This is one exotic coffee even for natural fans. Best served in the light to medium roast range. A bit milder than the last lot but in the same ballpark. Pretty winy, fruity and floral upfront with a bit of acidity, balancing with a chocolate & spice like undertone, kind of similar to Indian coffees except with all the wild and sweet ferment and fruit notes upfront. Lighter roasting accentuated the red wine like attributes, hints of citric with a very fruity edge: sweet, oaky, nutty, a little boozy in the finish. Medium roasts tame the cup a bit, still plenty winy and fruity but presents a smoother, less wilder version of the lighter roast points. Spice notes clearly pop out in the medium roast level starting to give some spiced rum like tastes in the background. A lovely, crisp, and clean, not overly fruity natural processed. We thought it best right around the medium roast ballpark but will make fans lighter or darker depending on your personal taste preference. Lighter roasting is a bit higher acidity, lemony and floral with some grape skin like fruitiness coming through. A bit more herbal spice right at first crack, needs a longer setup time to shine but will provide delicate chocolaty notes with much wilder acidity and fruity tones. Medium roasts were tasty without the wait! Balanced, tasty, and clean after 24 hours. A pronounced chocolaty factor, medium bodied, hints of crisp acidity backed with a little soft fruit tone and spice. Wonderfully smooth and delicate for a Congo coffee. Dark roasts were tasty right off the bat as well, roasty and stronger but with a sweeter then average edge. Best from the lighter side of a medium roast to as dark as you want to go. A bit cleaner tasting but slightly less fruity than previous seasons. Lighter roasting presents some nice honey processed features: citric, floral, soft fruit with an almost oak/peat like finish, sweet & complex but does risk some underdeveloped tones if you nail it a little too light. Medium roasts were our favorite, still balanced and complex but will develop the traditional chocolate and smoky tones for which Dominican coffees are known for – to balance out those more exotic fruity and citric tones. Dominican Ramirez Estate – Natural Processed
A very cool, very exotic cup of coffee. One can tell this is a slow dry natural processed coffee with its strong ripe red fruit tones upfront. Lighter roasting presents a ton of floral and fruit with an almost oak/peat boozy finish, very sweet with just a ton going on but does risk some underdeveloped tones with its two-toned roasting. Medium roasts were our favorite, still plenty wild but develop enough of the chocolate and smoky tones – which most Dominican coffees are known for – to balance all those more exotic fruity and citric tones. Darker roasts will burn out most of what distinguishes this cup, the washed processed handles those roast level much better; interesting and still exotic but strong and edgy, it will retain some fruity factor with very strong and less sweet, smoky, tobacco and bakers chocolate type notes.

A great super fresh and clean micro lot from our friends at Finca De Dios. Awesome prep, one can tell a lot of care went into these beans. A great medium to as dark as you want to go bean type. Light roasts produce a lot of floral brightness and light fruit notes (almost reminiscent of a nice Costa) mixing with a subtle yet very sweet malty chocolaty note but can be a little more challenging to roast to a light roast – a great morning brew – darker roasts will produce more body similar to the Huehues – very clean non-roasty dark-roast beans – you get a lot of the sweet malty tones and very smooth even into 2nd crack – a very stand up bean at almost any roast level.Price:Price: Original price was: $8.65.$7.65Current price is: $7.65.$8.65/lb$7.65/lb -

A tasty mix of tones, great from light to dark. The cup profile is mostly down the malty side but these beans have some awesome jazz.Medium roasting really pulls together a tasty treat but you can take it lighter or darker depending on personal taste preference.
Hints of floral mixing with smooth nutty & malty features. Will show some winy citric and fruit acidity in the light to medium roast spectrum but all in all a medium to low acidity brew with a medium body.
Smooth, clean and sweet edged, a cup we are more than willing to drink all day. Guatemalans almost always hold dark roasts nicely for adding a little sweet malty note to the smoky and roasty tones is a tasty mix.

A beautiful cup from light to dark roasts. A very sweet cup with fruity highlights, good body and medium acidity. Being a high rated bean, it is very clean at lighter roasts, which we thought presented it best, but found darker roast points with its mix of stronger malty dark tones with a pinch of fruit in the aftertaste, quite tasty as well. Light roasts are delicate, sweet and clean. Will have a little citric crispness upfront, a bit of fruitiness and some lovely malty contrast. A fruit note for sure, but not overly fermented like many, a bean for every coffee fan.

A lovely coffee. Low acidity, medium body with rich and robust darker tones ringing throughout the cup. Medium to dark roasts are where these beans shine. Lighter roasting without much acidity will leave the cup a bit nutty and lacking but clean. Starting at about a medium roast the cup builds a wonderful chocolate note with some smoky and malty overtones. A bit on the sweeter smoother side, a tasty treat. Darker roasts, close to touching 2nd crack and where the much more robust tones pop out of the cup, reminiscent of a nice Haitian cigar.

Bigger bodied and on the chocolaty spicy side of things. Being so clean this cup is great at light to medium roasts as well; hints of lemony floral, crisp, sweet with a more nutty/caramel tone. A little acidity but not enough to push folks away. A lovely daily drinking cup.

