A wild and tasty cup. Great from light to dark. Lighter roasts will have some sizzling acidity and nice red fruit & grape skin overtones. Floral and sweet but pretty front loaded with brighter more citric tones. Great depth of flavor, a little bit of everything going on in this cup. Medium roasts are a bit more chug-able muting some of the acidity and building a classic malty undertone, still plenty exotic but not nearly as sharp. Close to touching second crack worked nicely as well, fun to get those strong semi-sweet malty tones of the dark roasts with overlaying exotic fruit notes still popping right through.

Rosma was founded by its owner Dr. Fredy Morales Merida, who inherited the land from his father Mr. Alejandro Morales Herrera. On his own initiative, started cultivating and managing the land 40 years ago. The construction of a proper road, which not only gave the farm better access, but to neighbors as well. the acquisition of a natural water spring, about 5 km away from the plantation, which facilitated and improved the irrigation.

Due to the topography of the land, it was difficult and took a lot of work to build the facilities necessary for the production of coffee, Therefore, the Coffee Mill has now become a highlight of the property.

“Finca Rosma” has been cataloged as a sustainable coffee farm, taking care of two basic criteria: Environmental and social responsibility. We provide house, schools and medical assistance to employees of the farm. To preserve soil and biodiversity the plantation is shade grown. This is beneficial to the native forest and wildlife.

The plantation is relatively new. The first ones were soiled in 1982. The varieties grown are Catuaí, Caturra, Villa Sarchi, Typica and Bourbón. In the last five years  new generation of varieties  has been  planted :  Pacamara, Geisha, SL 28

Roasting Notes:
Higher chaff and roasts a bit two toned, but still considered easy to roast, hard to find a bad roast point with these beans. If you do not like brighter cups, error a little darker than lighter and shoot for a nice medium roast. Setup time is important on a cup this snazzy, drink it too soon and risk a sour edge covering up all sorts of little flavors.
