Great daily drinker from medium to dark roasts. Good body and lower acidity, nice and strong semi-sweet malty tones with a hint of spice in the aftertaste. At the light to medium roasts it will show just a pinch of crispness and a hint of earth, not super citric but will leave a dryness to the tongue, a bit floral in its aromatics but not in the cup. Just before to touching 2nd crack gets rid of almost all signs of any acidity and adds some complimenting smokiness to the cup profile. A very smooth cup from a medium roast to just before 2nd crack. Into 2nd crack will get some edgy strength that dark roast fans will like.

A sweet and fruity cup; best at a light to medium roast. Light roasts are lemony and floral upfront which fade to stronger red fruit and balances with a hint of rustic chocolaty darker tones. Medium roasts clean up the more rustic chocolaty tones which many will like but also reduce the sweetness and fruity factor of the cup, becomes a little fuller bodied with low acidity with good mouthfeel, fruity factor pops out more as the cup cools. A very clean and fresh batch from Selva Negra. A little citric & floral acidity upfront, balanced with nice complex nutty & malty undertones. Light roasts are going to be a little front loaded with the brighter characteristics, a higher rated cup meaning one will notice some decent crisp acidity at the light-medium roasts. Will give great depth of flavor but may be a little sharp for some. Our favorite roast and a great everyday drinker was in the medium roast ballpark, builds more of a smooth and creamy cup with a sweet edge, reducing that perceived acidity to just a pinch. Turns much stronger, a robust cup most would say, into the darker roasts but shined nicely; fuller bodied with strong malty and smoky tones, still a sweeter edge to it which darker roast fans will love.

A nice medium to dark roast more potent Nicaraguan offering. Medium to full bodied with just a little hint of acidity. Strong Medium roasts were our favorite with thicker more complex malty tones, a sweet edge, hints of herbal spice and almost no acidity, a good daily drinker being very smooth. Darker roasts produce a similar cup but turn it semi-sweet with complimenting smoky tones, not quite as smooth but has the heft many darker roast fans will love.
