It features a pleasant, smooth, and well-balanced citrus acidity balancing with a nutty/chocolate dark tones with some herbal/spice accents. From medium to dark, the predominant flavor is chocolate, accompanied by sweet caramel/burnt sugar notes and a subtle aroma of roasted nuts (peanut). Light floral notes and subtle herbal/spicy nuances are also present, reminiscent of black tea on a pretty nutty base note. A smooth and sweet coffee, neither acidic nor bitter, with a round and balanced flavor profile, ideal for any brewing method.

A very nice medium to dark roast decaf. Medium roasts are a much smoother cup, a little sweet edge, nutty, with a touch of chocolate. Has a little floral overtone that makes it a bit interesting. Fuller bodied with a richer chocolate tone closer to 2nd crack. Some smokiness at second crack or into but retains its smooth and rich character. Decaf Mexican is always one of my favorite beans to get a nice and strong chocolaty note in the decafs. Lower acidity and fuller bodied, pretty hefty in its semi sweet bakers chocolate tone at fuller roasts.

A great cup of Guatemalan, a bit lower acidity than most, a semi-sweet edge to this cup. We thought it best in the medium to dark roast range. Light roasts are sweet upfront but do not develop the creamy malty notes one expects from a nice Huehue. Medium roasts have a nice slight crispness upfront, medium bodied, low acidity with more of a creamy malty tone that lingers on the tongue. Very smooth and drinkable at the medium roast level but may be too mild for some.

Great from light to dark roasts. A very clean cup, medium-bodied cup with a clear sweetness and a creamy aftertaste. Medium acidity with a citrus profile (more toward lemon) provides brightness without being overpowering. The cocoa base has a nutty undertone (nut/peanut butter) and a fruitier (citric) profile; in light roasts, blueberry notes may emerge along with a slight floral tone. Medium roasts achieve the best balance: soft citrus notes, spiced chocolate, and good structure; in dark roasts, the “baker’s chocolate” cocoa predominates, with a heavier aftertaste and very low acidity.

A great clean decaf coffee! Good from light to dark. Lighter roasting will show a little lemony crispness, rare for a decaf. Sweeter edged with a little herbal chocolate contrast. Medium roasts cut out most of the lemony crispness and rid the cup of its herbal edge. Smooth and rich, medium bodied, with a more pronounced chocolate tone; a bit floral and sweet in the aromatics, adds to the drinking experience but doesn’t come through in the tastes. Darker roasts are robust and strong, semi-sweet and very chocolaty with a roasty edge.

Ethiopian Yirgacheffe Washed Gr. 2 – Banko Chelchele
Good from light to dark but we thought best at a strong medium to dark roast. A good bean to go after a rich and semi-exotic chocolate tone with some wonderful aromatics and a bit of spice. Light roasts are more citric and floral with wonderful aromatics and a sweet edged, a bit punchy in the citric department and contrasts with a bit of nutty/herbal/grassy undertones. Works well but needs a much longer setup time bring out smooth and clean tastes, sharp and grassy/herbal if drank too soon. Medium roasts will bring some lovely balance to the cup and provides a clean tasting brew without waiting a week to drink it. One starts seeing the chocolate aspect but will still pull some balance with the citric and floral. Less aromatic than the light roasts, but you can still tell you have a nice Ethiopian with one sniff. Darker roasts touching or into second crack are real robust, strong and semi-sweet, more bakers-chocolate like with tea like spice in the aftertaste.

A very fresh and tasty Brazil! Lighter roasts show lemon, floral & soft fruit contrasted by a nuttier (almond like) undertone, a sweet edged cup. The two combine for a hints of caramel, quite tasty for you light roast fans. Medium roasts are richer, more of a developed chocolaty tone and decently less nutty; mutes up the soury floral edge, retains a little hint of soft fruit as the cup cools. Fairly neutral tasting and very chuggable. Darker promotes a thicker body and introduces a slightly bitter contrast that works very well for espresso.

Mexican Terruño Nayarita – El Cuarenteño Reserve – Washed Processed
A wonderful batch of Terruno Nayarita great from light to dark roasts. This is one of the higher rated lots we have seen recently: crisp, clean and a bit brighter. Light roasts will highlight the higher rating but will be a little acidic for some. Medium roasts and very smooth and make for a great every day drinker. Darker roasts retain a very sweet edge but will produce a much flatter more potent cup. Lighter roasts have a hint of citric and a red-apple sweetness, supported by a gentle lemon/mandarin brightness that’s lively but not sharp. A light floral lift rides over a chocolate–caramel foundation; as the cup cools the tastes stay together showcasing the cleanliness, adds a soft hint of ripe stone fruit. Balanced, approachable, and versatile across brew methods. Medium roasts build up a bit of body, retaining just a hint of apple like acidity, pronouncing the smooth and nutty, chocolate like tones. Darker roasts get a bit roasty, but still have a nice and sweet edge, the most chocolaty cup profile assuming you don’t mind a bit of roasty/smoky to accompany it.

We thought best from medium to dark roasts but works from light to dark. A clean, sweet and smooth daily drinking cup! A little fuller bodied at the light-medium roast level with a great balance between the slight winy/floral notes & nutty/malty darker tones. Similar to Guatemalan coffee. Some acidity at lighter roasts but just a hint, medium to dark roasts would be marked as low acidity. As one pushes it into the medium roast range, the very sweet nutty tones come off a bit caramel like. Still plenty malty, it will linger on the tongue. Dark roasts turn pretty strong with the sweeter malty cup profile mixing nicely with smoky and roasty notes.

