Clean, sweet and balanced, this is the Yunnan offerings for most coffee fans. Best at the light to medium roast levels: there is a little crisp citric upfront, a bit more lime than lemon, a hint of red fruit giving a sweet edge. These lovely lighter tones pull some balance with a nutty/chocolate like undertone with a bit of spice, accentuated as you push the roast darker. Medium bodied, medium brightness levels, small hints of red fruit more noticeable as the cup cools. Light roasts themselves are much more citric, good to give a longer setup if shooting light, mellow out the crispness a bit. Turns much more chocolaty at the darker roasts but will introduce potent bitter, semi-sweet chocolate like notes. Medium roasts present the best balance and would qualify as a jazzy daily drinker.

A wonderful decaf! We recommend a medium to dark roast on these beans. Sweet edged and malty, good body and lower acidity. Medium roasts can show a little hint of soft fruit and nuttiness, darker roasts will get pretty bold with a roasty finish. Lighter roasts can show just a hint of grassy but will still make an interesting cup with more fruit, nuttiness and sweetness to go along with it.

A very clean, fuller bodied, smooth and chocolaty cup. A lower acidity offering that’s hard to tell its a decaf. The stronger chocolate undertones mix very well with the floral sweetness on top to create a lovely balance. Lighter roasts were interesting, pulls a bit of sweet green tea like spice, but for most Central American fans, shooting a bit fuller and creating a more chocolaty cup will be the way to go.

A very nice medium to dark roast decaf. Medium roasts are a much smoother cup, a little sweet edge, nutty, with a touch of chocolate. Has a little floral overtone that makes it a bit interesting. Fuller bodied with a richer chocolate tone closer to 2nd crack. Some smokiness at second crack or into but retains its smooth and rich character. Decaf Mexican is always one of my favorite beans to get a nice and strong chocolaty note in the decafs. Lower acidity and fuller bodied, pretty hefty in its semi sweet bakers chocolate tone at fuller roasts.

A wonderful cup at lighter roast points. A sweet, delicate, fruity and floral cup. Medium to low acidity, it will have a slight citric tone while very fresh. First note to hit the tongue will be the sweet red fruit note that will fade into a little nutty/chocolate darker note. Unlike its Yirgacheffe cousins, there is not nearly as much herbal/tea like darker note. At lighter roasts it’s distinctly floral, Ethiopians heirloom strains in action, pronounces lime and lemon-zest acidity with a little sweet red fruit tone, strawberry like. At medium roasts it turns smooth and balanced, with a silky body (between light and medium) and pronounced chocolate like backbone that supports the hints of fruitiness well. Pushed darker it gains punch and shifts toward dark/baker’s chocolate and cocoa, while maintaining a medium-soft body. Overall: floral-leaning, sweet, and very clean.

A great cup from city+ to full city roasts. Light medium to dark medium some would say. Although a natural, this is not a super fruity coffee, will show hints at lighter roasts along with some citric. These beans are more about the complex chocolate and spice notes, the sweet fruit highlights are just a little perk and balance the cup nicely. At lighter roasts it’s distinctly floral, Ethiopians heirloom strains in action, pronounces lime and lemon-zest acidity with a little sweet red fruit tone, strawberry like. These lighter tones comingle with a rustic chocolate and spice, slightly herbaceous at lighter roasts. At medium roasts it turns smooth and balanced, with a silky body (between light and medium) and a rustic chocolate like backbone that supports the hints of fruitiness well. Best at the light to medium roast levels. Very crisp, clean and exotic. Great aromatics filled with jasmine spice and soft fruit. Lighter roasts are filled with new crop acidity and floral notes, mostly citric but a little soft fruit tone can be found. The balance of the cup comes from a semi-tea-like chocolate factor. I tend to think of it as chocolate spice notes but many tongues can pick up a little black tea note. Medium roasts still have a bit of citric acidic, build a good body and bring forth more of the chocolate spice note, reducing the acidity slightly so even more of the exotic tones of this cup can be found. Darker roasts are always tasty for those who like fuller roasts. This is how they would traditionally serve these beans in Ethiopia. Almost a shame, for it loses the cool spice and lighter note balance, but will still make for a good exotic smoky and chocolaty cup.