A great medium to dark roast coffee. Full bodied, low acidity, great mouthfeel, robust and strong coffee with hints of a exotic spice. Lighter roasts get a cool semi-floral sweet tone upfront but will pull more towards grassy caramel with a slight hint of herbal spice. As one progresses towards the darker roasts it gets much fuller bodied and creamy with clean chocolate/malt like tastes, a little hint of floral acidity at the full city roast level. Can be roasted from light to medium but to see the strain shine, keep it pretty light. At lighter roasts, the acidity is a bit lemony upfront but will quickly fade into a rocking jasmine floral tone, one can smell it after grinding as well, these beans have wonderful aromatics. From a medium roast on, the acidity is very gentle and balanced with a smooth more tea like chocolaty note, just a hint of sweet floral as the cup cools. Medium acidity levels, light to medium bodied, very sweet and floral, a very cool offering for Kona fans.

A very clean, well balanced cup, best from medium to dark roast. Crisp acidity with a small hint of soft fruit comingle with a more chocolaty cup profile. Can be roasted from light to dark but our favorite was a nice medium roast, followed by the darker roast. Lighter roasts: the acidity is a bit citrus upfront but will quickly fade into a slight island fruit tone, balances with a little herbal/chocolate contrast. From a medium roast on, the acidity is very gentle and balanced with a smooth to rough chocolaty cup profile, milk chocolate before 2nd crack, bakers chocolate and smoky into 2nd crack. Medium bodied and lower acidity, these beans as well as other Kona’s are mild cups comparatively to many other origins, be in for a delicate and tasty cup with layers of goodness.

At light roasts it will have some lemony acidity and a sweet edge, pulls some balance with a more peanut like nuttiness. Medium roasts introduce a more chocolaty than nutty tone and mute up some of the citric making it a bit smoother of a cup but also less complex, good daily drinking territory. Darker roasts taste nice but will have some roasty/smoky characteristics along with a good body. A rich and sweet cup for dark roast fans.

Medium roasts are where one should shoot for their first roast, mutes some nutty tones and pronounces the chocolaty factor for some balance, still plenty of wild fruity natural processed tones in the cup. Dark roasts will introduce some smoky accents but retain great sweetness. Always one of our favorite Mexican coffees. Good from light to dark but our favorite was a medium roast. Medium to full bodied, medium to low acidity. Lighter roasting will promote a sweet citric edge balancing with a bit nutty/woody undertones. Has a hint of caramel after a couple days setup but risks keeping a little woody tone if too light. Medium roasts are pretty bullet proof, full bodied with rich chocolaty notes, a little nuttiness and vanilla like spice in the aftertaste. A clean cup with just a hint of citric crispness upfront. Darker roasts pick up a bit of roastiness but it compliments the very chocolaty profile, thick with no real hints of brightness. Mexican Terruño Nayarita – La Yerba Afrutada – Natural Processed
Always one of our favorite Mexican coffees. Good from light to dark. Although Natural processed, this is not a fruit bomb like many other natural processed coffees, has slightly fruity overtones that balance great with some citric, malt and nutty undertones. Its a little fuller bodied cup than most Terruno lots with well above average sweetness. Lighter roasting will have noticeable citric crispness upfront and will accentuate the fruitiness. Medium roasts balance the tones nicely and smooth out (reduce) the citric brightness. Darker roasts turn much more chocolaty and get pretty roasty and smoky, retains a sweet edge and shows hints of fruitiness as the cup cools. A good daily drinker across the roast levels.

A nice tasting coffee from light to dark. We thought it best right around a medium roast for daily drinking but depending on what you like, holds up well lighter or darker. Light roasts one can see the linkage to Kenya; citric and floral upfront, a sweet edge, thicker chocolate/spice undertones, hints of caramel with a little setup in the aftertaste. Not as punchy as most Kenyan offerings, but along the same line of tastes. Medium roasts really mellow the cup. Smooth most would say, a bit more neutral with just a hint of the floral and spice seen at the lighter roasts. Reminded us of a cross between the Mysore Nuggets and a nice Costa Rican coffee. Great for daily drinking. A very clean and fresh batch from Selva Negra. A little citric & floral acidity upfront, balanced with nice complex nutty & malty undertones. Light roasts are going to be a little front loaded with the brighter characteristics, a higher rated cup meaning one will notice some decent crisp acidity at the light-medium roasts. Will give great depth of flavor but may be a little sharp for some. Our favorite roast and a great everyday drinker was in the medium roast ballpark, builds more of a smooth and creamy cup with a sweet edge, reducing that perceived acidity to just a pinch. Turns much stronger, a robust cup most would say, into the darker roasts but shined nicely; fuller bodied with strong malty and smoky tones, still a sweeter edge to it which darker roast fans will love.

