A great cup from light to dark roasts. Lighter roasts will front-load the cup tastes with floral buzzy acidity and fruit tones. Heavier on the citric, but some red fruit will shine through. Pulls a little balance with a sweet nuttier undertone. Medium roasts bring out more of a chocolaty aspect, muting the citric components; pops out the red fruit a bit more and provides a fuller bodied cup. Smooth, rich, sweet and balanced, a great starting point for most unless you love a very bright cup. Darker roasts get a strong bakers chocolate tone, robust and semi-sweet with a touch of fruit as the cup cools.

Description

Cherries for this lot are hand-picked and de-pulped before undergoing tank fermentation for 50 to 64 hours. From there, they are washed and patio-dried for 15 to 20 days. The prolonged fermentation produces a unique profile for this single-variety lot, which is sourced from seven smallholder farmers in the Huila department.

This is from our buddies over at Olam (Covoya), they own and operate a couple mills throughout Colombia and do some awesome more specialty chops and processing. Always pushing the bounds of coffee processing and setting trends.

An awesome example of new wave coffee processing. The washed processing brings uniform beans and consistent tastes. The tanked (anaerobic) extended fermentation gives buzzy acidity and a very clean fruitiness, unlike natural or honey processed coffees. Very little “ferment” tones. The Pacamara strain is known for a bolder, and very sweet chocolaty/nutty earthiness. The Huila terroir is known for its bigger bodied coffees and more buttery textured body. All this comes together to create an awesome & unique Colombian offering, very diverse in its flavors.

Roasting Notes: Easy to roast and a tasty cup from light to dark. If you like brighter crisper cups, keep it lighter roasted, if you like strong and dark toned cups, roast it a bit darker. If unsure, a nice lighter side of medium roasting should appeal to everyone. Setup really smooths it out. Even roasting and medium to low chaff.
