Most would consider this a medium to dark roast coffee, but does have some jazz at lighter roast points. Darker toned, semi-sweet coffee with lower acidity and a fuller body. Filled with rich chocolate/nutty/herbal/spice like tones. Great depth of flavor without all that citric and fruity that often comes with higher rated cups these days.Lighter roasting promotes the more nutty/herbal, darker roasting chocolate & spice. Lighter roasting took 4-5 days after roasting to get tasty, medium to dark roasts were tasty from day 1.

Colombian Premium Huila Org ASPROCESCA EP
A very fresh crisp and clean Colombian arrival. Good from light to dark but a nice solid medium roast was what won us over on this lot. Stronger more spicy cup profile. Lighter roasts have very crisp and clean acidity, a sweet lemony floral, with hints of a black tea like spice, some dry nuttier tones in the aftertaste. Just a little development past first crack is a good sweet spot for lighter roasting. Medium roasts are richer with less lemony floral, more traditional nutty/chocolate like tones and some lingering spice in the aftertaste. Darker roasts are full of bakers chocolate notes, more semi-sweet smoky with nutty accents. The spice still lingers on the tongue but the cup is dominated by the roasty and smoky tones.

A lovely, crisp, and clean, not overly fruity natural processed. We thought it best right around the medium roast ballpark but will make fans lighter or darker depending on your personal taste preference. Lighter roasting is a bit higher acidity, lemony and floral with some grape skin like fruitiness coming through. A bit more herbal spice right at first crack, needs a longer setup time to shine but will provide delicate chocolaty notes with much wilder acidity and fruity tones. Medium roasts were tasty without the wait! Balanced, tasty, and clean after 24 hours. A pronounced chocolaty factor, medium bodied, hints of crisp acidity backed with a little soft fruit tone and spice. Wonderfully smooth and delicate for a Congo coffee. Dark roasts were tasty right off the bat as well, roasty and stronger but with a sweeter then average edge. A super clean lot from the Congo; Amazing considering all the trouble this year in the Kivu; beautiful prep on these beans. Great floral and soft fruit tones upfront with a bit of brightness balanced with a tea spiced chocolaty factor, not too overwhelming or potent like some Africans. Smooth with almost a brown sugar hint at a strong medium roast. Pretty much everyone will love this coffee, a great everyday drinker.

A very nice medium to dark roast decaf. Medium roasts are a much smoother cup, a little sweet edge, nutty, with a touch of chocolate. Has a little floral overtone that makes it a bit interesting. Fuller bodied with a richer chocolate tone closer to 2nd crack. Some smokiness at second crack or into but retains its smooth and rich character. Decaf Mexican is always one of my favorite beans to get a nice and strong chocolaty note in the decafs. Dominican Org Ramirez Estate – Red Honey
Best from the lighter side of a medium roast to as dark as you want to go. A bit cleaner tasting but slightly less fruity than previous seasons. Lighter roasting presents some nice honey processed features: citric, floral, soft fruit with an almost oak/peat like finish, sweet & complex but does risk some underdeveloped tones if you nail it a little too light. Medium roasts were our favorite, still balanced and complex but will develop the traditional chocolate and smoky tones for which Dominican coffees are known for – to balance out those more exotic fruity and citric tones. Darker roasts are a little more complex than on the washed processed version, but not as smooth and rich.

A great medium to dark roast coffee: robust, fuller bodied, lower acidity and complex. Rich and smooth with nutty, chocolate, earthy and spice tones. On the lighter roast spectrum there is a little jazzy citric note that presents the cup a little sweeter, on the darker roast spectrums it will have some roasty and smoky notes that we found quite pleasant.

A very nice example of a fruit forward natural. Clean enough cup for lighter roasts, where the tastes tend to shine. Stronger citric acidity, a medium body, plenty of red fruit notes and hints of a nutty/chocolaty undertone. Medium roasts will mellow the acidity and accentuate the chocolaty factor, less extreme and easier to drink but not as punchy of a cup. A bit easier cup to achieve roasting wise. Darker roasts are still very interesting with the two-tones of roast level. One still gets hints of acidity (very small) and a bit of fruity factor but also a ton of bitter-sweet smoky and chocolaty notes.

This cup is nice and chocolaty, lower acidity and medium bodied. A little sweeter edge to it except for super dark roasts. Besides a chocolaty factor one will get some nutty/caramel/floral like tones at the medium roast points, gives it some nice complimenting depth without being too exotic. We all thought it was at its best right around a full city – smooth without too much of a roasty note and great chocolaty tones.

