A good cup from light to dark. A more potent brew, sharing some roots with Kenya coffee. A bit stronger citric tone upfront at lighter roast points. Herbal, chocolate, spice to balance out the bright features. Medium body and creamier mouthfeel, medium acidity with rich chocolate, herbal and spice notes. Lighter roasting will have a noticeable crisp lemony floral edge, balanced with a nutty/herbal/cocoa dark tone. Holds up lighter but needs a longer setup and can risk a little vegetal edge, shows a little hint of caramel and is much sweeter than the fuller roasts. We found it best to push the roast into the medium category to build the richer dark tones, muting up some of the classic African brightness: comes off nice and chocolaty with some herbal/spice balance. Dark roasts are strong and semi-sweet with a full body, complimenting roasty and smoky tones. We couldn’t find a roast we didn’t like with these beans, if you roast lighter, just make sure you do not mind a little stronger citric component.

This is one exotic coffee even for natural fans. A good example of very strong anaerobic fermentation, keep in mind, strong fermentation is not for everyone. A potent brew and a super complex cup: red fruit, citrus, booze, spice, oak, nut, cocoa. Best served at the light to medium roast level. Crisp and sweet edged, fuller bodied with a creamier mouthfeel. Nothing can quite prepare the tongue for the tastes on strong natural processed coffees, but if you’re a fan, do not miss this one. Very complex cup and not as overly fruity/winy as the open air natural, lots of darker tones to these beans. The lighter you roast, the more wild this cup gets. If you want to lean the cup towards the fruity and sweet tones, keep it on the lighter side. For very complex darker tones, boozy rum like spice with oaky complexities, a strong medium to borderline dark roast is the way to go.

Clean, sweet and balanced, this is the Yunnan offerings for most coffee fans. Best at the light to medium roast levels: there is a little crisp citric upfront, a bit more lime than lemon, a hint of red fruit giving a sweet edge. These lovely lighter tones pull some balance with a nutty/chocolate like undertone with a bit of spice, accentuated as you push the roast darker. Medium bodied, medium brightness levels, small hints of red fruit more noticeable as the cup cools. Light roasts themselves are much more citric, good to give a longer setup if shooting light, mellow out the crispness a bit. Turns much more chocolaty at the darker roasts but will introduce potent bitter, semi-sweet chocolate like notes. Medium roasts present the best balance and would qualify as a jazzy daily drinker.

A very fruit forward and floral exotic Colombian. All sorts of cool unique flavors can be found in this cup from the slow dry natural processing and boutique fermentation. The brighter tones tend to range from a lemon citric component at the lighter roasts to strong stone fruit in the medium roast range. The acidity is pretty high at the lighter roasts but mellows greatly at a strong medium to dark roast. The balance of the cup comes from an almost cola-like tone that turns a bit nuttier into the darker roasts. Medium bodied, super clean with some far from traditional Colombian tones.

This is Sabastian’s family coffee (a wonderful Burman Coffee employee), small batch production shipped in by airplane to give our customers some of the freshest coffee poddible. Processed in early August.
Green coffee from a family farm in Miraflores, Gigante municipality (Huila, Colombia): It is a Castillo variety, washed and harvested at altitudes of 1,600–1,900 m, hand-selected. It arrives by air in small batches to preserve its freshness (harvested in late July 2025 and threshed in early August). It presents an exceptionally clean and balanced cup, very versatile depending on the roast: in light coffee, it shows a medium body with caramel and nuts, an intense floral aroma and orange-like citrus with slight herbal and spicy nuances; in medium coffee, it gains structure, with chocolate and a subtle hint of lemon predominating, with a lingering nutty note, lively acidity, and balanced sweetness; in dark coffee, it offers a robust body with deep cocoa and a hint of black tea, while maintaining moderate acidity.

Best served around a medium roast: Clean and fruity cup, with a more floral tone. Light sweetness and medium-medium/full body with a creamy texture. Citrusy start (orange/tangerine, lemon) that integrates with red fruits (strawberry, cherry) and a nuance reminiscent of grapes/wine without becoming heavy; hints of melon appear in the light phases and a cocoa-chocolate base with a slight “nuttiness” at the finish. It is not an aggressively “bright” cup: the profile feels heavier and rounder, with a good balance between fruit and body. Very clean natural, with no alcoholic traits.

