China Premium Yunnan – Torch Coffee – Menglian Red Honey
Clean, sweet and balanced, this is the Yunnan offerings for most coffee fans. Best at the light to medium roast levels: there is a little crisp citric upfront, a bit more lime than lemon, a hint of red fruit giving a sweet edge. These lovely lighter tones pull some balance with a nutty/chocolate like undertone with a bit of spice, accentuated as you push the roast darker. Medium bodied, medium brightness levels, small hints of red fruit more noticeable as the cup cools. Light roasts themselves are much more citric, good to give a longer setup if shooting light, mellow out the crispness a bit. Turns much more chocolaty at the darker roasts but will introduce potent bitter, semi-sweet chocolate like notes. Medium roasts present the best balance and would qualify as a jazzy daily drinker.

Dominican Org Ramirez Estate – Red Honey
Best from the lighter side of a medium roast to as dark as you want to go. A bit cleaner tasting but slightly less fruity than previous seasons. Lighter roasting presents some nice honey processed features: citric, floral, soft fruit with an almost oak/peat like finish, sweet & complex but does risk some underdeveloped tones if you nail it a little too light. Medium roasts were our favorite, still balanced and complex but will develop the traditional chocolate and smoky tones for which Dominican coffees are known for – to balance out those more exotic fruity and citric tones. Darker roasts are a little more complex than on the washed processed version, but not as smooth and rich.

Crisp, clean, sweet and very highly rated, a fun treat for any Ethiopian fan. Light roasting is recommended to see the cup shine but hard to find a bad roast point. Lighter roasts are where you will see the cleanliness of the cup, balanced tones with good mouthfeel and hardly a hint of anything grassy or vegetal. It will have some decent brightness, lemony with just a pinch of peachy like fruitiness. The aromatics are unique being overly floral with some classic Ethiopian hints of lavender/jasmine. The lighter tones pull some balance with the classic tea (herbal/spice) like darker tones. Medium roasts really mellow out the acidity and reduce the citric & floral tastes, creates a bit more body and a much more recognizable chocolaty factor. A very smooth, balanced and rich cup with exotic highlights. A great example of a honey processed coffee. We thought best around a medium roast, pulls greater flavor depth without being too strong or acidic. A little fruity, buzzy acidity, rich and sweet nutty/chocolate like tones. Can go lighter or darker dependent on personal taste preference. Lighter roasts will be bright and frontloaded with fruity/floral/citric tastes, darker roasts flip the tastes, a stronger semi-sweet and robust chocolate/smoky tone with some fruity highlights as the cup cools.

A very rich, strong and smooth cup. A cousin to Sumatra or Sulawesi coffee; Blue Moon always is a bit smoother without as much peaty earthiness, or swampy fruit. A sweeter cup for an Indo with malt, chocolate with a little traditional earthy terroir of the wet-hulled Indonesians. Fuller bodied, a little hint of acidity at a medium roast, a definite go to for our strong-medium or dark roasts here at Burman Coffee. Pulls some molasses undertones as ones pushes into second crack roasts. Hints of slight smoky tone at darker roast.

Tasty from medium to dark. We preferred it a bit on the darker side. Lighter roasting is wild and decently fruit forward, sweet with a little acidity upfront; winy and brandy like with some lingering dry nutty/earthy tones, a bit of floral in the aftertaste, good but not chocolaty enough for us. Medium roasts mellow the cup a bit, turning it more chocolaty, fuller bodied and refining the fruitiness, making it a cup everyone will love, not just natural processed fans. Reminiscent of a nice Yemen Mokka but a bit more brandy like. Smooth and easy drinking. Dark roasts worked exceptionally well. Chocolaty but not overly roasty, sweet with just a pinch of fruit in the aftertaste. A bit of bolder spice compliments the more delicate features: great mouthfeel.

A very clean traditional Sumatra cup. Best from medium to dark roasts. Fuller bodied with some nice exotic incense spice notes intermingled with a bakers chocolate and smoky cup profile. Light roast are not recommended (for almost all Indo coffees). Medium roasts were nice and balanced, a little lemony acidity upfront mixing with a bunch of spice and hints of an earthy slightly peaty chocolaty factor; a decent roast point for pour-overs or drip. Darker roasts were fuller bodied and very smoky with the spice lingering in the aftertaste, very low acidity; good for dark roast fans, espresso or blend bases.

Panama Premium Boquete – Finca Las Brumas – Pacamara Honey
A very good everyday drinker. Medium bodied, medium to low acidity; nice semi-creamy chocolaty tones with a hint of sweetness and a bit of floral. Reminiscent of a Costa Rican coffee but a bit fuller bodied and less nutty. Light roasts still show a little sharp acidity, tasty with some setup but risks a little grassy tone. Medium roasts shine and are smoothest and most balance tasting between lighter and darker tones: good chocolaty semi-malty tones with just a hint of floral. Dark roasts get a bit thicker but turn much more semi-sweet chocolaty with some smoky tones in the aftertaste. Works darker for a semi-sweet chocolate bomb, assuming you pop in a splash of mild or make an espresso out of it.

Marked and pleasant acidity, with a citrus profile (lemon/orange) that balances well with a clear sweetness; a cocoa/chocolate base with a nutty undertone and a slight herbal spice note in the aftertaste. Fruitier in the light ranges with hints of melon and strawberry while maintaining a medium body; in the medium range, it gains roundness with chocolate and spices; in the dark range, it becomes heavier, with dominant cocoa and low acidity. A balanced and easy-to-enjoy profile.
