Best from medium to dark roasts: a crisp, clean and balanced cup. A bit of a citric crispness upfront balances with a stronger chocolate note with some herbaceous accents, some would say tea like spice, in the ballpark of a Kenya coffee but with a little less acidity. In a medium roast, clear notes of chocolate and caramel are perceived, supported by a medium-to-full body and a pleasant, almost creamy sweetness. Subtle hints of almond and peanut butter appear, complementing the profile without becoming dominant. Upon cooling, light floral touches and a sweet aftertaste of cocoa and brown sugar may emerge, rounding out a “normal” cup in the best sense: balanced, sweet, and very drinkable.

This naturally processed microlot is distinguished by a vibrant and jammy cup profile, offering a dense and rich body with prominent notes of red fruits such as strawberries and raspberries, complemented by floral nuances of lavender and hibiscus and a lingering, honey-like sweetness. A wonderful cup at lighter roast points. A sweet, delicate, fruity and floral cup. Medium to low acidity, it will have a slight citric tone while very fresh. First note to hit the tongue will be the sweet red fruit note that will fade into a little nutty/chocolate darker note. Unlike its Yirgacheffe cousins, there is not nearly as much herbal/tea like darker note. At lighter roasts it’s distinctly floral, Ethiopians heirloom strains in action, pronounces lime and lemon-zest acidity with a little sweet red fruit tone, strawberry like. At medium roasts it turns smooth and balanced, with a silky body (between light and medium) and pronounced chocolate like backbone that supports the hints of fruitiness well. Pushed darker it gains punch and shifts toward dark/baker’s chocolate and cocoa, while maintaining a medium-soft body. Overall: floral-leaning, sweet, and very clean.

Clean, bright, sweet with a very diverse flavor set. Stone and darker fruit, citrus & floral, and spiced chocolate tones are the main flavors one can see in this cup, either accentuated or muted depending on roast level. Nice jammy body will be seen in the medium to borderline dark roast mark. Very dependent on roast – lighter roasting gives much more of the citrus, red-fruit with just a hint of a spicy chocolaty factor, a much dryer finish. Darker roasts produce much more of a bakers chocolate cup with a hint of a strawberry like fruit note and good sweetness, far less acidic. A very enjoyable cup from light to dark.

A great cup from city+ to full city roasts. Light medium to dark medium some would say. Although a natural, this is not a super fruity coffee, will show hints at lighter roasts along with some citric. These beans are more about the complex chocolate and spice notes, the sweet fruit highlights are just a little perk and balance the cup nicely. At lighter roasts it’s distinctly floral, Ethiopians heirloom strains in action, pronounces lime and lemon-zest acidity with a little sweet red fruit tone, strawberry like. These lighter tones comingle with a rustic chocolate and spice, slightly herbaceous at lighter roasts. At medium roasts it turns smooth and balanced, with a silky body (between light and medium) and a rustic chocolate like backbone that supports the hints of fruitiness well. Pushed darker it gains punch and shifts toward dark/baker’s chocolate and cocoa, while maintaining a medium-soft body. Overall: floral-leaning, sweet, and very clean.

Best at the light to medium roast levels. Very crisp, clean and exotic. Great aromatics filled with jasmine spice and soft fruit. Lighter roasts are filled with new crop acidity and floral notes, mostly citric but a little soft fruit tone can be found. The balance of the cup comes from a semi-tea-like chocolate factor. I tend to think of it as chocolate spice notes but many tongues can pick up a little black tea note. Medium roasts still have a bit of citric acidic, build a good body and bring forth more of the chocolate spice note, reducing the acidity slightly so even more of the exotic tones of this cup can be found. Darker roasts are always tasty for those who like fuller roasts. This is how they would traditionally serve these beans in Ethiopia. Almost a shame, for it loses the cool spice and lighter note balance, but will still make for a good exotic smoky and chocolaty cup.

A very clean and brighter cup, silky-smooth mouthfeel that shines from the first whiff of honey sweetness to the final sip of bolder spice. Best served at light-to-medium roasts. A brighter, full flavored cup with great depth of flavor. Upon first sip, one will see a vibrant burst of lemon/orange citric comingling with a slight red fruit, quickly balanced by a creamy cocoa undertone with a little gentle black-tea like spice in the aftertaste. Underlying notes of roasted nuts and cocoa anchor the profile. As the cup cools the acidity softens and a deeper chocolate note swells, yet the honey aromatics persist, making every temperature stage deliciously consistent.

Rich and chocolaty, Tanz coffee is always high on our go to list for stronger chocolaty darker roast coffee. At the medium roasts one will see a more gentle cup with good body, a little sweeter edge, hints of acidity and stronger chocolaty spice. Darker roasts get much fuller bodied and bring out the very strong bakers chocolate edge balancing nicely with classic African spice note and complimenting roasty/smoky tones. Lighter roasts will show crisp lemony acidity with more of a caramel/chocolate spin but can be pretty sharp.