Best served at the lighter roast points. Clean and bright, this microlot opens with intense notes of cherry and stone fruit that evolve into jammy blackberry and red grape. A pronounced, wine‑like acidity lifts the cup, while the sweetness of honeyed caramel weaves a velvety body. Subtle floral hints of jasmine and hibiscus persist on the finish, offering a fresh, clean aftertaste that reflects the Chacón family’s extensive natural drying and resting protocols. One can see a little balance with a boozy nutty/cocoa undertone but with the more sizzling acidity and stronger fruitiness, it is just a hint. Whether brewed as a delicate filter or a medium espresso, Alma Negra Natural delivers depth and clarity in every sip.

It does get a good lemongrass tone at lighter roasts with a soft fruit tone as the cup cools, crisper cup with a slight nutty tone. Turns much more chocolaty into the medium or dark roasts. Kayon Mountain has become a tradition around here, marks one of our favorite times of the year, new Ethiopian season! Beautiful coffee and screen.
Clean, bright, sweet with a very diverse flavor set. Stone and darker fruit, citrus & floral, and spiced chocolate tones are the main flavors one can see in this cup, either accentuated or muted depending on roast level. Nice jammy body will be seen in the medium to borderline dark roast mark. Very dependent on roast – lighter roasting gives much more of the citrus, red-fruit with just a hint of a spicy chocolaty factor, a much dryer finish. Darker roasts produce much more of a bakers chocolate cup with a hint of a strawberry like fruit note and good sweetness, far less acidic. A very enjoyable cup from light to dark.

One sniff of this coffee and you know you have something special. Jasmine floral and sweet aromatics, something you will only get out of Ethiopian coffee or Ethiopian strains. Best on the light to medium roasts but a wonderful cup at almost any roast level. Light to medium you get those wonderful aromatics that come through in the taste, peachy acidity, with hints of soft fruit balancing with rich defined black tea like spice notes a. A cup like this is why washed processed Ethiopians are one of the hottest coffees on the market. Darker roasts burn out a bunch of the acidity/floral/fruity but still a nice cup, strong tea spice and semi-sweet chocolaty factor.

Lighter roasting is recommended to see the cup shine but hard to find a bad roast point. Lighter roasts are where you will see the cleanliness of the cup, balanced tones with good mouthfeel and hardly a hint of anything grassy or vegetal. It will have some decent brightness, lemony with just a pinch of peachy or tropical like fruitiness. The aromatics are unique being overly floral with some classic Ethiopian hints of lavender/jasmine. The lighter tones pull some balance with the classic tea (herbal/spice) like darker tones. Medium roasts really mellow out the acidity and reduce the citric & floral tastes, creates a bit more body and a much more recognizable chocolaty factor. A very smooth, balanced and rich cup with exotic highlights. Darker roasts are fuller bodied and dark toned: roasty, bakers chocolate with some unique spice and rich aromatics.Price:Price: Original price was: $12.29.$10.99Current price is: $10.99.$12.29/lb$10.99/lb -

Fantastic example of an Ethiopian Natural. Keep this one light to medium roasted. Too dark and the awesome crisp and clean fruit/floral notes disappear. A mellow cup on the sweeter side with nice darker fruit tones popping right out. The cool natural tones balance with a tea like spice note, a sign of its roots, Yirgs are known for their more tea like dark tones. Many would call it a chocolaty undertone with a jazzy spice note but we like the tea reference and most will agree. A bit more delicate of a cup with a little lower acidity. Depending on what you like this can be a real perk, fruity and sweet without risking high acidity or overly sour tones at the lighter roast points. A little easy to roast out the fruitiness, so don’t let it get too dark!Price:Price: Original price was: $10.50.$9.39Current price is: $9.39.$10.50/lb$9.39/lb -

A great cup from city+ to full city roasts. Light medium to dark medium some would say. Although a natural, this is not a super fruity coffee, will show hints at lighter roasts along with some citric. These beans are more about the complex chocolate and spice notes, the sweet fruit highlights are just a little perk and balance the cup nicely. At lighter roasts it’s distinctly floral, Ethiopians heirloom strains in action, pronounces lime and lemon-zest acidity with a little sweet red fruit tone, strawberry like. These lighter tones comingle with a rustic chocolate and spice, slightly herbaceous at lighter roasts. At medium roasts it turns smooth and balanced, with a silky body (between light and medium) and a rustic chocolate like backbone that supports the hints of fruitiness well. Pushed darker it gains punch and shifts toward dark/baker’s chocolate and cocoa, while maintaining a medium-soft body. Overall: floral-leaning, sweet, and very clean.

