Mexican Altura Chiapas/Oaxaca – BCT Select Washed
A great daily drinker from a medium to dark roast. A very chocolaty cup of coffee, fuller bodied with low acidity, with some nutty & herbal accents. Light to medium roasts are crisp & sweet: Hints of citric balance with a nutty & woody undertone, a pinch of herbal spice in the aftertaste. With a longer setup time, assuming not too lightly roasted, that woody edge tends to produce a bit of a caramel twist which is quite tasty. Although good at semi-lighter roasts, we really enjoyed the medium to dark roasts better, fuller bodied and creamy. Semi-sweet chocolate and nutty tones dominate the cup with just a pinch of an herbal note in the aftertaste, a little complimenting roasty/smoky note into second crack. Wonderful for classic espresso or for those who use a splash of milk or creamer.

Always one of our favorite Mexican coffees. Good from light to dark. Although Natural processed, this is not a fruit bomb like many other natural processed coffees, has slightly fruity overtones that balance great with some citric, malt and nutty undertones. Its a little fuller bodied cup than most Terruno lots with well above average sweetness. Lighter roasting will have noticeable citric crispness upfront and will accentuate the fruitiness. Medium roasts balance the tones nicely and smooth out (reduce) the citric brightness. Darker roasts turn much more chocolaty and get pretty roasty and smoky, retains a sweet edge and shows hints of fruitiness as the cup cools. A great daily drinker! Works well from light to dark roasts. Very sweet and chocolaty cup of coffee with some lemony/floral crispness upfront. Light roasts will show stronger citrus mixing with a nuttier darker tone with slightly herbal accents, small hint of caramel will show with a little longer setup. Could be a bit acidic for some, but presents nicely for those who like a little citric and a nuttier cup profile. Medium roasts smooth out the cup and move the darker tones to more along the chocolate like alley, far less noticeable citric tones. Likely the best roast for daily drinking, but will be personal preference. Closer to 2nd crack or touching it, a strong chocolate like profile, more semi-sweet with very low acidity and a creamy mouthfeel with a little spice in the aftertaste.Price: $8.59/lb - 7.39/lbPrice: $8.59 -

A wonderfully complex light to medium roast coffee. Light roasts are lemony and floral upfront which fades to stronger apple like fruitiness with some red fruit accents, balances with a hint of a chocolaty darker tones. Medium roasts clean up the more rustic chocolaty tones which many will like but also reduce the sweetness and fruity factor of the cup, a little fuller bodied with low acidity with good mouthfeel, fruity factor pops out more as the cup cools. Darker roasts get a bit edgy with semi-sweet smoky and roasty notes, finishes with almost a bit of an oaky barrel aged tone.

A very clean and fresh batch from Selva Negra. A little citric & floral acidity upfront, balanced with nice complex nutty & malty undertones. Light roasts are going to be a little front loaded with the brighter characteristics, a higher rated cup meaning one will notice some decent crisp acidity at the light-medium roasts. Will give great depth of flavor but may be a little sharp for some. Our favorite roast and a great everyday drinker was in the medium roast ballpark, builds more of a smooth and creamy cup with a sweet edge, reducing that perceived acidity to just a pinch. Nicaraguan Premium Selva Negra – San Felipe Geisha – Washed Processed
Great light to medium roast coffee. Although we have carried the San Felipe lot for years, having the Geisha separate this season has brought a ton of new tastes. East to tell the difference when compared to the other strains Selva Negra grows. Best at the light to medium roast level, these beans have a bit more acidity than anything else from Selva Negra. The cup is very floral and citric especially at lighter roasts. Not quite jasmine floral, a little more traditional citric, but very tasty; delicate and sweet edged. Where one can see the prime Geisha attributes is in the darker tones of the cup, black tea spice jumps right out. Light roasts are heavy on the citric and floral balanced just a touch of tea like spice with herbal overtones. Medium roasts are where most will want to shoot, defined tea like spice with some sweet crisp floral upfront. Darker roasts turn a bit plain, still very drinkable but not much uniqueness.

A very cool exotic cup best at the light to medium roast points but tasty from light to dark. The cup is a bit sweeter and brighter than the washed or honey processed. At lighter roasts one will get hints of citric and red fruit tones balancing with a slightly herbal malt like darker tone. Takes a little longer setup after roasting but clean and easy drinking at the lighter roast points. Medium roasts move the fruitier tones to the aftertaste and pronounce the rich maltiness of the cup. The red fruit can be more easily seen as the cup cools, or in cold brew. Darker roasts are hardly fruity but retain the sweet edge, a little smoky/roasty/malt like note makes for a tasty treat.

A heftier cup at the darker roasts and equally as tasty, fuller bodied with strong malty and smoky tones but still retains that sweeter edge to it.