A lovely & fresh coffee, our first new crop Peru. Best from medium to dark roasts, a good daily drinker. Medium to low acidity, with a thicker body and mouthfeel. A wonderful more chocolaty cup than shows some nuttiness. Lighter roasting will show just a pinch of citric, which provides nice depth of flavor but be a little careful ligher, too light will show some grassy/herbal tones. Medium roasts and beyond produce a smooth and rich cup, more chocolaty than nutty, pulls a peanut brittle like tone (some may say hint of caramel), not quite candy like, more peanut than brittle but we all thought it to be a good descriptor. A very good everyday drinker. Medium bodied, medium to low acidity; nice semi-creamy chocolaty tones with a hint of sweetness and a bit of floral. Reminiscent of a Costa Rican coffee but a bit fuller bodied and less nutty. Light roasts still show a little sharp acidity, tasty with some setup but risks a little grassy tone. Medium roasts shine and are smoothest and most balance tasting between lighter and darker tones: good chocolaty semi-malty tones with just a hint of floral. Dark roasts get a bit thicker but turn much more semi-sweet chocolaty with some smoky tones in the aftertaste. Works darker for a semi-sweet chocolate bomb, assuming you pop in a splash of mild or make an espresso out of it.

Lighter roasts get a bit nutty with a little grassy caramel and slight hint of herbal spice, tasty but does not bring forth those awesome stronger chocolate notes that Haitian coffee is known for. As one progresses towards the medium roasts it develops a lot of sweet chocolaty, malty and smoky tones with just a little hint of floral acidity, a wonderful everyday drinker. Darker roasts touching 2nd crack have a surprisingly sweet edge to it and greatly accentuates the smoky/malty tones. A great light roast bean with some strong and bright fruit forward tones balanced with a bit of spice and stellar aromatics. Its always a bit harder to pick out those traditional Geisha tones with the natural processing but if you stick lighter, you definitely get them in the aromatics, some great almost jasmine like Ethiopian aromatics with this cup. Clean as a whistle with very noticeable lemony/floral acidity accompanied with some lovely red fruit tones. Sweet, delicate and well defined at the lighter roasts. A slight warning though, a fruit forward cup with higher acidity, lighter roasted, is not for everyone.

Awesome cup this season, good from light to dark. Darker roasts which are more traditional for Haitian coffee, come off robust and strong with a floral islandy sweet edge and a smoky aftertaste. Bigger bodied and on the chocolaty spicy side of things. Being a little cleaner, this cup is very good at light to medium roasts as well; sweet with a more nutty/caramel tone, can come off a little herbal too light so tread lightly. A little acidity but not enough to push folks away. A lovely daily drinking cup. Heavier bodied and lower acidity, semi-sweet hints of floral and caramel, balanced with a nice strong earthier chocolate note. Darker roasting makes for a pretty bold cup with some added smoky factors.

Best at the light to medium roast levels: there is a little crisp citric upfront, a bit more lime than lemon, a hint of red fruit giving a sweet edge. These lovely lighter tones pull some balance with a nutty/chocolate like undertone with a bit of spice, accentuated as you push the roast darker. Medium bodied, medium brightness levels, small hints of red fruit more noticeable as the cup cools. Light roasts themselves are much more citric, good to give a longer setup if shooting light, mellow out the crispness a bit. Turns much more chocolaty at the darker roasts but will introduce potent bitter, semi-sweet chocolate like notes. Medium roasts present the best balance and would qualify as a jazzy daily drinker.

A nice clean cup, tasty from from medium to dark roasts. Fuller bodied cup with some pleasant acidity. Classic Colombian, toasted walnut and baker’s chocolate like darker tones comingle with soft acidity and medium sweetness levels. Light roasts can be a little acidic, stronger on the citric notes with just a pinch of soft fruit. A longer setup time is nice on light roasts to mellow it out a bit. Medium roasts accentuate the semi-sweet thicker nutty/walnut like tones with a little spice in the aftertaste, still has a gentle brightness upfront but brings nice balance and a little sweeter edge to the cup. Darker roasts accentuate the semi-sweet tones, turns a bit roasty tasting but works with its fuller body with a creamy mouthfeel, a good roast point if you use a splash of cream.

Lighter roasting presents some nice honey processed features: citric, floral, soft fruit with an almost oak/peat like finish, sweet & complex but does risk some underdeveloped tones if you nail it a little too light. Medium roasts were our favorite, still balanced and complex but will develop the traditional chocolate and smoky tones for which Dominican coffees are known for – to balance out those more exotic fruity and citric tones. Darker roasts are a little more complex than on the washed processed version, but not as smooth and rich.

Honduran Org. 18 Rabbit Microlot – Washed Processed
Good cup from light to dark. At light roasts it will have some lemony acidity and a sweet edge, pulls some balance with a more peanut like nuttiness. Medium roasts introduce a more chocolaty than nutty tone and mute up some of the citric making it a bit smoother of a cup but also less complex, good daily drinking territory. Darker roasts taste nice but will have some roasty/smoky characteristics along with a good body. A rich and sweet cup for dark roast fans.

Smooth, rich, delicate and clean, a wonderful example of a top notch Guatemalan. The aroma has great sweet notes. Hazel and hickory nuts, caramel, and milk chocolate. The body is light/medium and has a very silky texture on the malty side. The aroma comes through in the taste to create a wonderful balance of tones. Medium to low acidity, the brightness reduces the darker you roast. The finish is very smooth and clean with a lingering sweetness. Additionally, the cup is notably clean with a slight floral lift; a sweet, apple-like note complements the caramel and chocolate profile. The body drinks as a true medium, remaining silky and malty. Excellent on its own and especially well-suited for milk drinks (lattes/cappuccinos) thanks to its sweetness and balance.
