We thought these beans best at a nice medium roast: clean, floral and semi-fruity cup. The lovely lighter tones balance with a little chocolate and spice note. Medium body, lower acidity, and a bit sweeter. The fruitiness is delicate and down the red fruit alley, strawberry, or a touch of lychee appear on the nose and palate, supported by a chocolate/caramel/spice darker note. We had one taster say it was more of a banana-like sweetness. Lighter roasting will accentuate the citric acidity and lean it towards mandarin/lemon tones leaving the cup crisper and sweeter but can pull a little earthy contrast if too light.

This is one exotic coffee even for natural fans. A good example of strong anaerobic fermentation, but keep in mind, strong fermentation is not for everyone. A potent brew and a super complex cup: red fruit, citrus, booze, spice, oak, nut, cocoa. Best served at the light to medium roast level. Crisp and sweet edged, fuller bodied with a creamier mouthfeel. Nothing can quite prepare the tongue for the tastes on strong natural processed coffees, but if your a fan, do not miss this one. Very complex cup and not as overly fruity/winy as the open air natural, lots of darker tones to these beans. The lighter you roast, the more wild this cup gets. If you want to lean the cup towards the fruity and sweet tones, keep it on the lighter side. For very complex darker tones, boozy rum like spice with oaky complexities, a strong medium to borderline dark roast is the way to go.

Clean, sweet and balanced, this is the Yunnan offerings for most coffee fans. Best at the light to medium roast levels: there is a little crisp citric upfront, a bit more lime than lemon, a hint of red fruit giving a sweet edge. These lovely lighter tones pull some balance with a nutty/chocolate like undertone with a bit of spice, accentuated as you push the roast darker. Medium bodied, medium brightness levels, small hints of red fruit more noticeable as the cup cools. Light roasts themselves are much more citric, good to give a longer setup if shooting light, mellow out the crispness a bit. Turns much more chocolaty at the darker roasts but will introduce potent bitter, semi-sweet chocolate like notes. Medium roasts present the best balance and would qualify as a jazzy daily drinker.

A very fruit forward and floral exotic Colombian. All sorts of cool unique flavors can be found in this cup from the slow dry natural processing and boutique fermentation. The brighter tones tend to range from a lemon citric component at the lighter roasts to strong stone fruit in the medium roast range. The acidity is pretty high at the lighter roasts but mellows greatly at a strong medium to dark roast. The balance of the cup comes from an almost cola-like tone that turns a bit nuttier into the darker roasts. Medium bodied, super clean with some far from traditional Colombian tones.

Best served around a medium roast: Clean and fruity cup, with a more floral tone. Light sweetness and medium-medium/full body with a creamy texture. Citrusy start (orange/tangerine, lemon) that integrates with red fruits (strawberry, cherry) and a nuance reminiscent of grapes/wine without becoming heavy; hints of melon appear in the light phases and a cocoa-chocolate base with a slight “nuttiness” at the finish. It is not an aggressively “bright” cup: the profile feels heavier and rounder, with a good balance between fruit and body. Very clean natural, with no alcoholic traits.

A very nice co-op production Tarrazu that follows the classic Costa terroir, floral acidity versus nutty and chocolaty tones. Best at medium to dark roasts, a lovely daily drinker. A good balance of flavors that can accommodate anyone’s personal tastes, dependent on roast level. Lighter roasts are brighter, sweeter and more floral, balanced with hints of dryer, nutty undertones. Medium roasts had the best balance, smooth with a slight chocolaty edge and pronounced nuttiness in the aftertaste, just a hint of crispness to the cup. Dark roasts turn fuller bodied and semi-sweet, accentuating the nutty and chocolate tones even more but will lose its floral and crisp sweeter edge.

Best from the lighter side of a medium roast to as dark as you want to go. A bit cleaner tasting but slightly less fruity than previous seasons. Lighter roasting presents some nice honey processed features: citric, floral, soft fruit with an almost oak/peat like finish, sweet & complex but does risk some underdeveloped tones if you nail it a little too light. Medium roasts were our favorite, still balanced and complex but will develop the traditional chocolate and smoky tones for which Dominican coffees are known for – to balance out those more exotic fruity and citric tones. New 2024/25 Crop! A very cool, very exotic cup of coffee. One can tell this is a slow dry natural processed coffee with its strong ripe red fruit tones upfront. Lighter roasting presents a ton of floral and fruit with an almost oak/peat boozy finish, very sweet with just a ton going on but does risk some underdeveloped tones with its two-toned roasting. Medium roasts were our favorite, still plenty wild but develop enough of the chocolate and smoky tones – which most Dominican coffees are known for – to balance all those more exotic fruity and citric tones. Darker roasts will burn out most of what distinguishes this cup, the washed processed handles those roast level much better; interesting and still exotic but strong and edgy, it will retain some fruity factor with very strong and less sweet, smoky, tobacco and bakers chocolate type notes.

