A very nicely balanced cup of coffee. A little hint of acidity upfront providing some floral and soft fruit at the lighter roasts, balanced with a semi-sweet nutty chocolaty factor. Super light roasts risk a little grassy/herbal but it straightens out at a city+ (medium) and holds up as dark as you want to take it. The darker you go, the more body and edgy chocolate the cup will pick up, once you hit 2nd crack, expect some smoke and roasty tones to compliment the nutty/chocolaty factor.

The aroma is very nutty and sweet. There was a surprising hint of smoke on the palate. Full bodied and low acidity – this is a traditional tasting Brazil – thick, creamy, nutty and semi-sweet. At the darker roasts a very sweet first taste, almost a little fruity, and then quickly turns darker-toned with a bakers chocolate and slightly toasted walnut flavor. Good from light to dark, but to see the fruit notes shine, keep it in the light to medium ballpark. A bit of lemony citrus upfront that fades into a sweet red fruit tone, followed by a bit of nutty/herbal darker notes. The sweetness and fruitiness linger on the tongue. A longer setup help rid the lighter roasts of the more herbal qualities. Medium roasts are pretty bulletproof and well balanced, showing a little more of a potent nutty/chocolate undertone but no missing the fruitiness and slight citric. Darker roasts worked very nicely for a natural processed, sometimes they get all sour and twangy, but being both a Colombia and Pacamara, the more robust body and nuttiness with a slight roasty & chocolate overtone, mix very nicely with a little sweet fruitiness in the aftertaste.

Great cup from light to dark! Smooth, sweet, rich and buttery textured. A very chocolaty cup with hints of floral acidity and a soft fruit tone. Overall, lower acidity and fuller bodied with some classic Colombian nutty tones in the aftertaste. A little spice in the cup creates wonderful depth of flavor. At lighter points you get some brighter and crisper tones, small hints of fruitiness combine with just a pinch of darker note, a balanced cup if you give it a longer setup, but can be a little bright if you drink it too soon. Medium to dark roasts are where you get the more classic Colombian cup, fuller bodied with more potent nutty/chocolaty tones, the fruitiness disappears but the cup retains a nice and sweet edge to it.

A very nice and clean Costa. Lighter roasts will show that classic Costa sweet floral acidity, a little bit on the lemony side balanced with a little dry nutty/chocolate undertone. As the roasting pushes more into the medium category, the cup develops a bit more body and reduced acidity levels giving a much smoother mouthfeel and more defined chocolaty factor. Creates a wonderful balance of tones. A little lighter floral, a little chocolaty/nutty, very pleasant drinker. Darker roasts hold up nicely as well, turn the cup more stronger and more bakers chocolate like, the roasty notes from darker roasting do compliment the cup. Much more of a chocolate bomb with slightly nutty accents.

A very nice co-op production Tarrazu that follows the classic Costa terroir, floral acidity versus nutty and chocolaty tones. Best at medium to dark roasts, a lovely daily drinker. A good balance of flavors that can accommodate anyone’s personal tastes, dependent on roast level. Lighter roasts are brighter, sweeter and more floral, balanced with hints of dryer, nutty undertones. Medium roasts had the best balance, smooth with a slight chocolaty edge and pronounced nuttiness in the aftertaste, just a hint of crispness to the cup. Generally considered a fuller roast coffee, can get a bit grassy and light roast levels but blossoms into chocolate, spice and earth, at fuller roast levels. A very low acidity cup.

Best from the lighter side of a medium roast to as dark as you want to go. A bit cleaner tasting but slightly less fruity than previous seasons. Lighter roasting presents some nice honey processed features: citric, floral, soft fruit with an almost oak/peat like finish, sweet & complex but does risk some underdeveloped tones if you nail it a little too light. Medium roasts were our favorite, still balanced and complex but will develop the traditional chocolate and smoky tones for which Dominican coffees are known for – to balance out those more exotic fruity and citric tones. A lovely slightly-exotic daily drinker. Light to medium roasts are preferred with our favorite roast being right in the middle of the cracks. Lighter roasts have a hint of floral/citric acidity with just a touch of sweet and delicate red fruit coming from the honey processing. A bit on the nutty/chocolaty side for its balance, starts as a dry nutty at very light roasts, turns more chocolaty as the roast gets darker.A little front loaded with the more acidic and fruity tones at traditional light roasts. Medium roasts have better balance between light an dark tones cutting out some acidity; smooth, rich and sweet edged. Dark roast loses the more exotic acidity and fruity edge but turns very thick, nutty, semi-sweet chocolaty with smoky accents.

