Best at the light to medium roast levels. Light roasts themselves have a very sweet citric upfront, hints of floral in the aromatics with a little hint of darker toned contrast, nutty/cocoa/spice. A pinch of fruit as the cup cools but more down the citric alley. A little lighter bodied, complex and balanced. A very jazzy, sweet and delicate lighter roast bean with wonderful aromatics. Medium roasts reduce the citric and floral, smoother cup building a bit more body and showing more of what we classically think of Asian coffees, bolder with some spice notes. Assuming you are on the lighter side of a medium roast, you still get nice balance of tones in the cup, a strong medium roast to dark roast points, the coffee is much flatter, strong semi-sweet chocolate with herbal spice.

A great cup from light to dark roasts. We thought it shined best on the lighter side of a medium roast, a city+ most would say. The sweet and nutty tones give a hint of caramel with a little setup. Shows some citric acidity upfront but would be considered a lower acidity cup overall. The brighter features comingle with a medium bodied nutty/cocoa undertone and a sweeter edge. Reminds me of a nice Honduran coffee more so than a traditional Brazil, a bit nuttier. Medium to dark roasts mute the brighter characteristics providing a very smooth cup that works a little better for daily drinking or espresso. Turns much more chocolaty the darker you roast, still retains a little nuttiness in the aftertaste, a bit roasty if you touch or go into second crack but it compliments the beans characteristics.

Best at lighter roast points. A mix of exotic strains with an extended drying time giving this coffee a surprisingly tropical fruit note with some floral overtones. Would be hard to guess it as a Brazil coffee but wonderful tasting. From the first sip it offers a very fruity profile: juicy notes of watermelon and strawberry intertwine with a base of creamy chocolate and above-average sweetness, while maintaining the classic medium-light body typical of Brazilian naturals. In a light to light-medium roast the fruit and sweet creaminess shine, whereas at a medium-dark roast the cocoa facets deepen, malty and creamy nuances emerge, and the body thickens slightly, yet the cup remains clean and bright.

An awesome exotic Colombian, tasty from light to dark. Brighter, sweeter and thinner bodied than you average Colombian. Full of floral, soft fruit and chocolate like tones.
Lighter roasts will have strong citric floral notes with some red fruit highlights. Hints of chocolate herbal spice will pull a little balance between the light and dark tones. Light roasts will pop out the more exotic tones in these beans, they will get more classic Colombian character the darker you roast. Medium roasts are more balanced, reducing the stronger citric component, pronouncing the red fruit and bringing forth a thicker body with more traditional rich nutty & chocolaty Colombian tones. Darker roasts into 2nd crack are a little edgy, semi-sweet chocolate and spice tones will pack a punch, the roasty & smoky tones will compliment the darker tones nicely, a hint of a fruity tone can be found in the aftertaste but just a hint.

Good from light to dark, but to see the fruit notes shine, keep it in the light to medium ballpark. A bit of lemony citrus upfront that fades into a sweet red fruit tone, followed by a bit of nutty/herbal darker notes. The sweetness and fruitiness linger on the tongue. A longer setup help rid the lighter roasts of the more herbal qualities. Medium roasts are pretty bulletproof and well balanced, showing a little more of a potent nutty/chocolate undertone but no missing the fruitiness and slight citric. Darker roasts worked very nicely for a natural processed, sometimes they get all sour and twangy, but being both a Colombia and Pacamara, the more robust body and nuttiness of these beans, with a chocolate and smoky overtone, balance very well. Add on a little sweet fruitiness in the aftertaste and one has a winning dark roast natural.

A good cup from light to dark but to showcase what makes these beans special, light to medium roasts will be the way to go. Similar to a nice Ethiopian, light roast points are very jazzy with stronger citric/floral acidity mixing with a little soft fruit tone, pulling some balance with a sweet edged nuttiness. With the mixing of red fruit and the more citric edge, it does make us think pink lemonade upfront, but knowing the strain while tasting does plant some descriptors. Some were more down the tart raspberry alley for tasting notes. Medium roasts get fuller bodied and smoother, good nutty/chocolate like undertones with less crisp citric/floral acidity. Darker roasts will kill most of the brightness but will retain a little hint of fruit as the cup cools. Much more chocolaty and robust at the darker roast points, potent brew, can have a little stout like bitter aftertaste but will hit the tongue on the sweeter side.

