This is one unique coffee! We have carried only a few of these Fruit Fermentations coffees in the past, some have loved them, some have not, but a very fun and definitely unique offering for home roasters. Part high quality Colombian coffee, part blueberry science experiment. Flavored enough by the crazy processing that the crowd will be split on this one but we found much joy drinking it. Be ready for coffee that tastes and smells like varying levels of blueberry depending on the roast level.
Recommendation of a medium roast to present this best. If you love blueberry, this coffee will be pretty awesome. The blueberry tones stick right out and balance nicely with the Colombian coffee profile. Lighter roasts were interesting, some may want to try it here, the cup is bright and clean but be warned, the aromatics and flavor of the blueberry is very strong, it balances with a very sweet, nutty, buttery textured tone. Pretty much a guarantee one will have not tasted flavors like this in coffee before, but will be a limited crew that likes the light roast point best. We did like lighter roasts better than the other offerings, but all in all the cup lacked balance with some normal coffee tones. Medium roasts push the tastes much higher in our book, a little hint of citric acidity, some classic Colombian nuttiness, good body with a clear sweet melon tones, a little stronger in the aromatics but also clear in the tastes. Still unique but links more to traditional coffee tastes. Darker roasts close to second crack present nicely, but into second crack more than a pop or two did pick up a little bitter contrast.

If you love melon, this coffee will be pretty awesome. Two of our tasters love melon tastes and picked this one as the favorite. The melon tones stick right out and balance nicely with the Colombian coffee profile. Lighter roasts were interesting, some may want to try it here, the cup is bright and clean but be warned, the aromatics and flavor of the melon is very strong, it balances with a very sweet, nutty, buttery textured tone. Regular Price $8.25/Lb – A very fruit forward and floral exotic Colombian. All sorts of cool unique flavors can be found in this cup from the slow dry natural processing and boutique fermentation. The brighter tones tend to range from a lemon citric component at the lighter roasts to strong stone fruit in the medium roast range. The acidity is pretty high at the lighter roasts but mellows greatly at a strong medium to dark roast. The balance of the cup comes from an almost cola-like tone that turns a bit nuttier into the darker roasts. Medium bodied, super clean with some far from traditional Colombian tones.

We thought it best within the light to medium roast levels. Jazzy citric acidity, a little floral some would say, a hint of soft fruit providing a sweet edge along with some wonderful darker toned balance, on the walnut/almond side. Light roasts themselves will be a bit citric, the cup is very clean and handles the roast level well, but needs a longer setup and a tongue that doesn’t mind a bit of acidity. Medium roasts are great daily drinkers and promote a little hint of caramel in the nuttier cup profile, retains just a pinch of citric acidity upfront but it really helps with the depth of flavors. Good body with a smooth mouthfeel. Dark roasts were equally as tasty but it loses the cool crisp citric, and soft fruit, that shows at lighter roasts. Full bodied with stronger nutty and chocolate like tones, a bit of roastiness but it compliments the cup nicely.

A lovely, crisp, and clean, not overly fruity natural processed. We thought it best right around the medium roast ballpark but will make fans lighter or darker depending on your personal taste preference. Lighter roasting is a bit higher acidity, lemony and floral with some grape skin like fruitiness coming through. A bit more herbal spice right at first crack, needs a longer setup time to shine but will provide delicate chocolaty notes with much wilder acidity and fruity tones. Medium roasts were tasty without the wait! Balanced, tasty, and clean after 24 hours. A pronounced chocolaty factor, medium bodied, hints of crisp acidity backed with a little soft fruit tone and spice. Wonderfully smooth and delicate for a Congo coffee. Dark roasts were tasty right off the bat as well, roasty and stronger but with a sweeter then average edge. A very sweet and fruit forward bean. Clean cup, medium to full bodied with higher acidity. Light to medium roasts are where this bean will shine. Being a brighter natural processed it has some great sweetness and a stronger winy/citric and red fruit tone upfront, which balance with classic Costa nutty and slightly chocolate like darker tones. A fun bean to play with roast level: tip the scales either lighter and fruitier or darker toned nutty/chocolate like. Very light roasts (with a longer setup) can introduce a little toasted grainy note giving a comparable to jellied toast like tastes, but with a lemony citric kicker. Medium roasts build great body and mouthfeel, cut out much of the citric but still overlays the nutty & chocolate like tones with a wonderful and sweet fruitiness. Darker roasts are strong and have a bit of bittersweet contrast. It keeps the sweetness and will still be slightly fruity, but contrasts with stronger bakers chocolate (slightly bitter) like tones with some roasty/smoky accents.

