A very nicely balanced cup of coffee. A little hint of acidity upfront providing some floral and soft fruit at the lighter roasts, balanced with a semi-sweet nutty chocolaty factor. Super light roasts risk a little grassy/herbal but it straightens out at a city+ (medium) and holds up as dark as you want to take it. The darker you go, the more body and edgy chocolate the cup will pick up, once you hit 2nd crack, expect some smoke and roasty tones to compliment the nutty/chocolaty factor.

A very fresh and tasty Brazil! Lighter roasts show lemon, floral & soft fruit contrasted by a nuttier (almond like) undertone, a sweet edged cup. The two combine for a hints of caramel, quite tasty for you light roast fans. Medium roasts are richer, more of a developed chocolaty tone and decently less nutty; mutes up the soury floral edge, retains a little hint of soft fruit as the cup cools. Fairly neutral tasting and very chuggable. Darker promotes a thicker body and introduces a slightly bitter contrast that works very well for espresso.

Burundi Premium Bourbon – Busasa Station – Washed Processed
A great medium to dark roast semi-exotic daily drinker. Good body and mouthfeel, a bit lower acidity with rich chocolate and spice notes. Lighter roasting will have a noticeable crisp lemony floral edge to it balanced with a nutty/herbal/earthy dark tone. Holds up lighter but needs a longer setup and can risk a little grassy/earthy/vegetal edge, shows a little hint of caramel and is much sweeter than the fuller roasts. We found it best to push the roast into the medium category to build the richer dark tones, muting up some of the classic African brightness: comes off nice and chocolaty with some herbal/spice balance. Dark roasts are strong and semi-sweet with a full body, complimenting roasty and smoky tones. We couldn’t find a roast we didn’t like with these beans, if you roast lighter, just make sure you do not mind a little stronger citric component.

This is Sabastian’s family coffee (a wonderful Burman Coffee employee), small batch production shipped in by airplane to give our customers some of the freshest coffee poddible. Processed in early August.
Green coffee from a family farm in Miraflores, Gigante municipality (Huila, Colombia): It is a Castillo variety, washed and harvested at altitudes of 1,600–1,900 m, hand-selected. It arrives by air in small batches to preserve its freshness (harvested in late July 2025 and threshed in early August). It presents an exceptionally clean and balanced cup, very versatile depending on the roast: in light coffee, it shows a medium body with caramel and nuts, an intense floral aroma and orange-like citrus with slight herbal and spicy nuances; in medium coffee, it gains structure, with chocolate and a subtle hint of lemon predominating, with a lingering nutty note, lively acidity, and balanced sweetness; in dark coffee, it offers a robust body with deep cocoa and a hint of black tea, while maintaining moderate acidity.

The aroma is floral and sweet like honey. A nice medium bodied, smooth & creamy cup of coffee with little stronger floral aspect, medium to low acidity. It does get a good lemongrass tone at lighter roasts with a soft fruit tone as the cup cools, crisper cup with a slight nutty tone. Turns much more chocolaty into the medium or dark roasts. The cup finishes with a pleasantly surprising spiciness. This is a savory cup of coffee with wonderful complexities.

Low acidity, smooth body, and a clean, mellow sweetness. Best from medium to dark roasts. Primary cues of baker’s chocolate and cedar/soft spice, with a round, calmly sweet finish Monsoon character minus the caffeine “edge.” As roast deepens, expect more cocoa/wood and a touch of malt. Unlike its caffeinated cousin, there is some earthiness but its not over the top, the decaf monsooned is more rich and chocolate/earth with some lingering spice.

A great clean decaf coffee! Good from light to dark. Lighter roasting will show a little lemony crispness, rare for a decaf. Sweeter edged with a little herbal chocolate contrast. Medium roasts cut out most of the lemony crispness and rid the cup of its herbal edge. Smooth and rich, medium bodied, with a more pronounced chocolate tone; a bit floral and sweet in the aromatics, adds to the drinking experience but doesn’t come through in the tastes. Darker roasts are robust and strong, semi-sweet and very chocolaty with a roasty edge.