This is a quality bean in and out, best served in the light to medium roast level. Lots of cool tones to play with in the roaster. Higher acidity, very sweet, with some floral tones popping out, just like a high rated Costa should be. A fruit forward offering with a little fuller body and creamy mouthfeel. Slight red fruit tone layer the tastes but most will pick it up as a grape skin like fruitiness when mixing with the higher acidity. All these lighter tones balance with some nuttiness than will lean on the chocolaty side, especially as/if you push the roast a little darker. Super light roasts lean the cup to lemony/floral and will be loaded with more citric lighter tones, not very balanced but punchy and clean. Darker roasts lean it towards nutty/chocolaty with more stout like features & fruity highlights. In the middle, one gets layers of all the lovely flavors in the cup. Crisp and clean lemony floral balanced with sweet and smooth chocolaty undertones than linger on the nuttier side. Hints of fruit will pop out but not hit you over the head.

A very nice co-op production Tarrazu that follows the classic Costa terroir, floral acidity versus nutty and chocolaty tones. Best at medium to dark roasts, a lovely daily drinker. A good balance of flavors that can accommodate anyone’s personal tastes, dependent on roast level. Lighter roasts are brighter, sweeter and more floral, balanced with hints of dryer, nutty undertones. Medium roasts had the best balance, smooth with a slight chocolaty edge and pronounced nuttiness in the aftertaste, just a hint of crispness to the cup. Dark roasts turn fuller bodied and semi-sweet, accentuating the nutty and chocolate tones even more but will lose its floral and crisp sweeter edge.Price:Price: Original price was: $8.10.$6.49Current price is: $6.49.$8.10/lb$6.49/lb -

New 2024/25 Crop!
Best from the lighter side of a medium roast to as dark as you want to go. A bit cleaner tasting but slightly less fruity than previous seasons. Lighter roasting presents some nice honey processed features: citric, floral, soft fruit with an almost oak/peat like finish, sweet & complex but does risk some underdeveloped tones if you nail it a little too light. Medium roasts were our favorite, still balanced and complex but will develop the traditional chocolate and smoky tones for which Dominican coffees are known for – to balance out those more exotic fruity and citric tones. Darker roasts are a little more complex than on the washed processed version, but not as smooth and rich.Price: $9.49/lb - 8.29/lbPrice: $9.49 -

Kayon Mountain has become a tradition around here, marks one of our favorite times of the year, new Ethiopian season! Beautiful coffee and screen.
Clean, bright, sweet with a very diverse flavor set. Stone and darker fruit, citrus & floral, and spiced chocolate tones are the main flavors one can see in this cup, either accentuated or muted depending on roast level. Nice jammy body will be seen in the medium to borderline dark roast mark. Very dependent on roast – lighter roasting gives much more of the citrus, red-fruit with just a hint of a spicy chocolaty factor, a much dryer finish. Darker roasts produce much more of a bakers chocolate cup with a hint of a strawberry like fruit note and good sweetness, far less acidic. A very enjoyable cup from light to dark.

One sniff of this coffee and you know you have something special. Jasmine floral and sweet aromatics, something you will only get out of Ethiopian coffee or Ethiopian strains. Best on the light to medium roasts but a wonderful cup at almost any roast level. Light to medium you get those wonderful aromatics that come through in the taste, peachy acidity, with hints of soft fruit balancing with rich defined black tea like spice notes a. A cup like this is why washed processed Ethiopians are one of the hottest coffees on the market. Darker roasts burn out a bunch of the acidity/floral/fruity but still a nice cup, strong tea spice and semi-sweet chocolaty factor.

A solid cup from light to dark, but for most drinking, a medium roast will be the way to go. Sweet with just a pinch of citric upfront, medium bodied, good mouthfeel, just a pinch of fruitiness and ends with a nice malty undertone. Lighter roast get a bit brighter and slightly more fruity but can risk a little grassy, medium roasts present great balance to the flavors and was very easy drinking, darker roasts retain a lot of sweetness and hefty malty tones, but will get pretty roasty/smoky. If drinking for drip/pour-over, medium roasts are where to go. If using for blending, espresso or cold brew, light or dark roasts can produce some really tasty results.

