Ethiopia is commonly known as the birthplace of coffee, and when villagers still collect wild beans from uncultivated coffee forests to this day, it is hard to refute.
Our green coffee beans from Ethiopia bring a clean, bright, sweet, and diverse flavor dependent on the roast. These coffees often have a higher acidity, a light to medium body, and sophisticated flavor notes. Known for their syrupy, velvet mouthfeel, Ethiopian coffees often feature citrus and floral flavors as well as peach, strawberry, or bakers chocolate.

These beans shine at the lighter roast points, a very sweet and delicate cup on the fruitier side. Banana and melon lead the tastes and fruits like strawberry and orange also stand out, although they are a bit more subtle. Hints of a clean lemony citric acidity showcase the cleanliness of the cup. The prolonged natural‑process fermentation enhances the fruit without making it too strong, winey or grape like. The sweet and fruity tones are balanced with a fuller bodied milky mouthfeel, leaning on the chocolate like side, just a pinch of spice. The result is a wonderfully balanced and slightly exotic Ethiopian natural. A juicy profile that is uncommon for this type of process: the tropical fruit remains clear, the cocoa provides structure, and the finish is clean, without overly fermented notes.

Kayon Mountain has become a tradition around here, marks one of our favorite times of the year, new Ethiopian season! Beautiful coffee and screen.Clean, bright, sweet with a very diverse flavor set. Stone and darker fruit, citrus & floral, and spiced chocolate tones are the main flavors one can see in this cup, either accentuated or muted depending on roast level. Nice jammy body will be seen in the medium to borderline dark roast mark. Very dependent on roast – lighter roasting gives much more of the citrus, red-fruit with just a hint of a spicy chocolaty factor, a much dryer finish. Darker roasts produce much more of a bakers chocolate cup with a hint of a strawberry like fruit note and good sweetness, far less acidic. A very enjoyable cup from light to dark.

Good from light to dark but we thought best at a strong medium to dark roast. A good bean to go after a rich and semi-exotic chocolate tone with some wonderful aromatics and a bit of spice. Light roasts are more citric and floral with wonderful aromatics and a sweet edged, a bit punchy in the citric department and contrasts with a bit of nutty/herbal/grassy undertones. Works well but needs a much longer setup time bring out smooth and clean tastes, sharp and grassy/herbal if drank too soon. Medium roasts will bring some lovely balance to the cup and provides a clean tasting brew without waiting a week to drink it. One starts seeing the chocolate aspect but will still pull some balance with the citric and floral. Less aromatic than the light roasts, but you can still tell you have a nice Ethiopian with one sniff. Darker roasts touching or into second crack are real robust, strong and semi-sweet, more bakers-chocolate like with tea like spice in the aftertaste.