Ethiopian Yirgacheffe Washed Gr. 2 – Banko Chelchele
Good from light to dark but we thought best at a strong medium to dark roast. A good bean to go after a rich and semi-exotic chocolate tone with some wonderful aromatics and a bit of spice. Light roasts are more citric and floral with wonderful aromatics and a sweet edged, a bit punchy in the citric department and contrasts with a bit of nutty/herbal/grassy undertones. Works well but needs a much longer setup time bring out smooth and clean tastes, sharp and grassy/herbal if drank too soon. Medium roasts will bring some lovely balance to the cup and provides a clean tasting brew without waiting a week to drink it. One starts seeing the chocolate aspect but will still pull some balance with the citric and floral. Less aromatic than the light roasts, but you can still tell you have a nice Ethiopian with one sniff. Darker roasts touching or into second crack are real robust, strong and semi-sweet, more bakers-chocolate like with tea like spice in the aftertaste.

The acidity is a bit citrus/floral upfront but will quickly fade into a rocking islandy fruit tone. From a medium roast on, the acidity is very gentle and balanced with a smooth to rough chocolaty cup profile, milk chocolate before 2nd crack, bakers chocolate and smoky into 2nd crack. Medium bodied, these beans as well as other Kona’s are mild cups comparatively to many other origins, be in for a delicate and tasty cup with layers of goodness.

Lighter roasts have a little cool lemony acidity upfront, with some soft fruit tones giving it some jazz, balanced with a dry earthy chocolaty herbal factor with some incense like spice. As you push into the medium roasts, it will get fuller bodied with a creamy mouthfeel cutting out the more lemony floral tones, turns the cup much more chocolaty and gives depth to the exotic spice notes. Darker roasts will turn more stout like and semi-sweet. When roasting into 2nd crack one will add some cool roasty and smoky tones into the more bakers chocolaty cup profile.

Light roast are not recommended (for almost all Indo coffees). Medium roasts were nice and balanced, a little lemony acidity upfront mixing with a bunch of spice and hints of an earthy slightly peaty chocolaty factor; a decent roast point for pour-overs or drip. Darker roasts were fuller bodied and very smoky with the spice lingering in the aftertaste, very low acidity; good for dark roast fans, espresso or blend bases.

From medium to dark they are fuller bodied, low acidity and darker toned, with a predominately chocolaty cup profile. Very classic tasting Sumatra stronger on the peat like tones and spice notes. A little sweet floral upfront and smoky in the aftertaste. Gets strong into the very dark roasts turning semi-sweet with very forward smoky bakers chocolate notes.

Beautiful coffee, soft islandy acidity mixing with a cool caramel/nutty tone, little hints of soft fruit and a sweet edge. Light roasts (just after 1st crack) are pretty clean and tasty but more nutty, as one pushes darker the nuttiness turns a bit more caramel/chocolaty like but will mute up the more islandy floral/fruitiness. How much you like a sweet nutty tone will be the decider where to roast this one. Darker roasts add a lot of body and dark chocolate smokiness but burn out all the delicate soft fruit and acidity which pushed this cup well beyond average for JBM. This cups taste profile is along the same lines as the Flamstead operation with a bit less lemony acidity.

A clean and balanced cup, with a medium body, lower acidity and a silky texture. It features a pleasant, smooth, and well-balanced citrus acidity balancing with a nutty/chocolate dark tones with some herbal/spice accents. From medium to dark, the predominant flavor is chocolate, accompanied by sweet caramel/burnt sugar notes and a subtle aroma of roasted nuts (peanut). Light floral notes and subtle herbal/spicy nuances are also present, reminiscent of black tea on a pretty nutty base note. A smooth and sweet coffee, neither acidic nor bitter, with a round and balanced flavor profile, ideal for any brewing method.