A wonderful medium roast coffee but will work darker as well. Clean cup with a classic Antigua profile: a citrusy start (orange/mandarin/lemon) with a floral touch, stronger cocoa/caramel/nutty base. Medium bodied with a smooth mouthfeel and a creamy texture; a hint of red fruit (cherry/strawberry) upfront, an accent that integrates with the sweetness, without becoming excessively bright or fruity. Upon cooling, the cup gains roundness and the cocoa becomes more present, leaving a neat finish with nutty/cocoa notes. A balanced, transparent, and very pleasant combination for everyday drinking.

From the renowned Hoja Blanca area of Huehuetenango comes this beautiful washed lot from producer Florencio Villatoro. This coffee is a prime example of the classic “Huehue” profile: it’s exceptionally bright, sweet, and clean. It leads with a lovely orange fragrance that carries into the cup, with bright citrus orange notes supported by a little red fruit and a malty undertone. A fantastic daily-drinker Guatemala. Coffee is part of this families blood – Finca El Diamante is owned by one of the Villatoro family members; Florencio. In the same family are the owners of Finca Esperanza, Finca Villaure and Finca Rosma (as well as a few more). These are some of the best farms and the most well known in all of Guatemala. Most of the brothers and their farms have won the cup of excellence.

A great cup of Guatemalan, a bit lower acidity than most, a semi-sweet edge to this cup. We thought it best in the medium to dark roast range. Light roasts are sweet upfront but do not develop the creamy malty notes one expects from a nice Huehue. Medium roasts have a nice slight crispness upfront, medium bodied, low acidity with more of a creamy malty tone that lingers on the tongue. Very smooth and drinkable at the medium roast level but may be too mild for some.

A great medium to dark roast coffee. Robust and strong with an exotic more island premium sweet edge. Lighter roasts get a bit nutty with a little grassy caramel and slight hint of herbal spice, tasty but does not bring forth those awesome stronger chocolate notes that Haitian coffee is known for. As one progresses towards the medium roasts it develops a lot of sweet chocolaty, malty and smoky tones with just a little hint of floral acidity, a wonderful everyday drinker. Darker roasts touching 2nd crack have a surprisingly sweet edge to it and greatly accentuates the smoky/malty tones. Reminiscent of a nice Nicaragua coffee with the exception of the almost sugary sweetness upfront and jazzed up aromatics.

A beautiful tasting bean this season: slightly fruitier but still balances with traditional Indonesian character. Hints of acidity with stronger fruitiness at lighter roasts, strong fruit/oak tones on a more nutty/earthy/chocolaty profile at darker roast points. No missing the wild side in this cup. Medium roasts are where one should shoot for their first roast, mutes some nutty tones and pronounces the chocolaty factor for some balance, still plenty of wild fruity natural processed tones in the cup. Dark roasts will introduce some smoky accents but retain great sweetness. A great balance of slow dried natural with thick and creamy dark tones all in one cup.

Tasty from medium to dark. We preferred it a bit on the darker side. Lighter roasting is wild and decently fruit forward, sweet with a little acidity upfront; winy and brandy like with some lingering dry nutty/earthy tones, a bit of floral in the aftertaste, good but not chocolaty enough for us. Medium roasts mellow the cup a bit, turning it more chocolaty, fuller bodied and refining the fruitiness, making it a cup everyone will love, not just natural processed fans. Reminiscent of a nice Yemen Mokka but a bit more brandy like. Smooth and easy drinking. Dark roasts worked exceptionally well. Chocolaty but not overly roasty, sweet with just a pinch of fruit in the aftertaste. A bit of bolder spice compliments the more delicate features: great mouthfeel.

