A very nicely balanced cup of coffee. A little hint of acidity upfront providing some floral and soft fruit at the lighter roasts, balanced with a semi-sweet nutty chocolaty factor. Super light roasts risk a little grassy/herbal but it straightens out at a city+ (medium) and holds up as dark as you want to take it. The darker you go, the more body and edgy chocolate the cup will pick up, once you hit 2nd crack, expect some smoke and roasty tones to compliment the nutty/chocolaty factor.

A very fresh and tasty Brazil! Lighter roasts show lemon, floral & soft fruit contrasted by a nuttier (almond like) undertone, a sweet edged cup. The two combine for a hints of caramel, quite tasty for you light roast fans. Medium roasts are richer, more of a developed chocolaty tone and decently less nutty; mutes up the soury floral edge, retains a little hint of soft fruit as the cup cools. Fairly neutral tasting and very chuggable. Darker promotes a thicker body and introduces a slightly bitter contrast that works very well for espresso.

A great clean decaf coffee! Good from light to dark. Lighter roasting will show a little lemony crispness, rare for a decaf. Sweeter edged with a little herbal chocolate contrast. Medium roasts cut out most of the lemony crispness and rid the cup of its herbal edge. Smooth and rich, medium bodied, with a more pronounced chocolate tone; a bit floral and sweet in the aromatics, adds to the drinking experience but doesn’t come through in the tastes. Darker roasts are robust and strong, semi-sweet and very chocolaty with a roasty edge.

A fresh and great tasting classic Ethiopian! This is not a super fruity natural, would be considered a darker toned, lower acidity, chocolaty cup. One can tell its natural processed roots with its sweetness and thickness and its Ethiopian roots with highlights of spice & fruity/floral notes throughout the roast range. Best served in the light to medium roast range for drip brew for it will show its best balance and promote a hint of fruity/floral. Turns into a chocolate bomb at the darker roasts, more on the dark chocolate side, which would work wonderfully for espresso or cold brew. Good from light to dark but we thought best at a strong medium to dark roast. Light roasts are more citric and floral with wonderful aromatics a sweet edged, a bit punchy in the citric department and very little of that wonderful chocolate tone that fuller roasts will bring. Medium roasts will bring some lovely balance to the cup, less aromatic than the light roasts, but you can still tell you have a nice Ethiopian with one sniff. A pinch of crispness upfront on top of a well developed chocolaty base tone. A unique spice note pops out, a stretch for some, but we would say slightly minty. A lovely coffee. Low acidity, medium body with rich and robust darker tones ringing throughout the cup. Medium to dark roasts are where these beans shine. Lighter roasting without much acidity will leave the cup a bit nutty and lacking but clean. Starting at about a medium roast the cup builds a wonderful chocolate note with some smoky and malty overtones. A bit on the sweeter smoother side, a tasty treat. Darker roasts, close to touching 2nd crack and where the much more robust tones pop out of the cup, reminiscent of a nice Haitian cigar.

Fuller bodied, a little hint of acidity at a medium roast, a definite go to for our strong-medium or dark roasts here at Burman Coffee. Pulls some molasses undertones as ones pushes into second crack roasts. Hints of slight smoky tone at darker roast.

A beautiful tasting bean this season: slightly fruitier but still balances with traditional Indonesian character. Hints of acidity with stronger fruitiness at lighter roasts, strong fruit/oak tones on a more nutty/earthy/chocolaty profile at darker roast points. No missing the wild side in this cup. Medium roasts are where one should shoot for their first roast, mutes some nutty tones and pronounces the chocolaty factor for some balance, still plenty of wild fruity natural processed tones in the cup. Dark roasts will introduce some smoky accents but retain great sweetness. A great balance of slow dried natural with thick and creamy dark tones all in one cup.

Tasty from medium to dark. We preferred it a bit on the darker side. Lighter roasting is wild and decently fruit forward, sweet with a little acidity upfront; winy and brandy like with some lingering dry nutty/earthy tones, a bit of floral in the aftertaste, good but not chocolaty enough for us. Medium roasts mellow the cup a bit, turning it more chocolaty, fuller bodied and refining the fruitiness, making it a cup everyone will love, not just natural processed fans. Reminiscent of a nice Yemen Mokka but a bit more brandy like. Smooth and easy drinking. Dark roasts worked exceptionally well. Chocolaty but not overly roasty, sweet with just a pinch of fruit in the aftertaste. A bit of bolder spice compliments the more delicate features: great mouthfeel.

