A nice clean, rich, and versatile coffee. Lighter roasting will come off clean and winy like a good Guatemalan should. A little higher acidity than average, balanced with some developing malt like tones. A bit acidic light roasted but easy to enjoy if you classically like lighter roasts. Blooms into a more traditional Guat. chocolaty cup as you push into the medium to dark roast levels. The darker you go the less winy and acidic the cup will taste. Around a medium roast, the perceived acidity drops and creates a rich, fuller bodied, chocolaty cup with a smooth and sweet edge. A hint of floral mixing it to keep it crisp. Best from a medium to dark roast, wet-hulled coffees are not light roast coffees no matter how premium of an offering. Hints of citric crispness and soft fruit with a little sweeter chocolate edge, pulls some balance with some earthy spice (the good kind). Very clean cup for a Sumatra that is drinkable and balanced from a medium roast and beyond. The darker you roast, the fuller the body gets along with reducing any hints of acidity. Into second crack will turn more into a chocolaty spice noted treat but will reduce the sweeter edge. Kayon Mountain has become a tradition around here, marks one of our favorite times of the year, new Ethiopian season! Beautiful coffee and screen.Clean, bright, sweet with a very diverse flavor set. Stone and darker fruit, citrus & floral, and spiced chocolate tones are the main flavors one can see in this cup, either accentuated or muted depending on roast level. Nice jammy body will be seen in the medium to borderline dark roast mark. Very dependent on roast – lighter roasting gives much more of the citrus, red-fruit with just a hint of a spicy chocolaty factor, a much dryer finish. Darker roasts produce much more of a bakers chocolate cup with a hint of a strawberry like fruit note and good sweetness, far less acidic. A very enjoyable cup from light to dark.

A very fun & tasty African natural. To see it shine, keep it in the light to medium roast range, although it’s a tasty cup from light to dark. Light roasts themselves have a stronger lemony floral tone right upfront. For an African it would not be considered high acidity but will be clearly noticeable in the taste. Behind the brighter floral notes lies a nice semi-sweet stone-fruit tone, similar to cascara or to some, strawberry’ish. The fruit and floral will quickly fade into a more robust chocolate note with some traditional spice notes kicking in mostly in the aftertaste. Medium roasts will mute the floral/fruity tones to just a hint over-top of the more robust chocolate & spice darker tones. Still exotic due to the processing but promotes more traditional Burundi like tones the darker you roast. A very nice and clean Costa. Lighter roasts will show that classic Costa sweet floral acidity, a little bit on the lemony side balanced with a little dry nutty/chocolate undertone. As the roasting pushes more into the medium category, the cup develops a bit more body and reduced acidity levels giving a much smoother mouthfeel and more defined chocolaty factor. Creates a wonderful balance of tones. A little lighter floral, a little chocolaty/nutty, very pleasant drinker. Darker roasts hold up nicely as well, turn the cup more stronger and more bakers chocolate like, the roasty notes from darker roasting do compliment the cup. A very fresh and tasty Brazil! Lighter roasts show lemon, floral & soft fruit contrasted by a nuttier (almond like) undertone, a sweet edged cup. The two combine for a hints of caramel, quite tasty for you light roast fans. Medium roasts are richer, more of a developed chocolaty tone and decently less nutty; mutes up the soury floral edge, retains a little hint of soft fruit as the cup cools. Fairly neutral tasting and very chuggable. Darker promotes a thicker body and introduces a slightly bitter contrast that works very well for espresso.

A great super fresh example of Antigua coffee, follows those wonderful floral versus chocolaty notes that made the region so famous. Medium roasts are recommended but good from light to dark. Lighter roasts will accentuate the lemony floral tones of the cup, the chocolaty factor will be just a hint but noticeable and smooth, a bit of nuttiness will linger in the aftertaste not present in further roast levels. Medium roasts are very clean and balanced – not too acidic, not too bitter – sweet edged and will have wonderful mix of tones. Besides a chocolaty factor one will get some nutty/caramel/floral like tones at the medium roast points, gives it some nice complimenting depth without being too exotic. We all thought it was at its best right around a full city – smooth without too much of a roasty note and great chocolaty tones.

A great daily drinker from a medium to dark roast. A very chocolaty cup of coffee, fuller bodied with low acidity, with some nutty & herbal accents. Light to medium roasts are crisp & sweet: Hints of citric balance with a nutty & woody undertone, a pinch of herbal spice in the aftertaste. With a longer setup time, assuming not too lightly roasted, that woody edge tends to produce a bit of a caramel twist which is quite tasty. Although good at semi-lighter roasts, we really enjoyed the medium to dark roasts better, fuller bodied and creamy. Semi-sweet chocolate and nutty tones dominate the cup with just a pinch of an herbal note in the aftertaste, a little complimenting roasty/smoky note into second crack. Mostly these beans will appeal to medium-dark roast fans but being an exceptionally clean cup, it has some lovely balance and is quite tasty at lighter roasts. Similar to its Indonesian cousins (except washed processed), it gets real hefty into the dark roasts promoting smoky and chocolaty tones with stronger spice notes. Smooth and rich, medium bodied, with a more pronounced chocolate tone; a bit floral and sweet in the aromatics, adds to the drinking experience but doesn’t come through in the tastes.