Great light to medium roast coffee. Although we have carried the San Felipe lot for years, having the Geisha separate this season has brought a ton of new tastes. East to tell the difference when compared to the other strains Selva Negra grows. Best at the light to medium roast level, these beans have a bit more acidity than anything else from Selva Negra. The cup is very floral and citric especially at lighter roasts. Not quite jasmine floral, a little more traditional citric, but very tasty; delicate and sweet edged. Where one can see the prime Geisha attributes is in the darker tones of the cup, black tea spice jumps right out. Light roasts are heavy on the citric and floral balanced just a touch of tea like spice with herbal overtones. Medium roasts are where most will want to shoot, defined tea like spice with some sweet crisp floral upfront. Lighter roasts focus the tastes more around the brighter citric/fruit tones: a hint of lemony citric that fades into a fruitiness, balancing with a darker malt like undertone. A good daily drinking lighter roast coffee. Comparatively to the Catuai, the Typica is mild mannered, delicate, less acidic, smoother, but with similar tastes. Medium roasts bring a more traditional cup with better balance. This should be the minimum roast level if you do not want noticeable floral/fruit notes upfront. Still has a bit of jazz upfront but a more pronounced nutty/malty tone to balance it out. We thought it best right around a medium roast; balanced and sweet. Hints of sweet citric floral upfront comingle with smooth defined malt like tones, just the tiniest hint of a fruity factor in the aftertaste. Lighter roasts get much crisper, dominated with more floral citric fruit tones, lemony most would say but does still show a little malty undertone. Darker roasts cut out the more floral aspect of the cup and are very rich and smooth, more semi-sweet but still very malty, into second crack adds some complimenting smoky tones. Hard to find a bad roast point with these beans.

A clean, sweet and smooth cup of coffee one can drink all day long! A little fuller bodied at the light-medium roast level with a great balance between the lighter winy/floral notes & nutty/malty darker tones. Similar to Guatemalan coffee. Some acidity at lighter roasts but just a hint, medium to dark roasts would be marked as low acidity. As one pushes it into the medium roast range, the very sweet nutty tones come off a bit caramel like. Still plenty malty, it will linger on the tongue. Dark roasts turn pretty strong with the sweeter malty cup profile mixing nicely with smoky and roasty notes.

Great from light to dark. Light roasts will show great depth of flavor and produce a very clean cup. Some acidity, which brings lemony and floral tones to the front end of the tastes, balances them with a sweet edged nutty/malty undertone, hints of a vegetal spice. As one pushes the roast a little darker, the body increases, as the acidity and vegetal spice dissipated. Made for a very lovely daily drinker in the medium roast range; sweet, smooth & complex. Pushing the beans darker, the citric and floral acidity drops nicely to a crisp hint or none at all, the malty tones can turn quite robust as you approach or touch 2nd crack. At lighter roasts, a little crisp citric acidity can be found; notes of nutty, caramel, cocoa, herbal spice and floral tones. Anything even into the medium roast range is very chocolaty and smooth with just a pinch of a spice note. A cool cup from medium to dark. There are some sweet island floral tones upfront at the lighter roasts, a sweet edge with unique spice; somewhere between a woody cinnamon to more peppery/clove. Wonderful aromatics accompany lighter roasts but could be a little too grassy/sharp for some. Medium roasts are more chocolaty, balancing with the spice nicely, less woody, more bold semi-sweet clove like spice. A good cup from light to dark, in the medium roast range was our favorite. Light roasts are clean and bright, medium to full bodied, it will have a pretty strong citric tone upfront that balances nicely a little hint of fruit and spice, on the nuttier side with a little herbal note in the aftertaste. Medium roasts similar to most of the Thailand coffees brings out a nice and more potent chocolate note, reducing the citric and accentuating the classic Asian spice. Still noticeable acidity at the medium roasts but its more buzzy than citric, not an overly sour cup but will leave your tongue a bit dry: provides some great depth of flavor. Not a fruity cup, but one might see some hints as the cup cools. Darker roasts get real hefty with a lower perceived acidity, herbal, chocolate, smoky and roasty. Good body and mouthfeel.

Lighter roasts will show some nice clean lemony floral acidity but do not fully develop the nice robust chocolaty factor, interestingly enough, one gets a bit of African herbal/spice in the cup at the lighter roasts. Medium roasts are where we thought it shined, just a small hint of citric sweetness upfront with a good balance of spicy chocolate notes, unique spice, more like the Indian coffees. Darker roasts get more like the Dominican with strong bakers chocolate and smoky tones, a hefty cup with very low acidity.

Lighter roasts will show stronger lemony floral tones, with good body but will balance with a bit of herbal/vegetal darker tones, kind of like an African coffee, will not fully develop the nice robust chocolaty factor that fuller roasts achieve. A wonderful very clean example of natural processing, best served in the light to medium roast levels. Medium acidity levels, comes off a bit on the lemon side, medium bodied with a pretty strong red fruit tone upfront, definitely on the sweeter side. Super light, cup picks up a bit of nutty and herbal contrast but this will develop into more spice and chocolate tones just a little after first crack. Thicker and stronger than an Ethiopian Natural, with more of an emphasis on the fruitiness and spice notes. Darker roasts accentuate the spice, pretty similar to the other Asain coffees, would put in on the rustic chocolate side with sweet and fruity overlays and a full body.