Best at light to medium roast levels but depending on personal taste, works nicely from light to dark. A crisp, clean, sweet and very floral cup (jasmine like), with some classic Yirgacheffe chocolate and tea-like spice contrast. Light roasts are delicate and pretty bright, accentuating the floral but also the herbal tea like components. Overall the acidity is medium and is perceived more as mandarin orange than sharp lemon; the sweetness is reminiscent of caramel, and as the temperature drops, a cocoa base is felt, adding more body. Subtle fruity notes (blackberry/sweet citrus) and a slight spice note; a silky medium body and a very clean finish with hints of honey and cocoa. A rich and expressive coffee in which, although there is fruit, the floral notes dominate with a tea-like character.

A wonderful example of a darker toned, lower acidity Ethiopian. We thought best from medium to dark roasts but it will still find fans at lighter roast points. Lighter roasts will have some buzzy acidity and just a hint of lemon/floral balanced with smooth and rich herbaceous spice notes. A bit more on the bergamot/dark-tea like Yirgacheffe profile. Medium roasts turn the herbaceous notes towards the chocolaty side moving the herbal/tea like tones to the aftertaste. A bit fuller bodied, lower acidity with complex darker tones. Dark roasts turn semi-sweet and even more chocolaty, the spice is readily noticeable and the body picks up a bit of a creamy factor, the roasty/smoky notes mix well with the darker toned profile of this bean but will not hold its sweet edge like most Ethiopians.

A very clean and brighter cup, silky-smooth mouthfeel that shines from the first whiff of honey sweetness to the final sip of bolder spice. Best served at light-to-medium roasts. A brighter, full flavored cup with great depth of flavor. Upon first sip, one will see a vibrant burst of lemon/orange citric comingling with a slight red fruit, quickly balanced by a creamy cocoa undertone with a little gentle black-tea like spice in the aftertaste. Underlying notes of roasted nuts and cocoa anchor the profile. As the cup cools the acidity softens and a deeper chocolate note swells, yet the honey aromatics persist, making every temperature stage deliciously consistent.

A stellar light to medium roast coffee, one of the better batches of Terruno Natural we have had through our doors. Due to the processing this coffee is naturally very sweet, syrupy textured with a medium-full body. Its brightness leans toward citrus, more lemon than acidic lime, with nuances of apple and soft orange. The cup presents notes of peach, plum, and a light floral touch, with a background of chocolate and cocoa and soft undertones of caramel and vanilla. A subtle melon accent is noticeable, especially in lighter roasts. With an intense fruity note, yet firm and balanced; lively without being strident: ideal for everyday drinking with any brewing method.

A wonderful batch of Terruno Nayarita great from light to dark roasts. This is one of the higher rated lots we have seen recently: crisp, clean and a bit brighter. Light roasts will highlight the higher rating but will be a little acidic for some. Medium roasts and very smooth and make for a great every day drinker. Darker roasts retain a very sweet edge but will produce a much flatter more potent cup. Lighter roasts have a hint of citric and a red-apple sweetness, supported by a gentle lemon/mandarin brightness that’s lively but not sharp. A light floral lift rides over a chocolate–caramel foundation; as the cup cools the tastes stay together showcasing the cleanliness, adds a soft hint of ripe stone fruit. Balanced, approachable, and versatile across brew methods. Medium roasts build up a bit of body, retaining just a hint of apple like acidity, pronouncing the smooth and nutty, chocolate like tones. Darker roasts get a bit roasty, but still have a nice and sweet edge, the most chocolaty cup profile assuming you don’t mind a bit of roasty/smoky to accompany it.

A very clean and fresh batch from Selva Negra. A little citric & floral acidity upfront, balanced with nice complex nutty & malty undertones. Light roasts are going to be a little front loaded with the brighter characteristics, a higher rated cup meaning one will notice some decent crisp acidity at the light-medium roasts. Will give great depth of flavor but may be a little sharp for some. Our favorite roast and a great everyday drinker was in the medium roast ballpark, builds more of a smooth and creamy cup with a sweet edge, reducing that perceived acidity to just a pinch. Turns much stronger, a robust cup most would say, into the darker roasts but shined nicely; fuller bodied with strong malty and smoky tones, still a sweeter edge to it which darker roast fans will love.

