Best served light to medium roasted. Crisp, clean, slightly fruity and sweet: a more exotic cup with higher acidity than the washed processed offerings. Lighter roasts show sweet lemony floral brightness, with just a hint of soft fruit, balanced with a little herbal/nutty tone. Great body and mouthfeel especially for the roast point. This honey processed shined best at the lighter roast points out of all three Bolivian offerings, a great sign of quality. Medium roasts still provide a bit of crisp sweet citric upfront and soft fruit tones as the cup cools, but will develop more of the classic South American profile of creamy and smooth, nutty/chocolaty like tones.

The two combine for a hints of caramel, quite tasty for you light roast fans. Medium roasts are richer, more of a developed chocolaty tone and decently less nutty; mutes up the soury floral edge, retains a little hint of soft fruit as the cup cools. Fairly neutral tasting and very chuggable. Great cup from light to dark roasts. We liked it best on the lighter side of a medium roast, good shot at a hint of caramel (sweet and nutty) in the cup. Hints of citric acidity comingle with a nutty/caramel like tone with a sweet edge, reminiscent of a nice Honduran coffee. Clean cup, a bit brighter with a pinch of soft fruit at the lighter roasts, the contrasting nuttiness can come off a bit dry but smooths out with a longer setup. Much more chocolaty at the darker roasts with a noticeable increase in the body of the cup, still very sweet with a bit of roasty nuttiness in the aftertaste.

Burundi Premium JNP Kayanza – Incuti Washed
A lovely coffee from light to dark. Your personal tastes will dictate what level to roast these beans to, if in doubt, a nice medium roast provides the best balance and depth of flavors. Light roasts will have a lemony citric crispness balancing with a sweet edged nutty/caramel/chocolate/spice like undertone. Takes a longer setup for lighter roasts to shine but for those who like sweetness and brighter notes in coffee will enjoy the lighter roast levels. Medium roasts build the darker tones and mute a bunch of the citric, a chocolaty cup with a burnt sugar kick, just a pinch of crisp citric that will disappear as the coffee sets up. Hints of nuttiness and spice pop out more one can see a little hint of caramel. Darker roasts turn the cup more into a semi-sweet chocolate bomb with a little spice in the aftertaste, much flatter but very tasty with a splash of milk or for espresso/cold-brew.

A nice clean cup tasty from light to dark roasts. Fuller bodied cup jazzed up with some pleasant acidity, balanced with the classic Colombian toasted walnut and baker’s chocolate like darker tones. What separates it from average is a bit of clean acidity upfront which gives great depth of flavors; producing a sweeter, floral and slightly fruity contrast to the classic Colombian profile. Light to medium roasts are clean, sweet, floral, nutty, slightly citric and have a chance at a caramel like note developing after a longer setup. Medium to dark roasts are far less acidic, more semi-sweet thicker walnut like tones with a little spice in the aftertaste.

A great clean decaf coffee! Good from light to dark. Lighter roasting will show a little lemony crispness, rare for a decaf. Sweeter edged with a little herbal chocolate contrast. Medium roasts cut out most of the lemony crispness and rid the cup of its herbal edge. Smooth and rich, medium bodied, with a more pronounced chocolate tone; a bit floral and sweet in the aromatics, adds to the drinking experience but doesn’t come through in the tastes. Darker roasts are robust and strong, semi-sweet and very chocolaty with a roasty edge.

On the lighter roast spectrum there is a little jazzy citric note that presents the cup a little sweeter, on the darker roast spectrums it will have some roasty and smoky notes that we found quite pleasant.

This is not a super fruity natural, would be considered a darker toned, lower acidity, chocolaty cup. One can tell its natural processed roots with its sweetness and thickness and its Ethiopian roots with highlights of spice & fruity/floral notes throughout the roast range. Best served in the light to medium roast range for drip brew for it will show its best balance and promote a hint of fruity/floral. Turns into a chocolate bomb at the darker roasts, more on the dark chocolate side, which would work wonderfully for espresso or cold brew. Lighter roasts have a pinch of citric acidity and wonderful aromatics, hints of red fruit that balance with a bit of semi-nutty tea like spice.

