Best served light to medium roasted. Crisp, clean, slightly fruity and sweet: a more exotic cup with higher acidity than the washed processed offerings. Lighter roasts show sweet lemony floral brightness, with just a hint of soft fruit, balanced with a little herbal/nutty tone. Great body and mouthfeel especially for the roast point. This honey processed shined best at the lighter roast points out of all three Bolivian offerings, a great sign of quality. Medium roasts still provide a bit of crisp sweet citric upfront and soft fruit tones as the cup cools, but will develop more of the classic South American profile of creamy and smooth, nutty/chocolaty like tones.

A very fruit forward and floral exotic Colombian. All sorts of cool unique flavors can be found in this cup from the slow dry natural processing and boutique fermentation. The brighter tones tend to range from a lemon citric component at the lighter roasts to strong stone fruit in the medium roast range. The acidity is pretty high at the lighter roasts but mellows greatly at a strong medium to dark roast. The balance of the cup comes from an almost cola-like tone that turns a bit nuttier into the darker roasts. Medium bodied, super clean with some far from traditional Colombian tones.

A good cup from light to dark but to showcase what makes these beans special, light to medium roasts will be the way to go. Light roast points are very jazzy with stronger citric/floral acidity mixing with a little soft fruit tone, pulling some balance with a sweet edged nuttiness. With the red fruit and more citric components, it makes us think pink lemonade upfront, but some were more down the tart raspberry alley. Medium roasts get fuller bodied and smoother, good nutty/chocolate like undertones with less crisp citric/floral acidity. Darker roasts will kill most of the brightness but will retain a little hint of fruit as the cup cools. Much more chocolaty and robust at the darker roast points, potent brew, can have a little stout like bitter aftertaste but will hit the tongue on the sweeter side.

The flavor is very dependent on the roast. Light roasts are a bit citric and sweet, hints of a melon fruitiness comingle with a little nutty and chocolaty factor. At a medium roast, you will enjoy soft notes of walnut, cedar, and spice, a little crispness, with more of a caramel like finish. A lovely, crisp, and clean, not overly fruity natural processed. We thought it best right around the medium roast ballpark but will make fans lighter or darker depending on your personal taste preference. Lighter roasting is a bit higher acidity, lemony and floral with some grape skin like fruitiness coming through. A bit more herbal spice right at first crack, needs a longer setup time to shine but will provide delicate chocolaty notes with much wilder acidity and fruity tones. Medium roasts were tasty without the wait! Balanced, tasty, and clean after 24 hours. A pronounced chocolaty factor, medium bodied, hints of crisp acidity backed with a little soft fruit tone and spice. Wonderfully smooth and delicate for a Congo coffee. Dark roasts were tasty right off the bat as well, roasty and stronger but with a sweeter then average edge. The smokiness does compliment the strong chocolaty undertones.

Best from the lighter side of a medium roast to as dark as you want to go. A bit cleaner tasting but slightly less fruity than previous seasons. Lighter roasting presents some nice honey processed features: citric, floral, soft fruit with an almost oak/peat like finish, sweet & complex but does risk some underdeveloped tones if you nail it a little too light. Medium roasts were our favorite, still balanced and complex but will develop the traditional chocolate and smoky tones for which Dominican coffees are known for – to balance out those more exotic fruity and citric tones. Darker roasts are a little more complex than on the washed processed version, but not as smooth and rich.

A very cool, very exotic cup of coffee. One can tell this is a slow dry natural processed coffee with its strong ripe red fruit tones upfront. Lighter roasting presents a ton of floral and fruit with an almost oak/peat boozy finish, very sweet with just a ton going on but does risk some underdeveloped tones with its two-toned roasting. Medium roasts were our favorite, still plenty wild but develop enough of the chocolate and smoky tones – which most Dominican coffees are known for – to balance all those more exotic fruity and citric tones. Darker roasts will burn out most of what distinguishes this cup, the washed processed handles those roast level much better; interesting and still exotic but strong and edgy, it will retain some fruity factor with very strong and less sweet, smoky, tobacco and bakers chocolate type notes.

A wonderfully clean and exotic cup. Not nearly as herbal spice noted as its Yirgacheffe cousins. A bit of lemony floral acidity upfront quickly fading into nice red fruit notes and balancing with a smooth chocolate undertone that lingers in the aftertaste. Light roasts will promote much more citrus acidity but also leave the most red fruit tones in the cup. A longer setup helps with the lighter roasts for the citric tones will fade over time allowing more of the fruitiness and darker tones of the cup to shine. Medium roasts really bring forth the cleaner chocolaty tones in the cup reducing the fruit and citric tones to just a hint. Darker roasts burn out the fruit and acidity leaving a strong slightly edgy bakers chocolate cup with smoke smokier highlights.

Smooth, rich, delicate and clean, a wonderful example of a top notch Guatemalan. The aroma has great sweet notes. Hazel and hickory nuts, caramel, and milk chocolate. The body is light/medium and has a very silky texture on the malty side. The aroma comes through in the taste to create a wonderful balance of tones. Medium to low acidity, reduces the darker you roast. The finish is very smooth and clean with a lingering sweetness.

