A very nicely balanced cup of coffee. A little hint of acidity upfront providing some floral and soft fruit at the lighter roasts, balanced with a semi-sweet nutty chocolaty factor. Super light roasts risk a little grassy/herbal but it straightens out at a city+ (medium) and holds up as dark as you want to take it. The darker you go, the more body and edgy chocolate the cup will pick up, once you hit 2nd crack, expect some smoke and roasty tones to compliment the nutty/chocolaty factor.

Best served light to medium roasted. Crisp, clean, slightly fruity and sweet: a more exotic cup with higher acidity than the washed processed offerings. Lighter roasts show sweet lemony floral brightness, with just a hint of soft fruit, balanced with a little herbal/nutty tone. Great body and mouthfeel especially for the roast point. This honey processed shined best at the lighter roast points out of all three Bolivian offerings, a great sign of quality. Medium roasts still provide a bit of crisp sweet citric upfront and soft fruit tones as the cup cools, but will develop more of the classic South American profile of creamy and smooth, nutty/chocolaty like tones.

A great light to medium roast coffee. Delicate, balanced, clean, fruity and sweet. This is not a ferment bomb, the natural tones are delicate and well balanced, not hitting you over the head. An easy drinking lighter roast coffee: sweet, smooth, hints of lemony floral acidity and soft fruit, balanced with a defined chocolate like tone. Good body and mouthfeel, medium to low acidity. A more exotic cup that everyone will love. Medium roasts will start to roast the fruitiness out of the cup but still leave it very sweet, accentuate the body and mouthfeel.

Great from light to dark; this is the fruitiest of the two lots with higher than average acidity for Brazil, highlighting some citric & red fruit like tones in the cup, sweet and a bit more wild. Comparatively to many Anaerobic Naturals, this cup is milder and much more balanced with traditional coffee tastes. Fruity but not crazy ferment & boozy. Lighter roasts show a fruit forward cup, sweet edged, just a hint of lemony acidity with a slightly nutty finish. Shines at the light/medium roast points but tasty from light to dark. As one pushes the roast darker, it builds stronger nutty tones and starts introducing hints of semi-sweet chocolate in the aftertaste, a bit smoky if you get too close or into 2nd crack. Retains hints of the fruitiness throughout the roast spectrum but more in the background/after-tastes with medium to dark roasts.

This is one unique coffee! We have carried only a few of these Fruit Fermentations coffees in the past, some have loved them, some have not, but a very fun and definitely unique offering for home roasters. Part high quality Colombian coffee, part melon science experiment. Flavored enough by the crazy processing that the crowd will be split on this one but we found much joy drinking it. Be ready for coffee that tastes and smells like varying levels of melon depending on the roast level.
If you love melon, this coffee will be pretty awesome. Two of our tasters love melon tastes and picked this one as the favorite. The melon tones stick right out and balance nicely with the Colombian coffee profile. Lighter roasts were interesting, some may want to try it here, the cup is bright and clean but be warned, the aromatics and flavor of the melon is very strong, it balances with a very sweet, nutty, buttery textured tone. Pretty much a guarantee one will have not tasted flavors like this in coffee before, but will be a limited crew that likes the light roast point best. We did like lighter roasts better than the pineapple offering, but all in all the cup lacked balance with some normal coffee tones. Medium roasts push the tastes much higher in our book, a little hint of citric acidity, some classic Colombian nuttiness, good body with a clear sweet melon tones, a little stronger in the aromatics but also clear in the tastes. Still unique but links more to traditional coffee tastes. Darker roasts close to second crack present nicely, but into second crack more than a pop or two did pick up a little bitter contrast.

Recommendation of a lighter medium to borderline dark roast to present this best. I unfortunately have not eaten a ton of passionfruit so this was harder for me to link directly to the fruit itself, where the other two strike home. More floral and citric fruity comparatively to the other two, a bit more delicate, the aromatics and fruitiness balanced best out of the three with the coffee tones but no missing the unique fruity/fermentation tones.

Great from light to dark roasts. Lighter roast points are very jazzy with brighter features, citric mixing with a little sweet hint of a fruit tone, pulling some balance with a bit of nuttiness. Medium roasts get fuller bodied and smoother, slightly chocolaty with less crisp citric/floral tones than the lighter roast points. Darker roasts will kill most of the crisp acidity but will retain a little hint of fruit as the cup cools. Much more chocolaty and robust at the darker roast points.

