Best at the light to medium roast levels. Light roasts themselves have a very sweet citric upfront, hints of floral in the aromatics with a little hint of darker toned contrast, nutty/cocoa/spice. A pinch of fruit as the cup cools but more down the citric alley. A little lighter bodied, complex and balanced. A very jazzy, sweet and delicate lighter roast bean with wonderful aromatics. Medium roasts reduce the citric and floral, smoother cup building a bit more body and showing more of what we classically think of Asian coffees, bolder with some spice notes. Assuming you are on the lighter side of a medium roast, you still get nice balance of tones in the cup, a strong medium roast to dark roast points, the coffee is much flatter, strong semi-sweet chocolate with herbal spice.

Very fresh and tasty from light to dark roasts. Too see them shine, we do recommend a light to medium but there are reasons we can think of to take it darker. A complex, full flavored cup, which is why many think of Kenya as the top origin for high class beans. Lighter roasts are bright with stronger citric notes and hints of fruit, will pull a darker toned balance with a semi-herbal, green tea like component. Medium bodied, higher acidity with awesome depth of flavor. Medium roasts tame some of the bright characteristics, not as citric, promotes the body of the cup and turns the darker tones more chocolaty than herbal. Still retains good balance and depth but is not nearly as punchy with its tastes. Darker roasts around or into second crack will mute most of the citric and crisper tones, very strong and stout like semi-sweet chocolate notes, a hint of complimenting roasty/smoky that and will end with a bit of lingering spice in the aftertaste.

A great cup from light to dark, but we think best at a solid medium roast. Light roasts will be pretty acidic, medium roasts smooth and balanced, darker roasts potent but bittersweet. This is an excellent classically bright Kenyan; super clean, sweet with good body. One can find all sorts of acidic like notes in this cup ranging from soft fruit to very floral citrus. All the wonderful lighter tones balance with a nice and rich chocolaty undertone, pretty potent, fades into some classic African spice on the tongue (tea like semi-vegetal). Turns pretty dark/bakers chocolate like into the darker roasts. Very fun cup with awesome flavor depth.

We found this cup best from medium to dark roasts. Medium roasts have a sweet and nutty tone, mixing with a pinch of crispness and semi-roasty chocolate factor. Creates a cool burnt sugar, or roasted caramel like tone. Medium bodied and lower acidity, very easy drinking coffee with a bit of uniqueness behind it. Very different from the Gesha offering, a fun contrast. Strong medium to dark roasts bring out some wonderful spice notes within the richer nutty & chocolate notes. A bit reminiscent of Indian coffee, but smoother and sweeter. A more potent brew on the roasty tasting side as you touch or go into second crack but all the tastes roll together nicely including some smokiness.

A great daily drinker from a medium to dark roast. A very chocolaty cup of coffee, fuller bodied with low acidity, with some nutty & herbal accents. Light to medium roasts are crisp & sweet: Hints of citric balance with a nutty & woody undertone, a pinch of herbal spice in the aftertaste. With a longer setup time, assuming not too lightly roasted, that woody edge tends to produce a bit of a caramel twist which is quite tasty. Although good at semi-lighter roasts, we really enjoyed the medium to dark roasts better, fuller bodied and creamy. Semi-sweet chocolate and nutty tones dominate the cup with just a pinch of an herbal note in the aftertaste, a little complimenting roasty/smoky note into second crack. Wonderful for classic espresso or for those who use a splash of milk or creamer.

