A lovely, crisp, and clean, not overly fruity natural processed. We thought it best right around the medium roast ballpark but will make fans lighter or darker depending on your personal taste preference. Lighter roasting is a bit higher acidity, lemony and floral with some grape skin like fruitiness coming through. A bit more herbal spice right at first crack, needs a longer setup time to shine but will provide delicate chocolaty notes with much wilder acidity and fruity tones. Medium roasts were tasty without the wait! Balanced, tasty, and clean after 24 hours. A pronounced chocolaty factor, medium bodied, hints of crisp acidity backed with a little soft fruit tone and spice. Wonderfully smooth and delicate for a Congo coffee. Dark roasts were tasty right off the bat as well, roasty and stronger but with a sweeter then average edge. The smokiness does compliment the strong chocolaty undertones.

A super clean lot from the Congo; Amazing considering all the trouble this year in the Kivu; beautiful prep on these beans. Great floral and soft fruit tones upfront with a bit of brightness balanced with a tea spiced chocolaty factor, not too overwhelming or potent like some Africans. Smooth with almost a brown sugar hint at a strong medium roast. A fresh and great tasting classic Ethiopian! This is not a super fruity natural, would be considered a darker toned, lower acidity, chocolaty cup. One can tell its natural processed roots with its sweetness and thickness and its Ethiopian roots with highlights of spice & fruity/floral notes throughout the roast range. Best served in the light to medium roast range for drip brew for it will show its best balance and promote a hint of fruity/floral. Turns into a chocolate bomb at the darker roasts, more on the dark chocolate side, which would work wonderfully for espresso or cold brew. Lighter roasts have a pinch of citric acidity and wonderful aromatics, hints of red fruit that balance with a bit of semi-nutty tea like spice.

The floral will quickly fade into strong and diverse red fruit tones, more pronounced as the cup cools. The floral/fruit will pull some balance with a chocolaty cup profile as you push into the medium roast levels, just a hint of classic Yirgacheffe tea like spice in the aftertaste.

A clean, fresh and semi-fruity Ethiopian. Lower acidity with great sweetness making it a wonderful light to medium roast bean for every tongue. Although not a fruit bomb, it has noticeable red fruit tones upfront that balance with the classic Ethiopian chocolate and spice notes. Light roast have just a pinch of citric and floral upfront that quickly fade into the fruitiness, hints of the chocolate and spice notes but mostly in the aftertaste. Medium roasts accentuate the more chocolaty aspect pushing the fruity and floral tones to the background, very smooth, sweet & balanced cup with exotic highlights. Darker roast into or touching 2nd crack will hide almost all of the fruity and floral, just detectable in the aftertaste as the cup cools, very chocolaty but a bit more semi-sweet.

A great example of a top rated and clean Yirg coffee. Bright, citrus, floral and soft fruit versus a chocolaty spice note, a bit tea like at lighter roast points. Very dependent on roast, one can accentuate or hide the attributes of this cup depending on roast level. Washed Ethiopians are always way fun to play around with. Lighter quicker roasts are front loaded floral and citrus with a little hint of a chocolaty tone (pretty faint), dark roasts are hefty, a bit fuller bodied with strong bakers chocolate tone and some smokiness.

Good from light to dark but we thought best at a strong medium to dark roast. Light roasts are more citric and floral with wonderful aromatics a sweet edged, a bit punchy in the citric department and very little of that wonderful chocolate tone that fuller roasts will bring. Medium roasts will bring some lovely balance to the cup, less aromatic than the light roasts, but you can still tell you have a nice Ethiopian with one sniff. A pinch of crispness upfront on top of a well developed chocolaty base tone. A unique spice note pops out, a stretch for some, but we would say slightly minty. Crisp, clean and fresh, a great coffee from light to dark. A less acidic Kenya with great balance, mouthfeel and depth of flavors. At light roasts it will still have some brighter citrus qualities but will not pucker ones mouth. Kenyan coffees in general can be pretty strong. It has hints of chocolate, fruit & herbal spice along with the citrus and floral. Medium roasts bring the best balance to the cup accentuating the chocolaty tones and reducing the brighter notes just a hint. Darker roasts make that classic Kenya herbal tone pop right out and is more down the potent bakers chocolate alley. Very clean with increasing body as the roast gets darker. A great balance between citrus, floral, herbal and chocolate. A very clean, exotic and balanced cup of coffee. Although still considered a higher acidity cup, this offering is more about the fuller body and complex darker tones. Especially at lighter roasts, one will see a more citric style acidity, comingling with a green tea like spice, clean as a whistle, but may be a little sharp for some. Medium roasts bring a more potent chocolaty cup with some floral highlights, lingering spice in the aftertaste. A very clean, bright and balanced cup. Best at the light to medium roast levels. At lighter roasts; one will see sweet and strong citric tones comingling with chocolate and herbal darker notes, classic premium Kenya. As the cup sets up longer one can see some greater complexity pop out with hints of soft fruit, nutty and caramel like tones. Pushing into the medium roast levels, the thickness increases and the chocolate/herbal factor will be the dominate tone in the cup hiding much of the citric and floral. Hitting 2nd crack cuts out most of the citric and will turn the cup more bakers chocolate, increasing the strength, but loosing sweetness.

A very fresh and tasty African. Enjoyable at any roast level; medium to dark roast was our favorite. Medium roast points provide a smooth cup on the nutty/chocolaty side, sweet tea flavors and a hint of citric. A little herbal spice lingers in the aftertaste but very mild comparatively to most Africans. Darker roasts add complimenting roasty notes, a sweet burnt sugar and chocolaty cup that is jazzed up with a little spice, lower acidity and a fuller body.
