A wonderful cup! Less fruity than our other top notch Brazil offering but just as highly rated. Lighter roasts show lemony floral acidity upfront with a very sweet lingering edge, balanced with the more traditional Brazilian nuttiness (think peanut). As one pushes more into the medium to borderline-dark roast, the strong lemony sweetness fades into the background and brings forth a lovely smooth and fuller bodied nuttier profile with hints of a chocolaty factor. This trend keeps building into the darker roasts where the nutty/chocolaty factor becomes very robust and fuller bodied with some smoky accents. Great from light to dark; this is the fruitiest of the two lots with higher than average acidity for Brazil, highlighting some citric & red fruit like tones in the cup, sweet and a bit more wild. Comparatively to many Anaerobic Naturals, this cup is milder and much more balanced with traditional coffee tastes. Fruity but not crazy ferment & boozy. Lighter roasts show a fruit forward cup, sweet edged, just a hint of lemony acidity with a slightly nutty finish. Shines at the light/medium roast points but tasty from light to dark. As one pushes the roast darker, it builds stronger nutty tones and starts introducing hints of semi-sweet chocolate in the aftertaste, a bit smoky if you get too close or into 2nd crack. Retains hints of the fruitiness throughout the roast spectrum but more in the background/after-tastes with medium to dark roasts.

A beautiful single-origin drinking Brazil best from medium to dark roasts. Clean, rich and balanced; this is a cup we are happy to drink all day long! This is the most traditional lot of the three, a bit more neutral tasting but just as clean and tasty. Hints of lemony acidity at the lighter roasts, good body with more traditional Brazilian nuttiness in the cup. Turns a bit more chocolaty and smooth as one pushes the roast into the medium to dark roast level. A nice sweet edge to the cup regardless of roast level. Still has some fruitiness in the cup, also some cool spice notes, but mild comparatively to the other two offerings.

A great cup from light to dark roasts. We thought it shined best on the lighter side of a medium roast, a city+ most would say. The sweet and nutty tones give a hint of caramel with a little setup. Shows some citric acidity upfront but would be considered a lower acidity cup overall. The brighter features comingle with a medium bodied nutty/cocoa undertone and a sweeter edge. Reminds me of a nice Honduran coffee more so than a traditional Brazil, a bit nuttier. Medium to dark roasts mute the brighter characteristics providing a very smooth cup that works a little better for daily drinking or espresso. Turns much more chocolaty the darker you roast, still retains a little nuttiness in the aftertaste, a bit roasty if you touch or go into second crack but it compliments the beans characteristics.

Smooth, clean, full bodied, sweet with a pinch of crisp acidity; this is a very tasty Brazilian. With lighter roasts, one will see some citric upfront giving some good sweetness and depth of flavor, a little floral & balanced with a fuller bodied nutty and chocolate like tone. Decently less nutty than the traditional Cerrado or Mogiana beans. One will still detect a hint of a nutty in the aftertaste for sure but its pretty neutral with a sweet edge. Medium roasts are where we thought this cup to shine, low acidity with a milky mouthfeel: straight forward and neutral tasting with a sweet edged dark tone. A cool clean traditional Brazil coffee. Good for single origin drinking if you like a lower acidity thicker, more nutty cup profile, otherwise great for a blend base for those looking for more sustainable small farm Brazils. Best from a medium to dark roast. Medium roasts bring good body, strong nutty tones and low acidity. Its a slightly fuller bodied cup that fades a little more onto the chocolaty side as it cools. Dark roasts get fuller bodied and more semi-sweet chocolaty with the nuttiness heading more into the aftertaste. Light roasts can come off a bit dry and more peanut skin nutty, the cup blossoms as you push the roast a bit. A hint of soft fruit can be found with a little setup at the light/medium roast but would still consider this a non-fruity cup.

Low acidity, only hints at the light roasts accompanied with some floral aromatics. A little bit of a sweeter edge to the cup pushes it towards milk chocolate instead of bakers chocolate tones but all in all, not an overly sweet cup of coffee. Dark roasts get a bit edgier and introduce some smoky tones into the cup but push it into the fuller bodied category.

We thought it best medium to dark roasted. At the lighter roast points it will have some stronger classic Brazil nuttiness jazzed up with hints of lemony acidity and herbal tea like spice. Good to let light-medium roasts setup for 3-4 days before drinking, holds up but we though it blossomed at the fuller roast levels. Low acidity cup but you can taste a pinch of lemon until you hit the medium roast level. As you push towards 2nd crack the cup gets real rich with strong nutty & chocolaty tones. Some complimenting smokiness if you touch or go into 2nd crack.