Best from the lighter side of a medium roast to as dark as you want to go. A bit cleaner tasting but slightly less fruity than previous seasons. Lighter roasting presents some nice honey processed features: citric, floral, soft fruit with an almost oak/peat like finish, sweet & complex but does risk some underdeveloped tones if you nail it a little too light. Medium roasts were our favorite, still balanced and complex but will develop the traditional chocolate and smoky tones for which Dominican coffees are known for – to balance out those more exotic fruity and citric tones. A clean and mild mannered natural. A sweet cup that will pick up hints of fruitiness at the light-medium roast levels. Not crazy over fermented like many naturals these days, the fruitiness pulls nice balance with classic Central American nutty and chocolate like tones. Reminded us of the El Sal Cerro Las Ranas Honey, just one notch fruitier. Light roasts accentuate the fruitiness of the cup and will lean the balance towards a nuttier cup profile. Not too acidic or citric at lighter roasts, presents a nice balance between light and dark tones, will not develop the richer chocolate tones present at fuller roast levels. Medium roasts are where the more chocolaty aspect comes in, semi-sweet cocoa with a slightly fruity overtone, smooth cup with a milky mouthfeel. Medium bodied with low acidity. Darker roasts greatly accentuate the chocolate note but comes off a little bittersweet. An excellent roast level for espresso, or if you enjoy a splash of milk/cream. This Ethiopian cup is a super clean; an awesome and unique example of a high end Ethiopian. Best served at the light to medium roast levels; jasmine aromatics with wild more lemon/floral acidity, balancing with a rustic chocolate and tea like spiced undertone. There is a little hint of fruit in the cup but its pretty faint, gives the cup great sweetness and depth of flavor. Reminiscent of a Yemen or Harrar coffee. Lighter roasts will have some citric acidity and stronger floral tones balanced with a faint tea like chocolaty undertone, a little fruit note pops out as the cup cools. Medium roasts really mellow out the acidity and promote the chocolaty cup profile, adds a little jazzy spice note in the aftertaste. A very smooth, balanced cup with exotic highlights. A lovely coffee from light to dark with a medium roast being our favorite, a staple offering on our list, great stuff every year. This year the cup is a little less acidic and fuller bodied, small hints of fruit at lighter roasts but more about the chocolate and spice notes. Light roasts are clean with a little citric upfront, a small hint of a sweet berry note comingling with an almond like nuttiness and a bit of tea like spice in the aftertaste. Medium roasts brought a fuller body and more chocolate like tones, lower acidity, uncovered a bit of floral upfront, lingering spice in the aftertaste. Darker roasts complimented the cup, a little more rough and tumble but a strong chocolate and spice profile many will love, good for cold brew or espresso.

The lighter tones pull some balance with the classic tea like chocolaty undertone, traditional darker notes from the Yirgacheffe region.

Light to dark you will find a tasty cup. Light roasting will have some acidity, tastes will start with a sweet citric/winy crispness upfront and balance out with a malty/nutty/caramel darker tone, a hint of soft fruit in the aftertaste. A lovely balance of tones and our favorite roast point. Medium roasts reduce the citric/winy tones and soft fruit, promoting a sweet edged malty/chocolate like taste. Increases the body and smoothness, but will reduce the depth of flavors a bit. If looking to impress, light roasts are where it shines. For daily drinking, medium roasts are the way to go. A candidate for dark roasts, fuller bodied, low acidity with the malty and roasty tones mix nicely.

A beautiful cup from light to dark roasts. A very sweet cup with fruity highlights, good body and medium acidity. Being a high rated bean, it is very clean at lighter roasts, which we thought presented it best, but found darker roast points with its mix of stronger malty dark tones with a pinch of fruit in the aftertaste, quite tasty as well. Light roasts are delicate, sweet and clean. Will have a little citric crispness upfront, a bit of fruitiness and some lovely malty contrast. A fruit note for sure, but not overly fermented like many, a bean for every coffee fan.

