A great clean decaf coffee! Good from light to dark. Lighter roasting will show a little lemony crispness, rare for a decaf. Sweeter edged with a little herbal chocolate contrast. Medium roasts cut out most of the lemony crispness and rid the cup of its herbal edge. Smooth and rich, medium bodied, with a more pronounced chocolate tone; a bit floral and sweet in the aromatics, adds to the drinking experience but doesn’t come through in the tastes. Darker roasts are robust and strong, semi-sweet and very chocolaty with a roasty edge.

Sourced from the high-altitude regions of Chiapas, Oaxaca, and Veracruz, Mexico Signature “Cristal” is a versatile washed coffee comprised of traditional varieties like Bourbon, Typica, and Mundo Novo. This aggregate lot is an excellent value for the home roaster, offering a clean and forgiving profile that transitions from crisp citrus and herbal notes at lighter levels to a full-bodied, creamy cup dominated by semi-sweet chocolate and nuts at a medium-to-dark roast. Perfect as a reliable daily drinker or a classic espresso base, it shines best when roasted darker to accentuate its rich, chocolaty character and smooth texture.

Always one of our favorite Mexican coffees. Good from light to dark. Although Natural processed, this is not a fruit bomb like many other natural processed coffees, has slightly fruity overtones that balance great with a little citric, malt, cocoa and nutty undertones. Its a little fuller bodied cup than most Terruno lots with above average sweetness. Lighter roasting will have noticeable citric crispness upfront accentuating the fruitiness, but can risk a little dry nutty aftertaste if too light. Medium roasts balance the tones nicely and smooth out the citric tones. Darker roasts turn more chocolaty, gets pretty roasty and smoky, retains a sweet edge and shows hints of fruitiness as the cup cools. A good daily drinker across the roast levels.

Always one of our favorite Mexican coffees. Good from light to dark but our favorite was a medium roast. Medium to full bodied, medium to low acidity. Lighter roasting will promote a sweet citric edge balancing with a bit nutty undertones. It will pick up a hint of caramel after a couple days setup but risks keeping a little dry nutty tone if too light. Medium roasts are pretty bullet proof, full bodied with rich chocolaty notes, a little nuttiness and vanilla like spice in the aftertaste. A clean cup with just a hint of citric crispness upfront. Darker roasts pick up a bit of roastiness but it compliments the very chocolaty profile, thick with no real hints of brightness. A good coffee for stronger chocolate tones at darker roasts.
