Increases the body and smoothness, but will reduce the depth of flavors a bit. If looking to impress, light roasts are where it shines. For daily drinking, medium roasts are the way to go. A candidate for dark roasts, fuller bodied, low acidity with the malty and roasty tones mix nicely.

Due to the processing this coffee is naturally very sweet, syrupy textured with a medium-full body. Its brightness leans toward citrus, more lemon than acidic lime, with nuances of apple and soft orange. The cup presents notes of peach, plum, and a light floral touch, with a background of chocolate and cocoa and soft undertones of caramel and vanilla. A subtle melon accent is noticeable, especially in lighter roasts. Good from light to dark but we thought best at a strong medium to dark roast. A good bean to go after a rich and semi-exotic chocolate tone with some wonderful aromatics and a bit of spice. Light roasts are more citric and floral with wonderful aromatics and a sweet edged, a bit punchy in the citric department and contrasts with a bit of nutty/herbal/grassy undertones. Works well but needs a much longer setup time bring out smooth and clean tastes, sharp and grassy/herbal if drank too soon. Medium roasts will bring some lovely balance to the cup and provides a clean tasting brew without waiting a week to drink it. One starts seeing the chocolate aspect but will still pull some balance with the citric and floral. Less aromatic than the light roasts, but you can still tell you have a nice Ethiopian with one sniff. Darker roasts touching or into second crack are real robust, strong and semi-sweet, more bakers-chocolate like with tea like spice in the aftertaste.

Clean, sweet and balanced, this is the Yunnan offerings for most coffee fans. Best at the light to medium roast levels: there is a little crisp citric upfront, a bit more lime than lemon, a hint of red fruit giving a sweet edge. These lovely lighter tones pull some balance with a nutty/chocolate like undertone with a bit of spice, accentuated as you push the roast darker. Medium bodied, medium brightness levels, small hints of red fruit more noticeable as the cup cools. Light roasts themselves are much more citric, good to give a longer setup if shooting light, mellow out the crispness a bit. Turns much more chocolaty at the darker roasts but will introduce potent bitter, semi-sweet chocolate like notes. Medium roasts present the best balance and would qualify as a jazzy daily drinker.

A great medium to dark roast semi-exotic daily drinker. Good body and mouthfeel, a bit lower acidity with rich chocolate and spice notes. Lighter roasting will have a noticeable crisp lemony floral edge to it balanced with a nutty/herbal/earthy dark tone. Holds up lighter but needs a longer setup and can risk a little grassy/earthy/vegetal edge, shows a little hint of caramel and is much sweeter than the fuller roasts. We found it best to push the roast into the medium category to build the richer dark tones, muting up some of the classic African brightness: comes off nice and chocolaty with some herbal/spice balance. Dark roasts are strong and semi-sweet with a full body, complimenting roasty and smoky tones. We couldn’t find a roast we didn’t like with these beans, if you roast lighter, just make sure you do not mind a little stronger citric component.

This is Sabastian’s family coffee (a wonderful Burman Coffee employee), small batch production shipped in by airplane to give our customers some of the freshest coffee poddible. Processed in early August.
Green coffee from a family farm in Miraflores, Gigante municipality (Huila, Colombia): It is a Castillo variety, washed and harvested at altitudes of 1,600–1,900 m, hand-selected. It arrives by air in small batches to preserve its freshness (harvested in late July 2025 and threshed in early August). It presents an exceptionally clean and balanced cup, very versatile depending on the roast: in light coffee, it shows a medium body with caramel and nuts, an intense floral aroma and orange-like citrus with slight herbal and spicy nuances; in medium coffee, it gains structure, with chocolate and a subtle hint of lemon predominating, with a lingering nutty note, lively acidity, and balanced sweetness; in dark coffee, it offers a robust body with deep cocoa and a hint of black tea, while maintaining moderate acidity.

A wonderful batch of Terruno Nayarita great from light to dark roasts. This is one of the higher rated lots we have seen recently: crisp, clean and a bit brighter. Light roasts will highlight the higher rating but will be a little acidic for some. Medium roasts and very smooth and make for a great every day drinker. Darker roasts retain a very sweet edge but will produce a much flatter more potent cup. Lighter roasts have a hint of citric and a red-apple sweetness, supported by a gentle lemon/mandarin brightness that’s lively but not sharp. A light floral lift rides over a chocolate–caramel foundation; as the cup cools the tastes stay together showcasing the cleanliness, adds a soft hint of ripe stone fruit. Balanced, approachable, and versatile across brew methods. Medium roasts build up a bit of body, retaining just a hint of apple like acidity, pronouncing the smooth and nutty, chocolate like tones. Darker roasts get a bit roasty, but still have a nice and sweet edge, the most chocolaty cup profile assuming you don’t mind a bit of roasty/smoky to accompany it.