Clean, bright, sweet with a very diverse flavor set. Stone and darker fruit, citrus & floral, and spiced chocolate tones are the main flavors one can see in this cup, either accentuated or muted depending on roast level. Nice jammy body will be seen in the medium to borderline dark roast mark. Very dependent on roast – lighter roasting gives much more of the citrus, red-fruit with just a hint of a spicy chocolaty factor, a much dryer finish. Darker roasts produce much more of a bakers chocolate cup with a hint of a strawberry like fruit note and good sweetness, far less acidic. A very enjoyable cup from light to dark.

One sniff of this coffee and you know you have something special. Jasmine floral and sweet aromatics, something you will only get out of Ethiopian coffee or Ethiopian strains. Best on the light to medium roasts but a wonderful cup at almost any roast level. Light to medium you get those wonderful aromatics that come through in the taste, peachy acidity, with hints of soft fruit balancing with rich defined black tea like spice notes a. A cup like this is why washed processed Ethiopians are one of the hottest coffees on the market. Darker roasts burn out a bunch of the acidity/floral/fruity but still a nice cup, strong tea spice and semi-sweet chocolaty factor.

Best at light to medium roast levels but works from light to dark depending on your personal tastes. Bright, clean, and sweet cup, medium-bodied with a creamy aftertaste. Very fruity profile: crisp citrus reminiscent of lemon, orange, and grapefruit, with a core of red fruits (blackberry/strawberry) and a slight floral undertone (lavender). These lovely lighter toned balance with a nice chocolaty undertone with some spice that is somewhat reminiscent of tea, which many would consider the terroir of Yirgacheffe. If you push the roast a little further, medium to dark, the cups turns much more chocolatey and spice notes with just a pinch of fruit in the aftertaste. In the light to medium roast range, a juicy sweetness with hints of watermelon is perceived. A balanced and very expressive combination.

Single-estate microlot with full traceability: for over three decades, Wolde Hirbe has tended his 10-acre farm near Jemjemo, a member of Adame Gorbota and, since 2012, the YCFCU Single Farmer Project, which enforces rigorous processing and regular technical visits support that improves prices and has helped stabilize income for his family. Set in Wenago (Gedeo), birthplace of “Yirgacheffe,” the coffee grows in shaded agroforestry with enset, protecting soil and moderating ripening. In the cup, expect melon-like fruit, lemony acidity, a silky, medium-leaning body, and a clean chocolate-and-nutty backbone, staying remarkably consistent from hot to cool. Easy to roast and versatile (with a bit more chaff), it shines at medium: go a touch lighter to highlight citrus and fruit, or a touch darker for a cocoa/dark-chocolate emphasis. Even pushed darker it largely preserves that silky medium body. A sweet, crisp, and polished Gedeb profile—expressive yet balanced, with producer-level transparency.

Best at light to medium roast levels but depending on personal taste, works nicely from light to dark. A crisp, clean, sweet and very floral cup (jasmine like), with some classic Yirgacheffe chocolate and tea-like spice contrast. Light roasts are delicate and pretty bright, accentuating the floral but also the herbal tea like components. Overall the acidity is medium and is perceived more as mandarin orange than sharp lemon; the sweetness is reminiscent of caramel, and as the temperature drops, a cocoa base is felt, adding more body. Subtle fruity notes (blackberry/sweet citrus) and a slight spice note; a silky medium body and a very clean finish with hints of honey and cocoa. A rich and expressive coffee in which, although there is fruit, the floral notes dominate with a tea-like character.

A wonderful example of a darker toned, lower acidity Ethiopian. We thought best from medium to dark roasts but it will still find fans at lighter roast points. Lighter roasts will have some buzzy acidity and just a hint of lemon/floral balanced with smooth and rich herbaceous spice notes. A bit more on the bergamot/dark-tea like Yirgacheffe profile. Medium roasts turn the herbaceous notes towards the chocolaty side moving the herbal/tea like tones to the aftertaste. A bit fuller bodied, lower acidity with complex darker tones. Dark roasts turn semi-sweet and even more chocolaty, the spice is readily noticeable and the body picks up a bit of a creamy factor, the roasty/smoky notes mix well with the darker toned profile of this bean but will not hold its sweet edge like most Ethiopians.

