Great depth of flavor without all that citric and fruity that often comes with higher rated cups these days.Lighter roasting promotes the more nutty/herbal, darker roasting chocolate & spice. Lighter roasting took 4-5 days after roasting to get tasty, medium to dark roasts were tasty from day 1.

A very fresh and tasty Brazil! Lighter roasts show lemon, floral & soft fruit contrasted by a nuttier (almond like) undertone, a sweet edged cup. The two combine for a hints of caramel, quite tasty for you light roast fans. Medium roasts are richer, more of a developed chocolaty tone and decently less nutty; mutes up the soury floral edge, retains a little hint of soft fruit as the cup cools. Fairly neutral tasting and very chuggable. Darker promotes a thicker body and introduces a slightly bitter contrast that works very well for espresso.

This is one exotic coffee even for natural fans. A wonderful example of strong anaerobic fermentation, but keep in mind, strong fermentation is not for everyone. A high rated, super complex cup: fruit, booze, spice, oak, nut, cocoa. Best served at the light to medium roast level. Sweet edged, fuller bodied with a creamier mouthfeel and unlike most naturals, it’s fairly low acidity. Nothing can quite prepare the tongue for the tastes on strong natural processed coffees, but if your a fan, do not miss this one. Very complex cup and not as overly fruity/winy as the open air natural. The lighter you roast, the more wild this cup gets. If you want to lean the cup towards the fruity and sweet tones, keep it on the lighter side. For very complex darker tones, boozy rum like spice with oaky complexities, a strong medium to borderline dark roast is the way to go.

China Premium Yunnan – Torch Coffee – Lao Xu Zhai – Catimor Natural Processed
This is one exotic coffee even for natural fans. Best served in the light to medium roast range. A bit milder than the last lot but in the same ballpark. Pretty winy, fruity and floral upfront with a bit of acidity, balancing with a chocolate & spice like undertone, kind of similar to Indian coffees except with all the wild and sweet ferment and fruit notes upfront. Lighter roasting accentuated the red wine like attributes, hints of citric with a very fruity edge: sweet, oaky, nutty, a little boozy in the finish. Medium roasts tame the cup a bit, still plenty winy and fruity but presents a smoother, less wilder version of the lighter roast points. Spice notes clearly pop out in the medium roast level starting to give some spiced rum like tastes in the background. Darker roasts really bring forth the sweet rum like spice notes balanced with a molasses like darker tone and a fuller body.

A very fruit forward and floral exotic Colombian. All sorts of cool unique flavors can be found in this cup from the slow dry natural processing and boutique fermentation. The brighter tones tend to range from a lemon citric component at the lighter roasts to strong stone fruit in the medium roast range. The acidity is pretty high at the lighter roasts but mellows greatly at a strong medium to dark roast. The balance of the cup comes from an almost cola-like tone that turns a bit nuttier into the darker roasts. Medium bodied, super clean with some far from traditional Colombian tones.

Good from light to dark! A wonderful clean supremo screen. The aroma is sweet, freshly cut cedar, spicy, with a touch of cocoa. The body is medium/full and has a mild and pleasant acidity. The flavor is very dependent on the roast. Light roasts are a bit citric and sweet, hints of a melon fruitiness comingle with a little nutty and chocolaty factor. At a medium roast, you will enjoy soft notes of walnut, cedar, and spice, a little crispness, with more of a caramel like finish. Darker roasts will stronger chocolate tones and hints of spice and dried dark fruit.

A clean and mild mannered natural. A sweet cup that will pick up hints of fruitiness at the light-medium roast levels. Not crazy over fermented like many naturals these days, the fruitiness pulls nice balance with classic Central American nutty and chocolate like tones. Reminded us of the El Sal Cerro Las Ranas Honey, just one notch fruitier. Light roasts accentuate the fruitiness of the cup and will lean the balance towards a nuttier cup profile. Not too acidic or citric at lighter roasts, presents a nice balance between light and dark tones, will not develop the richer chocolate tones present at fuller roast levels. Medium roasts are where the more chocolaty aspect comes in, semi-sweet cocoa with a slightly fruity overtone, smooth cup with a milky mouthfeel. Medium bodied with low acidity. Darker roasts greatly accentuate the chocolate note but comes off a little bittersweet. An excellent roast level for espresso, or if you enjoy a splash of milk/cream. A wonderfully clean and exotic cup. Not nearly as herbal spice noted as its Yirgacheffe cousins. A bit of lemony floral acidity upfront quickly fading into nice red fruit notes and balancing with a smooth chocolate undertone that lingers in the aftertaste. Light roasts will promote much more citrus acidity but also leave the most red fruit tones in the cup. A longer setup helps with the lighter roasts for the citric tones will fade over time allowing more of the fruitiness and darker tones of the cup to shine. Medium roasts really bring forth the cleaner chocolaty tones in the cup reducing the fruit and citric tones to just a hint. Darker roasts burn out the fruit and acidity leaving a strong slightly edgy bakers chocolate cup with smoke smokier highlights.

