The aroma is very nutty and sweet. There was a surprising hint of smoke on the palate. Full bodied and low acidity – this is a traditional tasting Brazil – thick, creamy, nutty and semi-sweet. At the darker roasts a very sweet first taste, almost a little fruity, and then quickly turns darker-toned with a bakers chocolate and slightly toasted walnut flavor. A beautiful single-origin drinking Brazil best from medium to dark roasts. Clean, rich and balanced; this is a cup we are happy to drink all day long! This is the most traditional lot of the three, a bit more neutral tasting but just as clean and tasty. Hints of lemony acidity at the lighter roasts, good body with more traditional Brazilian nuttiness in the cup. Turns a bit more chocolaty and smooth as one pushes the roast into the medium to dark roast level. A nice sweet edge to the cup regardless of roast level. Still has some fruitiness in the cup, also some cool spice notes, but mild comparatively to the other two offerings.

Brazil FAF Bob-O-Link Reserve – João Hamilton – Natural Processed
A great cup from light to dark roasts. We thought it shined best on the lighter side of a medium roast, a city+ most would say. The sweet and nutty tones give a hint of caramel with a little setup. Shows some citric acidity upfront but would be considered a lower acidity cup overall. The brighter features comingle with a medium bodied nutty/cocoa undertone and a sweeter edge. Reminds me of a nice Honduran coffee more so than a traditional Brazil, a bit nuttier. Medium to dark roasts mute the brighter characteristics providing a very smooth cup that works a little better for daily drinking or espresso. Turns much more chocolaty the darker you roast, still retains a little nuttiness in the aftertaste, a bit roasty if you touch or go into second crack but it compliments the beans characteristics.

Brazil Mogiana Guaxupé 17/18 FC SS
A very fresh and tasty Brazil! Lighter roasts show lemon, floral & soft fruit contrasted by a nuttier (almond like) undertone, a sweet edged cup. The two combine for a hints of caramel, quite tasty for you light roast fans. Medium roasts are richer, more of a developed chocolaty tone and decently less nutty; mutes up the soury floral edge, retains a little hint of soft fruit as the cup cools. Fairly neutral tasting and very chuggable. Darker promotes a thicker body and introduces a slightly bitter contrast that works very well for espresso.

Best at lighter roast points. A mix of exotic strains with an extended drying time giving this coffee a surprisingly tropical fruit note with some floral overtones. Would be hard to guess it as a Brazil coffee but wonderful tasting. From the first sip it offers a very fruity profile: juicy notes of watermelon and strawberry intertwine with a base of creamy chocolate and above-average sweetness, while maintaining the classic medium-light body typical of Brazilian naturals. In a light to light-medium roast the fruit and sweet creaminess shine, whereas at a medium-dark roast the cocoa facets deepen, malty and creamy nuances emerge, and the body thickens slightly, yet the cup remains clean and bright.

Some good sweetness from its natural processing, a small hint of soft fruit as the cup cools. Reminds us of a less fruity Yemen coffee. Rustic chocolate, tea like spice, lower acidity and fuller bodied.

A great clean decaf coffee! Good from light to dark. Lighter roasting will show a little lemony crispness, rare for a decaf. Sweeter edged with a little herbal chocolate contrast. Medium roasts cut out most of the lemony crispness and rid the cup of its herbal edge. Smooth and rich, medium bodied, with a more pronounced chocolate tone; a bit floral and sweet in the aromatics, adds to the drinking experience but doesn’t come through in the tastes. Clean, bright, sweet with a very diverse flavor set. Stone and darker fruit, citrus & floral, and spiced chocolate tones are the main flavors one can see in this cup, either accentuated or muted depending on roast level. Nice jammy body will be seen in the medium to borderline dark roast mark. Very dependent on roast – lighter roasting gives much more of the citrus, red-fruit with just a hint of a spicy chocolaty factor, a much dryer finish. Darker roasts produce much more of a bakers chocolate cup with a hint of a strawberry like fruit note and good sweetness, far less acidic. A very enjoyable cup from light to dark.

Always one of our favorite Mexican coffees. Good from light to dark. Although Natural processed, this is not a fruit bomb like many other natural processed coffees, has slightly fruity overtones that balance great with some citric, malt and nutty undertones. Its a little fuller bodied cup than most Terruno lots with well above average sweetness. Lighter roasting will have noticeable citric crispness upfront and will accentuate the fruitiness. Medium roasts balance the tones nicely and smooth out (reduce) the citric brightness. Darker roasts turn much more chocolaty and get pretty roasty and smoky, retains a sweet edge and shows hints of fruitiness as the cup cools. Good from light to dark, very different tasting dependent on roast level. If you are a very fruit forward natural fan, sticking in the light to medium roast level is recommended. Contrary to many naturals, these beans rock at the fuller roast levels as well, touching or into second crack produces a very lively cup, not super roasty with incredible depth of flavor and good balance between light and dark tones.

For those who enjoy a bit more fruit forward cup, the lighter roasts really pop the fruit tone out along with a hint of citric and silky smooth nutty/chocolate/herbal darker tones. With a more intense roast, the cup transforms into a chocolate-and-cocoa delight with smooth caramel sweetness, a cool hint of mint, and a delicate touch of pine and herbs—smooth and comforting. The profile overflows with green-mango brightness and ripe plum; a floral acidity reminiscent of mango or mandarin lifts the cup, while the cocoa base keeps it grounded.

A wonderful old world natural filled with hints of floral/citric, rustic-chocolate, spice and a pinch of fruitiness. Compared to previous lots, these beans do have a little brightness in them, not high acidity, but not nearly as flat as some we have seen in the past. A rounded cup with medium brightness and body. Citric, floral, red-fruit, chocolate, earth & spice are the dominate tones. The citric/floral/fruit will be accentuated with lighter roasts. Chocolate, spice, earth with darker roasts. A lovely complex old world natural that brings your tongue back to the roots of coffee itself. We preferred the cup at light to medium roasts best. It has great chocolate tones at the fuller roast levels but a bit flat with more neutral chocolate notes. Having a hint of crispness and a touch of fruit at the light-medium roast levels gave it the balance we though it deserved.

Best at the light to medium roast level. Good bit of citrus and red fruit upfront balanced with a thicker chocolate and spice note. Light roasts get a very jazzy stronger citric tone, with just a hint of a dark tone balance. Floral and sweet edged, with an emphasis on the fruitiness of the cup. Medium roasting brings the best of both worlds, some soft fruit, some chocolate and spice: medium to full bodied and far less sharp than the lighter roasts, but also a bit less fruity. More of a chocolaty cup with fruity highlights. Dark roasts get even fuller bodied but burn out some sweetness, taste like semi-sweet chocolate on the roasty/smoky side, thick with a bit of spice in the aftertaste. A hint of fruitiness as the cup cools but hard to tell its natural processed roots at darker roasts.
