Ethiopia is commonly known as the birthplace of coffee, and when villagers still collect wild beans from uncultivated coffee forests to this day, it is hard to refute.
Our green coffee beans from Ethiopia bring a clean, bright, sweet, and diverse flavor dependent on the roast. These coffees often have a higher acidity, a light to medium body, and sophisticated flavor notes. Known for their syrupy, velvet mouthfeel, Ethiopian coffees often feature citrus and floral flavors as well as peach, strawberry, or bakers chocolate.

Some good sweetness from its natural processing, a small hint of soft fruit as the cup cools. Reminds us of a less fruity Yemen coffee. Rustic chocolate, tea like spice, lower acidity and fuller bodied.

Fresh, clean, and semi-exotic. Best in the light to medium roast levels but for the right purpose, can be used for darker roasts. Light roasts show a pretty good citric edge, mostly lemon but with a slight peachy spin, just a small hint of classic Ethiopian floral. Pulls some balance with a little herbal/nutty/cocoa note. Medium roasts cut out most of the citric and peachy qualities providing a smooth and rich cup, pretty neutral tasting, a little hint of spice and slight nutty/cocoa tones. A strong medium roast will start to pick up some complimenting roasty tones. Dark roasts get pretty hefty and bittersweet. It does have some exotic character but much of it is covered up by the more roasty notes coming from the roast level. Works really well for cold brew but can be a bit much for drip.

Clean, bright, sweet with a very diverse flavor set. Stone and darker fruit, citrus & floral, and spiced chocolate tones are the main flavors one can see in this cup, either accentuated or muted depending on roast level. Nice jammy body will be seen in the medium to borderline dark roast mark. Very dependent on roast – lighter roasting gives much more of the citrus, red-fruit with just a hint of a spicy chocolaty factor, a much dryer finish. Darker roasts produce much more of a bakers chocolate cup with a hint of a strawberry like fruit note and good sweetness, far less acidic. A very enjoyable cup from light to dark.

A wonderful example of a top grade washed Ethiopian. Best served in the light to medium roast range, a very delicate and sweet cup. Hints of citrus and soft fruit comingle with floral, chocolate and tea like spice. Heirloom Ethiopian strains have a taste like no other and offerings like this one showcase their uniqueness. For acidity fans, a light roast ending real close to 1st crack will have a stronger lemony citric edge, covers up a bit of the delicate floral/fruit but crisp, clean and sweet. We personally liked it better just a shade or two darker, splitting the difference between light and medium. It will mellow the citric tones popping out the sweet floral, while building a bit more darker tea like contrast. Crisp but not overly acidity. Darker roasts go the other way covering up the citric and floral with strong chocolate and herbal tones. Crisp, clean and exotic. Good aromatics: nothing like grinding a fresh Ethiopian with its floral, jasmine and spice notes to tickle your nose. Lighter roasts have a little acidity and floral note upfront, mostly citric but the floral and a peachy like soft fruit tone can be found. The balance of the cup comes from a semi-tea-like chocolate factor. I tend to think of it as chocolate spice notes but many tongues can pick up a little black tea note. Medium roasts have just a pinch of citric acidic, builds a thicker body and brings forth more of the chocolaty cup profile, reducing the acidity slightly. Darker roasts are always tasty for those who like fuller roasts. This is how they would traditionally serve these beans in Ethiopia. Almost a shame, for it loses the cool spice and lighter floral tone balance but equally as tasty if you like more chocolaty cups with some spice.