A clean, fresh and semi-fruity Ethiopian. Lower acidity with great sweetness making it a wonderful light to medium roast bean for every tongue. Although not a fruit bomb, it has noticeable red fruit tones upfront that balance with the classic Ethiopian chocolate and spice notes. Light roast have just a pinch of citric and floral upfront that quickly fade into the fruitiness, hints of the chocolate and spice notes but mostly in the aftertaste. Medium roasts accentuate the more chocolaty aspect pushing the fruity and floral tones to the background, very smooth, sweet & balanced cup with exotic highlights. Darker roast into or touching 2nd crack will hide almost all of the fruity and floral, just detectable in the aftertaste as the cup cools, very chocolaty but a bit more semi-sweet.

A super cool & exotic cup of Kona. Higher acidity with strong tones of citrus, floral and red fruit. Very wild up front balanced with a sweet chocolaty caramel like tone. A little different than last years batch with the higher acidity levels but just as tasty in my mind. Lighter roasts are front loaded with the floral and fruit tones; tasty but you have to like acidity. Hawaiian Kona Greenwell Farms – Kopiko Estate – Fancy
A very clean, well balanced cup, best from medium to dark roast. Crisp acidity with a small hint of soft fruit comingle with a more chocolaty cup profile. Can be roasted from light to dark but our favorite was a nice medium roast, followed by the darker roast. Lighter roasts: the acidity is a bit citrus upfront but will quickly fade into a slight island fruit tone, balances with a little herbal/chocolate contrast. From a medium roast on, the acidity is very gentle and balanced with a smooth to rough chocolaty cup profile, milk chocolate before 2nd crack, bakers chocolate and smoky into 2nd crack. Medium bodied and lower acidity, these beans as well as other Kona’s are mild cups comparatively to many other origins, be in for a delicate and tasty cup with layers of goodness.

A sweeter cup for an Indo with malt, chocolate with a little traditional earthy terroir of the wet-hulled Indonesians. Fuller bodied, a little hint of acidity at a medium roast, a definite go to for our strong-medium or dark roasts here at Burman Coffee. Pulls some molasses undertones as ones pushes into second crack roasts. Hints of slight smoky tone at darker roast.

Tasty from medium to dark. We preferred it a bit on the darker side. Lighter roasting is wild and decently fruit forward, sweet with a little acidity upfront; winy and brandy like with some lingering dry nutty/earthy tones, a bit of floral in the aftertaste, good but not chocolaty enough for us. Medium roasts mellow the cup a bit, turning it more chocolaty, fuller bodied and refining the fruitiness, making it a cup everyone will love, not just natural processed fans. Reminiscent of a nice Yemen Mokka but a bit more brandy like. Smooth and easy drinking. Dark roasts worked exceptionally well. A great cup from light to dark: a clean, rich and smooth cup. To see it shine and differentiate itself from normal Indonesians, keep it in the light to medium roast ballpark. Just a hint of brightness upfront, sugarcane like sweetness, good body with a chocolate like lingering aftertaste. It does have a little earthy terroir, but is almost more playing on some spice notes than traditional Indonesian “muddiness”. Darker roasts are pretty hefty cups, still overly sweet but more simple in its taste, chocolate and spice like with some complimenting roasty notes. Medium roasts were nice and balanced, a little lemony acidity upfront mixing with a bunch of spice and hints of an earthy slightly peaty chocolaty factor; a decent roast point for pour-overs or drip. Crisp, clean and fresh, a great coffee from light to dark. A less acidic Kenya with great balance, mouthfeel and depth of flavors. At light roasts it will still have some brighter citrus qualities but will not pucker ones mouth. Kenyan coffees in general can be pretty strong. It has hints of chocolate, fruit & herbal spice along with the citrus and floral. Medium roasts bring the best balance to the cup accentuating the chocolaty tones and reducing the brighter notes just a hint. Darker roasts make that classic Kenya herbal tone pop right out and is more down the potent bakers chocolate alley. Very clean with increasing body as the roast gets darker. A great balance between citrus, floral, herbal and chocolate. Easy to change the balance of these tones by roast level – a fun coffee to play around with.

A very clean, exotic and balanced cup of coffee. Although still considered a higher acidity cup, this offering is more about the fuller body and complex darker tones. Especially at lighter roasts, one will see a more citric style acidity, comingling with a green tea like spice, clean as a whistle, but may be a little sharp for some. Medium roasts bring a more potent chocolaty cup with some floral highlights, lingering spice in the aftertaste. Darker roasts get much thicker and semi-sweet, would put in on the bakers chocolate side of things with some soft fruit and spice lingering on the tongue, a little smoky if you go real dark.