A very clean well balanced cup good from light to dark roasts. Crisp acidity with a small hint of soft fruit, comingle with a more chocolaty cup profile with floral accents. Can be roasted from light to dark but our favorite was a nice medium roast. Lighter roasts: the acidity & floral tones are accentuated and will be the first tastes your tongue will notice, a pinch of an island fruit tone but pretty faint, balances with a little green-tea, chocolate & spice dark tone. From a medium roast on, the acidity is very gentle and balanced with a smooth to rough chocolaty cup profile, milk chocolate before 2nd crack, bakers chocolate and smoky into 2nd crack. Medium bodied and lower acidity, these beans as well as other Kona’s are mild cups comparatively to many other origins, be in for a delicate and tasty cup with layers of goodness.

A very fruit forward, delicate and sweet cup. Best served in the light to medium roast range. At light roasts it hold up well but will be higher acidity and very fruity and winy upfront, only a hint of a darker toned contrast. Medium roasts introduce a more chocolaty balance and mute up some of the acidity making it nice for a lower acidity fan. A great mix of fruit and chocolaty factor where one can play with the balance of tones through roast level. Darker roasts are not recommended, get edgy and smoky with a little hint of fruit coming through.

Very fermenty/fruity, lower acidity cup with good body. A wild old world natural processed good from light to dark. A beautiful tasting bean this season: slightly fruitier but still balances with traditional Indonesian character. Hints of acidity with stronger fruitiness at lighter roasts, strong fruit/oak tones on a more nutty/earthy/chocolaty profile at darker roast points. No missing the wild side in this cup. Medium roasts are where one should shoot for their first roast, mutes some nutty tones and pronounces the chocolaty factor for some balance, still plenty of wild fruity natural processed tones in the cup. Dark roasts will introduce some smoky accents but retain great sweetness. A great balance of slow dried natural with thick and creamy dark tones all in one cup.

A great cup from light to dark: a clean, rich and smooth cup. To see it shine and differentiate itself from normal Indonesians, keep it in the light to medium roast ballpark. Just a hint of brightness upfront, sugarcane like sweetness, good body with a chocolate like lingering aftertaste. It does have a little earthy terroir, but is almost more playing on some spice notes than traditional Indonesian “muddiness”. Darker roasts are pretty hefty cups, still overly sweet but more simple in its taste, chocolate and spice like with some complimenting roasty notes. A very cool cup! Best medium to dark roasted but will hold lighter roasts much better than most Sumatra coffees. Lighter roasts have a little cool lemony acidity upfront, with some soft fruit tones giving it some jazz, balanced with a dry earthy chocolaty herbal factor with some incense like spice. As you push into the medium roasts, it will get fuller bodied with a creamy mouthfeel cutting out the more lemony floral tones, turns the cup much more chocolaty and gives depth to the exotic spice notes. Darker roasts will turn more stout like and semi-sweet. Crisp, clean and fresh, a great coffee from light to dark. A less acidic Kenya with great balance, mouthfeel and depth of flavors. At light roasts it will still have some brighter citrus qualities but will not pucker ones mouth. Kenyan coffees in general can be pretty strong. It has hints of chocolate, fruit & herbal spice along with the citrus and floral. Medium roasts bring the best balance to the cup accentuating the chocolaty tones and reducing the brighter notes just a hint. Darker roasts make that classic Kenya herbal tone pop right out and is more down the potent bakers chocolate alley. Very clean with increasing body as the roast gets darker. A great balance between citrus, floral, herbal and chocolate. Easy to change the balance of these tones by roast level – a fun coffee to play around with.

A very clean, exotic and balanced cup of coffee. Although still considered a higher acidity cup, this offering is more about the fuller body and complex darker tones. Especially at lighter roasts, one will see a more citric style acidity, comingling with a green tea like spice, clean as a whistle, but may be a little sharp for some. Medium roasts bring a more potent chocolaty cup with some floral highlights, lingering spice in the aftertaste. Darker roasts get much thicker and semi-sweet, would put in on the bakers chocolate side of things with some soft fruit and spice lingering on the tongue, a little smoky if you go real dark.

Always one of our favorite Mexican coffees. Good from light to dark. Although Natural processed, this is not a fruit bomb like many other natural processed coffees, has slightly fruity overtones that balance great with some citric, malt and nutty undertones. Its a little fuller bodied cup than most Terruno lots with well above average sweetness. Lighter roasting will have noticeable citric crispness upfront and will accentuate the fruitiness. Medium roasts balance the tones nicely and smooth out (reduce) the citric brightness. Darker roasts turn much more chocolaty and get pretty roasty and smoky, retains a sweet edge and shows hints of fruitiness as the cup cools. A clean, sweet & smooth cup. Best at the lighter roast points but works nicely in the medium roast range as well. Lighter roasts focus the tastes more around the brighter citric/fruit tones: a hint of lemony citric that fades into a fruitiness, balancing with a darker malt like undertone. A good daily drinking lighter roast coffee. Comparatively to the Catuai, the Typica is mild mannered, delicate, less acidic, smoother, but with similar tastes. Medium roasts bring a more traditional cup with better balance. This should be the minimum roast level if you do not want noticeable floral/fruit notes upfront. Still has a bit of jazz upfront but a more pronounced nutty/malty tone to balance it out. A clean, sweet and smooth cup of coffee one can drink all day long! A little fuller bodied at the light-medium roast level with a great balance between the lighter winy/floral notes & nutty/malty darker tones. Similar to Guatemalan coffee. Some acidity at lighter roasts but just a hint, medium to dark roasts would be marked as low acidity. As one pushes it into the medium roast range, the very sweet nutty tones come off a bit caramel like. Still plenty malty, it will linger on the tongue. Dark roasts turn pretty strong with the sweeter malty cup profile mixing nicely with smoky and roasty notes.
