Lighter roasts show strong and sweet lemony floral acidity balanced with a clean and smooth nutty undertones. A great balance and clean as a whistle, a lovely highly rated cup. Only those who traditionally like higher acidity cups should roast it lighter, very good but not for everyone. A nice medium/dark roast (full city) will let everyone enjoy this cup, not only the more acidic fans. As the roast progresses one can flip the tones and accentuate the more sweet nutty and chocolaty fuller bodied aspects of the bean, retaining just a hint of acidity. Super light roasts risk a little grassy/herbal but it straightens out at a city+ (medium) and holds up as dark as you want to take it. Best at the light to medium roast. Very clean cup that will shine with the brighter more floral notes. Citric (lemony), classic floral and jasmine will be the first notes to hit the tongue. Sweet edged cup that pulls some balance with a little hint of a spicy chocolate undertone. Definitely a brighter cup, got to love some acidity to find the joy in this stellar offering. As the beans setup, or the cup cools, one can pull some soft fruit, but its pretty overwhelmed by the crisp more citric floral tones at most of the roast points. Once you push to a medium roast or beyond, the darker tea (kind of bergamot like) tone will stick right out in the cup, which some will love, but we recommend the lighter points promoting the more citric, jasmine attributes.Price: $14.99/lb - 13.64/lbPrice: $14.99 -

I like many of these smaller bean screens, they seem to carry a little simpler profile but often a much sweeter edge. Lighter roasts have some clear citric lemony acidity and a more neutral and traditionally Brazilian nutty and chocolaty factor. Medium roasts bring out a fuller body and mute the more acidic tones of the cup pretty quickly as one gets closer to 2nd crack than first. A very nice and clean fairly exotic cup of Joe. A little hint of acidity at the lighter roast points balanced with a spicy nutty and malty dark tone. Semi-sweet and a little thinner bodied this year, the cup holds good tones from light to dark but most will like it best around a strong medium roast (balanced and smooth). Lighter roasts will give off a little acidity balanced with some complex nutty and malty tones but can be a little earthy. Medium roasts really bring the cup together, a little soft fruit, complex malty/chocolaty tones, good body and sweetness, a little hint of oaky as the cup cools. Too dark of a roast and one will lose that fruitiness but gain decent body. Roasty notes can be a compliment when roasted into 2nd crack but almost everyone preferred a before 2nd crack roast. A nice traditional Brazil cup. Neutral and smooth with pretty low acidity and pleasant nutty chocolaty factor. Lighter roasts will have a hint of acidity but be pretty dry in its tones. Medium roasts and beyond are where it shined. Drops most of the acidity and turn a bit fuller bodied with a more traditional nutty and chocolaty tone. Darker roasts get much bolder and thicker with smoky dark chocolate notes with some nuttiness coming through in the aftertaste.