I always love the Kona profile. We thought these beans to shine from a medium to dark roast. Lighter roasting will produce hints of a fruity island acidity balanced with a chocolaty/nutty undertone, jazzed up with a hint of herbal spice in the aftertaste. As the roast progresses the cup gets pretty low acidity and the nutty and chocolaty factor will get accentuated. A wonderful tasting Kona grown from a unique to Kona strain: Red Bourbon. Much sweeter and slightly more floral than the traditional Typica strain, gentle winy acidity upfront balancing with soft and smooth nutty and chocolate like tones. A hint of caramel if you get lucky on the roast. A little higher acidity than the Hala Tree Extra Fancy Typica, but would still be considered a medium to low acidity coffee. The cup is best at the light-medium roast levels: clean, sweet and balanced. Still a very tasty cup at darker roasts but will lose the delicate balance turning the cup into more potent chocolate like tones leaning on the bitter-sweet side.Price: $31.99/lb - 30.79/lbPrice: $31.99 -

Good from light to dark although we thought it best at a nice medium roast. Crisp tones, slight citrus/fruit note and a fuller bodied rustic chocolaty factor to balance it off. Sweet and clean, this is a stronger cup of a coffee! Just a bit of the classic Indo earthiness, I might link this coffee closer to an exotic Colombian than an Indo (which is way cool). Very nice rich chocolate tones (a little sweet malt/caramel as it cools) adds to the mix of delicate flavors present in this cup. A slight smoky aftertaste can be picked up at the darker roast points. This is a must try for anyone who likes a real full bodied complex cup of joe!

Unlike almost any other wet-hulled coffee, this is actually quite tasty at the light to medium roast levels. The fruitiness of this cup cannot be missed, unlike the jasmine offering, the fruity aromatics and sweet tropical fruit note are quite strong. More similar to previous co-ferment coffees we have had. Light roasts would be considered very sweet and fruity, some classic citric tones upfront but they quickly fade into a unique tropical fruit note only seen in other co-ferment coffees. Even though the fruitiness is strong it still pulls some balance with a little earthy/herbal/cocoa dark tone that will compliment the cup. Medium to dark roasts promote the more rustic dark chocolate roots from Indonesia and the wet-hulling, reducing the more citric/floral tones from lighter roasts but will still be incredibly fruity in both aromatics and taste. Almost like its own Mokka/Java blend but with a unique fruitiness. The darker you roast the more complex darker tones the cup has adding in a hint of a barrel aged ferment complexity.

Unlike almost any other wet-hulled coffees, this is actually quite tasty at the light to medium roast levels. The jasmine aromatics shine at any roast point, but will be more delicate in taste, especially at fuller roast levels. No missing the co-ferment tones but comparatively to many co-ferment offerings, this has more delicate flavors, might be for its Jasmine instead of a more punchy fruit note. Light roasts have some sweet and clean lemon/citric and fruit tones right upfront that quickly fade into a nice jasmine kick. The tones balance nicely with a little earthy/herbal/cocoa dark tone that will compliment the jasmine. A semi-sweet cup overall with a ton of complexity. While piping hot, reminded me of jasmine tea, but with a fuller body, more creamy mouthfeel and a bit more kick in the aftertaste. Medium to dark roasts promote the more rustic dark chocolate roots from Indonesia and the wet-hulling, reducing the more citric/floral tones from lighter roasts. Gets a little hint of a barrel aged ferment complexity and highlights with the jasmine floral note.

A lovely example of Kenya coffee. Good from light to dark, we recommend a nice medium roast to showcase it. Very bright, punchy and complex at lighter roasts, a bit front loaded with citric/floral but very clean with some balance. A bit hoppy some will say with some spice notes popping out. The lighter tones will pull some balance with a semi-sweet chocolate edge but easily overpowered by the higher acidity when light roasted. Medium roasts build much better balance between the acidity (citric/floral/fruit) and the dark tones (nutty/cocoa/spice) making it less blasty of a cup, easier to drink all day. If you don’t like higher acidity, this is where to start with your roasts. Darker roasts have there place, but will kill some of what separates this cup from “average” Kenyan. Strong and semi-sweet, think bakers chocolate with herbal accents. A little smoky and roasty but presents nicely for a more exotic dark roast.

