A very fresh and tasty Brazil! Lighter roasts show lemon, floral & soft fruit contrasted by a nuttier (almond like) undertone, a sweet edged cup. The two combine for a hints of caramel, quite tasty for you light roast fans. Medium roasts are richer, more of a developed chocolaty tone and decently less nutty; mutes up the soury floral edge, retains a little hint of soft fruit as the cup cools. Fairly neutral tasting and very chuggable. Clean and sweet; this Ethiopian cup is a bit more delicate than most. Lower acidity and best in the medium roast range, will work for darker roast fans as well. We would avoid super light roasts, blooms into a well defined treat at city+ to full city+ roast levels. Wonderful aromatics and a nice floral tone without too much citric in the cup. Medium roasts produce a nice and chocolaty cup with floral highlights and a sweet edge, hints of tea like spice in the aftertaste. Smooth, balanced and rich cup with exotic highlights. Darker roasts are less smooth but even more chocolaty, a bit semi-sweet with some complimenting roasty attributes and stronger tea like spice notes. A beautiful cup at the lighter roast points. Mild mannered comparatively to the Mosto processed lot, this bean is much more delicate, a bit lower acidity with a little more emphasis on the floral and stone fruit notes. Being a high rated bean, it is very clean (good) tasting at light roasts, which we thought presented it best. There is a little darker toned contrast at light roasts, hints of a chocolaty factor comingle with the fruitiness. Besides a chocolaty factor one will get some nutty/caramel/floral like tones at the medium roast points, gives it some nice complimenting depth without being too exotic. We all thought it was at its best right around a full city – smooth without too much of a roasty note and great chocolaty tones.

A very clean traditional Sumatra cup. Best from medium to dark roasts. Fuller bodied with some nice exotic incense spice notes intermingled with a bakers chocolate and smoky cup profile. Light roast are not recommended (for almost all Indo coffees). Medium roasts were nice and balanced, a little lemony acidity upfront mixing with a bunch of spice and hints of an earthy slightly peaty chocolaty factor; a decent roast point for pour-overs or drip. The boldest tasting of the three peaberries, still silky smooth and clean tasting, fuller bodied with a creamy mouthfeel but with a bit of sweet spice in the cup. Lower acidity chocolaty cup profile with a sweet edge. We liked it best from a medium to dark roast, but with a little longer setup, light roast fans can find joy with these beans. Definitely a chocolaty cup profile with some stronger nutty and herbal/spice accents. If you roast before 2nd crack, which is preferred, one can balance in a hint of soft fruit acidity (similar to the Sigri) into the mix which is a big plus to the depth of flavor. Sigri Natural is a very different, crazy unique lot!Good from light to dark, very different tasting dependent on roast level. If you are a very fruit forward natural fan, sticking in the light to medium roast level is recommended. Contrary to many naturals, these beans rock at the fuller roast levels as well, touching or into second crack produces a very lively cup, not super roasty with incredible depth of flavor and good balance between light and dark tones.
Light roast themselves, are pretty citric, sweet and floral with almost a red wine vinegar herbal like quality. Can tell this is a very slow dry natural. A longer setup rid the cup of more astringent features, takes almost 5-12 days of resting for these funky naturals to mellow. Medium roasts get much more chocolaty with fruity overlays, very tasty. No missing the fruitiness assuming you are pre-second crack. Medium bodied with just a pinch of citric/floral crispness. Although we liked all the roast points, darker roasts were our favorite with its crazy depth of flavors, strong semi-sweet chocolate tones balancing with a barrel aged red fruit.

Lighter roasting will show hints of acidity, a sweeter almond/nougat/brown-sugar comingling with more herbal spice notes. Medium roasting gets the fuller body and more chocolate/malt with hints of spice. Darker roasting gets hefty bakers chocolate note with complimenting roasty-ness. Lower acidity cup overall but will show some crisp citric notes at lighter roasts, some floral characteristics as well. A little roasty/smoky tone into second crack but it will compliment the more chocolaty and nutty profile. A nice medium roast for drip brew, darker for espresso and cold brew. In general, the strongest offering out of the three, smooth, big bodied & creamy with semi-sweet chocolate notes, nutty accents and a bit of lingering spice in the aftertaste. Lighter roasting will show some stronger citric acidity comingling with stronger herbal notes, a hint of chocolate, good depth of flavors but will be a bit sharp and herbal for most. Medium roasting gets the fuller body and more chocolaty toned cup with a hint of spice, unlike the other two, this will still have a little hint of citric, leaving it a bit sweeter tasting. Darker roasting gets hefty bakers chocolate note with complimenting roasty notes, no signs of the brighter cup profile at lighter roasts. A wonderful very fresh arrival great from light to dark roasts. Similar to most other Tanzanian Peaberry coffees, this is a nice chocolate bomb coffee at fuller roast levels: chocolate, spice and everything nice one could say. At lighter roasts however the cup is full of character, it picks up a crisp more grapefruit like acidity with lots of sweetness, hints of a chocolaty note with lingering spice in the aftertaste. Those who normally drink Tanzanian Peaberry, best to roast this one a little darker. Anaerobic coffees are fermented coffees. They use sealed containers to control the fermentation. There are no rules for the farmer, one can produce low fermentation coffees similar to washed processed using this method, to complete ferment bombs way beyond most natural processed beans. Unlike last season, in which this offering was more of a ferment bomb, this season, it is much more refined, definitely the most fruity and citric out of the three offerings but not nearly as over the top, much cleaner and more balanced in its tastes.Best at the light to medium roast levels. Comparatively to the other more traditional Zambia offerings, this cup has stronger acidity, a thicker body, stronger fruit notes ranging from citric/tropical to a bit of classic red fruit. One can still see the classic Zambia cup profile with its darker toned contrast, nice and chocolaty with a bit of spice. Easily the best depth of flavor out of the three: all sorts of delicate little flavors pop out at the lighter roast points especially as the cup cools. Light roasts are the most citric and fruit, produces a clean cup with a little chocolate/spice balance. The soft fruit tone is a bit covered up by the brightness at light roasts, will be easier to see as the cup cools or the beans setup for a longer period. Medium roasts will pull a lot of the citric out of the cup, more along the lines of a buzzy acidity versus citric, a chocolaty cup with pretty exotic fruity highlights. Will pick up a little woody barrel aged tone to go along with the slight fruitiness to let you know you have something exotic. Darker roasts are interesting and strong, but will be bittersweet, not creamy and smooth like the washed processed.
