A very nicely balanced cup of coffee. A little hint of acidity upfront providing some floral and soft fruit at the lighter roasts, balanced with a semi-sweet nutty chocolaty factor. Super light roasts risk a little grassy/herbal but it straightens out at a city+ (medium) and holds up as dark as you want to take it. The darker you go, the more body and edgy chocolate the cup will pick up, once you hit 2nd crack, expect some smoke and roasty tones to compliment the nutty/chocolaty factor.

The aroma is very nutty and sweet. There was a surprising hint of smoke on the palate. Full bodied and low acidity – this is a traditional tasting Brazil – thick, creamy, nutty and semi-sweet. At the darker roasts a very sweet first taste, almost a little fruity, and then quickly turns darker-toned with a bakers chocolate and slightly toasted walnut flavor. A beautiful single-origin drinking Brazil best from medium to dark roasts. Clean, rich and balanced; this is a cup we are happy to drink all day long! This is the most traditional lot of the three, a bit more neutral tasting but just as clean and tasty. Hints of lemony acidity at the lighter roasts, good body with more traditional Brazilian nuttiness in the cup. Turns a bit more chocolaty and smooth as one pushes the roast into the medium to dark roast level. A nice sweet edge to the cup regardless of roast level. Still has some fruitiness in the cup, also some cool spice notes, but mild comparatively to the other two offerings.

Brazil FAF Bob-O-Link Reserve – João Hamilton – Natural Processed
A great cup from light to dark roasts. We thought it shined best on the lighter side of a medium roast, a city+ most would say. The sweet and nutty tones give a hint of caramel with a little setup. Shows some citric acidity upfront but would be considered a lower acidity cup overall. The brighter features comingle with a medium bodied nutty/cocoa undertone and a sweeter edge. Reminds me of a nice Honduran coffee more so than a traditional Brazil, a bit nuttier. Medium to dark roasts mute the brighter characteristics providing a very smooth cup that works a little better for daily drinking or espresso. Turns much more chocolaty the darker you roast, still retains a little nuttiness in the aftertaste, a bit roasty if you touch or go into second crack but it compliments the beans characteristics.

Brazil Mogiana Guaxupé 17/18 FC SS
A very fresh and tasty Brazil! Lighter roasts show lemon, floral & soft fruit contrasted by a nuttier (almond like) undertone, a sweet edged cup. The two combine for a hints of caramel, quite tasty for you light roast fans. Medium roasts are richer, more of a developed chocolaty tone and decently less nutty; mutes up the soury floral edge, retains a little hint of soft fruit as the cup cools. Fairly neutral tasting and very chuggable. Darker promotes a thicker body and introduces a slightly bitter contrast that works very well for espresso.

Best at lighter roast points. A mix of exotic strains with an extended drying time giving this coffee a surprisingly tropical fruit note with some floral overtones. Would be hard to guess it as a Brazil coffee but wonderful tasting. From the first sip it offers a very fruity profile: juicy notes of watermelon and strawberry intertwine with a base of creamy chocolate and above-average sweetness, while maintaining the classic medium-light body typical of Brazilian naturals. An awesome exotic Colombian, tasty from light to dark. Brighter, sweeter and thinner bodied than you average Colombian. Full of floral, soft fruit and chocolate like tones.
Lighter roasts will have strong citric floral notes with some red fruit highlights. Hints of chocolate herbal spice will pull a little balance between the light and dark tones. Light roasts will pop out the more exotic tones in these beans, they will get more classic Colombian character the darker you roast. Medium roasts are more balanced, reducing the stronger citric component, pronouncing the red fruit and bringing forth a thicker body with more traditional rich nutty & chocolaty Colombian tones. Darker roasts into 2nd crack are a little edgy, semi-sweet chocolate and spice tones will pack a punch, the roasty & smoky tones will compliment the darker tones nicely, a hint of a fruity tone can be found in the aftertaste but just a hint.

Colombian Premium Huila – Pacamara Natural Processed
Good from light to dark, but to see the fruit notes shine, keep it in the light to medium ballpark. A bit of lemony citrus upfront that fades into a sweet red fruit tone, followed by a bit of nutty/herbal darker notes. The sweetness and fruitiness linger on the tongue. A longer setup help rid the lighter roasts of the more herbal qualities. Medium roasts are pretty bulletproof and well balanced, showing a little more of a potent nutty/chocolate undertone but no missing the fruitiness and slight citric. Darker roasts worked very nicely for a natural processed, sometimes they get all sour and twangy, but being both a Colombia and Pacamara, the more robust body and nuttiness of these beans, with a chocolate and smoky overtone, balance very well. Add on a little sweet fruitiness in the aftertaste and one has a winning dark roast natural.

Excellent cup of coffee from light to dark! Smooth, sweet, rich, and with a buttery texture. A very chocolatey cup with hints of floral acidity and a soft fruity tone. Overall, it has lower acidity and a fuller body, with some classic Colombian nutty nuances in the aftertaste. A touch of spice in the cup creates a wonderful depth of flavor. At lighter points, you get brighter, crisper tones, with small fruity hints combined with a hint of a darker note. A balanced cup if allowed to steep, but can be a bit bright if drunk too soon. Medium to dark roasts are where you get the most classic Colombian cup, with a fuller body and more powerful nutty/chocolate tones.
