Kayon Mountain has become a tradition around here, marks one of our favorite times of the year, new Ethiopian season! Beautiful coffee and screen.Clean, bright, sweet with a very diverse flavor set. Stone and darker fruit, citrus & floral, and spiced chocolate tones are the main flavors one can see in this cup, either accentuated or muted depending on roast level. Nice jammy body will be seen in the medium to borderline dark roast mark. Very dependent on roast – lighter roasting gives much more of the citrus, red-fruit with just a hint of a spicy chocolaty factor, a much dryer finish. Darker roasts produce much more of a bakers chocolate cup with a hint of a strawberry like fruit note and good sweetness, far less acidic. A very enjoyable cup from light to dark.

A wonderful light to medium roast coffee: a delicate cup with a sweet edge. Very complex with wonderful aromatics, floral with hints of jasmine. Not overly acidic, but will have a bit of citric upfront at lighter roasts comingling with the floral overtones, balancing with just a hint of an herbal/spice/chocolate like darker tone. With a little longer setup, one will see the depth of flavor increase adding a slight fruit tone, more noticeable as the cup cools.

Clean, sweet, and floral with some stronger tea like attributes. Works well light to dark. Lighter roasting does have some acidity giving the cup a citric edge and sweeter floral/fruit notes but will not develop the depth to the darker tones that we loved with fuller roast levels. Hints of a black tea like dark tone and a soft fruit tone will pop out especially with some setup and as the cup cools. Medium to dark roasts will mellow the brightness considerably turning the cup darker toned with a fuller body, more about the spice notes and chocolaty factor. Smooth and easy drinking in the medium roast range while still maintaining hints of exotic acidity. Dark roasts promote a smoky edged rich semi-sweet chocolaty factor with tea like spice that lingers on the tongue in the aftertaste.

Crisp, clean and sweet; this Ethiopian cup is a bit more delicate than most. Light to medium roasting recommended but a tasty cup from light to dark. Lighter roasts will have some decent brightness, lemony with some grapefruit like citric tones. A floral cup with some awesome hints of jasmine in the aromatics. The lighter tones pull some balance with the classic tea like chocolaty undertone, traditional darker notes from the Yirgacheffe region.
Medium roasts really mellow out the acidity and reduce the citric/floral tone, creates a bit more body and a much more recognizable chocolaty factor. A very smooth, balanced and rich cup with exotic highlights. Darker roast burn out all the fruity and acidic notes, gets a little smoky roasty with strong bakers chocolate & spice tones.

A great cup! Super clean in its cup characters. Very bright and somewhat fruity at the lighter roasts; citrus, floral and red fruit balanced with just hint of a herbal nutty/caramel factor. Medium roasts get more balanced, not as citric, building a bigger bodied darker tone. The citric turns a little grapefruit like and the nuttiness turns a bit more chocolaty, maintains a lot of depth between the acidity and herbal chocolate/nutty floral notes . Darker roasts get very strong and semi-sweet, think bakers chocolate with herbal accents. Wonderful light to dark roast beans. Too see it shine, we do recommend a light to medium but there are reasons we can think of to take it darker. A bit thicker and lower acidity for a prime Kenya offering. Lighter roasts are sweet and clean, medium bodied with a smooth mouthfeel. A pinch of citric accompanied with bolder chocolate notes, a hint of spice in the aftertaste. Medium roasts are full bodied and very rich tasting, lots of complexity to the darker tones, starts picking up some complimenting roasty tones as one gets closer to 2nd crack. A lovely example of Kenya coffee. Good from light to dark, we recommend a nice medium roast to showcase it. Very bright, punchy and complex at lighter roasts, a bit front loaded with citric/floral but very clean with some balance. A bit hoppy some will say with some spice notes popping out. The lighter tones will pull some balance with a semi-sweet chocolate edge but easily overpowered by the higher acidity when light roasted. Medium roasts build much better balance between the acidity (citric/floral/fruit) and the dark tones (nutty/cocoa/spice) making it less blasty of a cup, easier to drink all day. If you don’t like higher acidity, this is where to start with your roasts. Darker roasts have there place, but will kill some of what separates this cup from “average” Kenyan. Strong and semi-sweet, think bakers chocolate with herbal accents. A little smoky and roasty but presents nicely for a more exotic dark roast.Price: $8.99/lb - 7.79/lbPrice: $8.99 -

We thought best served in the medium roast range, but tasty from light to dark. A very sweet cup at any roast point. Lighter roasts have some stronger citric/floral acidity, a little hint of a grape-skin like fruitiness and a spiced (herbal) chocolate undertone. Medium roasts build a much creamier cup profile, just a hint of crisp floral upfront that fades into a strawberry like fruitiness, balanced with a spicier chocolate dark tone. Dark roasts themselves are a bit flatter but still very sweet edged, hardly fruity but makes up for it with the fuller bodied more robust chocolate and spice notes.

Great from light to dark but most would consider it a light to medium roast coffee to see it shine. We couldn’t find a roast level or curve we didn’t like; a complex & chocolaty coffee. Lighter roasts will have a crisp lemony/floral acidity, a hint of soft fruit, balanced with a chocolate and spice darker tone; sweet edged, winy, and floral. A cup bound to impress almost every coffee fan. Medium roasts mellow the citric acidity promoting a rich, smooth & chocolate cup with some hints of classic African spice. Darker roasts were much more chocolaty but smooth and clean with some complimenting smokiness.

Light to medium roasts; The first tones to hit you will be a little bit of lemony citrus that quickly fades into some lovely red fruit notes – a little reminiscent of tart cherry but has some classic stone fruit in the cup as well. The lighter tones are balanced with a nice and clean chocolaty factor without too much of that classic African herbal note. Aromatics that will make your mouth water. Dark roasts are not really recommended, turn a bit bittersweet and kill the fruit forward aspects of the cup.

Light roasts get very jazzy acidity, with just a hint of a dark tone. Floral and sweet edged, with an emphasis on the fruitiness of the cup. Medium roasting is much more balanced, medium to full bodied and far less sharp than the lighter roasts, but also less fruity. More of a chocolaty cup with fruity highlights. Dark roasts get even fuller bodied but burn out some sweetness, taste like semi-sweet chocolate on the roasty/smoky side, thick with a bit of spice in the aftertaste. A hint of fruitiness as the cup cools but hard to tell its natural processed roots at darker roasts.
