This is not your average Colombian cup of coffee. Crazy high rated, best at the light roast points and chocked full of brighter and more fruity characteristics. These green coffee beans are clean and balanced, the first notes to hit the tongue are the pink lemonade style acidity, on the stronger side and provides plenty of sweetness and floral character to go along with it. Although a washed processed coffee, Faiber delayed running the washed processed batch for 2 days, which gives hints of red fruit to the cup, a beautiful addition and not overdone. Mixing with the higher lemony acidity is what actually gives this cup its pink lemonade taste attributes. A cool descriptor being a Pink Bourbon strain. All the lighter tones balance out well with a nutty/caramel/cola darker tone. Faint at the light roasts but gives the cup enough contrast to bring it up to the exceptional level.

A crazy clean and bright Pink Bourbon offering! They have been super hot in the market in recent years but the cost versus cup quality has always been poor… quite expensive cups and not always super tasty. This is a wonderful example, at a premium for sure, but not a bad deal by any means for an absolutely stellar Colombian.

Faiber Bolanos owns the 1.5-hectare farm Finca El Monticulo, and manages a 2.5-hectare farm for his mother as well. He has been farming since 1998 and is a member of the small but mighty grower’s cooperative called Asocoación Los Naranjos, which he joined in 2012. The group consists of about 50 smallholder farmers in and around the area of San Agustîn, Huila. Faiber is a third-generation producer and grows Pink Bourbon, Gesha, and Caturra coffee varieties.

The coffee on Finca El Monticulo is picked and combined over the course of two days, and the lot of cherries is depulped the second day. It is then fermented for 24–72 hours, depending on the weather, before being washed clean and dried for 15–30 days in a solar dryer.

Faiber works as a coffee buying liaison for Los Naranjos, which has allowed him to improve his skills as both a coffee roaster and a coffee cupper.

Roasting Notes: Easy to roast and a tasty cup from light to dark. If you like brighter crisper cups, keep it lighter roasted, if you like strong and dark toned cups, roast it a bit darker. If unsure, a nice lighter side of medium roasting should appeal to everyone. Setup really smooths it out. Even roasting and medium to low chaff.
