A wonderful example of a fruity natural! Lighter roasts are where this cup will shine. Hints of lemony floral acidity comingle with tropical edged red fruit tones, what a combination! A chocolate like undertone to balance off the cup. Not much for the traditional African herbal/vegetal spice note which many Central or South American coffee fans will love, but may come off as a more delicate cup to African fans. Medium roasts get much more chocolaty and smooth, retains the red fruit tone nicely. Darker roasts pick up some stronger roasty tones, compliments the more chocolaty aspects of the cup, especially as it cools, the fruitiness will jump right out even at darker roast points.

A lovely coffee from medium to dark roasts. A chocolate bomb cup (similar to Tanz Peaberry) at the fuller roast levels. Lower acidity, medium bodied, with a strong semi-sweet chocolate note. Hardly any traditional African herbal notes, which made me like this cup even more, smooth and on the more neutral side. If you roast it a bit lighter, you can see some brightness, a hint of lemon and a slightly more floral note popping out, but will not be nearly as chocolaty. Medium roasts build the darker tones and mute a bunch of the citric brightness, a semi-sweet chocolaty cup with a burnt sugar kick, just a pinch of crisp citric that will disappear as the coffee sets up. Hints of nuttiness is the aftertaste with a more milky mouthfeel. Darker roasts (into 2nd crack) turn the cup more robust, a semi-sweet chocolate bomb with a little roasty spice in the aftertaste, much flatter but very tasty with a splash of milk or for espresso/cold-brew.

This is one exotic coffee even for natural fans. A good example of very strong anaerobic fermentation, keep in mind, strong fermentation is not for everyone. A potent brew and a super complex cup: red fruit, citrus, booze, spice, oak, nut, cocoa. Best served at the light to medium roast level. Crisp and sweet edged, fuller bodied with a creamier mouthfeel. Nothing can quite prepare the tongue for the tastes on strong natural processed coffees, but if you’re a fan, do not miss this one. Very complex cup and not as overly fruity/winy as the open air natural, lots of darker tones to these beans. The lighter you roast, the more wild this cup gets. If you want to lean the cup towards the fruity and sweet tones, keep it on the lighter side. For very complex darker tones, boozy rum like spice with oaky complexities, a strong medium to borderline dark roast is the way to go.

Clean, sweet and balanced, this is the Yunnan offerings for most coffee fans. Best at the light to medium roast levels: there is a little crisp citric upfront, a bit more lime than lemon, a hint of red fruit giving a sweet edge. These lovely lighter tones pull some balance with a nutty/chocolate like undertone with a bit of spice, accentuated as you push the roast darker. Medium bodied, medium brightness levels, small hints of red fruit more noticeable as the cup cools. Light roasts themselves are much more citric, good to give a longer setup if shooting light, mellow out the crispness a bit. Turns much more chocolaty at the darker roasts but will introduce potent bitter, semi-sweet chocolate like notes. Medium roasts present the best balance and would qualify as a jazzy daily drinker.

We thought best around the medium roast level but works well from light to dark. Great floral and soft fruit tones upfront with a bit of brightness, not too overwhelming or potent like some Africans, delicate sweetness balanced with a little chocolaty spice. Smooth with almost a brown sugar hint at a strong medium roast. Pretty much everyone will love this coffee, a great everyday drinker. Strong savory with panela and burnt sugar flavors. Juicy acidity and sugary sweetness.

Best from the lighter side of a medium roast to as dark as you want to go. A bit cleaner tasting but slightly less fruity than previous seasons. Lighter roasting presents some nice honey processed features: citric, floral, soft fruit with an almost oak/peat like finish, sweet & complex but does risk some underdeveloped tones if you nail it a little too light. Medium roasts were our favorite, still balanced and complex but will develop the traditional chocolate and smoky tones for which Dominican coffees are known for – to balance out those more exotic fruity and citric tones. Darker roasts are a little more complex than on the washed processed version, but not as smooth and rich.