We thought it best within the light to medium roast levels. Jazzy citric acidity, a little floral some would say, a hint of soft fruit providing a sweet edge along with some wonderful darker toned balance, on the walnut/almond side. Light roasts themselves will be a bit citric, the cup is very clean and handles the roast level well, but needs a longer setup and a tongue that doesn’t mind a bit of acidity. Medium roasts are great daily drinkers and promote a little hint of caramel in the nuttier cup profile, retains just a pinch of citric acidity upfront but it really helps with the depth of flavors. Good body with a smooth mouthfeel. Dark roasts were equally as tasty but it loses the cool crisp citric, and soft fruit, that shows at lighter roasts. Full bodied with stronger nutty and chocolate like tones, a bit of roastiness but it compliments the cup nicely.

To see this cup shine, light to medium roasts are the way to go! Medium acidity, lighter bodied, delicate, sweet cup with strong red fruit tones (strawberry like). Hints of citric and floral jump right out with the fruitiness. Pulls some balance with a little nutty/tea like tones at lighter roasts giving it some awesome depth. Holds up well as one pushes towards second crack, turns the nutty/herbal tones into a rich chocolaty factor with fruity highlights. A bit rougher of a dark tone close to the dark roast mark, touching or into second crack, but everyone still liked it. Touching or into second crack gets a bit bitter with more of an oaky barrel aged tone than sweet red fruit.

This is a quality bean in and out, best served in the light to medium roast level. Lots of cool tones to play with in the roaster. Higher acidity, very sweet, with some floral tones popping out, just like a high rated Costa should be. A fruit forward offering, slight red fruit but most will pick it up as a grape skin like fruitiness when mixing with the higher acidity. All these lighter tones balance with some nuttiness than will lean on the chocolaty side, especially as/if you push the roast a little darker. Super light roasts lean the cup to lemony/floral and will be loaded with more citric lighter tones, not very balanced but punchy and clean. Darker roasts lean it towards nutty/chocolaty with more stout like features & fruity highlights. In the middle, one gets layers of all the lovely flavors in the cup. Crisp and clean lemony floral balanced with sweet and smooth chocolaty undertones than linger on the nuttier side. Hints of fruit will pop out but not hit you over the head.

A very sweet and fruit forward bean. Clean cup, medium to full bodied with higher acidity. Light to medium roasts are where this bean will shine. Being a brighter natural processed it has some great sweetness and a stronger winy/citric and red fruit tone upfront, which balance with classic Costa nutty and slightly chocolate like darker tones. A fun bean to play with roast level: tip the scales either lighter and fruitier or darker toned nutty/chocolate like. Very light roasts (with a longer setup) can introduce a little toasted grainy note giving a comparable to jellied toast like tastes, but with a lemony citric kicker. Medium roasts build great body and mouthfeel, cut out much of the citric but still overlays the nutty & chocolate like tones with a wonderful and sweet fruitiness. Darker roasts are strong and have a bit of bittersweet contrast. It keeps the sweetness and will still be slightly fruity, but contrasts with stronger bakers chocolate (slightly bitter) like tones with some roasty/smoky accents.

Best from the lighter side of a medium roast to as dark as you want to go. A bit cleaner tasting but slightly less fruity than previous seasons. Lighter roasting presents some nice honey processed features: citric, floral, soft fruit with an almost oak/peat like finish, sweet & complex but does risk some underdeveloped tones if you nail it a little too light. Medium roasts were our favorite, still balanced and complex but will develop the traditional chocolate and smoky tones for which Dominican coffees are known for – to balance out those more exotic fruity and citric tones. Lighter roasting presents a ton of floral and fruit with an almost oak/peat boozy finish, very sweet with just a ton going on but does risk some underdeveloped tones with its two-toned roasting. Medium roasts were our favorite, still plenty wild but develop enough of the chocolate and smoky tones – which most Dominican coffees are known for – to balance all those more exotic fruity and citric tones. A bit higher acidity with good body and mouthfeel. The fruitiness comes off almost grape like when comingling with a little acidity. Medium roasts cut out the crisper edge, and increase the body of the cup, smooth and easy drinking with nutty and darker chocolate like tastes, fruity highlights, a bit of “barrel aged” spice note popping out in the aftertaste and as the cup cools.

Crisp, clean, sweet and very highly rated, a fun treat for any Ethiopian fan. Light roasting is recommended to see the cup shine but hard to find a bad roast point. Lighter roasts are where you will see the cleanliness of the cup, balanced tones with good mouthfeel and hardly a hint of anything grassy or vegetal. It will have some decent brightness, lemony with just a pinch of peachy like fruitiness. The aromatics are unique being overly floral with some classic Ethiopian hints of lavender/jasmine. The lighter tones pull some balance with the classic tea (herbal/spice) like darker tones. Medium roasts really mellow out the acidity and reduce the citric & floral tastes, creates a bit more body and a much more recognizable chocolaty factor. A very smooth, balanced and rich cup with exotic highlights. Darker roasts are fuller bodied and dark toned: roasty, bakers chocolate with some unique spice and rich aromatics.

