A very fresh and tasty Brazil! Lighter roasts show lemon, floral & soft fruit contrasted by a nuttier (almond like) undertone, a sweet edged cup. The two combine for a hints of caramel, quite tasty for you light roast fans. Medium roasts are richer, more of a developed chocolaty tone and decently less nutty; mutes up the soury floral edge, retains a little hint of soft fruit as the cup cools. Our third batch of Brazil Bahia, a lovely small production Brazilian. This lot 3 is less fruit forward than previous batches. Hints of soft fruit as the cup cool, but mostly about the rich and sweet nutty and chocolaty tones.
Great from light to dark. A pinch of fruity acidity comingles with nutty and chocolate like tones, good mouthfeel and fuller bodied. Light roasts come off a bit more fruit forward and nutty, has a very sweet edge with a bit of a boozy finish, medium to dark roasts show a much creamier cup showcasing the nutty and chocolate tones with far less detectable fruitiness. Lower acidity and clean as a whistle make this cup a wonderful daily drinker. A very sweet cup, coming from the seeds having a longer time in the ripe cherries before processing, also provides the hint of red fruit as the cup cools. Great depth of flavors, this batch is a cup every Brazilian fan will love.

Best at a light to medium roast. This is a very showy, bright and fruit forward coffee that is just slightly milder than the natural processed. Light roast themselves have a crisp lemony brightness that quickly fades into sweet and winy fruit notes (somewhere between red fruit & blueberry), balancing with a little hint of the spiced chocolate darker tones seen across the board on the Yunnan coffees. A bit sharp but very sweet and fruity. Turns a bit oaky/boozy as the cup cools. Medium roasts build good body and mouthfeel, muting most of the citric tones but not the fruitiness, it cuts right through the more noticeable chocolate and spice tones. Darker roasts are not highly recommended, gets a bit roasty, sweet, with strong spice tones but leaves the cup a bit swampy tasting with the comingled fruit tones.

This is one exotic coffee even for natural fans. The linkage in taste to red wine (lighter roasting) or rum (darker roasting) is pretty wild. We have had “winy” coffees before, but not like this. Best served at the light to medium roast level, but quite interesting darker roasted as well. Lighter roasting accentuated the red wine like attributes, hints of citric with a very fruity edge: sweet, oaky, nutty, a little boozy in the finish. Although I know I was not drinking red wine, it really comes close to tricking the tongue. Medium roasts tame the cup a bit, still plenty winy and fruity but presents a smoother, less wilder version of the lighter roast points. Spice notes clearly pop out in the medium roast level starting to give some spiced rum like tastes in the background. Darker roasts really bring forth the sweet rum like spice notes balanced with a molasses like darker tone and a fuller body.

A great clean, fresh and exotic Colombian offering. Great from light to dark roasts. Light to medium roast points were our favorite, showing the uniqueness of the offering very well. Citric/floral acidity mixing with a little soft fruit tone, pulling some balance with a sweet edged nuttiness. With the red fruit and more citric/floral components, it creates a link to an Ethiopian taste upfront but will balance with the classic Colombian features of good body and nutty tones. Light roasts are very bright, medium roasts get fuller bodied and smoother, darker roasts are hefty and slightly edgy, but bring some uniqueness over your classic Colombian dark roast, much sweeter with hints of floral and fruity overtones.

A lovely slightly-exotic daily drinker. Light to medium roasts are preferred with our favorite roast being right in the middle of the cracks. Lighter roasts have a hint of floral/citric acidity with just a touch of sweet and delicate red fruit coming from the honey processing. A bit on the nutty/chocolaty side for its balance, starts as a dry nutty at very light roasts, turns more chocolaty as the roast gets darker.A little front loaded with the more acidic and fruity tones at traditional light roasts. Medium roasts have better balance between light an dark tones cutting out some acidity; smooth, rich, sweet edged. Dark roast loses the more exotic acidity and fruity edge but turns very thick, nutty, semi-sweet chocolaty with smoky accents.