Crisp, clean and exotic. Great aromatics: nothing like grinding a fresh Ethiopian with its floral, jasmine and spice notes to tickle your nose. Lighter roasts are filled with new crop acidity and floral notes, mostly citric but a little peachy soft fruit tone can be found. The balance of the cup comes from a semi-tea-like chocolate factor. I tend to think of it as chocolate spice notes but many tongues can pick up a little black tea note. Medium roasts have just a pinch of citric acidic, builds a thicker body and brings forth more of the chocolaty cup profile, reducing the acidity slightly. Darker roasts are always tasty for those who like fuller roasts. This is how they would traditionally serve these beans in Ethiopia. Being a high rated bean, it is very clean (good) tasting at light roasts, which we thought presented it best. There is a little darker toned contrast at light roasts, hints of a chocolaty factor comingle with the fruitiness. Full bodied, low acidity, great mouthfeel, robust and strong coffee with hints of a exotic spice. Lighter roasts get a cool semi-floral sweet tone upfront but will pull more towards grassy caramel with a slight hint of herbal spice. As one progresses towards the darker roasts it gets much fuller bodied and creamy with clean chocolate/malt like tastes, a little hint of floral acidity at the full city roast level. Into 2nd crack adds some complimenting roasty/smoky tones that with the fuller body and malty profile, will be quite the tasty treat.

A very clean well balanced cup good from light to dark roasts. Crisp acidity with a small hint of soft fruit, comingle with a more chocolaty cup profile with floral accents. Can be roasted from light to dark but our favorite was a nice medium roast. Lighter roasts: the acidity & floral tones are accentuated and will be the first tastes your tongue will notice, a pinch of an island fruit tone but pretty faint, balances with a little green-tea, chocolate & spice dark tone. From a medium roast on, the acidity is very gentle and balanced with a smooth to rough chocolaty cup profile, milk chocolate before 2nd crack, bakers chocolate and smoky into 2nd crack. Medium bodied and lower acidity, these beans as well as other Kona’s are mild cups comparatively to many other origins, be in for a delicate and tasty cup with layers of goodness.

At light roasts it will have some lemony acidity and a sweet edge, pulls some balance with a more peanut like nuttiness. Medium roasts introduce a more chocolaty than nutty tone and mute up some of the citric making it a bit smoother of a cup but also less complex, good daily drinking territory. Darker roasts taste nice but will have some roasty/smoky characteristics along with a good body. A rich and sweet cup for dark roast fans.

Besides a chocolaty factor one will get some nutty/caramel/floral like tones at the medium roast points, gives it some nice complimenting depth without being too exotic. We all thought it was at its best right around a full city – smooth without too much of a roasty note and great chocolaty tones.

A very rich, strong and smooth cup. A cousin to Sumatra or Sulawesi coffee; Blue Moon always is a bit smoother without as much peaty earthiness, or swampy fruit. A sweeter cup for an Indo with malt, chocolate with a little traditional earthy terroir of the wet-hulled Indonesians. Fuller bodied, a little hint of acidity at a medium roast, a definite go to for our strong-medium or dark roasts here at Burman Coffee. Pulls some molasses undertones as ones pushes into second crack roasts. Hints of slight smoky tone at darker roast.

