A very fun & tasty African natural. To see it shine, keep it in the light to medium roast range, although it’s a tasty cup from light to dark. Light roasts themselves have a stronger lemony floral tone right upfront. For an African it would not be considered high acidity but will be clearly noticeable in the taste. Behind the brighter floral notes lies a nice semi-sweet stone-fruit tone, similar to cascara or to some, strawberry’ish. The fruit and floral will quickly fade into a more robust chocolate note with some traditional spice notes kicking in mostly in the aftertaste. Medium roasts will mute the floral/fruity tones to just a hint over-top of the more robust chocolate & spice darker tones. Still exotic due to the processing but promotes more traditional Burundi like tones the darker you roast. A complex cup focused on lemon, floral and sweet tones that will pull some balance with a tea like spice note. Lighter roasts accentuate the more lemony floral acidic tones of the cup but also bring out cool soft fruit notes and the lovely jasmine spice; a nutty and dry black tea spice will linger on the tongue. Can risk a little grassy note if not quite through first crack, good to get a little development past first crack for the lighter roasts. A medium roast reduces the acidity and balances the cup with a more traditional Colombian chocolaty factor, still plenty of identifiable as exotic but not as punchy as the lighter roasts. Best from the lighter side of a medium roast to as dark as you want to go. A bit cleaner tasting but slightly less fruity than previous seasons. Lighter roasting presents some nice honey processed features: citric, floral, soft fruit with an almost oak/peat like finish, sweet & complex but does risk some underdeveloped tones if you nail it a little too light. Medium roasts were our favorite, still balanced and complex but will develop the traditional chocolate and smoky tones for which Dominican coffees are known for – to balance out those more exotic fruity and citric tones. Kayon Mountain has become a tradition around here, marks one of our favorite times of the year, new Ethiopian season! This is a grade 3 natural. Wonderful tastes and clean cup but will show the more rustic side of Ethiopians. Unlike its grade 1 cousins, G3 coffees will show stronger dark tones, with a bit fuller body. Not as delicate but still paired with a wonderful fruitiness, good sweetness and hints of floral, that every good Ethiopian natural should have.Clean, rich and sweet with a very diverse flavor set. Stone and darker fruit notes comingle with a little citrus & floral, balancing with a rustic spiced chocolate tone. The fruit, citric and floral is accentuated with the lighter roasts while the chocolate, spice and richer dark notes are accentuated at the darker roasts. Nice jammy body will be seen in the medium to borderline dark roast mark. Very dependent on roast – lighter roasting works very well for pour overs or drip machines, more delicate, fruity and sweet. Darker roasts produce much more of a bakers chocolate cup with a hint of a fruit note as the cup cools, works a bit better for espresso or cold brew. A very enjoyable cup from light to dark.

Unlike its Grade 1 cousins, this cup is much darker toned. Shines at a medium to dark roast and is full of complex chocolaty and tea like spice notes. Being natural processed, it does have some soft red fruit tones but they are mostly covered up by the tea like spice and more rustic chocolaty factor. One will be able to detect them in the aftertaste, otherwise they tend to pop out as the cup cools. Light to medium roasts can come off a bit earthy, the tea like spice is well defined but the chocolaty factor comes off pretty grassy at traditional light roasts. One really has to build up the chocolaty factor by progressing the roast closer to 2nd crack. Great for cold brew or blending at a nice medium roast, for a single origin drinker, we recommend fuller roasts.

Crisp, clean and exotic. Great aromatics: nothing like grinding a fresh Ethiopian with its floral, jasmine and spice notes to tickle your nose. Lighter roasts are filled with new crop acidity and floral notes, mostly citric but a little peachy soft fruit tone can be found. The balance of the cup comes from a semi-tea-like chocolate factor. I tend to think of it as chocolate spice notes but many tongues can pick up a little black tea note. Medium roasts have just a pinch of citric acidic, builds a thicker body and brings forth more of the chocolaty cup profile, reducing the acidity slightly. Darker roasts are always tasty for those who like fuller roasts. This is how they would traditionally serve these beans in Ethiopia. Almost a shame, for it loses the cool spice and lighter floral tone balance but equally as tasty if you like more chocolaty cups with some spice.Price: $8.29/lb - 7.09/lbPrice: $8.29 -

A solid cup from light to dark, but for most drinking, a medium roast will be the way to go. Sweet with just a pinch of citric upfront, medium bodied, good mouthfeel, just a pinch of fruitiness and ends with a nice malty undertone. Lighter roast get a bit brighter and slightly more fruity but can risk a little grassy, medium roasts present great balance to the flavors and was very easy drinking, darker roasts retain a lot of sweetness and hefty malty tones, but will get pretty roasty/smoky. If drinking for drip/pour-over, medium roasts are where to go. A very clean well balanced cup good from light to dark roasts. Crisp acidity with a small hint of soft fruit, comingle with a more chocolaty cup profile with floral accents. Can be roasted from light to dark but our favorite was a nice medium roast. Lighter roasts: the acidity & floral tones are accentuated and will be the first tastes your tongue will notice, a pinch of an island fruit tone but pretty faint, balances with a little green-tea, chocolate & spice dark tone. From a medium roast on, the acidity is very gentle and balanced with a smooth to rough chocolaty cup profile, milk chocolate before 2nd crack, bakers chocolate and smoky into 2nd crack. Medium bodied and lower acidity, these beans as well as other Kona’s are mild cups comparatively to many other origins, be in for a delicate and tasty cup with layers of goodness.