Beautiful coffee, soft islandy acidity mixing with a cool caramel/nutty tone, little hints of soft fruit and a sweet edge. Light roasts (just after 1st crack) are pretty clean and tasty but more nutty, as one pushes darker the nuttiness turns a bit more caramel/chocolaty like but will mute up the more islandy floral/fruitiness. How much you like a sweet nutty tone will be the decider where to roast this one. Darker roasts add a lot of body and dark chocolate smokiness but burn out all the delicate soft fruit and acidity which pushed this cup well beyond average for JBM. This cups taste profile is along the same lines as the Flamstead operation with a bit less lemony acidity.

A great daily drinker from a medium to dark roast. A very chocolaty cup of coffee, fuller bodied with low acidity, with some nutty & herbal accents. Light to medium roasts are crisp & sweet: Hints of citric balance with a nutty & woody undertone, a pinch of herbal spice in the aftertaste. With a longer setup time, assuming not too lightly roasted, that woody edge tends to produce a bit of a caramel twist which is quite tasty. Although good at semi-lighter roasts, we really enjoyed the medium to dark roasts better, fuller bodied and creamy. Semi-sweet chocolate and nutty tones dominate the cup with just a pinch of an herbal note in the aftertaste, a little complimenting roasty/smoky note into second crack. Wonderful for classic espresso or for those who use a splash of milk or creamer.

A stellar light to medium roast coffee, one of the better batches of Terruno Natural we have had through our doors. Due to the processing this coffee is naturally very sweet, syrupy textured with a medium-full body. Its brightness leans toward citrus, more lemon than acidic lime, with nuances of apple and soft orange. The cup presents notes of peach, plum, and a light floral touch, with a background of chocolate and cocoa and soft undertones of caramel and vanilla. A subtle melon accent is noticeable, especially in lighter roasts. With an intense fruity note, yet firm and balanced; lively without being strident: ideal for everyday drinking with any brewing method.

A wonderful batch of Terruno Nayarita great from light to dark roasts. This is one of the higher rated lots we have seen recently: crisp, clean and a bit brighter. Light roasts will highlight the higher rating but will be a little acidic for some. Medium roasts and very smooth and make for a great every day drinker. Darker roasts retain a very sweet edge but will produce a much flatter more potent cup. Lighter roasts have a hint of citric and a red-apple sweetness, supported by a gentle lemon/mandarin brightness that’s lively but not sharp. A light floral lift rides over a chocolate–caramel foundation; as the cup cools the tastes stay together showcasing the cleanliness, adds a soft hint of ripe stone fruit. Balanced, approachable, and versatile across brew methods. Medium roasts build up a bit of body, retaining just a hint of apple like acidity, pronouncing the smooth and nutty, chocolate like tones. Darker roasts get a bit roasty, but still have a nice and sweet edge, the most chocolaty cup profile assuming you don’t mind a bit of roasty/smoky to accompany it.

A wonderfully complex light to medium roast coffee. Light roasts are lemony and floral upfront which fades to stronger apple like fruitiness with some red fruit accents, balances with a hint of a chocolaty darker tones. Medium roasts clean up the more rustic chocolaty tones which many will like but also reduce the sweetness and fruity factor of the cup, a little fuller bodied with low acidity with good mouthfeel, fruity factor pops out more as the cup cools. Darker roasts get a bit edgy with semi-sweet smoky and roasty notes, finishes with almost a bit of an oaky barrel aged tone.

A very cool exotic cup best at the light to medium roast points but tasty from light to dark. The cup is a bit sweeter and brighter than the washed or honey processed. At lighter roasts one will get hints of citric and red fruit tones balancing with a slightly herbal malt like darker tone. Takes a little longer setup after roasting but clean and easy drinking at the lighter roast points. Medium roasts move the fruitier tones to the aftertaste and pronounce the rich maltiness of the cup. The red fruit can be more easily seen as the cup cools, or in cold brew. Darker roasts are hardly fruity but retain the sweet edge, a little smoky/roasty/malt like note makes for a tasty treat.