Fresh, clean, and semi-exotic. Best in the light to medium roast levels but for the right purpose, can be used for darker roasts. Light roasts show a pretty good citric edge, mostly lemon but with a slight peachy spin, just a small hint of classic Ethiopian floral. Pulls some balance with a little herbal/nutty/cocoa note. Medium roasts cut out most of the citric and peachy qualities providing a smooth and rich cup, pretty neutral tasting, a little hint of spice and slight nutty/cocoa tones. A strong medium roast will start to pick up some complimenting roasty tones. Dark roasts get pretty hefty and bittersweet. It does have some exotic character but much of it is covered up by the more roasty notes coming from the roast level. Clean, bright, sweet with a very diverse flavor set. Stone and darker fruit, citrus & floral, and spiced chocolate tones are the main flavors one can see in this cup, either accentuated or muted depending on roast level. Nice jammy body will be seen in the medium to borderline dark roast mark. Very dependent on roast – lighter roasting gives much more of the citrus, red-fruit with just a hint of a spicy chocolaty factor, a much dryer finish. Darker roasts produce much more of a bakers chocolate cup with a hint of a strawberry like fruit note and good sweetness, far less acidic. A very enjoyable cup from light to dark.

A wonderful example of a top grade washed Ethiopian. Best served in the light to medium roast range, a very delicate and sweet cup. Hints of citrus and soft fruit comingle with floral, chocolate and tea like spice. Heirloom Ethiopian strains have a taste like no other and offerings like this one showcase their uniqueness. For acidity fans, a light roast ending real close to 1st crack will have a stronger lemony citric edge, covers up a bit of the delicate floral/fruit but crisp, clean and sweet. We personally liked it better just a shade or two darker, splitting the difference between light and medium. It will mellow the citric tones popping out the sweet floral, while building a bit more darker tea like contrast. Crisp but not overly acidity. Darker roasts go the other way covering up the citric and floral with strong chocolate and herbal tones. The aromatics are fantastic on these beans and will add wonderful floral depth to the tastes.

Light roasts will be brighter, a bit more lemony with the malty tones just peeking out, a sweeter edge to lighter roasts but not as balanced nor malty. A great super fresh example of Antigua coffee, follows those wonderful floral versus chocolaty notes that made the region so famous. Medium roasts are recommended but good from light to dark. Lighter roasts will accentuate the lemony floral tones of the cup, the chocolaty factor will be just a hint but noticeable and smooth, a bit of nuttiness will linger in the aftertaste not present in further roast levels. Medium roasts are very clean and balanced – not too acidic, not too bitter – sweet edged and will have wonderful mix of tones. Darker roasts and smooth and semi-sweet, low acidity and very chocolaty.

A wonderful tasting Kona grown from a unique to Kona strain: Red Bourbon. Much sweeter and slightly more floral than the traditional Typica strain, gentle winy acidity upfront balancing with soft and smooth nutty and chocolate like tones. A hint of caramel if you get lucky on the roast. A little higher acidity than the Hala Tree Extra Fancy Typica, but would still be considered a medium to low acidity coffee. The cup is best at the light-medium roast levels: clean, sweet and balanced. Lighter roasts are sweet and have a little fruitiness as the cup cools, hints of citric that will pull some balance with a nutty/caramel/spice like darker tone. Some crisp acidity at the light to medium roast points Medium roasts are a bit fuller bodied and smoother: cuts out the citric tones. A bit more spice noticeable in the cup making its Indian roots more apparent. Dark roasts are much bolder and pronounce the spice and chocolate tones, tasting a bit more like the Mysore Nuggets.