New 2024/25 Crop! A very cool, very exotic cup of coffee. One can tell this is a slow dry natural processed coffee with its strong ripe red fruit tones upfront. Lighter roasting presents a ton of floral and fruit with an almost oak/peat boozy finish, very sweet with just a ton going on but does risk some underdeveloped tones with its two-toned roasting. Medium roasts were our favorite, still plenty wild but develop enough of the chocolate and smoky tones – which most Dominican coffees are known for – to balance all those more exotic fruity and citric tones. Darker roasts will burn out most of what distinguishes this cup, the washed processed handles those roast level much better; interesting and still exotic but strong and edgy, it will retain some fruity factor with very strong and less sweet, smoky, tobacco and bakers chocolate type notes.

Clean, bright, sweet with a very diverse flavor set. Stone and darker fruit, citrus & floral, and spiced chocolate tones are the main flavors one can see in this cup, either accentuated or muted depending on roast level. Nice jammy body will be seen in the medium to borderline dark roast mark. Very dependent on roast – lighter roasting gives much more of the citrus, red-fruit with just a hint of a spicy chocolaty factor, a much dryer finish. Darker roasts produce much more of a bakers chocolate cup with a hint of a strawberry like fruit note and good sweetness, far less acidic. A very enjoyable cup from light to dark.

Crisp, clean, sweet and very highly rated, a fun treat for any Ethiopian fan. Light roasting is recommended to see the cup shine but hard to find a bad roast point. Lighter roasts are where you will see the cleanliness of the cup, balanced tones with good mouthfeel and hardly a hint of anything grassy or vegetal. It will have some decent brightness, lemony with just a pinch of peachy like fruitiness. The aromatics are unique being overly floral with some classic Ethiopian hints of lavender/jasmine. The lighter tones pull some balance with the classic tea (herbal/spice) like darker tones. Medium roasts really mellow out the acidity and reduce the citric & floral tastes, creates a bit more body and a much more recognizable chocolaty factor. A very smooth, balanced and rich cup with exotic highlights. Darker roasts are fuller bodied and dark toned: roasty, bakers chocolate with some unique spice and rich aromatics.

No missing the more wild natural processed tones in this cup. Best served at the light to medium roast levels. A bit of citric crispness upfront that quickly fades into a sweet fruity note, the lighter tones balance with a boozy complexity, think oaky barrel aged like tones, with more traditional nutty/chocolate like tones in the aftertaste. Wonderful depth of flavors and a clean tasting cup from light to dark. With its more potent tastes, a longer setup will help smooth it out the cup and reduce some of the wild tones. Light roasts themselves will show a little higher acidity, lots of citric and fruitiness, balances more on the nutty side of things. Medium roasts promote a bit more chocolaty factor, reducing some of the citric acidity, bringing out more of the barrel aged darker toned complexity with fruity highlights. Dark roasts are interesting but can get a bit bitter as you enter second crack, assuming you like stronger edgier coffee, can be a unique treat for dark roast fans.

A wonderful example of a top grade washed Ethiopian. Best served in the light to medium roast range, a very delicate and sweet cup. Hints of citrus and soft fruit comingle with floral, caramel, chocolate and tea like spice. Heirloom Ethiopian strains have a taste like no other and offerings like this one showcase their uniqueness. For acidity fans, a light roast ending real close to 1st crack will have a stronger lemony citric edge, covers up a bit of the delicate floral/fruit but crisp, clean and sweet. We personally liked it better just a shade or two darker, splitting the difference between light and medium. It will mellow the citric tones popping out the sweet floral, while building a bit more sweet caramel/chocolate darker tone with a hint of tea like spice in the aftertaste. Crisp but not overly acidity. Darker roasts go the other way covering up the citric and floral with strong chocolate and herbal tones. The aromatics are fantastic on these beans and will add wonderful floral depth to the tastes.

From Huehuetenango (Huehue), Guatemala, this washed Maragogype from Vista Al Bosque is a classic “Huehue” profile: very clean, smooth and approachable, pairing winy/floral notes with subtle malty tones and a sweet base of chocolate and caramel; acidity is medium yet pronounced, led by an intense lemon pop and a lime-like finish that stays crisp and clean. The story behind the lot is equally compelling Wilmar Castillo worked for years on other farms before slowly buying and building Vista Al Bosque (“the farm overlooking the forest”), which he now runs with his wife and son. Roast-wise, it shines light to medium for florals and citrus; pushing darker turns it more chocolate-forward with lower perceived acidity.