Light roasts are going to be a little front loaded with the brighter characteristics, a higher rated cup meaning one will notice some decent crisp acidity at the light-medium roasts. Will give great depth of flavor but may be a little sharp for some. Our favorite roast and a great everyday drinker was in the medium roast ballpark, builds more of a smooth and creamy cup with a sweet edge, reducing that perceived acidity to just a pinch. Turns much stronger, a robust cup most would say, into the darker roasts but shined nicely; fuller bodied with strong malty and smoky tones, still a sweeter edge to it which darker roast fans will love.

Great light to medium roast coffee. Although we have carried the San Felipe lot for years, having the Geisha separate this season has brought a ton of new tastes. East to tell the difference when compared to the other strains Selva Negra grows. Best at the light to medium roast level, these beans have a bit more acidity than anything else from Selva Negra. The cup is very floral and citric especially at lighter roasts. Not quite jasmine floral, a little more traditional citric, but very tasty; delicate and sweet edged. Where one can see the prime Geisha attributes is in the darker tones of the cup, black tea spice jumps right out. Light roasts are heavy on the citric and floral balanced just a touch of tea like spice with herbal overtones. Medium roasts are where most will want to shoot, defined tea like spice with some sweet crisp floral upfront. Although similar to the Typica, this Catuai is a more potent cup, stronger acidity with more complex darker tones (a little along the lines of African coffees). Light roasts themselves will be brighter with crisp lemony floral notes and more noticeable fruit tones, nutty tones to balance out the cup. Medium roasts bring a smoother and richer cup, develop the nuttiness into more of a malty/chocolate like taste, reduces the fruitiness but keeps the sweetness, still a bit lemony upfront but has a much more noticeable malt like tone with a bit of spice to balance it out. Darker roasts pull a little bitter/malty contrast but it goes well with the roasty and smoky tones and retains a sweet edge. A little longer setup sees a smooth a sweet darker roast.

A great light roast bean with some strong and bright fruit forward tones balanced with a bit of spice and stellar aromatics. Its always a bit harder to pick out those traditional Geisha tones with the natural processing but if you stick lighter, you definitely get them in the aromatics, some great almost jasmine like Ethiopian aromatics with this cup. Clean as a whistle with very noticeable lemony/floral acidity accompanied with some lovely red fruit tones. Sweet, delicate and well defined at the lighter roasts. A slight warning though, a fruit forward cup with higher acidity, lighter roasted, is not for everyone.

We found these beans best at the lighter roast points but works well from light to dark. An even heftier cup than the washed processed, full of floral, citric and sweet tones. Contrasting with malty, nutty and rustic chocolate tones. As the cup cools, you can see more of a fruity edge showing its natural processed roots, but it’s delicate and a bit more citric/peachy than traditional red fruit. Lighter roasts have a pretty blasty citric edge, starts lemony but fades to more of a limey tone in the aftertaste. Good to give it a longer setup, mellowing the brightness will allow many little flavors to pop out. Medium roasts are likely the best starting point for most, still plenty crisp but will accentuate the traditional darker tones and require less waiting after roasting. A wonderful mix of floral and malty/chocolaty without being too sour upfront. Darker roasts can pull a little bittersweet edge but are still very complex heftier cups, good for the stronger coffee fans or those looking for a more exotic dark roast.

A crisp, bright, clean and balanced cup. We thought it best light-medium roasted but quite tasty from light to dark. This is an awesome example of washed processed Panama coffee. A hefty full flavored cup: floral, citric and sweet tones contrasting with malty, nutty and rustic chocolate like tones. A hint of soft fruit can be found as the cup cools in the light-medium roast levels. Lighter roasts push the tones towards the more acidic side but these beans are clean enough to handle the lighter roasting, give it a longer setup time after roasting. Lighter roasts are the most jazzy roast point but may come off a little too acidic for some. Medium roasts are the best starting point for medium-low acidity fans, it balances the cup out nicely with traditional darker tones, a creamier body and mouthfeel. A wonderful mix of floral and malty/chocolaty without being too sour upfront. Darker roast get much heftier, good for the stronger coffee fans.

