodied and on the chocolaty spicy side of things. Being a little cleaner, this cup is very good at light to medium roasts as well; sweet with a more nutty/caramel tone, can come off a little herbal too light so tread lightly. A little acidity but not enough to push folks away. A lovely daily drinking cup. Heavier bodied and lower acidity, semi-sweet hints of floral and caramel, balanced with a nice strong earthier chocolate note. Darker roasting makes for a pretty bold cup with some added smoky factors.

Darker roasts were fuller bodied and very smoky with the spice lingering in the aftertaste, very low acidity; good for dark roast fans, espresso or blend bases.

Wet-hulled coffees are seldom tasty at light roast levels, generally just grassy and earthy. From medium to dark they are fuller bodied, low acidity and darker toned, with a predominately chocolaty cup profile. Very classic tasting Sumatra stronger on the peat like tones and spice notes. A little sweet floral upfront and smoky in the aftertaste. Gets strong into the very dark roasts turning semi-sweet with very forward smoky bakers chocolate notes.

Beautiful coffee, soft islandy acidity mixing with a cool caramel/nutty tone, little hints of soft fruit and a sweet edge. Light roasts (just after 1st crack) are pretty clean and tasty but more nutty, as one pushes darker the nuttiness turns a bit more caramel/chocolaty like but will mute up the more islandy floral/fruitiness. How much you like a sweet nutty tone will be the decider where to roast this one. Darker roasts add a lot of body and dark chocolate smokiness but burn out all the delicate soft fruit and acidity which pushed this cup well beyond average for JBM. This cups taste profile is along the same lines as the Flamstead operation with a bit less lemony acidity.

We found this cup best from medium to dark roasts. Medium roasts have a sweet and nutty tone, mixing with a pinch of crispness and semi-roasty chocolate factor. Creates a cool burnt sugar, or roasted caramel like tone. Medium bodied and lower acidity, very easy drinking coffee with a bit of uniqueness behind it. Very different from the Gesha offering, a fun contrast. Strong medium to dark roasts bring out some wonderful spice notes within the richer nutty & chocolate notes. A bit reminiscent of Indian coffee, but smoother and sweeter. A more potent brew on the roasty tasting side as you touch or go into second crack but all the tastes roll together nicely including some smokiness.

A great daily drinker from a medium to dark roast. A very chocolaty cup of coffee, fuller bodied with low acidity, with some nutty & herbal accents. Light to medium roasts are crisp & sweet: Hints of citric balance with a nutty & woody undertone, a pinch of herbal spice in the aftertaste. With a longer setup time, assuming not too lightly roasted, that woody edge tends to produce a bit of a caramel twist which is quite tasty. Although good at semi-lighter roasts, we really enjoyed the medium to dark roasts better, fuller bodied and creamy. Semi-sweet chocolate and nutty tones dominate the cup with just a pinch of an herbal note in the aftertaste, a little complimenting roasty/smoky note into second crack. Wonderful for classic espresso or for those who use a splash of milk or creamer.

Always one of our favorite Mexican coffees. Good from light to dark. Although Natural processed, this is not a fruit bomb like many other natural processed coffees, has slightly fruity overtones that balance great with some citric, malt and nutty undertones. Its a little fuller bodied cup than most Terruno lots with well above average sweetness. Lighter roasting will have noticeable citric crispness upfront and will accentuate the fruitiness. Medium roasts balance the tones nicely and smooth out (reduce) the citric brightness. Darker roasts turn much more chocolaty and get pretty roasty and smoky, retains a sweet edge and shows hints of fruitiness as the cup cools. A great daily drinker! Works well from light to dark roasts. Very sweet and chocolaty cup of coffee with some lemony/floral crispness upfront. Light roasts will show stronger citrus mixing with a nuttier darker tone with slightly herbal accents, small hint of caramel will show with a little longer setup. Could be a bit acidic for some, but presents nicely for those who like a little citric and a nuttier cup profile. Medium roasts smooth out the cup and move the darker tones to more along the chocolate like alley, far less noticeable citric tones. Likely the best roast for daily drinking, but will be personal preference. Most would call it a pretty sweet chocolaty cup with a bit of spice. Very smooth cupping this year with minimal herbal tones or earthiness. Medium bodied with a sweeter edge, a cup almost anyone would enjoy. Kind of like a Sumatra coffee without all the earthy funk. Best served in the medium to dark roast levels but some will find joy at lighter roast points with a longer setup.

Silky smooth and clean tasting, fuller bodied with a creamy mouthfeel. Lower acidity chocolaty cup with a sweet edge. We liked it best from a medium to dark roast, but with a little longer setup, light roast fans can find joy with these beans. Definitely a chocolaty cup profile with some cool nutty and herbal/spice accents. If you roast before 2nd crack, which is preferred, one can balance in some melon and fruit acidity into the mix which is a big plus to the depth of flavor. Cup starts sweet at lighter roasts but will turn semi-sweet as you pushing into medium or dark roasts.

Medium to dark roast beans & a great daily drinker! This cup is very thick and creamy, filled with semi-sweet chocolate and nutty tones. A very easy to drink coffee. A hint of soft fruit can be seen at the light to medium roasts but pretty faint, not super noticeable until the cup cools. A bit of peppery spice at the darker roasts with some complimenting roasty and smoky tones. Lighter roasts will show some lemony acidity and can accentuate the fruitiness of the cup but often will come off a bit too dry. These beans are more about the creamy fuller bodied and smooth chocolate and nutty tones which will come out from medium roasts and beyond.
