Crisp, clean, sweet and very highly rated, a fun treat for any Ethiopian fan. Light roasting is recommended to see the cup shine but hard to find a bad roast point. Lighter roasts are where you will see the cleanliness of the cup, balanced tones with good mouthfeel and hardly a hint of anything grassy or vegetal. It will have some decent brightness, lemony with just a pinch of peachy like fruitiness. The aromatics are unique being overly floral with some classic Ethiopian hints of lavender/jasmine. The lighter tones pull some balance with the classic tea (herbal/spice) like darker tones. Medium roasts really mellow out the acidity and reduce the citric & floral tastes, creates a bit more body and a much more recognizable chocolaty factor. A very smooth, balanced and rich cup with exotic highlights. Darker roasts are fuller bodied and dark toned: roasty, bakers chocolate with some unique spice and rich aromatics.

Light roasts put off a sweet lemon acidity that fades into a nice red-fruit note, balanced with a tea-like dry chocolate undertone. A longer setup will help smooth it out and pronounce the fruit note. If shooting real light, make sure to flick out any beans not through first crack. Medium roasts are a bit more tame, no flicking required. Cup will get a richer chocolaty note with just a pinch of floral acidity and fading into a soft fruit note. Medium roasts are slightly reminiscent of the Yemen but perhaps still a bit brighter. Darker roasts are cool with these beans, as you touch 2nd crack you still have some nice medium roasted beans in the mix, a good balance of tones between the smoky chocolaty roasty and fruity citric tea notes.

The floral will quickly fade into strong and diverse red fruit tones, more pronounced as the cup cools. Clean, rich and exotic. Ethiopian beans are always a wonderful treat. Being a high rated super fresh top lot, this cup is loaded with brighter citric, floral and fruity tones (think green grape, not natural processed red-fruit). Wonderful aromatics with delicate tea like chocolaty undertones. Very dependent on roast but hard to find a bad cup at any roast level. If you are an Ethiopian fan, lighter roasting is the way to go. If you don’t know or traditionally roast a bit darker, start at a fuller roast point. Best presented at the light to medium roasts to see the Ethiopian attributes but will be unmatched at the darker roasts, hefty tea like spice with floral aromatics and rich semi-sweet smoky dark tones.

A great cup! Super clean in its cup characters. Very bright and somewhat fruity at the lighter roasts; citrus, floral and red fruit balanced with just hint of a herbal nutty/caramel factor. Medium roasts get more balanced, not as citric, building a bigger bodied darker tone. The citric turns a little grapefruit like and the nuttiness turns a bit more chocolaty, maintains a lot of depth between the acidity and herbal chocolate/nutty floral notes . Darker roasts get very strong and semi-sweet, think bakers chocolate with herbal accents. Wonderful light to dark roast beans. Too see it shine, we do recommend a light to medium but there are reasons we can think of to take it darker. A bit thicker and lower acidity for a prime Kenya offering. Lighter roasts are sweet and clean, medium bodied with a smooth mouthfeel. A pinch of citric accompanied with bolder chocolate notes, a hint of spice in the aftertaste. Medium roasts are full bodied and very rich tasting, lots of complexity to the darker tones, starts picking up some complimenting roasty tones as one gets closer to 2nd crack. Into second crack roasts promotes a bittersweet edge with strong bakers chocolate and dry malt overtones.

A very crisp, complex and clean cup of coffee. Similar cup to a nice Burundi or Kenya, the cup presents the classic African tones nicely. Lemony floral notes upfront giving the cup a nice sweet crispness at the lighter roast points, a little bit of a fruity overtone. Semi-sweet chocolate spice notes balance the cup out, a bit on the herbal/tea side super light roasted but will develop into a plethora of tones as one pushes the roast towards medium or borderline dark, very full flavored coffee. Dark roasts themselves get real low acidity and fuller bodied while maintaining a smoothness not often found in some dark roasts.