Light roasts put off a sweet lemon acidity that fades into a nice red-fruit note, balanced with a tea-like dry chocolate undertone. A longer setup will help smooth it out and pronounce the fruit note. If shooting real light, make sure to flick out any beans not through first crack. Medium roasts are a bit more tame, no flicking required. Cup will get a richer chocolaty note with just a pinch of floral acidity and fading into a soft fruit note. Medium roasts are slightly reminiscent of the Yemen but perhaps still a bit brighter. Darker roasts are cool with these beans, as you touch 2nd crack you still have some nice medium roasted beans in the mix, a good balance of tones between the smoky chocolaty roasty and fruity citric tea notes.

Wonderful aromatics with delicate tea like chocolaty undertones. Very dependent on roast but hard to find a bad cup at any roast level. If you are an Ethiopian fan, lighter roasting is the way to go. If you don’t know or traditionally roast a bit darker, start at a fuller roast point. Best presented at the light to medium roasts to see the Ethiopian attributes but will be unmatched at the darker roasts, hefty tea like spice with floral aromatics and rich semi-sweet smoky dark tones.

A solid cup from light to dark, but for most drinking, a medium roast will be the way to go. Sweet with just a pinch of citric upfront, medium bodied, good mouthfeel, just a pinch of fruitiness and ends with a nice malty undertone. Lighter roast get a bit brighter and slightly more fruity but can risk a little grassy, medium roasts present great balance to the flavors and was very easy drinking, darker roasts retain a lot of sweetness and hefty malty tones, but will get pretty roasty/smoky. If drinking for drip/pour-over, medium roasts are where to go. If using for blending, espresso or cold brew, light or dark roasts can produce some really tasty results.

Best served light to medium roasted. This is the brightest Guatemalan offering out of the bunch, crisp with sweet citrus, floral and soft fruit upfront, balancing with a nutty and malty darker tone. The Tabi strain brings a more “rustic” malty tones compared to traditional Guatemalan strains, but is not earthy like many hybrid coffees. Medium roasts build a little body and mellow the citric/fruit notes, less sharp of a cup with a stronger malty tone, the more exotic fruit tones and layers of tastes still come right through in taste but are muted slightly compared to lighter roast points.

Best served at light roasts. One can roast out the sweet floral and fruit pretty quickly so be a little careful not to get this one too dark. Hard to get a bad roast on these beans but will be far less distinctive at fuller roast levels. Light roasts are delicate, sweet and balanced. Hints of citric/floral and fruit balance nicely with a fuller bodied dark tone, on the malty side with tea (spice) like accents in the aftertaste. Unlike many light roast coffees, the acidity and tones are gentle and balanced. Medium roasts promote the tea like spice but cut out the sweet floral pretty quicky. Turns the cup low acidity with mostly darker toned complexity.

Best served light to medium roasted. Light roasts are very sweet and will showcase the fruity, floral and citric. Tastes will be mostly brighter acidic tones, a more potent cup. Clean & exotic but not much for darker toned contrast, it will be the preferred roast level for higher acidity fans. Although one has orange on the mind with the name, the fruitiness and acidity will produce a more orange like sparkle versus more traditional red fruits that many naturals get. Medium roasts are equally as nice and a bit tamer, generally where we would recommend roasting this one. Develops a richer mouthfeel and fuller body with some lovely darker toned balance. Still plenty of citric and fruit to keep the cup jazzy, but shouldn’t be too sour or frontloaded for most tongues.

At light roasts it hold up well but will be higher acidity and very fruity and winy upfront, only a hint of a darker toned contrast. Medium roasts introduce a more chocolaty balance and mute up some of the acidity making it nice for a lower acidity fan. A great mix of fruit and chocolaty factor where one can play with the balance of tones through roast level. Darker roasts are not recommended, get edgy and smoky with a little hint of fruit coming through.

Darker roasts taste nice but will have some roasty/smoky characteristics along with a good body. A rich and sweet cup for dark roast fans.

A very nice and clean Honduran offering, great from light to dark roasts. Our favorite roast was on the lighter side of “medium”, too light one gets a pretty strong hit of lemon citric upfront Just a little development past first crack and it turns more nutty/caramel/chocolate like with a mellow citric crispness. As one gets a bit closer to 2nd crack than first, the cup turns much more chocolaty with a little nuttiness in the aftertaste, pretty much all the citric will be gone from the tastes and it will pick up a little hint of roasty/smoky like tones. Touching or into second crack, it is very chocolaty and sweet, with a pretty strong hit of smokiness in the aftertaste, which we thought complimented the cup.

