Lighter roasts show lemon, floral & soft fruit contrasted by a nuttier (almond like) undertone, a sweet edged cup. The two combine for a hints of caramel, quite tasty for you light roast fans. Medium roasts are richer, more of a developed chocolaty tone and decently less nutty; mutes up the soury floral edge, retains a little hint of soft fruit as the cup cools. Fairly neutral tasting and very chuggable. Darker promotes a thicker body and introduces a slightly bitter contrast that works very well for espresso.

This green coffee lot comes from small producers in southern Huila, Colombia, grown at high elevations (about 1,700–2,000 masl) in volcanic soils and featuring the Pacamara variety, a hybrid known for its large beans. Decaffeinated Peru MWP is a decaffeinated green coffee from Peru, processed using the Mountain Water Process. It’s designed for a classic, easy-drinking cup: chocolatey, smooth, and clean, with low acidity and a medium body. The creamy chocolate notes with a touch of caramel are more pronounced at a medium roast, and while the acidity is low, floral tones are perceived at the start, adding a touch of vibrancy to the cup.

Coming from the Gedeb district, Banko Chelchele community. These are high-altitude beans from small growers. It’s dried as whole cherries on raised beds to maintain the fruit’s vibrancy while remaining unusually clean for a natural process. Expect a lively cup with bright red fruit/jam and intense floral notes, supported by a creamy apple like sweetness that makes the acidity feel more sparkling than intense, along with a silky medium body and a clean, refreshing finish. Grown between 1950 and 2200 meters above sea level from local heirloom varieties/traditional cultivars and processed at an independent station (managed by Azeb Tadesse), it tends to shine in light to medium roasts to maximize its aroma and clarity, while a slightly deeper roast enhances the sweetness and adds a base with more cocoa nuances.

A wonderful example of a top grade washed Ethiopian. Best served in the light to medium roast range, a very delicate and sweet cup. Hints of citrus and soft fruit comingle with floral, caramel, chocolate and tea like spice. Heirloom Ethiopian strains have a taste like no other and offerings like this one showcase their uniqueness. For acidity fans, a light roast ending real close to 1st crack will have a stronger lemony citric edge, covers up a bit of the delicate floral/fruit but crisp, clean and sweet. We personally liked it better just a shade or two darker, splitting the difference between light and medium. It will mellow the citric tones popping out the sweet floral, while building a bit more sweet caramel/chocolate darker tone with a hint of tea like spice in the aftertaste. Crisp but not overly acidity. Darker roasts go the other way covering up the citric and floral with strong chocolate and herbal tones. The aromatics are fantastic on these beans and will add wonderful floral depth to the tastes.

This Guatemalan is a washed processed and sun-dried green coffee that combines production from different regions and departments of Guatemala (harvested between October and February), aiming for a classic and consistent profile. It comes from areas with volcanic soils and an average altitude of around 1,372 meters above sea level, which typically produces firmer and more stable beans for roasting. An interesting aspect is the micro-processing approach: many producers (often in indigenous communities) process their own harvest on small farms, controlling cherry selection, pulping, fermentation, and drying. They then organize themselves into cooperatives to store and transport the parchment coffee for export through Guatemala City, in addition to accessing technical assistance and practices such as reusing byproducts (pulp) for fertilizer.

New Crop Comsa! This cup is nice and chocolaty, lower acidity and medium bodied. A little sweeter edge to it except for super dark roasts. Besides a chocolaty factor one will get some herbaceous nutty/caramel/floral like tones at the medium to dark roast points, gives it some nice complimenting depth without being too exotic. We all thought it was at its best right around a full city – smooth without too much of a roasty note and great chocolaty tones.

Best from a medium to dark roast, wet-hulled coffees are not light roast coffees no matter how premium of an offering. Hints of citric crispness and soft fruit with a little sweeter chocolate edge, pulls some balance with some earthy spice (the good kind). Very clean cup for a Sumatra that is drinkable and balanced from a medium roast and beyond. The darker you roast, the fuller the body gets along with reducing any hints of acidity. Into second crack will turn more into a chocolaty spice noted treat but will reduce the sweeter edge. Picks up some complimenting roasty and smoky tones into the more bakers chocolaty cup profile.

Best at a medium but holds up lighter or darker. A wonderfully complex cup of coffee. Lower acidity but can have a hint of lemony brightness upfront at lighter roasts. Soft edges on this cup with chocolate/nutty/caramel darker tones. Lighter roasts accentuate the nutty floral sweeter tones, can come off a bit woody tasting right at first crack. This washed Kenyan Peaberry comes from Machakos County (central/eastern Kenya) and is a “fly crop” (secondary harvest) processed at the Kaliluni Factory, the only washing station of the Kaliluni Farmer Cooperative Society, part of the Machakos Cooperative Union. Grown at 1700–1900 meters above sea level (varieties SL-28, SL-34, Ruiru 11, and Batian) by 1,659 smallholder farmers, it offers a sweet and very drinkable cup, with a chocolate and caramel base and an intense, lemon-like citrus acidity; what stands out most is its red fruit character (strawberry-like) with a subtle hint of orange. At a medium roast, it shows its best balance (fruit + sweetness + clean citrus); a lighter roast makes it crisper and brighter, while a darker roast reduces the acidity and brings out deep cocoa notes with a gentle spice.

