Good from light to dark, but to see the fruit notes shine, keep it in the light to medium ballpark. A bit of lemony citrus upfront that fades into a sweet red fruit tone, followed by a bit of nutty/herbal darker notes. The sweetness and fruitiness linger on the tongue. A longer setup help rid the lighter roasts of the more herbal qualities. Medium roasts are pretty bulletproof and well balanced, showing a little more of a potent nutty/chocolate undertone but no missing the fruitiness and slight citric. Darker roasts worked very nicely for a natural processed, sometimes they get all sour and twangy, but being both a Colombia and Pacamara, the more robust body and nuttiness with a slight roasty & chocolate overtone, mix very nicely with a little sweet fruitiness in the aftertaste.Price:Price: Original price was: $9.99.$8.99Current price is: $8.99.$9.99/lb$8.99/lb -

A good cup from light to dark but to showcase what makes these beans special, light to medium roasts will be the way to go. Similar to a nice Ethiopian, light roast points are very jazzy with stronger citric/floral acidity mixing with a little soft fruit tone, pulling some balance with a sweet edged nuttiness. With the mixing of red fruit and the more citric edge, it does make us think pink lemonade upfront, but knowing the strain while tasting does plant some descriptors. Some were more down the tart raspberry alley for tasting notes. Medium roasts get fuller bodied and smoother, good nutty/chocolate like undertones with less crisp citric/floral acidity. Darker roasts will kill most of the brightness but will retain a little hint of fruit as the cup cools. Much more chocolaty and robust at the darker roast points, potent brew, can have a little stout like bitter aftertaste but will hit the tongue on the sweeter side.Price:Price: Original price was: $9.99.$8.99Current price is: $8.99.$9.99/lb$8.99/lb -

A very nice co-op production Tarrazu that follows the classic Costa terroir, floral acidity versus nutty and chocolaty tones. Best at medium to dark roasts, a lovely daily drinker. A good balance of flavors that can accommodate anyone’s personal tastes, dependent on roast level. Lighter roasts are brighter, sweeter and more floral, balanced with hints of dryer, nutty undertones. Medium roasts had the best balance, smooth with a slight chocolaty edge and pronounced nuttiness in the aftertaste, just a hint of crispness to the cup. Best from the lighter side of a medium roast to as dark as you want to go. A bit cleaner tasting but slightly less fruity than previous seasons. Lighter roasting presents some nice honey processed features: citric, floral, soft fruit with an almost oak/peat like finish, sweet & complex but does risk some underdeveloped tones if you nail it a little too light. Medium roasts were our favorite, still balanced and complex but will develop the traditional chocolate and smoky tones for which Dominican coffees are known for – to balance out those more exotic fruity and citric tones. Fresh, clean, and semi-exotic. Best in the light to medium roast levels but for the right purpose, can be used for darker roasts. Light roasts show a pretty good citric edge, mostly lemon but with a slight peachy spin, just a small hint of classic Ethiopian floral. Pulls some balance with a little herbal/nutty/cocoa note. Medium roasts cut out most of the citric and peachy qualities providing a smooth and rich cup, pretty neutral tasting, a little hint of spice and slight nutty/cocoa tones. A strong medium roast will start to pick up some complimenting roasty tones. Dark roasts get pretty hefty and bittersweet. It does have some exotic character but much of it is covered up by the more roasty notes coming from the roast level. Works really well for cold brew but can be a bit much for drip.

Kayon Mountain has become a tradition around here, marks one of our favorite times of the year, new Ethiopian season! Beautiful coffee and screen.Clean, bright, sweet with a very diverse flavor set. Stone and darker fruit, citrus & floral, and spiced chocolate tones are the main flavors one can see in this cup, either accentuated or muted depending on roast level. Nice jammy body will be seen in the medium to borderline dark roast mark. Very dependent on roast – lighter roasting gives much more of the citrus, red-fruit with just a hint of a spicy chocolaty factor, a much dryer finish. Darker roasts produce much more of a bakers chocolate cup with a hint of a strawberry like fruit note and good sweetness, far less acidic. A very enjoyable cup from light to dark.