At light roasts it will have some lemony acidity and a sweet edge, pulls some balance with a more peanut like nuttiness. Medium roasts introduce a more chocolaty than nutty tone and mute up some of the citric making it a bit smoother of a cup but also less complex, good daily drinking territory. Darker roasts taste nice but will have some roasty/smoky characteristics along with a good body. A rich and sweet cup for dark roast fans.

A very rich, strong and smooth cup. A cousin to Sumatra or Sulawesi coffee; Blue Moon always is a bit smoother without as much peaty earthiness, or swampy fruit. A sweeter cup for an Indo with malt, chocolate with a little traditional earthy terroir of the wet-hulled Indonesians. Fuller bodied, a little hint of acidity at a medium roast, a definite go to for our strong-medium or dark roasts here at Burman Coffee. Pulls some molasses undertones as ones pushes into second crack roasts. Hints of slight smoky tone at darker roast.

A beautiful tasting bean this season: slightly fruitier but still balances with traditional Indonesian character. Hints of acidity with stronger fruitiness at lighter roasts, strong fruit/oak tones on a more nutty/earthy/chocolaty profile at darker roast points. No missing the wild side in this cup. Medium roasts are where one should shoot for their first roast, mutes some nutty tones and pronounces the chocolaty factor for some balance, still plenty of wild fruity natural processed tones in the cup. Dark roasts will introduce some smoky accents but retain great sweetness. Tasty from medium to dark. We preferred it a bit on the darker side. Lighter roasting is wild and decently fruit forward, sweet with a little acidity upfront; winy and brandy like with some lingering dry nutty/earthy tones, a bit of floral in the aftertaste, good but not chocolaty enough for us. Medium roasts mellow the cup a bit, turning it more chocolaty, fuller bodied and refining the fruitiness, making it a cup everyone will love, not just natural processed fans. Reminiscent of a nice Yemen Mokka but a bit more brandy like. Smooth and easy drinking. Dark roasts worked exceptionally well. Chocolaty but not overly roasty, sweet with just a pinch of fruit in the aftertaste. A very nice fresh crop arrival. Full bodied with a creamy mouthfeel, low acidity and spot on tastes from a traditional Mandheling Sumatra; peat moss, smoky, chocolaty, fuller bodied and strong. A clean enough cup to get a decent medium roast, gives a smoother mouthfeel and has a bit of sweetness upfront, darker roasts will turn thicker but also edgier and promote the smokier semi-sweet side of the profile.

Great daily drinker from medium to dark roasts. Good body and lower acidity, nice and strong semi-sweet malty tones with a hint of spice in the aftertaste. At the light to medium roasts it will show just a pinch of crispness and a hint of earth, not super citric but will leave a dryness to the tongue, a bit floral in its aromatics but not in the cup. Just before to touching 2nd crack gets rid of almost all signs of any acidity and adds some complimenting smokiness to the cup profile. A very smooth cup from a medium roast to just before 2nd crack. Into 2nd crack will get some edgy strength that dark roast fans will like.

A sweet and fruity cup; best at a light to medium roast. Light roasts are lemony and floral upfront which fade to stronger red fruit and balances with a hint of rustic chocolaty darker tones. Medium roasts clean up the more rustic chocolaty tones which many will like but also reduce the sweetness and fruity factor of the cup, becomes a little fuller bodied with low acidity with good mouthfeel, fruity factor pops out more as the cup cools. A fresh arrival great from a medium to dark roast. A good daily drinker. Medium to low acidity, the cup does have some jazzy more floral tones at the lighter roast points, but too light & it will be on the nutty/grassy side of things. Takes a little fuller roast to see the chocolaty side blossom. Medium roasts and beyond produce a smooth and rich cup, more chocolaty than nutty, pulls a dryer peanut brittle like tone (some may say hint of caramel), more peanut than brittle but we all thought it to be a good descriptor. Dark roasts turns the cup pretty chocolaty, retains the sweet edge and a couple tasters even noticed a little floral hint to it.

A nice and clean taste, good from light to dark. Mostly these beans will appeal to medium-dark roast fans but being an exceptionally clean cup, it has some lovely balance and is quite tasty at lighter roasts. Similar to its Indonesian cousins (except washed processed), it gets real hefty into the dark roasts promoting smoky and chocolaty tones with stronger spice notes. Lighter roasting it is more delicate and floral, slightly fruity with some detectable lemony crispness, sweet edged, medium bodied with hints of a chocolaty factor.
