A very nicely balanced, more neutral cup of coffee. Good body, a little hint of acidity upfront providing some floral and soft fruit at the lighter roasts, balanced with a semi-sweet nutty/chocolaty like notes. Super light roasts risk a little grassy/herbal but it straightens out at a city+ (medium) and holds up as dark as you want to take it. The darker you go, the more body and edgy chocolate the cup will pick up, once you hit 2nd crack, expect some smoke and roasty tones to compliment the nutty/chocolaty factor.

Most would consider this a medium to dark roast coffee, but does have some jazz at lighter roast points. Darker toned, semi-sweet coffee with lower acidity and a fuller body. Filled with rich chocolate/nutty/herbal/spice like tones. Great depth of flavor without all that citric and fruity that often comes with higher rated cups these days.
Lighter roasting promotes the more nutty/herbal, darker roasting chocolate & spice. Lighter roasting took 4-5 days after roasting to get tasty, medium to dark roasts were tasty from day 1.

A very fresh and tasty Brazil! Lighter roasts show lemon, floral & soft fruit contrasted by a nuttier (almond like) undertone, a sweet edged cup. The two combine for a hints of caramel, quite tasty for you light roast fans. Medium roasts are richer, more of a developed chocolaty tone and decently less nutty; mutes up the soury floral edge, retains a little hint of soft fruit as the cup cools. Our third batch of Brazil Bahia, a lovely small production Brazilian. This lot 3 is less fruit forward than previous batches. Hints of soft fruit as the cup cool, but mostly about the rich and sweet nutty and chocolaty tones.
Great from light to dark. A pinch of fruity acidity comingles with nutty and chocolate like tones, good mouthfeel and fuller bodied. Light roasts come off a bit more fruit forward and nutty, has a very sweet edge with a bit of a boozy finish, medium to dark roasts show a much creamier cup showcasing the nutty and chocolate tones with far less detectable fruitiness. Lower acidity and clean as a whistle make this cup a wonderful daily drinker. A very sweet cup, coming from the seeds having a longer time in the ripe cherries before processing, also provides the hint of red fruit as the cup cools. Great depth of flavors, this batch is a cup every Brazilian fan will love.

Best at a light to medium roast. This is a very showy, bright and fruit forward coffee that is just slightly milder than the natural processed. Light roast themselves have a crisp lemony brightness that quickly fades into sweet and winy fruit notes (somewhere between red fruit & blueberry), balancing with a little hint of the spiced chocolate darker tones seen across the board on the Yunnan coffees. A bit sharp but very sweet and fruity. Turns a bit oaky/boozy as the cup cools. Medium roasts build good body and mouthfeel, muting most of the citric tones but not the fruitiness, it cuts right through the more noticeable chocolate and spice tones. Darker roasts are not highly recommended, gets a bit roasty, sweet, with strong spice tones but leaves the cup a bit swampy tasting with the comingled fruit tones.

This is one exotic coffee even for natural fans. The linkage in taste to red wine (lighter roasting) or rum (darker roasting) is pretty wild. We have had “winy” coffees before, but not like this. Best served at the light to medium roast level, but quite interesting darker roasted as well. Lighter roasting accentuated the red wine like attributes, hints of citric with a very fruity edge: sweet, oaky, nutty, a little boozy in the finish. Although I know I was not drinking red wine, it really comes close to tricking the tongue. Medium roasts tame the cup a bit, still plenty winy and fruity but presents a smoother, less wilder version of the lighter roast points. Spice notes clearly pop out in the medium roast level starting to give some spiced rum like tastes in the background. Darker roasts really bring forth the sweet rum like spice notes balanced with a molasses like darker tone and a fuller body.

A great clean, fresh and exotic Colombian offering. Great from light to dark roasts. Light to medium roast points were our favorite, showing the uniqueness of the offering very well. Citric/floral acidity mixing with a little soft fruit tone, pulling some balance with a sweet edged nuttiness. With the red fruit and more citric/floral components, it creates a link to an Ethiopian taste upfront but will balance with the classic Colombian features of good body and nutty tones. Light roasts are very bright, medium roasts get fuller bodied and smoother, darker roasts are hefty and slightly edgy, but bring some uniqueness over your classic Colombian dark roast, much sweeter with hints of floral and fruity overtones.

Medium bodied cup with good mouthfeel, on the nutty/chocolaty side with a hint of fruitiness as the cup cools. Works from light to dark but we liked a strong medium roast the best; rich cup with an emphasis on the smooth nutty/chocolate tones. Lighter roasting accentuates a little lemony crispness and more noticeable fruitiness. A very nice and clean Costa. Lighter roasts will show that classic Costa sweet floral acidity, a little bit on the lemony side balanced with a little dry nutty/chocolate undertone. As the roasting pushes more into the medium category, the cup develops a bit more body and reduced acidity levels giving a much smoother mouthfeel and more defined chocolaty factor. Creates a wonderful balance of tones. A little lighter floral, a little chocolaty/nutty, very pleasant drinker. Darker roasts hold up nicely as well, turn the cup more stronger and more bakers chocolate like, the roasty notes from darker roasting do compliment the cup. Much more of a chocolate bomb with slightly nutty accents.