A wonderful example of a top grade washed Ethiopian. Best served in the light to medium roast range, a very delicate and sweet cup. Hints of citrus and soft fruit comingle with floral, chocolate and tea like spice. Heirloom Ethiopian strains have a taste like no other and offerings like this one showcase their uniqueness. For acidity fans, a light roast ending real close to 1st crack will have a stronger lemony citric edge, covers up a bit of the delicate floral/fruit but crisp, clean and sweet. We personally liked it better just a shade or two darker, splitting the difference between light and medium. It will mellow the citric tones popping out the sweet floral, while building a bit more darker tea like contrast. Crisp but not overly acidity. Darker roasts go the other way covering up the citric and floral with strong chocolate and herbal tones. Crisp, clean and exotic. Good aromatics: nothing like grinding a fresh Ethiopian with its floral, jasmine and spice notes to tickle your nose. Lighter roasts have a little acidity and floral note upfront, mostly citric but the floral and a peachy like soft fruit tone can be found. The balance of the cup comes from a semi-tea-like chocolate factor. I tend to think of it as chocolate spice notes but many tongues can pick up a little black tea note. Medium roasts have just a pinch of citric acidic, builds a thicker body and brings forth more of the chocolaty cup profile, reducing the acidity slightly. Darker roasts are always tasty for those who like fuller roasts. This is how they would traditionally serve these beans in Ethiopia. Almost a shame, for it loses the cool spice and lighter floral tone balance but equally as tasty if you like more chocolaty cups with some spice.

I always love the Kona profile. We thought these beans to shine from a medium to dark roast. Lighter roasting will produce hints of a fruity island acidity balanced with a chocolaty/nutty undertone, jazzed up with a hint of herbal spice in the aftertaste. As the roast progresses the cup gets pretty low acidity and the nutty and chocolaty factor will get accentuated. Good from light to dark although we thought it best at a nice medium roast. Crisp tones, slight citrus/fruit note and a fuller bodied rustic chocolaty factor to balance it off. Sweet and clean, this is a stronger cup of a coffee! Just a bit of the classic Indo earthiness, I might link this coffee closer to an exotic Colombian than an Indo (which is way cool). Very nice rich chocolate tones (a little sweet malt/caramel as it cools) adds to the mix of delicate flavors present in this cup. A slight smoky aftertaste can be picked up at the darker roast points. This is a must try for anyone who likes a real full bodied complex cup of joe!

The citric turns a little grapefruit like and the nuttiness turns a bit more chocolaty, maintains a lot of depth between the acidity and herbal chocolate/nutty floral notes . Darker roasts get very strong and semi-sweet, think bakers chocolate with herbal accents. Lighter roasts will have a little citric/floral tone with a sweet and herbal edge, a hint of soft fruit. Medium roasts get much more chocolaty and less herbal providing a balanced cup, works nicely for all taste buds; smooth and rich. Best at the light to medium roast level. Good bit of citrus and red fruit upfront balanced with a thicker chocolate and spice note. Light roasts get a very jazzy stronger citric tone, with just a hint of a dark tone balance. Floral and sweet edged, with an emphasis on the fruitiness of the cup. Medium roasting brings the best of both worlds, some soft fruit, some chocolate and spice: medium to full bodied and far less sharp than the lighter roasts, but also a bit less fruity. More of a chocolaty cup with fruity highlights. Dark roasts get even fuller bodied but burn out some sweetness, taste like semi-sweet chocolate on the roasty/smoky side, thick with a bit of spice in the aftertaste. A hint of fruitiness as the cup cools but hard to tell its natural processed roots at darker roasts.

A wonderful season for the Zambia washed. Good clean cup profile making it pretty tasty from light to dark roasts. We found the lighter side of a medium roast to be our favorite. Fuller bodied cup with a sweet lemony crispness balanced with a chocolaty dark tone, hints of nuttiness and spice in the aftertaste. Similar to a Rwanda/Burundi/Kenya but with a bit more body and less herbal spice. Lighter roasts accentuate the brighter more floral/fruity tones, a bit more showy of a cup with its brighter characteristics but not as chuggable, can pull a little herbal balance.