One tasty Indonesian bean for you natural processed fans. A hint of citric brightness comingles with stronger fruit tones, balancing with some classic Indonesian chocolate and earth notes. Very sweet for a Indo but will be fruity enough where traditional wet-hulled fans may not like it. Unlike its wet-hulled cousins, fruity naturals shine at the light to medium roast levels. Crisp, clean, sweet, balanced and exotic. The darker one goes, the more traditional Indonesian tones in the cup but there will be no missing the natural processed fruitiness, comes off a bit boozy and oaky at the fuller roasts giving great depth for some but can turn a little bitter/sweet if you touch 2nd crack or go darker. Still tasty for an Indo fan but the lovely light-medium roasts are where most will think it best.

Good from light to dark, very different tasting dependent on roast level. If you are a very fruit forward natural fan, sticking in the light to medium roast level is recommended. Contrary to many naturals, these beans rock at the fuller roast levels as well, touching or into second crack produces a very lively cup, not super roasty with incredible depth of flavor and good balance between light and dark tones.

A stellar new-wave coffee; highly rated and exotic. Full of citric, floral and fruit tones. We thought best served in the light to medium roast range. Higher acidity, fuller bodied with great depth to the flavors. Lighter roasts are a bit sizzling but also the most complex tasting; stronger citric/floral acidity comingle with a very sweet red fruit tone upfront, balancing with just a pinch of the classic Rwanda darker tones of herbal, spice and chocolate. Takes a little longer setup to bring out the small exotic hints in the tastes. Medium roasts build a much creamier cup profile, just a hint of crisp floral upfront that fades into a strawberry like fruitiness, balanced with strong dark semi-sweet dark chocolate like tone. Dark roasts themselves are still very lively cups but can come off a bit sour/bitter comparatively. They are fuller bodied accentuating the robust chocolate and spice notes but not a delicate cup like the light-medium roasts.

Medium roasts mute much of the tea like spice turning the cup more chocolaty and semi-sweet, hints of fruit as the cup cools but hardly noticeable while hot. Anaerobic coffees are fermented coffees. They use sealed containers to control the fermentation. There are no rules for the farmer, one can produce low fermentation coffees similar to washed processed using this method, to complete ferment bombs way beyond most natural processed beans. Unlike last season, in which this offering was more of a ferment bomb, this season, it is much more refined, definitely the most fruity and citric out of the three offerings but not nearly as over the top, much cleaner and more balanced in its tastes.
Best at the light to medium roast levels. Comparatively to the other more traditional Zambia offerings, this cup has stronger acidity, a thicker body, stronger fruit notes ranging from citric/tropical to a bit of classic red fruit. One can still see the classic Zambia cup profile with its darker toned contrast, nice and chocolaty with a bit of spice. Easily the best depth of flavor out of the three: all sorts of delicate little flavors pop out at the lighter roast points especially as the cup cools. Light roasts are the most citric and fruit, produces a clean cup with a little chocolate/spice balance. The soft fruit tone is a bit covered up by the brightness at light roasts, will be easier to see as the cup cools or the beans setup for a longer period. Medium roasts will pull a lot of the citric out of the cup, more along the lines of a buzzy acidity versus citric, a chocolaty cup with pretty exotic fruity highlights. Will pick up a little woody barrel aged tone to go along with the slight fruitiness to let you know you have something exotic. Darker roasts are interesting and strong, but will be bittersweet, not creamy and smooth like the washed processed.

Best at the light to medium roast level. Good bit of citrus and red fruit upfront balanced with a thicker chocolate and spice note. Light roasts get a very jazzy stronger citric tone, with just a hint of a dark tone balance. Floral and sweet edged, with an emphasis on the fruitiness of the cup. Medium roasting brings the best of both worlds, some soft fruit, some chocolate and spice: medium to full bodied and far less sharp than the lighter roasts, but also a bit less fruity. More of a chocolaty cup with fruity highlights. Dark roasts get even fuller bodied but burn out some sweetness, taste like semi-sweet chocolate on the roasty/smoky side, thick with a bit of spice in the aftertaste. A hint of fruitiness as the cup cools but hard to tell its natural processed roots at darker roasts.