Great light to medium roast coffee. Although we have carried the San Felipe lot for years, having the Geisha separate this season has brought a ton of new tastes. East to tell the difference when compared to the other strains Selva Negra grows. Best at the light to medium roast level, these beans have a bit more acidity than anything else from Selva Negra. The cup is very floral and citric especially at lighter roasts. Not quite jasmine floral, a little more traditional citric, but very tasty; delicate and sweet edged. Where one can see the prime Geisha attributes is in the darker tones of the cup, black tea spice jumps right out. Light roasts are heavy on the citric and floral balanced just a touch of tea like spice with herbal overtones. Medium roasts are where most will want to shoot, defined tea like spice with some sweet crisp floral upfront. Darker roasts turn a bit plain, still very drinkable but not much uniqueness.Price:Price: Original price was: $8.49.$7.49Current price is: $7.49.$8.49/lb$7.49/lb -

A very cool exotic cup best at the light to medium roast points but tasty from light to dark. The cup is a bit sweeter and brighter than the washed or honey processed. At lighter roasts one will get hints of citric and red fruit tones balancing with a slightly herbal malt like darker tone. Takes a little longer setup after roasting but clean and easy drinking at the lighter roast points. Medium roasts move the fruitier tones to the aftertaste and pronounce the rich maltiness of the cup. The red fruit can be more easily seen as the cup cools, or in cold brew. Darker roasts are hardly fruity but retain the sweet edge, a little smoky/roasty/malt like note makes for a tasty treat.

Light roasts themselves will be brighter with crisp lemony floral notes and more noticeable fruit tones, nutty tones to balance out the cup. Medium roasts bring a smoother and richer cup, develop the nuttiness into more of a malty/chocolate like taste, reduces the fruitiness but keeps the sweetness, still a bit lemony upfront but has a much more noticeable malt like tone with a bit of spice to balance it out. We found these beans best at the lighter roast points but works well from light to dark. An even heftier cup than the washed processed, full of floral, citric and sweet tones. Contrasting with malty, nutty and rustic chocolate tones. As the cup cools, you can see more of a fruity edge showing its natural processed roots, but it’s delicate and a bit more citric/peachy than traditional red fruit. Lighter roasts have a pretty blasty citric edge, starts lemony but fades to more of a limey tone in the aftertaste. Good to give it a longer setup, mellowing the brightness will allow many little flavors to pop out. Medium roasts are likely the best starting point for most, still plenty crisp but will accentuate the traditional darker tones and require less waiting after roasting. A wonderful mix of floral and malty/chocolaty without being too sour upfront. Darker roasts can pull a little bittersweet edge but are still very complex heftier cups, good for the stronger coffee fans or those looking for a more exotic dark roast.

A crisp, bright, clean and balanced cup. We thought it best light-medium roasted but quite tasty from light to dark. This is an awesome example of washed processed Panama coffee. A hefty full flavored cup: floral, citric and sweet tones contrasting with malty, nutty and rustic chocolate like tones. A hint of soft fruit can be found as the cup cools in the light-medium roast levels. Lighter roasts push the tones towards the more acidic side but these beans are clean enough to handle the lighter roasting, give it a longer setup time after roasting. Lighter roasts are the most jazzy roast point but may come off a little too acidic for some. Medium roasts are the best starting point for medium-low acidity fans, it balances the cup out nicely with traditional darker tones, a creamier body and mouthfeel. A wonderful mix of floral and malty/chocolaty without being too sour upfront. Darker roast get much heftier, good for the stronger coffee fans.