A very clean traditional Sumatra cup. Best from medium to dark roasts. Fuller bodied with some nice exotic incense spice notes intermingled with a bakers chocolate and smoky cup profile. Light roast are not recommended (for almost all Indo coffees). Medium roasts were nice and balanced, a little lemony acidity upfront mixing with a bunch of spice and hints of an earthy slightly peaty chocolaty factor; a decent roast point for pour-overs or drip. Crisp, clean and fresh, a great coffee from light to dark. A less acidic Kenya with great balance, mouthfeel and depth of flavors. At light roasts it will still have some brighter citrus qualities but will not pucker ones mouth. Kenyan coffees in general can be pretty strong. It has hints of chocolate, fruit & herbal spice along with the citrus and floral. Medium roasts bring the best balance to the cup accentuating the chocolaty tones and reducing the brighter notes just a hint. Darker roasts make that classic Kenya herbal tone pop right out and is more down the potent bakers chocolate alley. Very clean with increasing body as the roast gets darker. A very clean, exotic and balanced cup of coffee. Although still considered a higher acidity cup, this offering is more about the fuller body and complex darker tones. Especially at lighter roasts, one will see a more citric style acidity, comingling with a green tea like spice, clean as a whistle, but may be a little sharp for some. Medium roasts bring a more potent chocolaty cup with some floral highlights, lingering spice in the aftertaste. Darker roasts get much thicker and semi-sweet, would put in on the bakers chocolate side of things with some soft fruit and spice lingering on the tongue, a little smoky if you go real dark.

A very clean and fresh batch from Selva Negra. A little citric & floral acidity upfront, balanced with nice complex nutty & malty undertones. Light roasts are going to be a little front loaded with the brighter characteristics, a higher rated cup meaning one will notice some decent crisp acidity at the light-medium roasts. Will give great depth of flavor but may be a little sharp for some. Our favorite roast and a great everyday drinker was in the medium roast ballpark, builds more of a smooth and creamy cup with a sweet edge, reducing that perceived acidity to just a pinch. A nice medium to dark roast more potent Nicaraguan offering. Medium to full bodied with just a little hint of acidity. Strong Medium roasts were our favorite with thicker more complex malty tones, a sweet edge, hints of herbal spice and almost no acidity, a good daily drinker being very smooth. Darker roasts produce a similar cup but turn it semi-sweet with complimenting smoky tones, not quite as smooth but has the heft many darker roast fans will love.

A clean, sweet and smooth cup of coffee one can drink all day long! A little fuller bodied at the light-medium roast level with a great balance between the lighter winy/floral notes & nutty/malty darker tones. Similar to Guatemalan coffee. Some acidity at lighter roasts but just a hint, medium to dark roasts would be marked as low acidity. As one pushes it into the medium roast range, the very sweet nutty tones come off a bit caramel like. Still plenty malty, it will linger on the tongue. Dark roasts turn pretty strong with the sweeter malty cup profile mixing nicely with smoky and roasty notes.

Wonderful aromatics accompany lighter roasts but could be a little too grassy/sharp for some. Medium roasts are more chocolaty, balancing with the spice nicely, less woody, more bold semi-sweet clove like spice. Lighter roasts have some stronger citric/floral acidity, a little hint of a grape-skin like fruitiness and a spiced (herbal) chocolate undertone. Medium roasts build a much creamier cup profile, just a hint of crisp floral upfront that fades into a strawberry like fruitiness balanced with a spicier chocolate dark tone. Medium roast points provide a smooth cup on the nutty/chocolaty side, sweet tea flavors and a hint of citric. A little herbal spice lingers in the aftertaste but very mild comparatively to most Africans. Darker roasts add complimenting roasty notes, a sweet burnt sugar and chocolaty cup that is jazzed up with a little spice, lower acidity and a fuller body. Darker roasts get more like the Dominican with strong bakers chocolate and smoky tones, a hefty cup with very low acidity.

A nice and clean taste, good from light to dark. Mostly these beans will appeal to medium-dark roast fans but being an exceptionally clean cup, it has some lovely balance and is quite tasty at lighter roasts. Similar to its Indonesian cousins (except washed processed), it gets real hefty into the dark roasts promoting smoky and chocolaty tones with stronger spice notes. Lighter roasting it is more delicate and floral, slightly fruity with some detectable lemony crispness, sweet edged, medium bodied with hints of a chocolaty factor.

Yemen Mocca Khulani – Pearl of Tehama
A wonderful old world natural filled with rustic chocolate, spice and hints of fruitiness. The cup is lower acidity with good body and mouthfeel. Yemen coffees are the rare cup where you can occasionally see a “banana” like fruit tone – don’t worry though, its a little bit of a reach for banana, its not like eating a banana or banana flavored coffee, although with developed tongue, most can pick it up. Red fruit and bakers chocolate are the dominate tones – fruit is accentuated with lighter roasts, chocolaty with darker roasts. A lovely super complex old world natural.