Kayon Mountain has become a tradition around here, marks one of our favorite times of the year, new Ethiopian season! Beautiful coffee and screen.Clean, bright, sweet with a very diverse flavor set. Stone and darker fruit, citrus & floral, and spiced chocolate tones are the main flavors one can see in this cup, either accentuated or muted depending on roast level. Nice jammy body will be seen in the medium to borderline dark roast mark. Very dependent on roast – lighter roasting gives much more of the citrus, red-fruit with just a hint of a spicy chocolaty factor, a much dryer finish. Darker roasts produce much more of a bakers chocolate cup with a hint of a strawberry like fruit note and good sweetness, far less acidic. A very enjoyable cup from light to dark.

A wonderful light to medium roast coffee: a delicate cup with a sweet edge. Very complex with wonderful aromatics, floral with hints of jasmine. Not overly acidic, but will have a bit of citric upfront at lighter roasts comingling with the floral overtones, balancing with just a hint of an herbal/spice/chocolate like darker tone. Clean, sweet, and floral with some stronger tea like attributes. Works well light to dark. Lighter roasting does have some acidity giving the cup a citric edge and sweeter floral/fruit notes but will not develop the depth to the darker tones that we loved with fuller roast levels. Hints of a black tea like dark tone and a soft fruit tone will pop out especially with some setup and as the cup cools. Medium to dark roasts will mellow the brightness considerably turning the cup darker toned with a fuller body, more about the spice notes and chocolaty factor. Smooth and easy drinking in the medium roast range while still maintaining hints of exotic acidity. A wonderful light to medium roast coffee. The cup is complex, sweet, fuller bodied, with rich darker tones. A rare find, most Ethiopians are much thinner and delicate, with more of the taste emphasis on the acidic (citric/floral) notes. Tea like spice will dominate the tastes with just a hint of lemony/floral crispness upfront (unless you hit the darker roast points). Hints of jasmine in the aromatics provide a wonderful depth to the cup.

Much cleaner processing this season which is a perk, a point higher rated, but a little less fruity/wild of a cup. Hints of a red fruit at lighter roasts, especially as the cup cools. A bit fuller bodied and on the sweeter side, balanced with the bakers chocolate like earthiness (a good contrast) found in the other Haitian coffees. Lighter roasts will let the exotic profile shine but be a bit punchy with floral and citric tones, risks a grassy tones if you get too close to first crack. Medium roasts were our favorite, better balance with a pronounced chocolaty darker tone along with the more exotic floral and fruit. Darker roasts touching 2nd crack are far less fruity and hold more true to the Haitian profile, a little floral acidity still comes through the cup but strong and smoky with almost no hint of being a slow dry honey processed.

A very clean, well balanced cup; crisp acidity and soft fruit tones comingle with a more chocolaty finish. Can be roasted from light to dark. The acidity is a bit citrus/floral upfront but will quickly fade into a rocking islandy fruit tone. From a medium roast on, the acidity is very gentle and balanced with a smooth to rough chocolaty cup profile, milk chocolate before 2nd crack, bakers chocolate and smoky into 2nd crack. Medium bodied, these beans as well as other Kona’s are mild cups comparatively to many other origins, be in for a delicate and tasty cup with layers of goodness.

We thought best served in the medium roast range, but tasty from light to dark. A very sweet cup at any roast point. Lighter roasts have some stronger citric/floral acidity, a little hint of a grape-skin like fruitiness and a spiced (herbal) chocolate undertone. Medium roasts build a much creamier cup profile, just a hint of crisp floral upfront that fades into a strawberry like fruitiness, balanced with a spicier chocolate dark tone. Dark roasts themselves are a bit flatter but still very sweet edged, hardly fruity but makes up for it with the fuller bodied more robust chocolate and spice notes.

Best at the light to medium roast level. Good bit of citrus and red fruit upfront balanced with a thicker chocolate and spice note. Light roasts get very jazzy acidity, with just a hint of a dark tone. Floral and sweet edged, with an emphasis on the fruitiness of the cup. Medium roasting is much more balanced, medium to full bodied and far less sharp than the lighter roasts, but also less fruity. More of a chocolaty cup with fruity highlights. Dark roasts get even fuller bodied but burn out some sweetness, taste like semi-sweet chocolate on the roasty/smoky side, thick with a bit of spice in the aftertaste. A hint of fruitiness as the cup cools but hard to tell its natural processed roots at darker roasts.
