Awesome cup this season, good from light to dark. Darker roasts which are more traditional for Haitian coffee, come off robust and strong with a floral islandy sweet edge and a smoky aftertaste. Bigger bodied and on the chocolaty spicy side of things. Being a little cleaner, this cup is very good at light to medium roasts as well; sweet with a more nutty/caramel tone, can come off a little herbal too light so tread lightly. A little acidity but not enough to push folks away. A lovely daily drinking cup. Heavier bodied and lower acidity, semi-sweet hints of floral and caramel, balanced with a nice strong earthier chocolate note. Darker roasting makes for a pretty bold cup with some added smoky factors.

Coming from family farms organized through Cooperativa Café Timor (CCT) and is sourced from the regions of Ainaro, Ermera, and Liquiçá, grown at 800–1600 masl and washed then dried on raised beds. The listed variety is Timor Hybrid a naturally occurring Arabica × Robusta cross first identified in Timor in the 1920s, widely known for its rust resistance used in many Arabica breeding lines. In the cup it’s sweet, comforting, and clean, led by plum over a base of almond, caramel, and chocolate, with a smooth, well-rounded profile and gentle sweetness rather than sharp acidity. Anaerobic coffees are fermented coffees. Sealed containers are used to control the fermentation process. There are no fixed rules for the coffee farmer; this method can produce coffees with low fermentation, similar to those processed using the wet method, or coffees with a much more intense fermentation, far exceeding most naturally processed coffees. Unlike the previous season, in which this coffee had a much more intense and fermented flavor, this season’s offering is much more refined, undoubtedly the most fruity and citrusy of the three, but without being excessive, resulting in a much cleaner and more balanced taste. This lot features controlled fermentation that highlights its fruity and citrus notes without becoming overpowering, with hints of chocolate and spice. Sourced from a pioneering farm founded in 1972 with a significant positive impact on the local community (providing access to water, schools, and a clinic on the farm itself), this lot is best roasted to a light or medium level and benefits from extended rest after roasting to allow the delicate fruit aromas and deep cocoa tones to fully develop.

Medium bodied, medium brightness levels, small hints of red fruit more noticeable as the cup cools. Light roasts themselves are much more citric, good to give a longer setup if shooting light, mellow out the crispness a bit. Turns much more chocolaty at the darker roasts but will introduce potent bitter, semi-sweet chocolate like notes. Medium roasts present the best balance and would qualify as a jazzy daily drinker.

Medium to dark roast beans & a great daily drinker! This cup is very thick and creamy, filled with semi-sweet chocolate and nutty tones. A very easy to drink coffee. A hint of soft fruit can be seen at the light to medium roasts but pretty faint, not super noticeable until the cup cools. A bit of peppery spice at the darker roasts with some complimenting roasty and smoky tones. Lighter roasts will show some lemony acidity and can accentuate the fruitiness of the cup but often will come off a bit too dry. These beans are more about the creamy fuller bodied and smooth chocolate and nutty tones which will come out from medium roasts and beyond.

Nsunzu is the youngest of Zambia’s NCCL estates, set at the foot of Mount Nsunzu in the Northern Province. Nsunzu’s first full crop was harvested in 2020 and despite the ability to mechanize, the estate intentionally hand-picks to select only the ripest cherries while providing steady jobs in a region with limited paid work. This Rainforest Alliance washed lot is an AA selection of Catimor 129, grown around 1400–1650m, and it’s built to be versatile across roast levels: lighter roasts lean citrus with a soft cocoa edge, mediums bring a smoother chocolate-and-spice balance, and darker roasts deepen body and chocolate while keeping a clean finish with a lingering spicy note.

A great super fresh and clean micro lot from our friends at Finca De Dios. Awesome prep, one can tell a lot of care went into these beans. A great medium to as dark as you want to go bean type. Light roasts produce a lot of floral brightness and light fruit notes (almost reminiscent of a nice Costa) mixing with a subtle yet very sweet malty chocolaty note but can be a little more challenging to roast to a light roast – a great morning brew – darker roasts will produce more body similar to the Huehues – very clean non-roasty dark-roast beans – you get a lot of the sweet malty tones and very smooth even into 2nd crack – a very stand up bean at almost any roast level.

The aroma of this coffee is very nice; sweet with with a little spice & floral notes. Best at a medium to borderline dark roast. Sweet upfront with a hint of crispness balanced with a stronger toasted walnut/chocolaty undertone. A little hint of acidity at the medium roast point really creates a nicely balanced cup with a broad flavor profile. Touching 2nd crack builds some body and will add some smoky and roasty notes that can compliment the classic Colombian profile.

The aroma is very nutty and sweet. There was a surprising hint of smoke on the palate. Full bodied and low acidity – this is a traditional tasting Brazil – thick, creamy, nutty and semi-sweet. At the darker roasts a very sweet first taste, almost a little fruity, and then quickly turns darker-toned with a bakers chocolate and slightly toasted walnut flavor. Great blend base for espresso or adding body with darker tones although many will love it as an single origin drinker.

No missing the more wild natural processed tones in this cup. Best served at the light to medium roast levels. A bit of citric crispness upfront that quickly fades into a sweet fruity note, the lighter tones balance with a boozy complexity, think oaky barrel aged like tones, with more traditional nutty/chocolate like tones in the aftertaste. Wonderful depth of flavors and a clean tasting cup from light to dark. With its more potent tastes, a longer setup will help smooth it out the cup and reduce some of the wild tones. Light roasts themselves will show a little higher acidity, lots of citric and fruitiness, balances more on the nutty side of things. Medium roasts promote a bit more chocolaty factor, reducing some of the citric acidity, bringing out more of the barrel aged darker toned complexity with fruity highlights. Dark roasts are interesting but can get a bit bitter as you enter second crack, assuming you like stronger edgier coffee, can be a unique treat for dark roast fans.

Papua New Guinea Nebilyer Valley is a washed lot from smallholder farmers organized around the Kuta mill in the Tambul–Nebilyer district near Mount Hagen, with local infrastructure built over generations (including the Leahy family’s role) to move coffee from remote highland plots to export-ready processing. It’s grown around 1350 masl and the main varieties are Bourbon and Typica. In the cup, expect bright citrus (lemon/mandarin) with an herbal-aromatic edge, gentle clove-like spice and a light floral touch; as it cools, it turns sweeter with a dark-chocolate backbone plus caramel/peanut tones. It’s generally forgiving to roast, but it “clicks” best at medium to dark—medium keeps the citrus/floral lift while building enough sweetness for the chocolate base, and darker roasts intensify the chocolate/spice and make the herbal notes more savory (watch development after first crack).

Good cup from light to dark. At light roasts it will have some lemony acidity and a sweet edge, pulls some balance with a more peanut like nuttiness. Medium roasts introduce a more chocolaty than nutty tone and mute up some of the citric making it a bit smoother of a cup but also less complex, good daily drinking territory. Darker roasts taste nice but will have some roasty/smoky characteristics along with a good body. A rich and sweet cup for dark roast fans.