Best from the lighter side of a medium roast to as dark as you want to go. A bit cleaner tasting but slightly less fruity than previous seasons. Lighter roasting presents some nice honey processed features: citric, floral, soft fruit with an almost oak/peat like finish, sweet & complex but does risk some underdeveloped tones if you nail it a little too light. Medium roasts were our favorite, still balanced and complex but will develop the traditional chocolate and smoky tones for which Dominican coffees are known for – to balance out those more exotic fruity and citric tones. A very clean traditional Sumatra cup. Best from medium to dark roasts. Fuller bodied with some nice exotic incense spice notes intermingled with a bakers chocolate and smoky cup profile. Light roast are not recommended (for almost all Indo coffees). Medium roasts were nice and balanced, a little lemony acidity upfront mixing with a bunch of spice and hints of an earthy slightly peaty chocolaty factor; a decent roast point for pour-overs or drip. Darker roasts were fuller bodied and very smoky with the spice lingering in the aftertaste, very low acidity; good for dark roast fans, espresso or blend bases.

A lovely example of Kenya coffee. Good from light to dark, we recommend a nice medium roast to showcase it. Very bright, punchy and complex at lighter roasts, a bit front loaded with citric/floral but very clean with some balance. A bit hoppy some will say with some spice notes popping out. The lighter tones will pull some balance with a semi-sweet chocolate edge but easily overpowered by the higher acidity when light roasted. Medium roasts build much better balance between the acidity (citric/floral/fruit) and the dark tones (nutty/cocoa/spice) making it less blasty of a cup, easier to drink all day. If you don’t like higher acidity, this is where to start with your roasts. Darker roasts have there place, but will kill some of what separates this cup from “average” Kenyan. Strong and semi-sweet, think bakers chocolate with herbal accents. A little smoky and roasty but presents nicely for a more exotic dark roast.

Light roasts are going to be a little front loaded with the brighter characteristics, a higher rated cup meaning one will notice some decent crisp acidity at the light-medium roasts. Will give great depth of flavor but may be a little sharp for some. Our favorite roast and a great everyday drinker was in the medium roast ballpark, builds more of a smooth and creamy cup with a sweet edge, reducing that perceived acidity to just a pinch. The two combine for a hints of caramel, quite tasty for you light roast fans. Medium roasts are richer, more of a developed chocolaty tone and decently less nutty; mutes up the soury floral edge, retains a little hint of soft fruit as the cup cools. Fairly neutral tasting and very chuggable. Darker promotes a thicker body and introduces a slightly bitter contrast that works very well for espresso.

A lovely & fresh coffee, our first new crop Peru. Best from medium to dark roasts, a good daily drinker. Medium to low acidity, with a thicker body and mouthfeel. A wonderful more chocolaty cup than shows some nuttiness. Lighter roasting will show just a pinch of citric, which provides nice depth of flavor but be a little careful ligher, too light will show some grassy/herbal tones. Medium roasts and beyond produce a smooth and rich cup, more chocolaty than nutty, pulls a peanut brittle like tone (some may say hint of caramel), not quite candy like, more peanut than brittle but we all thought it to be a good descriptor. We thought these beans best at a nice medium roast: clean, floral and semi-fruity cup. The lovely lighter tones balance with a little chocolate and spice note. Medium body, lower acidity, and a bit sweeter. The fruitiness is delicate and down the red fruit alley, strawberry, or a touch of lychee appear on the nose and palate, supported by a chocolate/caramel/spice darker note. We had one taster say it was more of a banana-like sweetness. Lighter roasting will accentuate the citric acidity and lean it towards mandarin/lemon tones leaving the cup crisper and sweeter but can pull a little earthy contrast if too light.

A very fruit forward and floral exotic Colombian. All sorts of cool unique flavors can be found in this cup from the slow dry natural processing and boutique fermentation. The brighter tones tend to range from a lemon citric component at the lighter roasts to strong stone fruit in the medium roast range. The acidity is pretty high at the lighter roasts but mellows greatly at a strong medium to dark roast. The balance of the cup comes from an almost cola-like tone that turns a bit nuttier into the darker roasts. Medium bodied, super clean with some far from traditional Colombian tones.

Good from light to dark. In general, the strongest offering out of the three, smooth, big bodied & creamy with semi-sweet chocolate notes, nutty accents and a bit of lingering spice in the aftertaste. Lighter roasting will show some stronger citric acidity comingling with stronger herbal notes, a hint of chocolate, good depth of flavors but will be a bit sharp and herbal for most. Medium roasting gets the fuller body and more chocolaty toned cup with a hint of spice, unlike the other two, this will still have a little hint of citric, leaving it a bit sweeter tasting. Darker roasting gets hefty bakers chocolate note with complimenting roasty notes, no signs of the brighter cup profile at lighter roasts. Although it’s the brighter of the PNG coffees, it has medium to low acidity comparatively to other origins.