New Crop 2025!
Great from light to dark. Light roasts will show great depth of flavor and produce a very clean cup. Some acidity, which brings lemony and floral tones to the front end of the tastes, balances them with a sweet edged nutty/malty undertone, hints of a vegetal spice. As one pushes the roast a little darker, the body increases, as the acidity and vegetal spice dissipated. Made for a very lovely daily drinker in the medium roast range; sweet, smooth & complex. Pushing the beans darker, the citric and floral acidity drops nicely to a crisp hint or none at all, the malty tones can turn quite robust as you approach or touch 2nd crack. Sweet, smoky, roasty and malty.Price:Price: Original price was: $10.49.$9.49Current price is: $9.49.$10.49/lb$9.49/lb -

Best at the lighter roast points, this cup is marked by a bit of sweet red fruit which can roast out of the beans if taken too dark. Light roasts are very clean and balanced with a good creamier mouthfeel and medium body, but overall we would call it a bit more delicate of a cup for the Pacamara lineup. Just a hint of a lemony citric note upfront fading into the sweet red fruit and pulling a little contrast with a rustic chocolate note, depending how light you go you can see a little nuttiness in the aftertaste. Medium to borderline dark roasts produce a very smooth and rich cup, mainly chocolate like but some interesting spice notes will pop out a bit, sweet but a little more plain tasting, hints of fruit as the cup cools but not that noticeable when hot. Darker roasts can get a little bitter edge and hide the fruitiness, but will pull a unique and complex slightly boozy quality in the aftertaste, a kind of “barrel aged” quality that we found appealing.

Best at light roast points. Very sweet, clean, delicate and floral coffee. Hints of sweet citric and soft fruit comingle with a very floral cup profile, pulls a little balance with a darker chocolate/malty/tea-like undertone. In our mind, Geisha coffee is all about the overly sweet cups and floral aromatics, these beans nail it. Hints of a tea like undertone can be found especially if you push the roast into the medium/dark category.

What is Laurina coffee? Laurina is a special strain of coffee with very low caffeine levels, although it still has some, in a sense it is as close to “natural” decaf as it gets. Generally about 1/2 to 1/4 of the normal caffeine levels of Arabica. It is a smaller tree, more like a shrub or smaller Christmas tree. Medium body – Hint of crisp florals – Sweet nutty – Clean, silky finish with an African like cocoa undertone.

Good from light to dark. In general, the more neutral offering out of the three, smooth, big bodied & creamy with semi-sweet chocolate notes, nutty accents and a bit of lingering spice in the aftertaste. Lighter roasting will show hints of acidity, a sweeter almond/nougat/brown-sugar comingling with more herbal spice notes. Medium roasting gets the fuller body and more chocolate/malt with hints of spice. Darker roasting gets hefty bakers chocolate note with complimenting roasty-ness. Lower acidity cup overall but will show some crisp citric notes at lighter roasts, some floral characteristics as well. A little roasty/smoky tone into second crack but it will compliment the more chocolaty and nutty profile. A nice medium roast for drip brew, darker for espresso and cold brew. Lighter roasting will appeal to some for the sweet vs bold tones similar to African coffees.

Good from light to dark. In general, the strongest offering out of the three, smooth, big bodied & creamy with semi-sweet chocolate notes, nutty accents and a bit of lingering spice in the aftertaste. Lighter roasting will show some stronger citric acidity comingling with stronger herbal notes, a hint of chocolate, good depth of flavors but will be a bit sharp and herbal for most. Medium roasting gets the fuller body and more chocolaty toned cup with a hint of spice, unlike the other two, this will still have a little hint of citric, leaving it a bit sweeter tasting. Darker roasting gets hefty bakers chocolate note with complimenting roasty notes, no signs of the brighter cup profile at lighter roasts. Although it’s the brighter of the PNG coffees, it has medium to low acidity comparatively to other origins.

Great from light to dark roasts. A very clean cup, medium-bodied cup with a clear sweetness and a creamy aftertaste. Medium acidity with a citrus profile (more toward lemon) provides brightness without being overpowering. The cocoa base has a nutty undertone (nut/peanut butter) and a fruitier (citric) profile; in light roasts, blueberry notes may emerge along with a slight floral tone. Medium roasts achieve the best balance: soft citrus notes, spiced chocolate, and good structure; in dark roasts, the “baker’s chocolate” cocoa predominates, with a heavier aftertaste and very low acidity.

Best at the lighter roast points but a very clean and tasty cup from light to dark. Marked and pleasant acidity, with a citrus profile (lemon/orange) that balances well with a clear sweetness; a cocoa/chocolate base with a nutty undertone and a slight herbal spice note in the aftertaste. Fruitier in the light ranges with hints of melon and strawberry while maintaining a medium body; in the medium range, it gains roundness with chocolate and spices; in the dark range, it becomes heavier, with dominant cocoa and low acidity. A balanced and easy-to-enjoy profile.
