A wonderfully clean and semi-exotic Colombian, washed processed coffee, so not exotic by means of overly fruity or ferment, but picks up some spice notes not usually seen in Colombians. Versatile from light to dark, we thought best at the lighter roast levels. Crisp, clean, sweet, with a ton of flavor depth. The cup has a little fuller body and in mainly a nutty and chocolate like cup. Medium acidity, gives a little citric/fruit twist at lighte roast levels. Some unique tea like spice notes mainly in the aftertaste. Be sure to hit a medium to dark roast if you do not like a little crispness in the cup. Lighter roasts promote a sweeter more delicate cup, a touch of fruitiness among the citrus/floral, while a medium to dark roast accentuate the spice tones and turn the cup more semi-sweet bakers chocolate like.

Best from the lighter side of a medium roast to as dark as you want to go. A bit cleaner tasting but slightly less fruity than previous seasons. Lighter roasting presents some nice honey processed features: citric, floral, soft fruit with an almost oak/peat like finish, sweet & complex but does risk some underdeveloped tones if you nail it a little too light. Medium roasts were our favorite, still balanced and complex but will develop the traditional chocolate and smoky tones for which Dominican coffees are known for – to balance out those more exotic fruity and citric tones. Stone and darker fruit, citrus & floral, and spiced chocolate tones are the main flavors one can see in this cup, either accentuated or muted depending on roast level. Nice jammy body will be seen in the medium to borderline dark roast mark. Very dependent on roast – lighter roasting gives much more of the citrus, red-fruit with just a hint of a spicy chocolaty factor, a much dryer finish. Darker roasts produce much more of a bakers chocolate cup with a hint of a strawberry like fruit note and good sweetness, far less acidic. A very enjoyable cup from light to dark.

This is one of those coffees that feels good to buy and even better to drink. It comes from a region that many coffee lovers already adore: Huehuetenango, Guatemala. Specifically, it’s grown on small hillside plots in the highlands of the Cuchumatanes mountains near the town of Jacaltenango, by around 330 farming families from the Popti’, Mam, and Kanjobal indigenous groups. The cooperative behind this lot, Guaya’b, was founded in 1998 and proudly carries Organic, Fair Trade, and Smithsonian Bird-Friendly certifications the latter confirming their farms provide a safe haven for over 200 species of migratory birds.

Besides a chocolaty factor one will get some nutty/caramel/floral like tones at the medium roast points, gives it some nice complimenting depth without being too exotic. We all thought it was at its best right around a full city – smooth without too much of a roasty note and great chocolaty tones.

Always one of our favorite Mexican coffees. Good from light to dark. Although Natural processed, this is not a fruit bomb like many other natural processed coffees, has slightly fruity overtones that balance great with some citric, malt and nutty undertones. Its a little fuller bodied cup than most Terruno lots with well above average sweetness. Lighter roasting will have noticeable citric crispness upfront and will accentuate the fruitiness. Medium roasts balance the tones nicely and smooth out (reduce) the citric brightness. Darker roasts turn much more chocolaty and get pretty roasty and smoky, retains a sweet edge and shows hints of fruitiness as the cup cools. A great daily drinker! Works well from light to dark roasts. Very sweet and chocolaty cup of coffee with some lemony/floral crispness upfront. Light roasts will show stronger citrus mixing with a nuttier darker tone with slightly herbal accents, small hint of caramel will show with a little longer setup. Could be a bit acidic for some, but presents nicely for those who like a little citric and a nuttier cup profile. Medium roasts smooth out the cup and move the darker tones to more along the chocolate like alley, far less noticeable citric tones. Likely the best roast for daily drinking, but will be personal preference. Great daily drinker from medium to dark roasts. Good body and lower acidity, nice and strong semi-sweet malty tones with a hint of herbaceous spice in the aftertaste. At the light to medium roasts it will show just a pinch of crispness and a hint of earth, not super citric but will leave a dryness to the tongue, a bit floral in its aromatics but not in the cup. Just before to touching 2nd crack gets rid of almost all signs of any acidity and adds some complimenting smoky and roasty tones to the cup profile. A very smooth cup from a medium roast to just before 2nd crack. Into 2nd crack will get some edgy strength that dark roast fans will like.
