Guatemalan Premium Huehue. – Finca Vista Hermosa – Z14 Small ScreenA much cleaner cup this season than the previous small bean lots, a great year for FVH. Tasty from light to dark. Lighter roasts do have some acidity, not over the top but noticeable. A little lemony winy factor up until a strong medium roast. Light roasts are a bit higher acidity and more floral, has some winy soft fruit complexities like traditional Guats but to most will come off more citric. The malty undertones are present at the lighter roasts but overpowered by the more citric/winy character. As one pushes towards a medium roast, the cup really builds some good body and rich dark tones, retaining just a hint of citric that adds some good sweetness and depth to the cup. Holds up nice dark roasted as well, the smoky malty tones are always a favorite combo.

Guatemalan Premium Huehue. – Francisco Mendez Top Lots
A great cup of Guatemalan coffee, not too acidity, a real sweet edge to this cup. Good from light to dark. Lighter roasts show a little more tart apple like acidity with just hints of a darker tone. Medium roasts have a  nice sugary sweetness upfront, medium bodied, low acidity with more of a creamy malty tone that gives some hints of caramel, the winning roast level in our book. The beans hold a dark roast very nicely, touching 2nd crack did not introduce too much smoky or roasty tones, still sweet but much stronger, hints of a winy floral aspect mixing with darker chocolate and malty-ness.

Guatemalan Huehuetenango BCT Select Washed- 
Smooth, rich and clean, this is a great example. Lighter roasts will be more floral than chocolaty with some clear acidity, clean cup but enough acidity some might want to avoid lighter roast points, a little risk of grassy tones if way light. Medium roasts are well balanced and smoother,  chocolaty with just a hint of crispness, a little spice note pops out in the aftertaste. Darker roasts are stronger and fuller bodied, chocolaty, not too roasty.

Guatemalan Antigua – Concepcion Buena Vista – Anaerobic Natural AnaCafe 14
Best served in the light to medium roast ballpark. Sweet, clean, delicate and complex. A bit citric/floral acidity upfront while super fresh, mellows 4-5 days after roasting. Decent sweeter red fruit tones accentuated by the aromatics. After some resting, the fruitiness turns a bit more grape-skin like, which we have found unique to the anaerobic coffees. A balanced cup at the light to medium roasts, a pleasant malty tone to contrast the fruit and acidity. As the cup cools one will notice a little more oaky ferment tone within the malt like profile. Strong medium to dark roasts bring out the Guatemalan roots of the cup, very malty and complex, semi-sweet and much more robust. A slight touch of fruitiness at the fuller roasts but comes off more like a barrel aged oaky tone, which does compliment the malty cup profile.
