A great medium to dark roast semi-exotic daily drinker. Good body and mouthfeel, a bit lower acidity with rich chocolate and spice notes. Lighter roasting will have a noticeable crisp lemony floral edge to it balanced with a nutty/herbal/earthy dark tone. Holds up lighter but needs a longer setup and can risk a little grassy/earthy/vegetal edge, shows a little hint of caramel and is much sweeter than the fuller roasts. We found it best to push the roast into the medium category to build the richer dark tones, muting up some of the classic African brightness: comes off nice and chocolaty with some herbal/spice balance. Dark roasts are strong and semi-sweet with a full body, complimenting roasty and smoky tones. We couldn’t find a roast we didn’t like with these beans, if you roast lighter, just make sure you do not mind a little stronger citric component.

We thought these beans best at a nice medium roast: clean, floral and semi-fruity cup. The lovely lighter tones balance with a little chocolate and spice note. Medium body, lower acidity, and a bit sweeter. The fruitiness is delicate and down the red fruit alley, strawberry, or a touch of lychee appear on the nose and palate, supported by a chocolate/caramel/spice darker note. We had one taster say it was more of a banana-like sweetness. Lighter roasting will accentuate the citric acidity and lean it towards mandarin/lemon tones leaving the cup crisper and sweeter but can pull a little earthy contrast if too light.

Clean, bright, sweet with a very diverse flavor set. Stone and darker fruit, citrus & floral, and spiced chocolate tones are the main flavors one can see in this cup, either accentuated or muted depending on roast level. Nice jammy body will be seen in the medium to borderline dark roast mark. Very dependent on roast – lighter roasting gives much more of the citrus, red-fruit with just a hint of a spicy chocolaty factor, a much dryer finish. Darker roasts produce much more of a bakers chocolate cup with a hint of a strawberry like fruit note and good sweetness, far less acidic. A very enjoyable cup from light to dark.

One sniff of this coffee and you know you have something special. Jasmine floral and sweet aromatics, something you will only get out of Ethiopian coffee or Ethiopian strains. Best on the light to medium roasts but a wonderful cup at almost any roast level. Light to medium you get those wonderful aromatics that come through in the taste, peachy acidity, with hints of soft fruit balancing with rich defined black tea like spice notes a. A cup like this is why washed processed Ethiopians are one of the hottest coffees on the market. Darker roasts burn out a bunch of the acidity/floral/fruity but still a nice cup, strong tea spice and semi-sweet chocolaty factor.

Best at light to medium roast levels but works from light to dark depending on your personal tastes. Bright, clean, and sweet cup, medium-bodied with a creamy aftertaste. Very fruity profile: crisp citrus reminiscent of lemon, orange, and grapefruit, with a core of red fruits (blackberry/strawberry) and a slight floral undertone (lavender). These lovely lighter toned balance with a nice chocolaty undertone with some spice that is somewhat reminiscent of tea, which many would consider the terroir of Yirgacheffe. If you push the roast a little further, medium to dark, the cups turns much more chocolatey and spice notes with just a pinch of fruit in the aftertaste. In the light to medium roast range, a juicy sweetness with hints of watermelon is perceived. A balanced and very expressive combination.

Single-estate microlot with full traceability: for over three decades, Wolde Hirbe has tended his 10-acre farm near Jemjemo, a member of Adame Gorbota and, since 2012, the YCFCU Single Farmer Project, which enforces rigorous processing and regular technical visits support that improves prices and has helped stabilize income for his family. Set in Wenago (Gedeo), birthplace of “Yirgacheffe,” the coffee grows in shaded agroforestry with enset, protecting soil and moderating ripening. In the cup, expect melon-like fruit, lemony acidity, a silky, medium-leaning body, and a clean chocolate-and-nutty backbone, staying remarkably consistent from hot to cool. Easy to roast and versatile (with a bit more chaff), it shines at medium: go a touch lighter to highlight citrus and fruit, or a touch darker for a cocoa/dark-chocolate emphasis. Even pushed darker it largely preserves that silky medium body. A sweet, crisp, and polished Gedeb profile—expressive yet balanced, with producer-level transparency.

Good from light to dark but we thought best at a strong medium to dark roast. A good bean to go after a rich and semi-exotic chocolate tone with some wonderful aromatics and a bit of spice. Light roasts are more citric and floral with wonderful aromatics and a sweet edged, a bit punchy in the citric department and contrasts with a bit of nutty/herbal/grassy undertones. Works well but needs a much longer setup time bring out smooth and clean tastes, sharp and grassy/herbal if drank too soon. Medium roasts will bring some lovely balance to the cup and provides a clean tasting brew without waiting a week to drink it. One starts seeing the chocolate aspect but will still pull some balance with the citric and floral. Less aromatic than the light roasts, but you can still tell you have a nice Ethiopian with one sniff. Darker roasts touching or into second crack are real robust, strong and semi-sweet, more bakers-chocolate like with tea like spice in the aftertaste.

