A very jazzy & blasty cup of coffee with a noticeable natural processed spin; full of citric, floral and fruity tones. Although similar, to the Typica, this Catuai is a much more potent cup, stronger acidity and more complex darker tones (think African type cup).
Panama Premium Boquete – Damarli Estate – Typica Natural Processed
A very jazzy & blasty cup of coffee with a noticeable natural processed spin; full of citric, floral and fruity tones. Although similar, to the Catuai, this Typica is a mild mannered version, slightly less acidic, smoother, but with similar tastes. Less spice; more neutral/classic tasting darker tones.
Panama Premium Boquete – Damarli Estate – Noble Caturra “Redwood”
A very jazzy cup of coffee with a pretty strong natural processed spin. Lighter roasting points (before 2nd crack) are where this cup will shine. Light roasts themselves will be sizzling bright with strong citrus floral and fruit tones. The fruitiness is almost winy and more reminiscent of a red grape-skin; complex with a little astringency upfront. The cup will be pretty front loaded at the light roast points but will have a little contrast with a unique spice note and malty tones.
Panama Premium Boquete – Finca Stacy – Caturra Natural Processed
A very tasty Panamanian coffee assuming you are not expecting a fruit bomb of a cup (like many of the other Panama Naturals). Lighter roasting gets a little lemony floral upfront, fuller bodied, with complex dry malty spice tones already starting to pop out. Can come off a little herbal super light but will setup out of the taste after about 3-4 days. Got to be a little patient if you love the lighter roasts. Medium roasts were our favorite, a bit smoother, clean and well defined even right out of the roaster. Low acidity with more of a creamy mouthfeel. Works well at the darker roasts, real robust and stout like, semi-sweet with complimenting tones to the roasty and smoky dark roast profile.
Panama Premium Boquete – Casa Ruiz – Berlina Estate – Typica Natural
Best at a light to medium roast. High acidity, very fruity with a ton of sweet lemon/floral right upfront. A blasty cup similar to the other outstanding Panama Naturals. The more citric/floral notes fade into some hints of classic red fruit, especially as the cup cools, and balance with a little spicy malt like undertone. This cup has a little more of that classic “red fruit” note than the other Panama coffees, but by no means over ferment, it presents very nicely and is well balanced with all the other flavors present. A very sweet, lemon/floral/fruity cup with a malt like contrast.
Panama Premium Boquete – Damarli Estate – Noble Pacamara Imperial
A lovely lighter roast coffee assuming you like fruity and floral cups. The imperial processing definitely adds some lighter toned jazz compared to their Pacamara Breeze. Stronger citric and floral tone upfront. This is not your average Pacamara bean, often they are pretty dark toned. Lighter roasts will show strong lemony acidity and lots of floral characteristics, strong grape like fruity factor with just a hint of a rustic malty undertone, very sweet edged. Make sure you like fruity naturals if you are going for the lighter roasts. Medium roasts were not as front loaded with the fruity floral but still very noticeable, builds some good body as you push the roast a bit darker. Cups turns much more chocolaty with fruity highlights as you get close to 2nd crack, it will still show some floral lemony character as well providing a lot of sweet crisp tones. Dark roasts are not recommended, they will turn a bit bitter and edgy hiding most of the unique tastes.