We found this cup best from medium to dark roasts. Great balance, pronounced malt like and nutty tones with just a splash of a winey crispness to keep it interesting. A classic Guatemala with an inviting, straightforward profile. Lighter roasts have a silky mouthfeel and medium body, a pronounced floral/citric brightness, leans toward orange zest. The core is nutty, down the almond alley, supported by a chocolate/caramel underpinnings that round the cup. Good to let light roasts setup a bit longer or risk a little herbaceous tone. Medium to dark roasts bring out the larger body and reduce the brighter characteristics, making the dominate taste malty and nutty tones, medium roasts will have a pinch of citric for balance, dark roasts will not. A sweet cup until you touch second crack, then turns a bit bittersweet. Best tasted hot: at higher temperature the floral and citrus notes shine; as it cools they soften and the almond–chocolate side comes forward, keeping good sweetness and a comforting feel.

Light roasting will have some acidity, tastes will start with a sweet citric/winy crispness upfront and balance out with a malty/nutty/caramel darker tone, a hint of soft fruit in the aftertaste. A lovely balance of tones and our favorite roast point. Medium roasts reduce the citric/winy tones and soft fruit, promoting a sweet edged malty/chocolate like taste. Increases the body and smoothness, but will reduce the depth of flavors a bit. If looking to impress, light roasts are where it shines. For daily drinking, medium roasts are the way to go. A candidate for dark roasts, fuller bodied, low acidity with the malty and roasty tones mix nicely.

I always love the Kona profile. We thought these beans to shine from a medium to dark roast. Lighter roasting will produce hints of a fruity island acidity balanced with a chocolaty/nutty undertone, jazzed up with a hint of herbal spice in the aftertaste. As the roast progresses the cup gets pretty low acidity and the nutty and chocolaty factor will get accentuated. Close or into 2nd crack you will get some added smoky and roasty notes that will compliment the sweeter cup profile.

Unlike almost any other wet-hulled coffees, this is actually quite tasty at the light to medium roast levels. The jasmine aromatics shine at any roast point, but will be more delicate in taste, especially at fuller roast levels. No missing the co-ferment tones but comparatively to many co-ferment offerings, this has more delicate flavors, might be for its Jasmine instead of a more punchy fruit note. Light roasts have some sweet and clean lemon/citric and fruit tones right upfront that quickly fade into a nice jasmine kick. The tones balance nicely with a little earthy/herbal/cocoa dark tone that will compliment the jasmine. A semi-sweet cup overall with a ton of complexity. While piping hot, reminded me of jasmine tea, but with a fuller body, more creamy mouthfeel and a bit more kick in the aftertaste. Medium to dark roasts promote the more rustic dark chocolate roots from Indonesia and the wet-hulling, reducing the more citric/floral tones from lighter roasts. Gets a little hint of a barrel aged ferment complexity and highlights with the jasmine floral note.

A brighter, full flavored cup with great depth of flavor. Upon first sip, one will see a vibrant burst of lemon/orange citric comingling with a slight red fruit, quickly balanced by a creamy cocoa undertone with a little gentle black-tea like spice in the aftertaste. Underlying notes of roasted nuts and cocoa anchor the profile. A great cup from light to dark, but we think best at a solid medium roast. Light roasts will be pretty acidic, medium roasts smooth and balanced, darker roasts potent but bittersweet. This is an excellent classically bright Kenyan; super clean, sweet with good body. One can find all sorts of acidic like notes in this cup ranging from soft fruit to very floral citrus. All the wonderful lighter tones balance with a nice and rich chocolaty undertone, pretty potent, fades into some classic African spice on the tongue (tea like semi-vegetal). Turns pretty dark/bakers chocolate like into the darker roasts. Very fun cup with awesome flavor depth.

A lovely example of Kenya coffee. Good from light to dark, we recommend a nice medium roast to showcase it. Very bright, punchy and complex at lighter roasts, a bit front loaded with citric/floral but very clean with some balance. A bit hoppy some will say with some spice notes popping out. The lighter tones will pull some balance with a semi-sweet chocolate edge but easily overpowered by the higher acidity when light roasted. Medium roasts build much better balance between the acidity (citric/floral/fruit) and the dark tones (nutty/cocoa/spice) making it less blasty of a cup, easier to drink all day. If you don’t like higher acidity, this is where to start with your roasts. Darker roasts have there place, but will kill some of what separates this cup from “average” Kenyan. Strong and semi-sweet, think bakers chocolate with herbal accents. A little smoky and roasty but presents nicely for a more exotic dark roast.