Low acidity, thick and creamy, with hints of sweet fruit balancing with a strong earthy chocolaty undertone. Quite the tasty treat and surprisingly for an Indonesian, the best roast we found on this one was in the medium roast range. Smooth, clean, balanced and exotic: mostly a chocolaty cup with a sweet edge, slight hints of fruit and earth. Lighter roasts show just a hint of citric crispness with a little herbal chocolate contrast, accentuates the fruitiness but it is not over the top, too light can come off a bit grassy, make sure the beans are through first crack to just past. A very clean traditional Sumatra cup. Best from medium to dark roasts. Fuller bodied with some nice exotic incense spice notes intermingled with a bakers chocolate and smoky cup profile. Light roast are not recommended (for almost all Indo coffees). Medium roasts were nice and balanced, a little lemony acidity upfront mixing with a bunch of spice and hints of an earthy slightly peaty chocolaty factor; a decent roast point for pour-overs or drip. A very clean, bright and balanced cup. Best at the light to medium roast levels. At lighter roasts; one will see sweet and strong citric tones comingling with chocolate and herbal darker notes, classic premium Kenya. As the cup sets up longer one can see some greater complexity pop out with hints of soft fruit, nutty and caramel like tones. Pushing into the medium roast levels, the thickness increases and the chocolate/herbal factor will be the dominate tone in the cup hiding much of the citric and floral. Hitting 2nd crack cuts out most of the citric and will turn the cup more bakers chocolate, increasing the strength, but loosing sweetness.

A good example of classic high end Kenyan coffee. Best in the light to medium roast levels but works at light to dark roasts depending on individual taste preference. Very clean and delicate for a Kenya. Light to medium roasts are sweet upfront with some clear citrus/floral tones. A hint of red fruit balances out with a chocolate like undertone, hint of herbal spice in the aftertaste. Darker roasts are decently less citric and floral, bringing robust bakers chocolate and spice tones to the foreground.

A great daily drinker! Works well from light to dark roasts. Very sweet and chocolaty cup of coffee with some lemony/floral crispness upfront. Light roasts will show stronger citrus mixing with a nuttier darker tone, small hint of caramel will show with a little longer setup. Could be a bit acidic for some, but presents nicely for those who like a little citric hit. Medium roasts smooth out the cup and move the darker tones to more along the chocolate like alley, far less noticeable citric tones. Likely the best roast for daily drinking, but much is personal preference. Closer to 2nd crack or touching, a strong chocolate like profile, more semi-sweet with very low acidity and a creamy mouthfeel.

A very clean and fresh batch from Selva Negra. A little citric & floral acidity upfront, balanced with nice complex nutty & malty undertones. Light roasts are going to be a little front loaded with the brighter characteristics, a higher rated cup meaning one will notice some decent crisp acidity at the light-medium roasts. Will give great depth of flavor but may be a little sharp for some. Our favorite roast and a great everyday drinker was in the medium roast ballpark, builds more of a smooth and creamy cup with a sweet edge, reducing that perceived acidity to just a pinch. Turns much stronger, a robust cup most would say, into the darker roasts but shined nicely; fuller bodied with strong malty and smoky tones, still a sweeter edge to it which darker roast fans will love.

Sigri Natural is a very different, crazy unique lot!Good from light to dark, very different tasting dependent on roast level. If you are a very fruit forward natural fan, sticking in the light to medium roast level is recommended. Contrary to many naturals, these beans rock at the fuller roast levels as well, touching or into second crack produces a very lively cup, not super roasty with incredible depth of flavor and good balance between light and dark tones.
Light roast themselves, are pretty citric, sweet and floral with almost a red wine vinegar herbal like quality. Can tell this is a very slow dry natural. A longer setup rid the cup of more astringent features, takes almost 5-12 days of resting for these funky naturals to mellow. Medium roasts get much more chocolaty with fruity overlays, very tasty. No missing the fruitiness assuming you are pre-second crack. Medium bodied with just a pinch of citric/floral crispness. Although we liked all the roast points, darker roasts were our favorite with its crazy depth of flavors, strong semi-sweet chocolate tones balancing with a barrel aged red fruit.

Lower acidity cup overall but will show some crisp citric notes at lighter roasts, some floral characteristics as well. A little roasty/smoky tone into second crack but it will compliment the more chocolaty and nutty profile. A nice medium roast for drip brew, darker for espresso and cold brew. This cup is nice and clean, a little fuller bodied and smooth with a sweeter edge. A great year for Peru coffees; the cup starts just a little citric, fairly low acidity only detectable at the lighter roast points, a little hint of soft fruit but mainly a pretty chocolaty cup profile with some nutty accents. Lighter roasts one can find a hint of caramel if you get lucky, and leans on the nuttier side, little citric will poke out. A nice medium roast will make anyone happy and provide good balance and smooth chocolate tones, low acidity – a good daily drinker. Darker roasts work good but burn out a bit of the sweetness, the chocolaty factor sure compliments the toastier smoky tones of the dark roasts.