Best served light to medium roasted. This is the brightest Guatemalan offering out of the bunch, crisp with sweet citrus, floral and soft fruit upfront, balancing with a nutty and malty darker tone. The Tabi strain brings a more “rustic” malty tones compared to traditional Guatemalan strains, but is not earthy like many hybrid coffees. Medium roasts build a little body and mellow the citric/fruit notes, less sharp of a cup with a stronger malty tone, the more exotic fruit tones and layers of tastes still come right through in taste but are muted slightly compared to lighter roast points.

A lovely coffee. Low acidity, medium body with rich and robust darker tones ringing throughout the cup. Medium to dark roasts are where these beans shine. Lighter roasting without much acidity will leave the cup a bit nutty and lacking but clean. Starting at about a medium roast the cup builds a wonderful chocolate note with some smoky and malty overtones. A bit on the sweeter smoother side, a tasty treat. Darker roasts, close to touching 2nd crack and where the much more robust tones pop out of the cup, reminiscent of a nice Haitian cigar.

Stronger citric acidity, a medium body, plenty of red fruit notes and hints of a nutty/chocolaty undertone. Medium roasts will mellow the acidity and accentuate the chocolaty factor, less extreme and easier to drink but not as punchy of a cup. A bit easier cup to achieve roasting wise. Darker roasts are still very interesting with the two-tones of roast level. A very fruit forward, delicate and sweet cup. Best served in the light to medium roast range. At light roasts it hold up well but will be higher acidity and very fruity and winy upfront, only a hint of a darker toned contrast. Medium roasts introduce a more chocolaty balance and mute up some of the acidity making it nice for a lower acidity fan. A great mix of fruit and chocolaty factor where one can play with the balance of tones through roast level. Darker roasts are not recommended, get edgy and smoky with a little hint of fruit coming through.

A great cup from light to dark: a clean, rich and smooth cup. To see it shine and differentiate itself from normal Indonesians, keep it in the light to medium roast ballpark. Just a hint of brightness upfront, sugarcane like sweetness, good body with a chocolate like lingering aftertaste. It does have a little earthy terroir, but is almost more playing on some spice notes than traditional Indonesian “muddiness”. Darker roasts are pretty hefty cups, still overly sweet but more simple in its taste, chocolate and spice like with some complimenting roasty notes. A very cool cup! Best medium to dark but will hold lighter roasts much better than most Sumatra coffees. Lighter roasts have a little cool lemony acidity upfront, with some soft fruit tones giving it some jazz, but balanced with a dry more earthy chocolaty factor. As you push into the medium roasts, it will get much fuller bodied and become a lower acidity cup cutting out the more lemony floral tones. Still a slight crispness even at these roasts giving a lot to the depth of flavors present. Darker roasts will turn more into a chocolaty spice noted treat. When roasting into 2nd crack one will add some cool roasty and smoky tones into the more bakers chocolaty cup profile.

At light roasts it will still have some brighter citrus qualities but will not pucker ones mouth. Kenyan coffees in general can be pretty strong. It has hints of chocolate, fruit & herbal spice along with the citrus and floral. Medium roasts bring the best balance to the cup accentuating the chocolaty tones and reducing the brighter notes just a hint. Darker roasts make that classic Kenya herbal tone pop right out and is more down the potent bakers chocolate alley. Very clean with increasing body as the roast gets darker. A great balance between citrus, floral, herbal and chocolate. A very clean, exotic and balanced cup of coffee. Kenyan coffees are known for their acidity and spice tones; this cup hit the classic Kenyan cup profile on the head without being overwhelming like some (very balanced in its tones). Not quite sizzling but a very noticeable lemony floral tone upfront at the light to medium roast points balanced with some herbal spice and fading into a nice chocolaty tone that lingers on the tongue. Light roasts will swing the balance towards the floral citric side, darker roasts more towards the jazzy bakers chocolate alley. Holds up into 2nd crack for you dark roast fans. Low acidity and strong bittersweet chocolate tones with the traditional Kenyan spice note that leaves a very smoky tone on the pallet.

