The aroma is very nutty and sweet. There was a surprising hint of smoke on the palate. Full bodied and low acidity – this is a traditional tasting Brazil – thick, creamy, nutty and semi-sweet. At the darker roasts a very sweet first taste, almost a little fruity, and then quickly turns darker-toned with a bakers chocolate and slightly toasted walnut flavor. Great blend base for espresso or adding body with darker tones although many will love it as an single origin drinker.

Far from your average Brazil, this is a more traceable, sustainably farmed lot from the harder-to-access family plots of the “other” Brazil. A great clean decaf coffee! Good from light to dark. Lighter roasting will show a little lemony crispness, rare for a decaf. Sweeter edged with a little herbal chocolate contrast. Medium roasts cut out most of the lemony crispness and rid the cup of its herbal edge. Smooth and rich, medium bodied, with a more pronounced chocolate tone; a bit floral and sweet in the aromatics, adds to the drinking experience but doesn’t come through in the tastes. Darker roasts are robust and strong, semi-sweet and very chocolaty with a roasty edge.

A lovely slightly-exotic daily drinker. Light to medium roasts are preferred with our favorite roast being right in the middle of the cracks. Lighter roasts have a hint of floral/citric acidity with just a touch of sweet and delicate red fruit coming from the honey processing. A bit on the nutty/chocolaty side for its balance, starts as a dry nutty at very light roasts, turns more chocolaty as the roast gets darker.
A little front loaded with the more acidic and fruity tones at traditional light roasts. Medium roasts have better balance between light an dark tones cutting out some acidity; smooth, rich and sweet edged. Dark roast loses the more exotic acidity and fruity edge but turns very thick, nutty, semi-sweet chocolaty with smoky accents.

Refisa is a washed Grade 1 coffee from the emerging West Arsi region of Ethiopia, grown by smallholder farmers in the villages of Roricho, Bulga, and Solena at elevations up to 2,070 meters above sea level. Processed at SNAP’s Refisa Washing Station under the direction of Negusse Debela, this lot represents the best of what Nensebo has to offer. A region that, until recently, was sold simply under the broader Sidamo label, now earning its own distinct identity in the specialty coffee world. In the cup, Refisa delivers a clean, bright, and layered experience: floral notes of jasmine and coffee blossom at the forefront, complemented by lemon, mandarin, and peach, with a honey-like sweetness and a soft caramel finish that lingers beautifully. A great super fresh example of Antigua coffee, follows those wonderful floral versus chocolaty notes that made the region so famous. Medium roasts are recommended but good from light to dark. Lighter roasts will accentuate the lemony floral tones of the cup, the chocolaty factor will be just a hint but noticeable and smooth, a bit of nuttiness will linger in the aftertaste not present in further roast levels. Medium roasts are very clean and balanced – not too acidic, not too bitter – sweet edged and will have wonderful mix of tones. Darker roasts and smooth and semi-sweet, low acidity and very chocolaty.

A great medium to dark roast coffee. Full bodied, low acidity, great mouthfeel, robust and strong coffee with hints of a exotic spice. Lighter roasts get a cool semi-floral sweet tone upfront but will pull more towards grassy caramel with a slight hint of herbal spice. As one progresses towards the darker roasts it gets much fuller bodied and creamy with clean chocolate/malt like tastes, a little hint of floral acidity at the full city roast level. Into 2nd crack adds some complimenting roasty/smoky tones that with the fuller body and malty profile, will be quite the tasty treat.

Besides a chocolaty factor one will get some herbaceous nutty/caramel/floral like tones at the medium to dark roast points, gives it some nice complimenting depth without being too exotic. We all thought it was at its best right around a full city – smooth without too much of a roasty note and great chocolaty tones.

Best from a medium to dark roast, wet-hulled coffees are not light roast coffees no matter how premium of an offering. Hints of citric crispness and soft fruit with a little sweeter chocolate edge, pulls some balance with some earthy spice (the good kind). Very clean cup for a Sumatra that is drinkable and balanced from a medium roast and beyond. The darker you roast, the fuller the body gets along with reducing any hints of acidity. Into second crack will turn more into a chocolaty spice noted treat but will reduce the sweeter edge. Picks up some complimenting roasty and smoky tones into the more bakers chocolaty cup profile.

Similar to the Sigri coffee but with just a pinch of brightness and no fruitiness, very clean in its profile. Smooth, rich and chocolaty with some spice note accents. Most would call it a pretty sweet chocolaty cup with a bit of spice. Very smooth cupping this year with minimal herbal tones or earthiness. Medium bodied with a sweeter edge, a cup almost anyone would enjoy. Kind of like a Sumatra coffee without all the earthy funk. Best served in the medium to dark roast levels but some will find joy at lighter roast points with a longer setup.

A great daily drinking Peru! Best right around a medium roast but works well from light to dark. It stands out for being a very clean and sweet cup. At lighter roast levels it has some crisp acidity, not over the top but noticeable, gives a quick hit lemon and floral that will balance with nutty and chocolate like darker tones. Small hints of caramel and dried fruit will pop out with a little setup. At medium roast levels, you get more of a smooth easy drinking cup, less acidity with accentuated nutty/chocolate tones, a hint of spice in the aftertaste, provides the best balance of light/dark tones. Darker roasts are a little flat and roasty, but on the more neutral side, classic darker roast beans: smooth, rich and on the roasty chocolate side of things with a little nuttiness in the aftertaste.

Tanzanian BCT Select Peaberry
Tanzanian peaberry is always high on our list for darker roast beans: rich and chocolaty cups with robust and unique spice notes. This one being fresh as can be works pretty well from light to dark, if too light it can get a little grassy/herbal, but a clean and balanced cup with just a little development past first crack, a city+ roast they would call it. Retains its cleanliness into the darker roast points. Lighter roasts are going to be more acidic, not quite like a Kenya but a pretty clear citric edge balancing with a little hint of chocolate. Hit the roast right and you will see a pinch of caramel sweetness with a longer setup, but get it a bit too light, will have an herbal edge. Medium to dark roasts are pretty bullet proof. Medium will still show a hint of acidity, darker will lose it all. Either roast level will be nice and chocolaty with some spice behind it. If your a cold brew fan, lighter roasts points were pretty awesome, no risk of herbal and it popped out the sweeter caramel note much easier, a lighter bodied and sweeter cup.
