A great daily drinker from a medium to dark roast. A very chocolaty cup of coffee, fuller bodied with low acidity, with some nutty & herbal accents. Light to medium roasts are crisp & sweet: Hints of citric balance with a nutty & woody undertone, a pinch of herbal spice in the aftertaste. With a longer setup time, assuming not too lightly roasted, that woody edge tends to produce a bit of a caramel twist which is quite tasty. Although good at semi-lighter roasts, we really enjoyed the medium to dark roasts better, fuller bodied and creamy. Semi-sweet chocolate and nutty tones dominate the cup with just a pinch of an herbal note in the aftertaste, a little complimenting roasty/smoky note into second crack. A solid cup from light to dark, but for most drinking, a medium roast will be the way to go. Sweet with just a pinch of citric upfront, medium bodied, good mouthfeel, just a pinch of fruitiness and ends with a nice malty undertone. Lighter roast get a bit brighter and slightly more fruity but can risk a little grassy, medium roasts present great balance to the flavors and was very easy drinking, darker roasts retain a lot of sweetness and hefty malty tones, but will get pretty roasty/smoky. If drinking for drip/pour-over, medium roasts are where to go. A very nice light to dark roast decaf. Lighter roasts are sweeter and more delicate, a little unique spice with a bit of nuttiness and just a pinch of floral. Medium roasts are a smoother cup, a little sweet edge, nutty, with a touch of chocolate. Has a little floral overtone that makes it a bit interesting. Fuller bodied with a richer chocolate tone closer to 2nd crack. Some smokiness at second crack or into but retains its smooth and rich character. Decaf Mexican is always one of my favorite beans to get a nice and strong chocolaty note in the decafs. Kayon Mountain has become a tradition around here, marks one of our favorite times of the year, new Ethiopian season! This is a grade 3 natural. Wonderful tastes and clean cup but will show the more rustic side of Ethiopians. Unlike its grade 1 cousins, G3 coffees will show stronger dark tones, with a bit fuller body. Not as delicate but still paired with a wonderful fruitiness, good sweetness and hints of floral, that every good Ethiopian natural should have.Clean, rich and sweet with a very diverse flavor set. Stone and darker fruit notes comingle with a little citrus & floral, balancing with a rustic spiced chocolate tone. The fruit, citric and floral is accentuated with the lighter roasts while the chocolate, spice and richer dark notes are accentuated at the darker roasts. Nice jammy body will be seen in the medium to borderline dark roast mark. Very dependent on roast – lighter roasting works very well for pour overs or drip machines, more delicate, fruity and sweet. Darker roasts produce much more of a bakers chocolate cup with a hint of a fruit note as the cup cools, works a bit better for espresso or cold brew. A very enjoyable cup from light to dark.

A little higher acidity than average, balanced with some developing malt like tones. A bit acidic light roasted but easy to enjoy if you classically like lighter roasts. Blooms into a more traditional Guat. chocolaty cup as you push into the medium to dark roast levels. The darker you go the less winy and acidic the cup will taste. Around a medium roast, the perceived acidity drops and creates a rich, fuller bodied, chocolaty cup with a smooth and sweet edge. A hint of floral mixing it to keep it crisp. As the roasting pushes more into the medium category, the cup develops a bit more body and reduced acidity levels giving a much smoother mouthfeel and more defined chocolaty factor. Creates a wonderful balance of tones. A little lighter floral, a little chocolaty/nutty, very pleasant drinker. Darker roasts hold up nicely as well, turn the cup more stronger and more bakers chocolate like, the roasty notes from darker roasting do compliment the cup. A very fun & tasty African natural. To see it shine, keep it in the light to medium roast range, although it’s a tasty cup from light to dark. Light roasts themselves have a stronger lemony floral tone right upfront. For an African it would not be considered high acidity but will be clearly noticeable in the taste. Behind the brighter floral notes lies a nice semi-sweet stone-fruit tone, similar to cascara or to some, strawberry’ish. The fruit and floral will quickly fade into a more robust chocolate note with some traditional spice notes kicking in mostly in the aftertaste. Medium roasts will mute the floral/fruity tones to just a hint over-top of the more robust chocolate & spice darker tones. Still exotic due to the processing but promotes more traditional Burundi like tones the darker you roast.
