Best at a light roast point, this is a crazy wild and super fruity cup of coffee! Stronger acidity with upfront and clear stone fruit tones balanced with just a hint of a nutty undertone. Front loaded some would say, others will enjoy the crazy sweet and fruity notes with hardly any traditional dark tones to back them up. Medium roasts do mute up some of the wild factor and bring some stronger hints of nutty and caramel to balance the cup out, but these beans are not about refined and smooth, its about a jolt of super clean acidity and wild fruit to overwhelm the senses. Although tasty from medium to dark, keep this one light to see what it is all about.

Description

Vergel Estate is located in Fresno, Tolima, Colombia, run by Marta Bayter and her sons Shady and Elias, who handle the day-to-day operations and coffee processing. The family works with surrounding coffee producers, who run small portions of the estate as separate farms. Vergel Estate grows many coffee varieties, such as Gesha, Bourbon, Java, Pacamara, Caturra  and others.

This lot is 100 percent Bourbon grown by Wilder Lasso and processed by the Bayter brothers. They enjoy experimenting with different processing methods and this is a cool anaerobic process.

Roasting Notes: A longer setup is the only trick, shoot for lighter roast points and give it 3-6 days before drinking. Fairly even roasting for a natural but chaff heavy, for some roasters, good to chop the batch size a little. This is a crisper, sharper coffee, we liked it with quicker roasts curves, but if you don’t like acidity as much as some, the beans could benefit from going a bit slower, reduced temps and 12+ minute roasts will help mute some raw acidity at the lighter roast points.