Always one of our favorite Mexican coffees. Good from light to dark. Although Natural processed, this is not a fruit bomb like many other natural processed coffees, has slightly fruity overtones that balance great with some citric, malt and nutty undertones. Its a little fuller bodied cup than most Terruno lots with well above average sweetness. Lighter roasting will have noticeable citric crispness upfront and will accentuate the fruitiness. Medium roasts balance the tones nicely and smooth out (reduce) the citric brightness. Darker roasts turn much more chocolaty and get pretty roasty and smoky, retains a sweet edge and shows hints of fruitiness as the cup cools. Great everyday drinker at a medium roast, balanced with a sweet edge. A heftier cup at the darker roasts and equally as tasty, fuller bodied with strong malty and smoky tones but still retains that sweeter edge to it.

Good from light to dark. In general, the more neutral offering out of the three, smooth, big bodied & creamy with semi-sweet chocolate notes, nutty accents and a bit of lingering spice in the aftertaste. Lighter roasting will show hints of acidity, a sweeter almond/nougat/brown-sugar comingling with more herbal spice notes. Medium roasting gets the fuller body and more chocolate/malt with hints of spice. Darker roasting gets hefty bakers chocolate note with complimenting roasty-ness. Lower acidity cup overall but will show some crisp citric notes at lighter roasts, some floral characteristics as well. A little roasty/smoky tone into second crack but it will compliment the more chocolaty and nutty profile. A nice medium roast for drip brew, darker for espresso and cold brew. Lighter roasting will appeal to some for the sweet vs bold tones similar to African coffees.

Good from light to dark. In general, the strongest offering out of the three, smooth, big bodied & creamy with semi-sweet chocolate notes, nutty accents and a bit of lingering spice in the aftertaste. Lighter roasting will show some stronger citric acidity comingling with stronger herbal notes, a hint of chocolate, good depth of flavors but will be a bit sharp and herbal for most. Medium roasting gets the fuller body and more chocolaty toned cup with a hint of spice, unlike the other two, this will still have a little hint of citric, leaving it a bit sweeter tasting. Darker roasting gets hefty bakers chocolate note with complimenting roasty notes, no signs of the brighter cup profile at lighter roasts. Although it’s the brighter of the PNG coffees, it has medium to low acidity comparatively to other origins.

A lovely & fresh coffee, our first new crop Peru. Best from medium to dark roasts, a good daily drinker. Medium to low acidity, with a thicker body and mouthfeel. A wonderful more chocolaty cup than shows some nuttiness. Lighter roasting will show just a pinch of citric, which provides nice depth of flavor but be a little careful ligher, too light will show some grassy/herbal tones. Medium roasts and beyond produce a smooth and rich cup, more chocolaty than nutty, pulls a peanut brittle like tone (some may say hint of caramel), not quite candy like, more peanut than brittle but we all thought it to be a good descriptor. Medium acidity with a citrus profile (more toward lemon) provides brightness without being overpowering. The cocoa base has a nutty undertone (nut/peanut butter) and a fruitier (citric) profile; in light roasts, blueberry notes may emerge along with a slight floral tone. Medium roasts achieve the best balance: soft citrus notes, spiced chocolate, and good structure; in dark roasts, the “baker’s chocolate” cocoa predominates, with a heavier aftertaste and very low acidity.

Gentle sweetness and medium citric acidity reminiscent of mandarin; very balanced profile. In lighter roasts, citrus-floral nuances with a slight herbal/vegetal undertone may emerge. With medium roasts, it becomes rounder with spiced chocolate; in dark roasts, “baker’s chocolate” cocoa predominates, with a heavier body and very low acidity. Medium roasts are where we thought it shined, just a small hint of citric sweetness upfront with a good balance of spicy chocolate notes, unique spice, more like the Indian coffees. Darker roasts get more like the Dominican with strong bakers chocolate and smoky tones, a hefty cup with very low acidity.

Medium to dark roast beans & a great daily drinker! This cup is very thick and creamy, filled with semi-sweet chocolate and nutty tones. A very easy to drink coffee. A hint of soft fruit can be seen at the light to medium roasts but pretty faint, not super noticeable until the cup cools. A bit of peppery spice at the darker roasts with some complimenting roasty and smoky tones. Lighter roasts will show some lemony acidity and can accentuate the fruitiness of the cup but often will come off a bit too dry. These beans are more about the creamy fuller bodied and smooth chocolate and nutty tones which will come out from medium roasts and beyond.