Wonderful aromatics accompany lighter roasts but could be a little too grassy/sharp for some. Medium roasts are more chocolaty, balancing with the spice nicely, less woody, more bold semi-sweet clove like spice. Darker roasts get smooth and creamy retaining those exotic spice notes to compliment the roasty and smoky darker chocolate cup.

We thought best served in the medium roast range but will be tasty from light to dark: a very sweet cup at any roast point. Lighter roasts have some stronger citric/floral acidity, a little hint of a grape-skin like fruitiness and a spiced (herbal) chocolate undertone. Medium roasts build a much creamier cup profile, just a hint of crisp floral upfront that fades into a strawberry like fruitiness balanced with a spicier chocolate dark tone. Dark roasts themselves are a bit flat but still very sweet edged, hardly fruity but makes up for it with the fuller bodied more robust chocolate and spice notes.

Anaerobic coffees are fermented coffees. They use sealed containers to control the fermentation. There are no rules for the farmer, one can produce low fermentation coffees similar to washed processed using this method, to complete ferment bombs way beyond most natural processed beans. Unlike last season, in which this offering was more of a ferment bomb, this season, it is much more refined, definitely the most fruity and citric out of the three offerings but not nearly as over the top, much cleaner and more balanced in its tastes.Best at the light to medium roast levels. Comparatively to the other more traditional Zambia offerings, this cup has stronger acidity, a thicker body, stronger fruit notes ranging from citric/tropical to a bit of classic red fruit. One can still see the classic Zambia cup profile with its darker toned contrast, nice and chocolaty with a bit of spice. Easily the best depth of flavor out of the three: all sorts of delicate little flavors pop out at the lighter roast points especially as the cup cools. Light roasts are the most citric and fruit, produces a clean cup with a little chocolate/spice balance. The soft fruit tone is a bit covered up by the brightness at light roasts, will be easier to see as the cup cools or the beans setup for a longer period. Medium roasts will pull a lot of the citric out of the cup, more along the lines of a buzzy acidity versus citric, a chocolaty cup with pretty exotic fruity highlights. Will pick up a little woody barrel aged tone to go along with the slight fruitiness to let you know you have something exotic. Darker roasts are interesting and strong, but will be bittersweet, not creamy and smooth like the washed processed.

Best at the light to medium roast level. Good bit of citrus and red fruit upfront balanced with a thicker chocolate and spice note. Light roasts get a very jazzy stronger citric tone, with just a hint of a dark tone balance. Floral and sweet edged, with an emphasis on the fruitiness of the cup. Medium roasting brings the best of both worlds, some soft fruit, some chocolate and spice: medium to full bodied and far less sharp than the lighter roasts, but also a bit less fruity. More of a chocolaty cup with fruity highlights. Dark roasts get even fuller bodied but burn out some sweetness, taste like semi-sweet chocolate on the roasty/smoky side, thick with a bit of spice in the aftertaste. A hint of fruitiness as the cup cools but hard to tell its natural processed roots at darker roasts.

A wonderful season for the Zambia washed. Good clean cup profile making it pretty tasty from light to dark roasts. We found the lighter side of a medium roast to be our favorite. Fuller bodied cup with a sweet lemony crispness balanced with a chocolaty dark tone, hints of nuttiness and spice in the aftertaste. Similar to a Rwanda/Burundi/Kenya but with a bit more body and less herbal spice. Lighter roasts accentuate the brighter more floral/fruity tones, a bit more showy of a cup with its brighter characteristics but not as chuggable, can pull a little herbal balance. If you cannot tolerate a bit of citric crispness, darker roasts are the way to go, mutes up most of the brighter cup features presenting a real big bodied, smoky, complex and very dark toned cup of coffee.Price: $8.79/lb - 7.59/lbPrice: $8.79 -
