Located in Gedeo zone of the Gedeb district, Worka Chelbesa is one of the finest coffee producing areas within the famous Gedeb Woreda. Known for its dense layered semi-forest vegetation structure with false banana trees providing shade for coffee plantings, Chelbesa is a great example of an ideal coffee growing environment.
Chelbesa Washing Station, where this coffee was processed, is fairly new to the coffee landscape in Yirgacheffe. Nonetheless, this family-owned and operated washing station is producing exceptional coffees on par with some of the regions most renowned and established outfits. Farmers in this region have farmed coffee for generations upon generations. They are true specialists and are committed to using the best chemical-free cultivation methods. These cultivation methods result in an already stand-out product, and Chelbesa makes the most of this by adhering to stringent post-harvest standards.
Tasting Notes: Clean and sweet; this Ethiopian cup is a bit more delicate than most. Lower acidity and best in the medium roast range, will work for darker roast fans as well. We would avoid super light roasts, blooms into a well defined treat at city+ to full city+ roast levels. Wonderful aromatics and a nice floral tone without too much citric in the cup. Medium roasts produce a nice and chocolaty cup with floral highlights and a sweet edge, hints of tea like spice in the aftertaste. Smooth, balanced and rich cup with exotic highlights. Darker roasts are less smooth but even more chocolaty, a bit semi-sweet with some complimenting roasty attributes and stronger tea like spice notes. Traditional light roasts come off a bit nutty, a hint of citric but pretty faint, creates the best aromatics but most would consider it a bit underdeveloped without the stronger chocolate notes from medium or darker roasting.
Roasting Notes: Roasts nice and even, medium to low chaff levels. Make sure to get some development past first crack, too light and the cup will be a bit dry nutty, too dark and it will lose its more floral character. Too dark provide rich and chocolaty tones, which many will love so we recommend erroring darker then lighter.
