Lighter roasts show a sweet edge, good floral acidity, a little natural-processed soft fruit tone that balances with classic Brazil nutty and dry-chocolate hints. Medium roasts drop some of the acidity but retain a hint of the fruity factor. The body gets thicker and those nutty and chocolaty tones take over the bulk of the cup. A cool clean traditional Brazil coffee. Good for single origin drinking if you like a lower acidity thicker, more nutty cup profile, otherwise great for a blend base for those looking for more sustainable small farm Brazils. Best from a medium to dark roast. Medium roasts bring good body, strong nutty tones and low acidity. Its a slightly fuller bodied cup that fades a little more onto the chocolaty side as it cools. Dark roasts get fuller bodied and more semi-sweet chocolaty with the nuttiness heading more into the aftertaste. Light roasts can come off a bit dry and more peanut skin nutty, the cup blossoms as you push the roast a bit. A hint of soft fruit can be found with a little setup at the light/medium roast but would still consider this a non-fruity cup.

A very fresh and tasty Brazil! Lighter roasts show lemon, floral & soft fruit contrasted by a nuttier (almond like) undertone, a sweet edged cup. The two combine for a hints of caramel, quite tasty for you light roast fans. Medium roasts are richer, more of a developed chocolaty tone and decently less nutty; mutes up the soury floral edge, retains a little hint of soft fruit as the cup cools. Fairly neutral tasting and very chuggable. Darker promotes a thicker body and introduces a slightly bitter contrast that works very well for espresso.

A very nice non-traditional Brazilian cup. Very chocolaty, almost milk chocolate-like tones in the medium roast ballpark. Low acidity, only hints at the light roasts accompanied with some floral aromatics. A little bit of a sweeter edge to the cup pushes it towards milk chocolate instead of bakers chocolate tones but all in all, not an overly sweet cup of coffee. Dark roasts get a bit edgier and introduce some smoky tones into the cup but push it into the fuller bodied category.

We thought it best medium to dark roasted. At the lighter roast points it will have some stronger classic Brazil nuttiness jazzed up with hints of lemony acidity and herbal tea like spice. Good to let light-medium roasts setup for 3-4 days before drinking, holds up but we though it blossomed at the fuller roast levels. Low acidity cup but you can taste a pinch of lemon until you hit the medium roast level. As you push towards 2nd crack the cup gets real rich with strong nutty & chocolaty tones. Some complimenting smokiness if you touch or go into 2nd crack. A wonderful lot and decent as a single origin drinker or clean blend base. Best medium to dark roasted. Hints of floral at lighter roasts balancing with semi-sweet nutty, slightly chocolaty undertones. Pushing towards 2nd crack brings forth a little more of the chocolate tone while muting up almost all floral acidity. Right around second crack was smooth and fuller bodied with nice nutty and chocolate with some complimenting roasty notes. Floral and fruit in the aromatics but not in the cup.

A very tasty cup, medium bodied and lower acidity, lighter roasts are quite jazzy. Clean with small hints of lemony acidity and noticeable but not over the top red fruit tones are the first thing one will notice. Cup is on the sweeter side and balanced with defined nutty and chocolaty undertones. A bit of that traditional Brazil nuttiness holds on in the aftertaste but the fruity and chocolaty tones are more dominate. Medium roasts we though shined best, smooth and more creamy, still a bit of a sweet edge, almost no detectable acidity and very easy to drink. Darker roasts were surprisingly not roasty, sweet edged and chocolaty with hints of smoke in the aftertaste, the fruit tone disappears but the wonderfully smooth chocolaty and nutty factor retain nicely.Price: $6.25/lb - 4.90/lbPrice: $6.25 -

Our third batch of Brazil Bahia, a lovely small production Brazilian. This lot 3 is less fruit forward than previous batches. Hints of soft fruit as the cup cool, but mostly about the rich and sweet nutty and chocolaty tones.
Great from light to dark. A pinch of fruity acidity comingles with nutty and chocolate like tones, good mouthfeel and fuller bodied. Light roasts come off a bit more fruit forward and nutty, has a very sweet edge with a bit of a boozy finish, medium to dark roasts show a much creamier cup showcasing the nutty and chocolate tones with far less detectable fruitiness. Lower acidity and clean as a whistle make this cup a wonderful daily drinker. A very sweet cup, coming from the seeds having a longer time in the ripe cherries before processing, also provides the hint of red fruit as the cup cools. Great depth of flavors, this batch is a cup every Brazilian fan will love.

A hint of floral upfront with a nutty/chocolate like undertone. A little hint of a soft fruit tone at the lighter roast points and on the sweeter side. Light roasts accentuate the nutty floral tones, a medium roast is where you see a little caramel, especially as the cup cools, darker roasts bring out the chocolate factor of the cup. An easy drinking, fairly neutral cup of coffee everyone will enjoy.

A great cup from light to dark! We thought it best at the light-medium roast levels, incredibly clean cup. Lighter roasts accentuate the sweet and crisp floral/fruity tones while still presenting some balance with a chocolate like dark note. A little thinner bodied cup in the medium to low acidity range. As one pushes into the medium and dark roast marks, the crispness reduces greatly and the chocolate like factor becomes very strong. This is not your traditional Brazil coffee. A fuller bodied and lower acidity cup, lighter roasts will have some jazzy citric/floral acidity and soft fruit tones but still considered lower acidity. These beans are on the sweeter side and have a lot of complex nutty and chocolaty undertones. Tasty from light to dark but we loved medium roasts the best; smooth and more creamy, almost a candied floral upfront but fades on the tongue pretty quickly to those semi-sweet nutty/chocolaty tones, hints of soft fruit in the aftertaste. Darker roasts are strong and far less sweet, tastes a little more like a standard Brazil, still very drinkable with more bakers chocolate and stronger complimenting smokiness.