Best at light to medium roast levels but depending on personal taste, works nicely from light to dark. A crisp, clean, sweet and very floral cup (jasmine like), with some classic Yirgacheffe chocolate and tea-like spice contrast. Light roasts are delicate and pretty bright, accentuating the floral but also the herbal tea like components. Overall the acidity is medium and is perceived more as mandarin orange than sharp lemon; the sweetness is reminiscent of caramel, and as the temperature drops, a cocoa base is felt, adding more body. Subtle fruity notes (blackberry/sweet citrus) and a slight spice note; a silky medium body and a very clean finish with hints of honey and cocoa. A rich and expressive coffee in which, although there is fruit, the floral notes dominate with a tea-like character.

A wonderful example of a darker toned, lower acidity Ethiopian. We thought best from medium to dark roasts but it will still find fans at lighter roast points. Lighter roasts will have some buzzy acidity and just a hint of lemon/floral balanced with smooth and rich herbaceous spice notes. A bit more on the bergamot/dark-tea like Yirgacheffe profile. Medium roasts turn the herbaceous notes towards the chocolaty side moving the herbal/tea like tones to the aftertaste. A bit fuller bodied, lower acidity with complex darker tones. Dark roasts turn semi-sweet and even more chocolaty, the spice is readily noticeable and the body picks up a bit of a creamy factor, the roasty/smoky notes mix well with the darker toned profile of this bean but will not hold its sweet edge like most Ethiopians.

A very clean and brighter cup, silky-smooth mouthfeel that shines from the first whiff of honey sweetness to the final sip of bolder spice. Best served at light-to-medium roasts. A brighter, full flavored cup with great depth of flavor. Upon first sip, one will see a vibrant burst of lemon/orange citric comingling with a slight red fruit, quickly balanced by a creamy cocoa undertone with a little gentle black-tea like spice in the aftertaste. Underlying notes of roasted nuts and cocoa anchor the profile. As the cup cools the acidity softens and a deeper chocolate note swells, yet the honey aromatics persist, making every temperature stage deliciously consistent.

A great cup from light to dark, but we think best at a solid medium roast. Light roasts will be pretty acidic, medium roasts smooth and balanced, darker roasts potent but bittersweet. This is an excellent classically bright Kenyan; super clean, sweet with good body. One can find all sorts of acidic like notes in this cup ranging from soft fruit to very floral citrus. All the wonderful lighter tones balance with a nice and rich chocolaty undertone, pretty potent, fades into some classic African spice on the tongue (tea like semi-vegetal). Turns pretty dark/bakers chocolate like into the darker roasts. Very fun cup with awesome flavor depth.

A lovely example of Kenya coffee. Good from light to dark, we recommend a nice medium roast to showcase it. Very bright, punchy and complex at lighter roasts, a bit front loaded with citric/floral but very clean with some balance. A bit hoppy some will say with some spice notes popping out. The lighter tones will pull some balance with a semi-sweet chocolate edge but easily overpowered by the higher acidity when light roasted. Medium roasts build much better balance between the acidity (citric/floral/fruit) and the dark tones (nutty/cocoa/spice) making it less blasty of a cup, easier to drink all day. If you don’t like higher acidity, this is where to start with your roasts. Darker roasts have there place, but will kill some of what separates this cup from “average” Kenyan. Strong and semi-sweet, think bakers chocolate with herbal accents. A little smoky and roasty but presents nicely for a more exotic dark roast.

A very fresh and tasty African. Enjoyable at any roast level; medium to dark roast was our favorite. Medium roast points provide a smooth cup on the nutty/chocolaty side, sweet tea flavors and a hint of citric. A little herbal spice lingers in the aftertaste but very mild comparatively to most Africans. Darker roasts add complimenting roasty notes, a sweet burnt sugar and chocolaty cup that is jazzed up with a little spice, lower acidity and a fuller body. One can take it lighter if you want to boost the fruitier citric & floral tones but it can be a pretty sharp cup right at first crack.

At the medium roasts one will see a more gentle cup with good body, a little sweeter edge, hints of acidity and stronger chocolaty spice. Darker roasts get much fuller bodied and bring out the very strong bakers chocolate edge balancing nicely with classic African spice note and complimenting roasty/smoky tones. Lighter roasts will show crisp lemony acidity with more of a caramel/chocolate spin but can be pretty sharp.