As the cup sets up longer one can see some greater complexity pop out with hints of soft fruit, nutty and caramel like tones. Pushing into the medium roast levels, the thickness increases and the chocolate/herbal factor will be the dominate tone in the cup hiding much of the citric and floral. Although Natural processed, this is not a fruit bomb like many other natural processed coffees, has slightly fruity overtones that balance great with some citric, malt and nutty undertones. Its a little fuller bodied cup than most Terruno lots with well above average sweetness. Lighter roasting will have noticeable citric crispness upfront and will accentuate the fruitiness. Medium roasts balance the tones nicely and smooth out (reduce) the citric brightness. Darker roasts turn much more chocolaty and get pretty roasty and smoky, retains a sweet edge and shows hints of fruitiness as the cup cools. A very clean and fresh batch from Selva Negra. A little citric & floral acidity upfront, balanced with nice complex nutty & malty undertones. Light roasts are going to be a little front loaded with the brighter characteristics, a higher rated cup meaning one will notice some decent crisp acidity at the light-medium roasts. Will give great depth of flavor but may be a little sharp for some. Our favorite roast and a great everyday drinker was in the medium roast ballpark, builds more of a smooth and creamy cup with a sweet edge, reducing that perceived acidity to just a pinch. Turns much stronger, a robust cup most would say, into the darker roasts but shined nicely; fuller bodied with strong malty and smoky tones, still a sweeter edge to it which darker roast fans will love.

Lighter roasts focus the tastes more around the brighter citric/fruit tones: a hint of lemony citric that fades into a fruitiness, balancing with a darker malt like undertone. A good daily drinking lighter roast coffee. Comparatively to the Catuai, the Typica is mild mannered, delicate, less acidic, smoother, but with similar tastes. Medium roasts bring a more traditional cup with better balance. This should be the minimum roast level if you do not want noticeable floral/fruit notes upfront. Still has a bit of jazz upfront but a more pronounced nutty/malty tone to balance it out. A little fuller bodied at the light-medium roast level with a great balance between the lighter winy/floral notes & nutty/malty darker tones. Similar to Guatemalan coffee. Some acidity at lighter roasts but just a hint, medium to dark roasts would be marked as low acidity. As one pushes it into the medium roast range, the very sweet nutty tones come off a bit caramel like. Still plenty malty, it will linger on the tongue. Dark roasts turn pretty strong with the sweeter malty cup profile mixing nicely with smoky and roasty notes.

Contrary to many naturals, these beans rock at the fuller roast levels as well, touching or into second crack produces a very lively cup, not super roasty with incredible depth of flavor and good balance between light and dark tones.

Medium to low acidity, the cup does have some jazzy more floral tones at the lighter roast points, but too light & it will be on the nutty/grassy side of things. Takes a little fuller roast to see the chocolaty side blossom. Medium roasts and beyond produce a smooth and rich cup, more chocolaty than nutty, pulls a dryer peanut brittle like tone (some may say hint of caramel), more peanut than brittle but we all thought it to be a good descriptor. Dark roasts turns the cup pretty chocolaty, retains the sweet edge and a couple tasters even noticed a little floral hint to it.

Lighter roasts will show some nice clean lemony floral acidity but do not fully develop the nice robust chocolaty factor, interestingly enough, one gets a bit of African herbal/spice in the cup at the lighter roasts. Medium roasts are where we thought it shined, just a small hint of citric sweetness upfront with a good balance of spicy chocolate notes, unique spice, more like the Indian coffees. Darker roasts get more like the Dominican with strong bakers chocolate and smoky tones, a hefty cup with very low acidity.

Mostly these beans will appeal to medium-dark roast fans but being an exceptionally clean cup, it has some lovely balance and is quite tasty at lighter roasts. Similar to its Indonesian cousins (except washed processed), it gets real hefty into the dark roasts promoting smoky and chocolaty tones with stronger spice notes. Lighter roasting it is more delicate and floral, slightly fruity with some detectable lemony crispness, sweet edged, medium bodied with hints of a chocolaty factor.

A wonderful old world natural filled with rustic chocolate, spice and hints of fruitiness. The cup is lower acidity with good body and mouthfeel. Yemen coffees are the rare cup where you can occasionally see a “banana” like fruit tone – don’t worry though, its a little bit of a reach for banana, its not like eating a banana or banana flavored coffee, although with developed tongue, most can pick it up. Red fruit and bakers chocolate are the dominate tones – fruit is accentuated with lighter roasts, chocolaty with darker roasts. A lovely super complex old world natural.