A brighter, full flavored cup with great depth of flavor. Upon first sip, one will see a vibrant burst of lemon/orange citric comingling with a slight red fruit, quickly balanced by a creamy cocoa undertone with a little gentle black-tea like spice in the aftertaste. Underlying notes of roasted nuts and cocoa anchor the profile. As the cup cools the acidity softens and a deeper chocolate note swells, yet the honey aromatics persist, making every temperature stage deliciously consistent.

Very fresh and tasty from light to dark roasts. Too see them shine, we do recommend a light to medium but there are reasons we can think of to take it darker. A complex, full flavored cup, which is why many think of Kenya as the top origin for high class beans. Lighter roasts are bright with stronger citric notes and hints of fruit, will pull a darker toned balance with a semi-herbal, green tea like component. Medium bodied, higher acidity with awesome depth of flavor. Medium roasts tame some of the bright characteristics, not as citric, promotes the body of the cup and turns the darker tones more chocolaty than herbal. Still retains good balance and depth but is not nearly as punchy with its tastes. Darker roasts around or into second crack will mute most of the citric and crisper tones, very strong and stout like semi-sweet chocolate notes, a hint of complimenting roasty/smoky that and will end with a bit of lingering spice in the aftertaste.Price:Price: Original price was: $8.99.$7.99Current price is: $7.99.$8.99/lb$7.99/lb -

A wonderful old world natural filled with hints of floral/citric, rustic-chocolate, spice and a pinch of fruitiness. Compared to previous lots, these beans do have a little brightness in them, not high acidity, but not nearly as flat as some we have seen in the past. A rounded cup with medium brightness and body. Citric, floral, red-fruit, chocolate, earth & spice are the dominate tones. The citric/floral/fruit will be accentuated with lighter roasts. Chocolate, spice, earth with darker roasts. A lovely complex old world natural that brings your tongue back to the roots of coffee itself. We preferred the cup at light to medium roasts best. It has great chocolate tones at the fuller roast levels but a bit flat with more neutral chocolate notes. Having a hint of crispness and a touch of fruit at the light-medium roast levels gave it the balance we though it deserved.

Best at the light to medium roast level. Good bit of citrus and red fruit upfront balanced with a thicker chocolate and spice note. Light roasts get a very jazzy stronger citric tone, with just a hint of a dark tone balance. Floral and sweet edged, with an emphasis on the fruitiness of the cup. Medium roasting brings the best of both worlds, some soft fruit, some chocolate and spice: medium to full bodied and far less sharp than the lighter roasts, but also a bit less fruity. More of a chocolaty cup with fruity highlights. Dark roasts get even fuller bodied but burn out some sweetness, taste like semi-sweet chocolate on the roasty/smoky side, thick with a bit of spice in the aftertaste. A hint of fruitiness as the cup cools but hard to tell its natural processed roots at darker roasts.

New Crop! Regular Price $8.79/Lb
A wonderful season for the Zambia washed. Good clean cup profile making it pretty tasty from light to dark roasts. We found the lighter side of a medium roast to be our favorite. Fuller bodied cup with a sweet lemony crispness balanced with a chocolaty dark tone, hints of nuttiness and spice in the aftertaste. Similar to a Rwanda/Burundi/Kenya but with a bit more body and less herbal spice. Lighter roasts accentuate the brighter more floral/fruity tones, a bit more showy of a cup with its brighter characteristics but not as chuggable, can pull a little herbal balance. If you cannot tolerate a bit of citric crispness, darker roasts are the way to go, mutes up most of the brighter cup features presenting a real big bodied, smoky, complex and very dark toned cup of coffee.Price:Price: Original price was: $8.79.$7.79Current price is: $7.79.$8.79/lb$7.79/lb
