Best at the light to medium roast levels: there is a little crisp citric upfront, a bit more lime than lemon, a hint of red fruit giving a sweet edge. These lovely lighter tones pull some balance with a nutty/chocolate like undertone with a bit of spice, accentuated as you push the roast darker. Medium bodied, medium brightness levels, small hints of red fruit more noticeable as the cup cools. Light roasts themselves are much more citric, good to give a longer setup if shooting light, mellow out the crispness a bit. Turns much more chocolaty at the darker roasts but will introduce potent bitter, semi-sweet chocolate like notes. Medium roasts present the best balance and would qualify as a jazzy daily drinker.

Best from the lighter side of a medium roast to as dark as you want to go. A bit cleaner tasting but slightly less fruity than previous seasons. Lighter roasting presents some nice honey processed features: citric, floral, soft fruit with an almost oak/peat like finish, sweet & complex but does risk some underdeveloped tones if you nail it a little too light. Medium roasts were our favorite, still balanced and complex but will develop the traditional chocolate and smoky tones for which Dominican coffees are known for – to balance out those more exotic fruity and citric tones. Darker roasts are a little more complex than on the washed processed version, but not as smooth and rich.

A very cool, very exotic cup of coffee. One can tell this is a slow dry natural processed coffee with its strong ripe red fruit tones upfront. Lighter roasting presents a ton of floral and fruit with an almost oak/peat boozy finish, very sweet with just a ton going on but does risk some underdeveloped tones with its two-toned roasting. Medium roasts were our favorite, still plenty wild but develop enough of the chocolate and smoky tones – which most Dominican coffees are known for – to balance all those more exotic fruity and citric tones. Darker roasts will burn out most of what distinguishes this cup, the washed processed handles those roast level much better; interesting and still exotic but strong and edgy, it will retain some fruity factor with very strong and less sweet, smoky, tobacco and bakers chocolate type notes.

Crisp, clean, sweet and very highly rated, a fun treat for any Ethiopian fan. Light roasting is recommended to see the cup shine but hard to find a bad roast point. Lighter roasts are where you will see the cleanliness of the cup, balanced tones with good mouthfeel and hardly a hint of anything grassy or vegetal. It will have some decent brightness, lemony with just a pinch of peachy like fruitiness. The aromatics are unique being overly floral with some classic Ethiopian hints of lavender/jasmine. The lighter tones pull some balance with the classic tea (herbal/spice) like darker tones. Medium roasts really mellow out the acidity and reduce the citric & floral tastes, creates a bit more body and a much more recognizable chocolaty factor. A very smooth, balanced and rich cup with exotic highlights. Darker roasts are fuller bodied and dark toned: roasty, bakers chocolate with some unique spice and rich aromatics.

Coming from the Gedeb district, Banko Chelchele community. These are high-altitude beans from small growers. It’s dried as whole cherries on raised beds to maintain the fruit’s vibrancy while remaining unusually clean for a natural process. Expect a lively cup with bright red fruit/jam and intense floral notes, supported by a creamy apple like sweetness that makes the acidity feel more sparkling than intense, along with a silky medium body and a clean, refreshing finish. Grown between 1950 and 2200 meters above sea level from local heirloom varieties/traditional cultivars and processed at an independent station (managed by Azeb Tadesse), it tends to shine in light to medium roasts to maximize its aroma and clarity, while a slightly deeper roast enhances the sweetness and adds a base with more cocoa nuances.

A wonderful example of a top grade washed Ethiopian. Best served in the light to medium roast range, a very delicate and sweet cup. Hints of citrus and soft fruit comingle with floral, caramel, chocolate and tea like spice. Heirloom Ethiopian strains have a taste like no other and offerings like this one showcase their uniqueness. For acidity fans, a light roast ending real close to 1st crack will have a stronger lemony citric edge, covers up a bit of the delicate floral/fruit but crisp, clean and sweet. We personally liked it better just a shade or two darker, splitting the difference between light and medium. It will mellow the citric tones popping out the sweet floral, while building a bit more sweet caramel/chocolate darker tone with a hint of tea like spice in the aftertaste. Crisp but not overly acidity. Darker roasts go the other way covering up the citric and floral with strong chocolate and herbal tones. The aromatics are fantastic on these beans and will add wonderful floral depth to the tastes.