I always love the Kona profile. We thought these beans to shine from a medium to dark roast. Lighter roasting will produce hints of a fruity island acidity balanced with a chocolaty/nutty undertone, jazzed up with a hint of herbal spice in the aftertaste. As the roast progresses the cup gets pretty low acidity and the nutty and chocolaty factor will get accentuated. Close or into 2nd crack you will get some added smoky and roasty notes that will compliment the sweeter cup profile.

It’s a fly crop (secondary harvest) from 1,659 smallholders, grown at 1700–1900 masl (SL-28, SL-34, Ruiru 11, Batian) and processed in classic Kenyan style with thorough washing/soaking and careful size grading. The cup is crisp, clean, and balanced: a bright lemon-driven lift up front, a sweet base of chocolate and caramel, nutty hints (almond/peanut-butter-like), and a gentle herbal/tea-spice finish; as it cools, light florals plus cocoa and brown sugar sweetness can show. Light roasts emphasize lemon and nutty layers, medium is the best balance, and darker roasts lean into cocoa and deeper spice with softer acidity.

This washed Kenya AA comes from Iveti, Machakos County, via the Ngomano Factory, the washing station of the Ngomano Farmer Cooperative Society (FCS), which comprises 1,115 smallholder farmers (part of the Machakos Cooperative Union). Grown at 1700–1800 meters above sea level (varieties SL-28, SL-34, Ruiru 11, and Batian), this is a fly crop (secondary harvest) lot that arrives exceptionally fresh out of season. In the cup, it offers a clean and balanced Kenyan profile, with bright lemon citrus and a subtle hint of red fruit upfront, settling into a sweet chocolate and nutty undertone, finishing with a black tea-like herbal spice; it has medium acidity for a Kenyan coffee and a medium to full body, and performs well with light to dark roasts (darker roasts bring out more chocolate/caramel notes).

Similar to it’s AA cousin, a great cup from light to dark. We preferred it at a nice medium roast, toned down the brightness a bit without burning out any flavor depth. A brighter cup with a medium to full body. Although this cup does have some acidic components, all in all, it would be considered a medium/low acidity Kenya, sometimes they are just teeth chattering. Starts with a lemony crispness, a little hint of red fruit, balances with a nice chocolate and herbal dark tone, just a speck of nuttiness in the aftertaste. A clean, balanced, and full flavored cup. A great example of a traditional Kenya. Darker roast levels get very chocolaty, will shows hints of spice, burnt sugar and nuttiness, turns it a bit thicker tasting, fuller bodied. Although we enjoyed this best at lighter roasts, there are not many dark roast coffees that taste this complex making it wonderful light to dark roasting coffee.

Although similar to the Typica, this Catuai is a more potent cup, stronger acidity with more complex darker tones (a little along the lines of African coffees). Light roasts themselves will be brighter with crisp lemony floral notes and more noticeable fruit tones, nutty tones to balance out the cup. Medium roasts bring a smoother and richer cup, develop the nuttiness into more of a malty/chocolate like taste, reduces the fruitiness but keeps the sweetness, still a bit lemony upfront but has a much more noticeable malt like tone with a bit of spice to balance it out. Darker roasts pull a little bitter/malty contrast but it goes well with the roasty and smoky tones and retains a sweet edge. A little longer setup sees a smooth a sweet darker roast.

New Crop Rwanda! This is a fully washed Bourbon from Nyamasheke, near Lake Kivu, where the cool, humid conditions influenced by the nearby Nyungwe forest and the region’s volcanic-influenced soils help produce clean, well-structured cups. It’s processed through the Jarama washing station network and typically dried on raised beds at high elevation (around 1700–1900 masl). At a medium roast you’ll usually get a sweet, clean profile with a nutty/chocolate base and a light citrus lift; roasted lighter it leans brighter and more fruit-forward (grape-like), and pushed darker it turns deeper and sweeter with more cocoa and caramelized sugar and less acidity.

A very fresh and semi-exotic Rwanda coffee. A good cup from light to medium roasts. A little brighter cup with a citric and grape/apple like fruitiness upfront. Pulls some contrast with a semi-sweet chocolate tone, some lingering African spice in the aftertaste. A milder “natural” processing, adds some great complexities to the taste, raised sweetness levels and hints of fruit but no boozy or over fermentation noted. The medium roast offers a smooth cup with an accentuated bakers chocolate note, hints of the fruitiness in the aftertaste and as the cup cools. Darker roasts add complementary roasty notes, a sweet flavor of caramelized sugar and chocolate, with a hint of spice, lower acidity, and a fuller body, although its fruity notes are somewhat overshadowed by the chocolate. It is undoubtedly a coffee with a great balance between sweetness and fruitiness.