A beautiful delicate and clean natural processed bean best served at the lighter roast points. Hint of citric acidity upfront are quickly covered up by lovely layers of sweet fruitiness. We put it down the stone (red) fruit alley, similar tasting to Cascara (dried coffee skin tea). There is some lovely darker toned balance: a little almost barrel aged, rustic oak like spice with some nuttiness, and if you push the roast towards medium or dark, turns much more chocolatey. Medium roasts are mellower and smoother but can roast out the fruitiness pretty quickly. Dark roasts will get a bit bitter.

A tasty cup from light to dark. The anaerobic processing really adds some cool tones at the lighter roast points, so to see these beans shine, keep them in the light-medium roast levels. Medium bodied with medium to low acidity, a nice rounded cup. Lighter roasts will promote the sweetness and have a little crisp citric upfront and a slight fruit tone as the cup cools, balanced with a little herbal, rustic chocolate note coming from the Indonesian roots. Medium roasts are much smoother and less citric, a bit fuller bodied and still very sweet. Darker roasts cut out most of the lighter citric and fruit tones but still provide good sweetness, full bodied and rich with more potent chocolate tones and a slightly earthy accent.

Medium roasts get more balanced, not as citric, building a bigger bodied darker tone. The citric turns a little grapefruit like and the nuttiness turns a bit more chocolaty, maintains a lot of depth between the acidity and herbal chocolate/nutty floral notes . Darker roasts get very strong and semi-sweet, think bakers chocolate with herbal accents. Always one of our favorite Mexican coffees. Good from light to dark. Although Natural processed, this is not a fruit bomb like many other natural processed coffees, has slightly fruity overtones that balance great with some citric, malt and nutty undertones. Its a little fuller bodied cup than most Terruno lots with well above average sweetness. Lighter roasting will have noticeable citric crispness upfront and will accentuate the fruitiness. Medium roasts balance the tones nicely and smooth out (reduce) the citric brightness. Darker roasts turn much more chocolaty and get pretty roasty and smoky, retains a sweet edge and shows hints of fruitiness as the cup cools. A cool cup of Mexican coffee with unique (to Mexico) processing: nor your average Mexican tastes. We liked it best medium to dark roasted: nice and sweet cup upfront with wonderful aromatics, fuller bodied and less acidic. Small hints of a fruitiness especially at lighter roasts. Bakers chocolate, malt, smoke and a bit of nuttiness comprise the darker tones. Very dependent on roast level, lighter roasts will be filled with more fruity and citric notes balancing with a nuttier, dryer, chocolaty undertone. Medium roasts are balanced and bring forward the more nutty and chocolaty character, muting the fruity and lemony/floral tones, they are still there in the cup, just more in the aftertaste than the first thing to hit your taste buds.

Great light to medium roast coffee. Although we have carried the San Felipe lot for years, having the Geisha separate this season has brought a ton of new tastes. East to tell the difference when compared to the other strains Selva Negra grows. Best at the light to medium roast level, these beans have a bit more acidity than anything else from Selva Negra. The cup is very floral and citric especially at lighter roasts. Not quite jasmine floral, a little more traditional citric, but very tasty; delicate and sweet edged. Where one can see the prime Geisha attributes is in the darker tones of the cup, black tea spice jumps right out. Light roasts are heavy on the citric and floral balanced just a touch of tea like spice with herbal overtones. Medium roasts are where most will want to shoot, defined tea like spice with some sweet crisp floral upfront. Darker roasts turn a bit plain, still very drinkable but not much uniqueness.

A great light roast bean with some strong and bright fruit forward tones balanced with a bit of spice and stellar aromatics. Its always a bit harder to pick out those traditional Geisha tones with the natural processing but if you stick lighter, you definitely get them in the aromatics, some great almost jasmine like Ethiopian aromatics with this cup. Clean as a whistle with very noticeable lemony/floral acidity accompanied with some lovely red fruit tones. Sweet, delicate and well defined at the lighter roasts. A good daily drinking lighter roast coffee. Comparatively to the Catuai, the Typica is mild mannered, delicate, less acidic, smoother, but with similar tastes. Medium roasts bring a more traditional cup with better balance. This should be the minimum roast level if you do not want noticeable floral/fruit notes upfront. Still has a bit of jazz upfront but a more pronounced nutty/malty tone to balance it out.