A beautiful cup at the lighter roast points. Mild mannered and very delicate comparatively to many naturals, no over ferment here. Which is part of the crazy high rating on these beans. Crystal clean at lighter roasts, fruit forward but not over the top. A bit lower acidity cup that pulls a great balance between the light and dark tones. Great winey, floral and stone fruit notes upfront balancing with a hint of a malty and/or chocolaty undertone, hints of nuttiness is the aftertaste. Incredibly smooth and well defined cup at lighter than normal roast levels is what puts these beans into a category of its own.

Darker roasts taste nice but will have some roasty/smoky characteristics along with a good body. A rich and sweet cup for dark roast fans.

A beautiful tasting bean this season: slightly fruitier but still balances with traditional Indonesian character. Hints of acidity with stronger fruitiness at lighter roasts, strong fruit/oak tones on a more nutty/earthy/chocolaty profile at darker roast points. No missing the wild side in this cup. Medium roasts are where one should shoot for their first roast, mutes some nutty tones and pronounces the chocolaty factor for some balance, still plenty of wild fruity natural processed tones in the cup. Dark roasts will introduce some smoky accents but retain great sweetness. A great balance of slow dried natural with thick and creamy dark tones all in one cup.

It’s a fly crop (secondary harvest) from 1,659 smallholders, grown at 1700–1900 masl (SL-28, SL-34, Ruiru 11, Batian) and processed in classic Kenyan style with thorough washing/soaking and careful size grading. The cup is crisp, clean, and balanced: a bright lemon-driven lift up front, a sweet base of chocolate and caramel, nutty hints (almond/peanut-butter-like), and a gentle herbal/tea-spice finish; as it cools, light florals plus cocoa and brown sugar sweetness can show. Light roasts emphasize lemon and nutty layers, medium is the best balance, and darker roasts lean into cocoa and deeper spice with softer acidity.

This washed Kenya AA comes from Iveti, Machakos County, via the Ngomano Factory, the washing station of the Ngomano Farmer Cooperative Society (FCS), which comprises 1,115 smallholder farmers (part of the Machakos Cooperative Union). Grown at 1700–1800 meters above sea level (varieties SL-28, SL-34, Ruiru 11, and Batian), this is a fly crop (secondary harvest) lot that arrives exceptionally fresh out of season. In the cup, it offers a clean and balanced Kenyan profile, with bright lemon citrus and a subtle hint of red fruit upfront, settling into a sweet chocolate and nutty undertone, finishing with a black tea-like herbal spice; it has medium acidity for a Kenyan coffee and a medium to full body, and performs well with light to dark roasts (darker roasts bring out more chocolate/caramel notes).

Always one of our favorite Mexican coffees. Good from light to dark. Although Natural processed, this is not a fruit bomb like many other natural processed coffees, has slightly fruity overtones that balance great with a little citric, malt, cocoa and nutty undertones. Its a little fuller bodied cup than most Terruno lots with above average sweetness. Lighter roasting will have noticeable citric crispness upfront accentuating the fruitiness, but can risk a little dry nutty aftertaste if too light. Medium roasts balance the tones nicely and smooth out the citric tones. Darker roasts turn more chocolaty, gets pretty roasty and smoky, retains a sweet edge and shows hints of fruitiness as the cup cools. A good daily drinker across the roast levels.

Although similar to the Typica, this Catuai is a more potent cup, stronger acidity with more complex darker tones (a little along the lines of African coffees). Light roasts themselves will be brighter with crisp lemony floral notes and more noticeable fruit tones, nutty tones to balance out the cup. Medium roasts bring a smoother and richer cup, develop the nuttiness into more of a malty/chocolate like taste, reduces the fruitiness but keeps the sweetness, still a bit lemony upfront but has a much more noticeable malt like tone with a bit of spice to balance it out. Darker roasts pull a little bitter/malty contrast but it goes well with the roasty and smoky tones and retains a sweet edge. A little longer setup sees a smooth a sweet darker roast.