Always one of our favorite Mexican coffees. Good from light to dark. Although Natural processed, this is not a fruit bomb like many other natural processed coffees, has slightly fruity overtones that balance great with some citric, malt and nutty undertones. Its a little fuller bodied cup than most Terruno lots with well above average sweetness. Lighter roasting will have noticeable citric crispness upfront and will accentuate the fruitiness. Medium roasts balance the tones nicely and smooth out (reduce) the citric brightness. Darker roasts turn much more chocolaty and get pretty roasty and smoky, retains a sweet edge and shows hints of fruitiness as the cup cools. A great daily drinker! Works well from light to dark roasts. Very sweet and chocolaty cup of coffee with some lemony/floral crispness upfront. Light roasts will show stronger citrus mixing with a nuttier darker tone with slightly herbal accents, small hint of caramel will show with a little longer setup. Could be a bit acidic for some, but presents nicely for those who like a little citric and a nuttier cup profile. Medium roasts smooth out the cup and move the darker tones to more along the chocolate like alley, far less noticeable citric tones. Likely the best roast for daily drinking, but will be personal preference. Light roasts will work for some, but will come off a bit more dry nutty with a citric edge, the cup builds really nice chocolaty tones with a hint of caramel and floral as one pushes into the medium roast range, a cup everyone would like. Darker roasts get pretty bold and also bring out a stronger nutty tone balanced with smoky bakers chocolate, medium bodied and low acidity.

Light roasts are lemony and floral upfront which fades to stronger apple like fruitiness with some red fruit accents, balances with a hint of a chocolaty darker tones. Medium roasts clean up the more rustic chocolaty tones which many will like but also reduce the sweetness and fruity factor of the cup, a little fuller bodied with low acidity with good mouthfeel, fruity factor pops out more as the cup cools. Darker roasts get a bit edgy with semi-sweet smoky and roasty notes, finishes with almost a bit of an oaky barrel aged tone.

Will give great depth of flavor but may be a little sharp for some. Our favorite roast and a great everyday drinker was in the medium roast ballpark, builds more of a smooth and creamy cup with a sweet edge, reducing that perceived acidity to just a pinch. Great light to medium roast coffee. Although we have carried the San Felipe lot for years, having the Geisha separate this season has brought a ton of new tastes. East to tell the difference when compared to the other strains Selva Negra grows. Best at the light to medium roast level, these beans have a bit more acidity than anything else from Selva Negra. The cup is very floral and citric especially at lighter roasts. Not quite jasmine floral, a little more traditional citric, but very tasty; delicate and sweet edged. Where one can see the prime Geisha attributes is in the darker tones of the cup, black tea spice jumps right out. Light roasts are heavy on the citric and floral balanced just a touch of tea like spice with herbal overtones. Medium roasts are where most will want to shoot, defined tea like spice with some sweet crisp floral upfront. Darker roasts turn a bit plain, still very drinkable but not much uniqueness.

A very cool exotic cup best at the light to medium roast points but tasty from light to dark. The cup is a bit sweeter and brighter than the washed or honey processed. At lighter roasts one will get hints of citric and red fruit tones balancing with a slightly herbal malt like darker tone. Takes a little longer setup after roasting but clean and easy drinking at the lighter roast points. Medium roasts move the fruitier tones to the aftertaste and pronounce the rich maltiness of the cup. The red fruit can be more easily seen as the cup cools, or in cold brew. Darker roasts are hardly fruity but retain the sweet edge, a little smoky/roasty/malt like note makes for a tasty treat.

Silky smooth and clean tasting, fuller bodied with a creamy mouthfeel. Lower acidity chocolaty cup with a sweet edge. We liked it best from a medium to dark roast, but with a little longer setup, light roast fans can find joy with these beans. Definitely a chocolaty cup profile with some cool nutty and herbal/spice accents. If you roast before 2nd crack, which is preferred, one can balance in some melon and fruit acidity into the mix which is a big plus to the depth of flavor. Cup starts sweet at lighter roasts but will turn semi-sweet as you pushing into medium or dark roasts.

A wonderful season for the Zambia washed. Good clean cup profile making it pretty tasty from light to dark roasts. We found the lighter side of a medium roast to be our favorite. Fuller bodied cup with a sweet lemony crispness balanced with a chocolaty dark tone, hints of nuttiness and spice in the aftertaste. Similar to a Rwanda/Burundi/Kenya but with a bit more body and less herbal spice. Lighter roasts accentuate the brighter more floral/fruity tones, a bit more showy of a cup with its brighter characteristics but not as chuggable, can pull a little herbal balance.