An interesting and complex Tanzania Peaberry, best from light to medium roasts, but works darker as well. At lighter roast points it grabs your attention right from the start with a vibrant and juicy acidity, slightly higher than usual, with hints of sweet orange and lemon. The crisper cup profile gives the cup a lot of lively flavor depth including it more potent deep chocolate and cocoa notes, accompanied by a classic African spice note, an herbal nuance clearly reminiscent of black tea; far from clashing, this herbal touch creates an excellent and highly appealing interplay of flavors in the cup. It has a medium body that accentuates and becomes denser as the temperature drops. In the background, there is a fruity sweetness, praline, and a slight hint of amaretto, resulting in a very balanced cup. Moving into darker roasts, it will lose its acidity, consequently gaining more body and intensifying its chocolate and sweet notes.

Tanzanian peaberry is always high on our list for darker roast beans: rich and chocolaty cups with robust and unique spice notes. This one being fresh as can be works pretty well from light to dark, if too light it can get a little grassy/herbal, but a clean and balanced cup with just a little development past first crack, a city+ roast they would call it. Retains its cleanliness into the darker roast points. Lighter roasts are going to be more acidic, not quite like a Kenya but a pretty clear citric edge balancing with a little hint of chocolate. Hit the roast right and you will see a pinch of caramel sweetness with a longer setup, but get it a bit too light, will have an herbal edge. Medium to dark roasts are pretty bullet proof. Medium will still show a hint of acidity, darker will lose it all. Either roast level will be nice and chocolaty with some spice behind it. If your a cold brew fan, lighter roasts points were pretty awesome, no risk of herbal and it popped out the sweeter caramel note much easier, a lighter bodied and sweeter cup.

Coming from family farms organized through Cooperativa Café Timor (CCT) and is sourced from the regions of Ainaro, Ermera, and Liquiçá, grown at 800–1600 masl and washed then dried on raised beds. The listed variety is Timor Hybrid a naturally occurring Arabica × Robusta cross first identified in Timor in the 1920s, widely known for its rust resistance used in many Arabica breeding lines. In the cup it’s sweet, comforting, and clean, led by plum over a base of almond, caramel, and chocolate, with a smooth, well-rounded profile and gentle sweetness rather than sharp acidity. For roasting, it’s described as easy to work with: light-to-medium keeps the fruity sweetness while building caramel/nut tones, while darker roasts push it toward caramelized sugar and toast just watch development after first crack so you don’t lose the fruit and complexity.

Anaerobic coffees are fermented coffees. Sealed containers are used to control the fermentation process. There are no fixed rules for the coffee farmer; this method can produce coffees with low fermentation, similar to those processed using the wet method, or coffees with a much more intense fermentation, far exceeding most naturally processed coffees. Unlike the previous season, in which this coffee had a much more intense and fermented flavor, this season’s offering is much more refined, undoubtedly the most fruity and citrusy of the three, but without being excessive, resulting in a much cleaner and more balanced taste. This lot features controlled fermentation that highlights its fruity and citrus notes without becoming overpowering, with hints of chocolate and spice. Sourced from a pioneering farm founded in 1972 with a significant positive impact on the local community (providing access to water, schools, and a clinic on the farm itself), this lot is best roasted to a light or medium level and benefits from extended rest after roasting to allow the delicate fruit aromas and deep cocoa tones to fully develop.

Nsunzu is the youngest of Zambia’s NCCL estates, set at the foot of Mount Nsunzu in the Northern Province. Nsunzu’s first full crop was harvested in 2020 and despite the ability to mechanize, the estate intentionally hand-picks to select only the ripest cherries while providing steady jobs in a region with limited paid work. This Rainforest Alliance washed lot is an AA selection of Catimor 129, grown around 1400–1650m, and it’s built to be versatile across roast levels: lighter roasts lean citrus with a soft cocoa edge, mediums bring a smoother chocolate-and-spice balance, and darker roasts deepen body and chocolate while keeping a clean finish with a lingering spicy note.