Lighter roasts are brighter, sweeter and more floral, balanced with hints of dryer, nutty undertones. Medium roasts had the best balance, smooth with a slight chocolaty edge and pronounced nuttiness in the aftertaste, just a hint of crispness to the cup. It does get a good lemongrass tone at lighter roasts with a soft fruit tone as the cup cools, crisper cup with a slight nutty tone. Turns much more chocolaty into the medium or dark roasts. A great clean decaf coffee! Good from light to dark. Lighter roasting will show a little lemony crispness, rare for a decaf. Sweeter edged with a little herbal chocolate contrast. Medium roasts cut out most of the lemony crispness and rid the cup of its herbal edge. Smooth and rich, medium bodied, with a more pronounced chocolate tone; a bit floral and sweet in the aromatics, adds to the drinking experience but doesn’t come through in the tastes. Darker roasts are robust and strong, semi-sweet and very chocolaty with a roasty edge.

A very nice medium to dark roast decaf. Medium roasts are a much smoother cup, a little sweet edge, nutty, with a touch of chocolate. Has a little floral overtone that makes it a bit interesting. Fuller bodied with a richer chocolate tone closer to 2nd crack. Some smokiness at second crack or into but retains its smooth and rich character. Decaf Mexican is always one of my favorite beans to get a nice and strong chocolaty note in the decafs. A lovely slightly-exotic daily drinker. Light to medium roasts are preferred with our favorite roast being right in the middle of the cracks. Lighter roasts have a hint of floral/citric acidity with just a touch of sweet and delicate red fruit coming from the honey processing. A bit on the nutty/chocolaty side for its balance, starts as a dry nutty at very light roasts, turns more chocolaty as the roast gets darker.A little front loaded with the more acidic and fruity tones at traditional light roasts. Medium roasts have better balance between light an dark tones cutting out some acidity; smooth, rich, sweet edged. Dark roast loses the more exotic acidity and fruity edge but turns very thick, nutty, semi-sweet chocolaty with smoky accents.

Kayon Mountain has become a tradition around here, marks one of our favorite times of the year, new Ethiopian season! Beautiful coffee and screen.Clean, bright, sweet with a very diverse flavor set. Stone and darker fruit, citrus & floral, and spiced chocolate tones are the main flavors one can see in this cup, either accentuated or muted depending on roast level. Nice jammy body will be seen in the medium to borderline dark roast mark. Very dependent on roast – lighter roasting gives much more of the citrus, red-fruit with just a hint of a spicy chocolaty factor, a much dryer finish. Darker roasts produce much more of a bakers chocolate cup with a hint of a strawberry like fruit note and good sweetness, far less acidic. A very enjoyable cup from light to dark.

A wonderful light to medium roast coffee. The cup is complex, sweet, fuller bodied, with rich darker tones. A rare find, most Ethiopians are much thinner and delicate, with more of the taste emphasis on the acidic (citric/floral) notes. Tea like spice will dominate the tastes with just a hint of lemony/floral crispness upfront (unless you hit the darker roast points). Hints of jasmine in the aromatics provide a wonderful depth to the cup.

Great example of classic Guatemalan coffee. Best in the medium roast ballpark. Clean, rich & sweet cup; medium bodied with a little new crop winy acidity upfront. Lovely nutty & malty darker tones to balance the brightness. Hints of a fruitiness as the cup cools with “before 2nd crack” roast levels. Will handle lighter or darker roasts as well. Light roasts will be brighter, a bit more lemony with the malty tones just peeking out, a sweeter edge to lighter roasts but not as balanced nor malty. Medium roasting really pulls together a tasty treat but you can take it lighter or darker depending on personal taste preference.
Hints of floral mixing with smooth nutty & malty features. Will show some winy citric and fruit acidity in the light to medium roast spectrum but all in all a medium to low acidity brew with a medium body.
Smooth, clean and sweet edged, a cup we are more than willing to drink all day. Guatemalans almost always hold dark roasts nicely for adding a little sweet malty note to the smoky and roasty tones is a tasty mix.

Much cleaner processing this season which is a perk, a point higher rated, but a little less fruity/wild of a cup. Hints of a red fruit at lighter roasts, especially as the cup cools. A bit fuller bodied and on the sweeter side, balanced with the bakers chocolate like earthiness (a good contrast) found in the other Haitian coffees. Lighter roasts will let the exotic profile shine but be a bit punchy with floral and citric tones, risks a grassy tones if you get too close to first crack. Medium roasts were our favorite, better balance with a pronounced chocolaty darker tone along with the more exotic floral and fruit. Darker roasts touching 2nd crack are far less fruity and hold more true to the Haitian profile, a little floral acidity still comes through the cup but strong and smoky with almost no hint of being a slow dry honey processed.