2nd batch of the season, super fresh top notch tastes but a higher price, this lot was purchased in the current super high market with new import costs.
Silky smooth and clean tasting, fuller bodied with a creamy mouthfeel. Lower acidity chocolaty cup with a sweet edge. We liked it best from a medium to dark roast, but with a little longer setup, light roast fans can find joy with these beans. Definitely a chocolaty cup profile with some cool nutty and herbal/spice accents. If you roast before 2nd crack, which is preferred, one can balance in some melon and fruit acidity into the mix which is a big plus to the depth of flavor. Cup starts sweet at lighter roasts but will turn semi-sweet as you pushing into medium or dark roasts.

A lovely & fresh coffee, our first new crop Peru. Best from medium to dark roasts, a good daily drinker. Medium to low acidity, with a thicker body and mouthfeel. A wonderful more chocolaty cup than shows some nuttiness. Lighter roasting will show just a pinch of citric, which provides nice depth of flavor but be a little careful ligher, too light will show some grassy/herbal tones. Medium roasts and beyond produce a smooth and rich cup, more chocolaty than nutty, pulls a peanut brittle like tone (some may say hint of caramel), not quite candy like, more peanut than brittle but we all thought it to be a good descriptor. At the medium roasts one will see a more gentle cup with good body, a little sweeter edge, hints of acidity and stronger chocolaty spice. Darker roasts get much fuller bodied and bring out the very strong bakers chocolate edge balancing nicely with classic African spice note and complimenting roasty/smoky tones. With a more intense roast, the cup transforms into a chocolate-and-cocoa delight with smooth caramel sweetness, a cool hint of mint, and a delicate touch of pine and herbs—smooth and comforting. Medium acidity with a citrus profile (more toward lemon) provides brightness without being overpowering. The cocoa base has a nutty undertone (nut/peanut butter) and a fruitier (citric) profile; in light roasts, blueberry notes may emerge along with a slight floral tone. Medium roasts achieve the best balance: soft citrus notes, spiced chocolate, and good structure; in dark roasts, the “baker’s chocolate” cocoa predominates, with a heavier aftertaste and very low acidity.

Very clean cup for a natural, with clear sweetness and a creamy aftertaste. Medium acidity with a citrus note (more like lemon/sweet orange) that adds brightness without being overpowering; fruit upfront (ripe red) with a fruity melon-like undertone on a cocoa/chocolate base and a slight nuttiness. Medium body and a clean, sweet-cocoa finish. Best served in the light to medium roast levels. Super light roasts pick up a bit of nutty and herbal contrast but this will develop into more spice and chocolate tones just a little after first crack. Thicker and stronger than an Ethiopian Natural, with more of an emphasis on the fruitiness and spice notes. Darker roasts accentuate the spice, pretty similar to the other Asian coffees, would put in on the rustic chocolate side with sweet and fruity overlays and a full body.

Gentle sweetness and medium citric acidity reminiscent of mandarin; very balanced profile. In lighter roasts, citrus-floral nuances with a slight herbal/vegetal undertone may emerge. With medium roasts, it becomes rounder with spiced chocolate; in dark roasts, “baker’s chocolate” cocoa predominates, with a heavier body and very low acidity. Medium roasts are where we thought it shined, just a small hint of citric sweetness upfront with a good balance of spicy chocolate notes, unique spice, more like the Indian coffees. Darker roasts get more like the Dominican with strong bakers chocolate and smoky tones, a hefty cup with very low acidity.

Medium to dark roast beans & a great daily drinker! This cup is very thick and creamy, filled with semi-sweet chocolate and nutty tones. A very easy to drink coffee. A hint of soft fruit can be seen at the light to medium roasts but pretty faint, not super noticeable until the cup cools. A bit of peppery spice at the darker roasts with some complimenting roasty and smoky tones. Lighter roasts will show some lemony acidity and can accentuate the fruitiness of the cup but often will come off a bit too dry. These beans are more about the creamy fuller bodied and smooth chocolate and nutty tones which will come out from medium roasts and beyond.

A wonderful old world natural filled with hints of floral/citric, rustic-chocolate, spice and a pinch of fruitiness. Compared to previous lots, these beans do have a little brightness in them, not high acidity, but not nearly as flat as some we have seen in the past. A rounded cup with medium brightness and body. Citric, floral, red-fruit, chocolate, earth & spice are the dominate tones. The citric/floral/fruit will be accentuated with lighter roasts. Chocolate, spice, earth with darker roasts. A lovely complex old world natural that brings your tongue back to the roots of coffee itself. We preferred the cup at light to medium roasts best. It has great chocolate tones at the fuller roast levels but a bit flat with more neutral chocolate notes. Having a hint of crispness and a touch of fruit at the light-medium roast levels gave it the balance we though it deserved.
