Best at the light to medium roast levels. Light roasts themselves have a very sweet citric upfront, hints of floral in the aromatics with a little hint of darker toned contrast, nutty/cocoa/spice. A pinch of fruit as the cup cools but more down the citric alley. A little lighter bodied, complex and balanced. A very jazzy, sweet and delicate lighter roast bean with wonderful aromatics. Medium roasts reduce the citric and floral, smoother cup building a bit more body and showing more of what we classically think of Asian coffees, bolder with some spice notes. Assuming you are on the lighter side of a medium roast, you still get nice balance of tones in the cup, a strong medium roast to dark roast points, the coffee is much flatter, strong semi-sweet chocolate with herbal spice.

A lovely slightly-exotic daily drinker. Light to medium roasts are preferred with our favorite roast being right in the middle of the cracks. Lighter roasts have a hint of floral/citric acidity with just a touch of sweet and delicate red fruit coming from the honey processing. A bit on the nutty/chocolaty side for its balance, starts as a dry nutty at very light roasts, turns more chocolaty as the roast gets darker.A little front loaded with the more acidic and fruity tones at traditional light roasts. Medium roasts have better balance between light an dark tones cutting out some acidity; smooth, rich and sweet edged. Dark roast loses the more exotic acidity and fruity edge but turns very thick, nutty, semi-sweet chocolaty with smoky accents.

A wonderful season for the Zambia washed. Good clean cup profile making it pretty tasty from light to dark roasts. We found the lighter side of a medium roast to be our favorite. Fuller bodied cup with a sweet lemony crispness balanced with a chocolaty dark tone, hints of nuttiness and spice in the aftertaste. Similar to a Rwanda/Burundi/Kenya but with a bit more body and less herbal spice. Lighter roasts accentuate the brighter more floral/fruity tones, a bit more showy of a cup with its brighter characteristics but not as chuggable, can pull a little herbal balance. Turns a bit more chocolaty and smooth as one pushes the roast into the medium to dark roast level. A nice sweet edge to the cup regardless of roast level. This is one of those coffees that feels good to buy and even better to drink. It comes from a region that many coffee lovers already adore: Huehuetenango, Guatemala. Specifically, it’s grown on small hillside plots in the highlands of the Cuchumatanes mountains near the town of Jacaltenango, by around 330 farming families from the Popti’, Mam, and Kanjobal indigenous groups. The cooperative behind this lot, Guaya’b, was founded in 1998 and proudly carries Organic, Fair Trade, and Smithsonian Bird-Friendly certifications the latter confirming their farms provide a safe haven for over 200 species of migratory birds.

Unlike almost any other wet-hulled coffees, this is actually quite tasty at the light to medium roast levels. The jasmine aromatics shine at any roast point, but will be more delicate in taste, especially at fuller roast levels. No missing the co-ferment tones but comparatively to many co-ferment offerings, this has more delicate flavors, might be for its Jasmine instead of a more punchy fruit note. Light roasts have some sweet and clean lemon/citric and fruit tones right upfront that quickly fade into a nice jasmine kick. The tones balance nicely with a little earthy/herbal/cocoa dark tone that will compliment the jasmine. A semi-sweet cup overall with a ton of complexity. While piping hot, reminded me of jasmine tea, but with a fuller body, more creamy mouthfeel and a bit more kick in the aftertaste. Medium to dark roasts promote the more rustic dark chocolate roots from Indonesia and the wet-hulling, reducing the more citric/floral tones from lighter roasts. Gets a little hint of a barrel aged ferment complexity and highlights with the jasmine floral note.

Stone and darker fruit, citrus & floral, and spiced chocolate tones are the main flavors one can see in this cup, either accentuated or muted depending on roast level. Nice jammy body will be seen in the medium to borderline dark roast mark. Very dependent on roast – lighter roasting gives much more of the citrus, red-fruit with just a hint of a spicy chocolaty factor, a much dryer finish. Darker roasts produce much more of a bakers chocolate cup with a hint of a strawberry like fruit note and good sweetness, far less acidic. A very enjoyable cup from light to dark.

New 2024/25 Crop! A very cool, very exotic cup of coffee. One can tell this is a slow dry natural processed coffee with its strong ripe red fruit tones upfront. Lighter roasting presents a ton of floral and fruit with an almost oak/peat boozy finish, very sweet with just a ton going on but does risk some underdeveloped tones with its two-toned roasting. Medium roasts were our favorite, still plenty wild but develop enough of the chocolate and smoky tones – which most Dominican coffees are known for – to balance all those more exotic fruity and citric tones. A bit lower acidity and best from a medium to dark roast. For an African this cup is more neutral and chocolaty, has a little more character still then classic Central American offerings. Comparatively to a milder Honduran or Mexican the cup has hints of semi-sweet spice notes that create a stronger and more complex cup. A very cool cup! Best medium to dark roasted but will hold lighter roasts much better than most Sumatra coffees. Lighter roasts have a little cool lemony acidity upfront, with some soft fruit tones giving it some jazz, balanced with a dry earthy chocolaty herbal factor with some incense like spice. As you push into the medium roasts, it will get fuller bodied with a creamy mouthfeel cutting out the more lemony floral tones, turns the cup much more chocolaty and gives depth to the exotic spice notes. Darker roasts will turn more stout like and semi-sweet. When roasting into 2nd crack one will add some cool roasty and smoky tones into the more bakers chocolaty cup profile.