A great daily drinking Peru! Best right around a medium roast but works well from light to dark. It stands out for being a very clean and sweet cup. At lighter roast levels it has some crisp acidity, not over the top but noticeable, gives a quick hit lemon and floral that will balance with nutty and chocolate like darker tones. Small hints of caramel and dried fruit will pop out with a little setup. At medium roast levels, you get more of a smooth easy drinking cup, less acidity with accentuated nutty/chocolate tones, a hint of spice in the aftertaste, provides the best balance of light/dark tones. Darker roasts are a little flat and roasty, but on the more neutral side, classic darker roast beans: smooth, rich and on the roasty chocolate side of things with a little nuttiness in the aftertaste.

A very fresh and semi-exotic Rwanda coffee. A good cup from light to medium roasts. A little brighter cup with a citric and grape/apple like fruitiness upfront. Pulls some contrast with a semi-sweet chocolate tone, some lingering African spice in the aftertaste. A milder “natural” processing, adds some great complexities to the taste, raised sweetness levels and hints of fruit but no boozy or over fermentation noted. The medium roast offers a smooth cup with an accentuated bakers chocolate note, hints of the fruitiness in the aftertaste and as the cup cools. Darker roasts add complementary roasty notes, a sweet flavor of caramelized sugar and chocolate, with a hint of spice, lower acidity, and a fuller body, although its fruity notes are somewhat overshadowed by the chocolate. It is undoubtedly a coffee with a great balance between sweetness and fruitiness.

An interesting and complex Tanzania Peaberry, best from light to medium roasts, but works darker as well. At lighter roast points it grabs your attention right from the start with a vibrant and juicy acidity, slightly higher than usual, with hints of sweet orange and lemon. The crisper cup profile gives the cup a lot of lively flavor depth including it more potent deep chocolate and cocoa notes, accompanied by a classic African spice note, an herbal nuance clearly reminiscent of black tea; far from clashing, this herbal touch creates an excellent and highly appealing interplay of flavors in the cup. It has a medium body that accentuates and becomes denser as the temperature drops. In the background, there is a fruity sweetness, praline, and a slight hint of amaretto, resulting in a very balanced cup. Moving into darker roasts, it will lose its acidity, consequently gaining more body and intensifying its chocolate and sweet notes.

Anaerobic coffees are fermented coffees. Sealed containers are used to control the fermentation process. There are no fixed rules for the coffee farmer; this method can produce coffees with low fermentation, similar to those processed using the wet method, or coffees with a much more intense fermentation, far exceeding most naturally processed coffees. Unlike the previous season, in which this coffee had a much more intense and fermented flavor, this season’s offering is much more refined, undoubtedly the most fruity and citrusy of the three, but without being excessive, resulting in a much cleaner and more balanced taste. This lot features controlled fermentation that highlights its fruity and citrus notes without becoming overpowering, with hints of chocolate and spice. Sourced from a pioneering farm founded in 1972 with a significant positive impact on the local community (providing access to water, schools, and a clinic on the farm itself), this lot is best roasted to a light or medium level and benefits from extended rest after roasting to allow the delicate fruit aromas and deep cocoa tones to fully develop.

Nsunzu is the youngest of Zambia’s NCCL estates, set at the foot of Mount Nsunzu in the Northern Province. Nsunzu’s first full crop was harvested in 2020 and despite the ability to mechanize, the estate intentionally hand-picks to select only the ripest cherries while providing steady jobs in a region with limited paid work. This Rainforest Alliance washed lot is an AA selection of Catimor 129, grown around 1400–1650m, and it’s built to be versatile across roast levels: lighter roasts lean citrus with a soft cocoa edge, mediums bring a smoother chocolate-and-spice balance, and darker roasts deepen body and chocolate while keeping a clean finish with a lingering spicy note.