Always one of our favorite Mexican coffees. Good from light to dark. Although Natural processed, this is not a fruit bomb like many other natural processed coffees, has slightly fruity overtones that balance great with some citric, malt and nutty undertones. Its a little fuller bodied cup than most Terruno lots with well above average sweetness. Lighter roasting will have noticeable citric crispness upfront and will accentuate the fruitiness. Medium roasts balance the tones nicely and smooth out (reduce) the citric brightness. Darker roasts turn much more chocolaty and get pretty roasty and smoky, retains a sweet edge and shows hints of fruitiness as the cup cools. A good daily drinker across the roast levels.

A nice tasting coffee from light to dark. We thought it best right around a medium roast for daily drinking but depending on what you like, holds up well lighter or darker. Light roasts one can see the linkage to Kenya; citric and floral upfront, a sweet edge, thicker chocolate/spice undertones, hints of caramel with a little setup in the aftertaste. Not as punchy as most Kenyan offerings, but along the same line of tastes. Medium roasts really mellow the cup. Smooth most would say, a bit more neutral with just a hint of the floral and spice seen at the lighter roasts. Reminded us of a cross between the Mysore Nuggets and a nice Costa Rican coffee. Great for daily drinking. A sweet and fruity cup; best at a light to medium roast. Light roasts are lemony and floral upfront which fade to stronger red fruit and balances with a hint of rustic chocolaty darker tones. Medium roasts clean up the more rustic chocolaty tones which many will like but also reduce the sweetness and fruity factor of the cup, becomes a little fuller bodied with low acidity with good mouthfeel, fruity factor pops out more as the cup cools. Darker roasts get a bit edgy with semi-sweet smoky and roasty notes, finishes with almost a bit of an oaky barrel aged tone.

Lighter roasts focus the tastes more around the brighter citric/fruit tones: a hint of lemony citric that fades into a fruitiness, balancing with a darker malt like undertone. A good daily drinking lighter roast coffee. Comparatively to the Catuai, the Typica is mild mannered, delicate, less acidic, smoother, but with similar tastes. Medium roasts bring a more traditional cup with better balance. This should be the minimum roast level if you do not want noticeable floral/fruit notes upfront. Still has a bit of jazz upfront but a more pronounced nutty/malty tone to balance it out. We thought it best right around a medium roast; balanced and sweet. Hints of sweet citric floral upfront comingle with smooth defined malt like tones, just the tiniest hint of a fruity factor in the aftertaste. Lighter roasts get much crisper, dominated with more floral citric fruit tones, lemony most would say but does still show a little malty undertone. Darker roasts cut out the more floral aspect of the cup and are very rich and smooth, more semi-sweet but still very malty, into second crack adds some complimenting smoky tones. Hard to find a bad roast point with these beans.

A good cup from light to dark, in the medium roast range was our favorite. Light roasts are clean and bright, medium to full bodied, it will have a pretty strong citric tone upfront that balances nicely a little hint of fruit and spice, on the nuttier side with a little herbal note in the aftertaste. Medium roasts similar to most of the Thailand coffees brings out a nice and more potent chocolate note, reducing the citric and accentuating the classic Asian spice. Still noticeable acidity at the medium roasts but its more buzzy than citric, not an overly sour cup but will leave your tongue a bit dry: provides some great depth of flavor. Not a fruity cup, but one might see some hints as the cup cools. Darker roasts get real hefty with a lower perceived acidity, herbal, chocolate, smoky and roasty. A wonderful very clean example of natural processing, best served in the light to medium roast levels. Medium acidity levels, comes off a bit on the lemon side, medium bodied with a pretty strong red fruit tone upfront, definitely on the sweeter side. Super light, cup picks up a bit of nutty and herbal contrast but this will develop into more spice and chocolate tones just a little after first crack. Thicker and stronger than an Ethiopian Natural, with more of an emphasis on the fruitiness and spice notes. Darker roasts accentuate the spice, pretty similar to the other Asain coffees, would put in on the rustic chocolate side with sweet and fruity overlays and a full body.
