Description
During the harvest, each producer processes coffee with their own micro-mill and dries the coffee in the sun on patios before transporting the coffee in parchment to a centrally located warehouse where the coffee is milled and then sent for decaffeination.
This lot was decaffeinated using water process, which means green coffee is pre-soaked in water to expand the beans for caffeine extraction. The hydrated green coffee is then introduced to a unique solution of concentrated coffee solubles that draw out the caffeine while minimizing the loss of flavor compounds. Once the caffeine has been removed the green coffee is re-dried and re-bagged for transport, and the extract solution is filtered of its caffeine and recycled to be used again.
A great fresh arrival, Mexican beans always make a nice decaf, a bit neutral but lovely chocolaty and nutty tones. Best medium to dark. Good as a single origin drinking but also works decent for a blend base for those playing with espresso or contrast blends.
Tasting Notes: A very nice light to dark roast decaf. Lighter roasts are sweeter and more delicate, a little unique spice with a bit of nuttiness and just a pinch of floral. Medium roasts are a smoother cup, a little sweet edge, nutty, with a touch of chocolate. Has a little floral overtone that makes it a bit interesting. Fuller bodied with a richer chocolate tone closer to 2nd crack. Some smokiness at second crack or into but retains its smooth and rich character. Decaf Mexican is always one of my favorite beans to get a nice and strong chocolaty note in the decafs. Lower acidity and fuller bodied, pretty hefty in its semi sweet bakers chocolate tone at fuller roasts.
Roasting Notes: An easy cup to roast, right around second crack is a good starting point for a more robust chocolaty cup. Hold up lighter as well, more delicate cup in the light-medium roast range if the fuller roasts are too hefty. Very low chaff and fairly even roasting. A couple extra day setup time helps reduce any sour or floral tones if shooting for the lighter roasting points.
You may think that selecting a coffee for decaffeination is an afterthought. Well you would be wrong if you believed that about Royal Select. This lot was intentionally selected for decaffeination in collaboration with our export partners, Unión Regional de Pequeños Productores de Café Agropecuaria Forestal y de Agroindustrias Zona Huatusco (Unión Regional Huatusco)located in Veracruz Mexico. It is a community blend from small farms located in the Huatusco area. There are 1,324 members of La Union cooperative who have an unwavering commitment to organic practices for cultivating coffee. La Union carries out activities that are crucial to its members, like helping them gain access to credit and certifications. Investments for basic infrastructure needs, like road improvements, establishing local warehouses, and dry-mill facilities are also coordinated through La Union. I was surprised, I did a slow not too hot dark roast and the espresso shots came out very nice and smooth with a very low acid nutty flavor. For me this is a very enjoyable evening drink, I will be buying more.

OK… I start with a WARNING!!! If you are a Caffeine loving fool, Don’t roast this.
I roasted to both medium and medium-dark for testing. The medium, in a pour over, was surprisingly good for a decaf, so I ordered more and added it to my line up. It is hard to find an organic chemical free decaf that also tastes good. Both my wife and I actually thought it tasted really good.
Now the WARNING….
After about a week, I decided to try the Medium-dark in an Americano and really didn’t have high hopes for it. WOW!!!!! It really surprised me. My Americano was creamy, rich, full bodied and was as good as any of my normal caffeinated beans. I found myself, a caffeine-a-holic, longing for another cup to the point of making another one the next morning for my daily cup. I then placed a third order to ensure I’d have enough on hand.
I can not recommend this highly enough!!!