Reminiscent of a Costa Rican coffee but a bit fuller bodied and less nutty. Light roasts still show a little sharp acidity, tasty with some setup but risks a little grassy tone. Medium roasts shine and are smoothest and most balance tasting between lighter and darker tones: good chocolaty semi-malty tones with just a hint of floral. Dark roasts get a bit thicker but turn much more semi-sweet chocolaty with some smoky tones in the aftertaste. Works darker for a semi-sweet chocolate bomb, assuming you pop in a splash of mild or make an espresso out of it.

A little fuller bodied at the light-medium roast level with a great balance between the slight winy/floral notes & nutty/malty darker tones. Similar to Guatemalan coffee. Some acidity at lighter roasts but just a hint, medium to dark roasts would be marked as low acidity. As one pushes it into the medium roast range, the very sweet nutty tones come off a bit caramel like. Still plenty malty, it will linger on the tongue. Dark roasts turn pretty strong with the sweeter malty cup profile mixing nicely with smoky and roasty notes.

Some acidity, which brings lemony and floral tones to the front end of the tastes, balances them with a sweet edged nutty/malty undertone, hints of a vegetal spice. As one pushes the roast a little darker, the body increases, as the acidity and vegetal spice dissipated. Made for a very lovely daily drinker in the medium roast range; sweet, smooth & complex. Pushing the beans darker, the citric and floral acidity drops nicely to a crisp hint or none at all, the malty tones can turn quite robust as you approach or touch 2nd crack. Best at the lighter roast points, this cup is marked by a bit of sweet red fruit which can roast out of the beans if taken too dark. Light roasts are very clean and balanced with a good creamier mouthfeel and medium body, but overall we would call it a bit more delicate of a cup for the Pacamara lineup. Just a hint of a lemony citric note upfront fading into the sweet red fruit and pulling a little contrast with a rustic chocolate note, depending how light you go you can see a little nuttiness in the aftertaste. Medium to borderline dark roasts produce a very smooth and rich cup, mainly chocolate like but some interesting spice notes will pop out a bit, sweet but a little more plain tasting, hints of fruit as the cup cools but not that noticeable when hot. Darker roasts can get a little bitter edge and hide the fruitiness, but will pull a unique and complex slightly boozy quality in the aftertaste, a kind of “barrel aged” quality that we found appealing.

For funky natural fans, this is a light to medium roast coffee. To see more traditional PNG notes mixing with the exotic fruitiness, medium to dark roasts work best. An “old world” natural production, very slow dried, uneven looking and roasting. Compared to the beautiful washed processed beans from PNG, this would be considered the ugly duckling. Luckily, like the classic story, these beans will roast/brew into a beautiful and exotic tasting cup. Very dependent on roast level, most would think its a different coffee when comparing light to dark roasts. It’s not a very bright coffee but has some floral accents, fruity overlays with a pleasant sweetness. The darker notes are more of a nutty/oaky/chocolate, almost barrel aged like tone, brandy-ish some would say. If you like a lighter roasted very complex coffee with low acidity, good body and fruity hints, this coffee is perfect. However, we recommend opting for a medium to dark roast if you prefer to enhance its body and sweetness a bit more, while maintaining its clean flavor.

A lovely & fresh coffee, our first new crop Peru. Best from medium to dark roasts, a good daily drinker. Medium to low acidity, with a thicker body and mouthfeel. A wonderful more chocolaty cup than shows some nuttiness. Lighter roasting will show just a pinch of citric, which provides nice depth of flavor but be a little careful ligher, too light will show some grassy/herbal tones. Medium roasts and beyond produce a smooth and rich cup, more chocolaty than nutty, pulls a peanut brittle like tone (some may say hint of caramel), not quite candy like, more peanut than brittle but we all thought it to be a good descriptor. Dark roasts turns the cup pretty chocolaty, retains the sweet edge and a couple even noticed a little floral hint to it.