Awesome cup this season, good from light to dark. Darker roasts which are more traditional for Haitian coffee, come off robust and strong with a floral islandy sweet edge and a smoky aftertaste. Bigger bodied and on the chocolaty spicy side of things. Being so clean this cup is great at light to medium roasts as well; hints of lemony floral, crisp, sweet with a more nutty/caramel tone. A great medium to dark roast coffee. Robust and strong with an exotic more island premium sweet edge. Lighter roasts get a cool semi-floral sweet tone upfront balanced with a little grassy caramel and slight hint of herbal spice, tasty but does not bring forth those awesome stronger chocolate notes that Haitian coffee is known for. As one progresses towards the darker roasts it gets much fuller bodied and chocolaty (more bakers chocolate than milk) with just a little hint of floral acidity at the full city roast. A very clean traditional Sumatra cup. Best from medium to dark roasts. Fuller bodied with some nice exotic incense spice notes intermingled with a bakers chocolate and smoky cup profile. Light roast are not recommended (for almost all Indo coffees). Medium roasts were nice and balanced, a little lemony acidity upfront mixing with a bunch of spice and hints of an earthy slightly peaty chocolaty factor; a decent roast point for pour-overs or drip. A wonderful example of darker toned, thicker Mexican coffee. Medium roasts are sweet, smooth, more nutty than chocolaty, while darker roasts are strong with semi-sweet cocoa notes. A nice tasting coffee from light to dark. We thought it best right around a medium roast for daily drinking but depending on what you like, holds up well lighter or darker. Light roasts one can see the linkage to Kenya; citric and floral upfront, a sweet edge, thicker chocolate/spice undertones, hints of caramel with a little setup in the aftertaste. Not as punchy as most Kenyan offerings, but along the same line of tastes. Medium roasts really mellow the cup. Smooth most would say, a bit more neutral with just a hint of the floral and spice seen at the lighter roasts. Reminded us of a cross between the Mysore Nuggets and a nice Costa Rican coffee. Great for daily drinking. Darker roasts touching or into second crack retain the sweet edge and put a more malty/smoky taste into play with some lingering spice in the aftertaste.

Medium bodied with a sweeter edge, a cup almost anyone would enjoy. Kind of like a Sumatra coffee without all the earthy funk.

Good from light to dark, very different tasting dependent on roast level. If you are a very fruit forward natural fan, sticking in the light to medium roast level is recommended. Contrary to many naturals, these beans rock at the fuller roast levels as well, touching or into second crack produces a very lively cup, not super roasty with incredible depth of flavor and good balance between light and dark tones.

Medium to low acidity, the cup does have some jazzy more floral tones at the lighter roast points, some chocolaty factor to balance but leans on the more nutty side of things, pleasant to drink and on the crisper side but not overly acidic. Medium roasts and beyond produce a smooth and rich cup, more chocolaty than nutty, pulls a peanut brittle like tone (some may say hint of caramel), not quite candy like, more peanut than brittle we all thought it to be a good descriptor. We thought best served in the medium roast range, but tasty from light to dark. A very sweet cup at any roast point. Lighter roasts have some stronger citric/floral acidity, a little hint of a grape-skin like fruitiness and a spiced (herbal) chocolate undertone. Medium roasts build a much creamier cup profile, just a hint of crisp floral upfront that fades into a strawberry like fruitiness, balanced with a spicier chocolate dark tone. Dark roasts themselves are a bit flatter but still very sweet edged, hardly fruity but makes up for it with the fuller bodied more robust chocolate and spice notes.

Great from light to dark but most would consider it a light to medium roast coffee to see it shine. We couldn’t find a roast level or curve we didn’t like; a complex & chocolaty coffee. Lighter roasts will have a crisp lemony/floral acidity, a hint of soft fruit, balanced with a chocolate and spice darker tone; sweet edged, winy, and floral. A cup bound to impress almost every coffee fan. Medium roasts mellow the citric acidity promoting a rich, smooth & chocolate cup with some hints of classic African spice. Darker roasts were much more chocolaty but smooth and clean with some complimenting smokiness.

A hint of soft fruit can be seen at the light to medium roasts but pretty faint, not super noticeable until the cup cools. Lighter roasts will show some lemony acidity and can accentuate the fruitiness of the cup but often will come off a bit too dry. A good hefty cup best from medium to dark roasts. Medium to full bodied with a bit of acidity behind it; buzzy citric/floral brightness balanced with a strong chocolate and spice darker tones. Similar to Rwanda/Burundi/Kenya but with a bit more body and stronger cup features. A clean well rated cup; lighter roasts accentuate the brighter more floral tones, a bit more showy of a cup but not as chuggable, can pull a little herbal balance. A nice medium roast was our favorite bringing excellent balance between the sweet floral and chocolate/spice. A hint of fruitiness as the cup cools but hard to tell its natural processed roots at darker roasts.