A stellar light to medium roast coffee, one of the better batches of Terruno Natural we have had through our doors. Due to the processing this coffee is naturally very sweet, syrupy textured with a medium-full body. Its brightness leans toward citrus, more lemon than acidic lime, with nuances of apple and soft orange. The cup presents notes of peach, plum, and a light floral touch, with a background of chocolate and cocoa and soft undertones of caramel and vanilla. A wonderful batch of Terruno Nayarita great from light to dark roasts. This is one of the higher rated lots we have seen recently: crisp, clean and a bit brighter. Light roasts will highlight the higher rating but will be a little acidic for some. Medium roasts and very smooth and make for a great every day drinker. Darker roasts retain a very sweet edge but will produce a much flatter more potent cup. Lighter roasts have a hint of citric and a red-apple sweetness, supported by a gentle lemon/mandarin brightness that’s lively but not sharp. A light floral lift rides over a chocolate–caramel foundation; as the cup cools the tastes stay together showcasing the cleanliness, adds a soft hint of ripe stone fruit. Balanced, approachable, and versatile across brew methods. Medium roasts build up a bit of body, retaining just a hint of apple like acidity, pronouncing the smooth and nutty, chocolate like tones. Darker roasts get a bit roasty, but still have a nice and sweet edge, the most chocolaty cup profile assuming you don’t mind a bit of roasty/smoky to accompany it.

A wonderfully complex light to medium roast coffee. Light roasts are lemony and floral upfront which fades to stronger apple like fruitiness with some red fruit accents, balances with a hint of a chocolaty darker tones. Medium roasts clean up the more rustic chocolaty tones which many will like but also reduce the sweetness and fruity factor of the cup, a little fuller bodied with low acidity with good mouthfeel, fruity factor pops out more as the cup cools. Darker roasts get a bit edgy with semi-sweet smoky and roasty notes, finishes with almost a bit of an oaky barrel aged tone.

A very clean and fresh batch from Selva Negra. A little citric & floral acidity upfront, balanced with nice complex nutty & malty undertones. Light roasts are going to be a little front loaded with the brighter characteristics, a higher rated cup meaning one will notice some decent crisp acidity at the light-medium roasts. Will give great depth of flavor but may be a little sharp for some. Our favorite roast and a great everyday drinker was in the medium roast ballpark, builds more of a smooth and creamy cup with a sweet edge, reducing that perceived acidity to just a pinch. Great light to medium roast coffee. Although we have carried the San Felipe lot for years, having the Geisha separate this season has brought a ton of new tastes. East to tell the difference when compared to the other strains Selva Negra grows. Best at the light to medium roast level, these beans have a bit more acidity than anything else from Selva Negra. The cup is very floral and citric especially at lighter roasts. Not quite jasmine floral, a little more traditional citric, but very tasty; delicate and sweet edged. Where one can see the prime Geisha attributes is in the darker tones of the cup, black tea spice jumps right out. Light roasts are heavy on the citric and floral balanced just a touch of tea like spice with herbal overtones. Medium roasts are where most will want to shoot, defined tea like spice with some sweet crisp floral upfront. Darker roasts turn a bit plain, still very drinkable but not much uniqueness.

A very cool exotic cup best at the light to medium roast points but tasty from light to dark. The cup is a bit sweeter and brighter than the washed or honey processed. At lighter roasts one will get hints of citric and red fruit tones balancing with a slightly herbal malt like darker tone. Takes a little longer setup after roasting but clean and easy drinking at the lighter roast points. Medium roasts move the fruitier tones to the aftertaste and pronounce the rich maltiness of the cup. The red fruit can be more easily seen as the cup cools, or in cold brew. Darker roasts are hardly fruity but retain the sweet edge, a little smoky/roasty/malt like note makes for a tasty treat.

A very fresh and tasty African. Enjoyable at any roast level; medium to dark roast was our favorite. Medium roast points provide a smooth cup on the nutty/chocolaty side, sweet tea flavors and a hint of citric. A little herbal spice lingers in the aftertaste but very mild comparatively to most Africans. Darker roasts add complimenting roasty notes, a sweet burnt sugar and chocolaty cup that is jazzed up with a little spice, lower acidity and a fuller body. One can take it lighter if you want to boost the fruitier citric & floral tones but it can be a pretty sharp cup right at first crack.
