*Large Bean Warning – Maragogype coffees are about as large beaned as coffee comes. Great from light to dark. Light roasts are fruity, sweet and floral with a little hint of a nutty/herbal undertone, well balanced with just the right amount of crispness. Medium roasts cut off the crisper edge, a very nice and smooth cup full of sweet nutty and chocolaty tones, a little fruit tone pops out mostly in the aftertaste or as the cup cools. Darker roast stay very sweet but turns it a little roasty/chocolaty/smoky, which covers up the awesome depth of flavor these beans produce.

Description

A beautiful top lot on a unique and fun strain. Highly rated and great from light to dark. Although washed processed, this coffee does have a little fruity/orange sparkle. They let the cherries age slightly before running it through the washed processing method.

This single-variety lot consists of 100% washed Maragogype and comes to us via Bliss Coffee. It was grown on Finca La Antonieta, located in the San Miguel region of El Salvador.

The journey of Maragogype to Finca La Antonieta begins 25 years ago when Rene Pascal, an agronomist, visited Brazil in order to study their local varieties. While there, he observed that Maragogype, which is a Typica mutation, produces a unique and excellent cup profile when planted in very specific conditions. Pascal brought some seeds back with him, found La Antonieta to be an ideal location, as it sits at a higher elevation that most farms in El Salvador, is protected from sea breezes due to its location on the northern slope of the San Miguel volcano, and receives only four hours of mild sunlight a day.

Tasting Notes: Great from light to dark. Light roasts are fruity, sweet and floral with a little hint of a nutty/herbal undertone, well balanced with just the right amount of crispness. Depending on roast level, nutty/floral/caramel/soft-fruit/smoky like tones can be found. Light roasts are more floral, citric & caramel like. Medium roasts were smooth and clean, easy drinking. Darker roasts are much stronger, more chocolaty & semi-sweet with a smoky finish.

Roasting Notes: Medium to low chaff and easy to roast. To showcase the quality of these beans, keep them at lighter roast points, but one heck of a tasty cup as well medium to dark. Generally the large beans do not hinder the roasting process, but not a bad idea to reduce batch size a pinch to allow for greater expansion during first crack.

    First of all I have been purchasing Beans from Burman for several years now and they are now my go to supplier. I sold coffee for the largest route based coffee supplier in the country for 30 years. Now in retirement, I enjoy roasting as a hobby for my Church events and of course for personal consumption. This fine example from El Salvador marks the first time I have reviewed a coffee on this site! After MANY purchases of beans from all around the map, I find this bean remarkable! I watched these large beans expand and blossom beautifully, and after completing first crack I stopped the roast and let them degas over night, then sealed them and let them rest for several days. The wife and I were shocked how quickly we finished the first pot, so much so that we brewed another! Enough said!! ENJOY!!!