Always one of our favorite Mexican coffees. Good from light to dark. Although Natural processed, this is not a fruit bomb like many other natural processed coffees, has slightly fruity overtones that balance great with a little citric, malt, cocoa and nutty undertones. Its a little fuller bodied cup than most Terruno lots with above average sweetness. Lighter roasting will have noticeable citric crispness upfront accentuating the fruitiness, but can risk a little dry nutty aftertaste if too light. Medium roasts balance the tones nicely and smooth out the citric tones. Darker roasts turn more chocolaty, gets pretty roasty and smoky, retains a sweet edge and shows hints of fruitiness as the cup cools. A good daily drinker across the roast levels.

Always one of our favorite Mexican coffees. Good from light to dark but our favorite was a medium roast. Medium to full bodied, medium to low acidity. Lighter roasting will promote a sweet citric edge balancing with a bit nutty undertones. It will pick up a hint of caramel after a couple days setup but risks keeping a little dry nutty tone if too light. Medium roasts are pretty bullet proof, full bodied with rich chocolaty notes, a little nuttiness and vanilla like spice in the aftertaste. A clean cup with just a hint of citric crispness upfront. Darker roasts pick up a bit of roastiness but it compliments the very chocolaty profile, thick with no real hints of brightness. A good coffee for stronger chocolate tones at darker roasts.

This is a washed coffee from the Korgua farm, located on the Kuta Ridge within the Waghi Valley (Western Highlands), the Nebilyer Valley area. Grown at around 1400 meters above sea level, it uses Bourbon and Typica varieties. It’s a lot with a “classic” PNG profile, but with a distinct farm character, linked to the work of Brian Leahy and his Kuta Mill, created as a neutral point so that producers from rival tribes could bring their coffee without conflict. In the cup, it tends to be fuller-bodied and creamier, with low to moderate acidity and a rich mouthfeel. In light roasts, a sharper citrus note emerges, accompanied by hints of dried fruit, caramel, cocoa, a touch of herbal spices, and floral nuances. When roasted to a medium, it becomes especially chocolatey, smooth, and well-rounded.

A great daily drinking Peru! Best right around a medium roast but works well from light to dark. It stands out for being a very clean and sweet cup. At lighter roast levels it has some crisp acidity, not over the top but noticeable, gives a quick hit lemon and floral that will balance with nutty and chocolate like darker tones. Small hints of caramel and dried fruit will pop out with a little setup. At medium roast levels, you get more of a smooth easy drinking cup, less acidity with accentuated nutty/chocolate tones, a hint of spice in the aftertaste, provides the best balance of light/dark tones. Darker roasts are a little flat and roasty, but on the more neutral side, classic darker roast beans: smooth, rich and on the roasty chocolate side of things with a little nuttiness in the aftertaste.

This lot of Rwanda Dukunde Kawa Mbilima is truly special. It comes from small family farms located in the Gakenke district, very close to a natural gorilla habitat. In this region, cultivation is so artisanal that farm plots are not measured by hectares, but by the number of trees each family owns. The coffee is processed at the Musasa mill by the Dukunde Kawa Cooperative. The most remarkable and beautiful aspect of this project is that more than 80% of its workforce is made up of women. By enjoying this cup, you are not only experiencing a coffee of the highest quality, but you are also directly supporting these female producers, who use their earnings to improve their standard of living through access to healthcare, investments in livestock, and the development of programs to protect the environment. A very fresh and semi-exotic Rwanda coffee. A good cup from light to medium roasts. A little brighter cup with a citric and grape/apple like fruitiness upfront. Pulls some contrast with a semi-sweet chocolate tone, some lingering African spice in the aftertaste. A milder “natural” processing, adds some great complexities to the taste, raised sweetness levels and hints of fruit but no boozy or over fermentation noted. The medium roast offers a smooth cup with an accentuated bakers chocolate note, hints of the fruitiness in the aftertaste and as the cup cools. Darker roasts add complementary roasty notes, a sweet flavor of caramelized sugar and chocolate, with a hint of spice, lower acidity, and a fuller body, although its fruity notes are somewhat overshadowed by the chocolate. It is undoubtedly a coffee with a great balance between sweetness and fruitiness.

An interesting and complex Tanzania Peaberry, best from light to medium roasts, but works darker as well. At lighter roast points it grabs your attention right from the start with a vibrant and juicy acidity, slightly higher than usual, with hints of sweet orange and lemon. The crisper cup profile gives the cup a lot of lively flavor depth including it more potent deep chocolate and cocoa notes, accompanied by a classic African spice note, an herbal nuance clearly reminiscent of black tea; far from clashing, this herbal touch creates an excellent and highly appealing interplay of flavors in the cup. It has a medium body that accentuates and becomes denser as the temperature drops. In the background, there is a fruity sweetness, praline, and a slight hint of amaretto, resulting in a very balanced cup. Moving into darker roasts, it will lose its acidity, consequently gaining more body and intensifying its chocolate and sweet notes.

Tanzanian peaberry is always high on our list for darker roast beans: rich and chocolaty cups with robust and unique spice notes. This one being fresh as can be works pretty well from light to dark, if too light it can get a little grassy/herbal, but a clean and balanced cup with just a little development past first crack, a city+ roast they would call it. Retains its cleanliness into the darker roast points. Lighter roasts are going to be more acidic, not quite like a Kenya but a pretty clear citric edge balancing with a little hint of chocolate. Hit the roast right and you will see a pinch of caramel sweetness with a longer setup, but get it a bit too light, will have an herbal edge. Medium to dark roasts are pretty bullet proof. Medium will still show a hint of acidity, darker will lose it all. Either roast level will be nice and chocolaty with some spice behind it. If your a cold brew fan, lighter roasts points were pretty awesome, no risk of herbal and it popped out the sweeter caramel note much easier, a lighter bodied and sweeter cup.