Good from light to dark although we thought it best at a nice medium roast. Crisp tones, slight citrus/fruit note and a fuller bodied rustic chocolaty factor to balance it off. Sweet and clean, this is a stronger cup of a coffee! Just a bit of the classic Indo earthiness, I might link this coffee closer to an exotic Colombian than an Indo (which is way cool). Very nice rich chocolate tones (a little sweet malt/caramel as it cools) adds to the mix of delicate flavors present in this cup. A slight smoky aftertaste can be picked up at the darker roast points. Light to dark this is one tasty cup. Full of sweet and incredibly smooth nutty and chocolate like tones: a little hint of caramel/toffee, a little hint of floral/island acidity. Medium bodied cup with great mouthfeel and lower acidity. Lighter roasts are very delicate and mild, accentuating the nuttier tones. With a longer setup gives the best hints of caramel/toffee. Medium to dark roasts increase the strength of the cup leaning it more towards the chocolate/cocoa side of things, which might be wise if you traditionally like a more potent brew. Darker roasts are a bit roasty tasting, still very sweet, but is almost a shame when it loses its delicate edge. A lovely example of Kenya coffee. Good from light to dark, we recommend a nice medium roast to showcase it. Very bright, punchy and complex at lighter roasts, a bit front loaded with citric/floral but very clean with some balance. A bit hoppy some will say with some spice notes popping out. The lighter tones will pull some balance with a semi-sweet chocolate edge but easily overpowered by the higher acidity when light roasted. Medium roasts build much better balance between the acidity (citric/floral/fruit) and the dark tones (nutty/cocoa/spice) making it less blasty of a cup, easier to drink all day. If you don’t like higher acidity, this is where to start with your roasts. Darker roasts have there place, but will kill some of what separates this cup from “average” Kenyan. Strong and semi-sweet, think bakers chocolate with herbal accents. A little smoky and roasty but presents nicely for a more exotic dark roast.

Very fresh and tasty from light to dark roasts. Too see them shine, we do recommend a light to medium but there are reasons we can think of to take it darker. A complex, full flavored cup, which is why many think of Kenya as the top origin for high class beans. Lighter roasts are bright with stronger citric notes and hints of fruit, will pull a darker toned balance with a semi-herbal, green tea like component. Medium bodied, higher acidity with awesome depth of flavor. Medium roasts tame some of the bright characteristics, not as citric, promotes the body of the cup and turns the darker tones more chocolaty than herbal. Still retains good balance and depth but is not nearly as punchy with its tastes. A great daily drinker from a medium to dark roast. A very chocolaty cup of coffee, fuller bodied with low acidity, with some nutty & herbal accents. Light to medium roasts are crisp & sweet: Hints of citric balance with a nutty & woody undertone, a pinch of herbal spice in the aftertaste. With a longer setup time, assuming not too lightly roasted, that woody edge tends to produce a bit of a caramel twist which is quite tasty. Although good at semi-lighter roasts, we really enjoyed the medium to dark roasts better, fuller bodied and creamy. Semi-sweet chocolate and nutty tones dominate the cup with just a pinch of an herbal note in the aftertaste, a little complimenting roasty/smoky note into second crack. Always one of our favorite Mexican coffees. Good from light to dark. Although Natural processed, this is not a fruit bomb like many other natural processed coffees, has slightly fruity overtones that balance great with some citric, malt and nutty undertones. Its a little fuller bodied cup than most Terruno lots with well above average sweetness. Lighter roasting will have noticeable citric crispness upfront and will accentuate the fruitiness. Medium roasts balance the tones nicely and smooth out (reduce) the citric brightness. Darker roasts turn much more chocolaty and get pretty roasty and smoky, retains a sweet edge and shows hints of fruitiness as the cup cools. A great daily drinker! Works well from light to dark roasts. Very sweet and chocolaty cup of coffee with some lemony/floral crispness upfront. Light roasts will show stronger citrus mixing with a nuttier darker tone with slightly herbal accents, small hint of caramel will show with a little longer setup. Could be a bit acidic for some, but presents nicely for those who like a little citric and a nuttier cup profile. Medium roasts smooth out the cup and move the darker tones to more along the chocolate like alley, far less noticeable citric tones. Likely the best roast for daily drinking, but will be personal preference. Great daily drinker from medium to dark roasts. Good body and lower acidity, nice and strong semi-sweet malty tones with a hint of spice in the aftertaste. At the light to medium roasts it will show just a pinch of crispness and a hint of earth, not super citric but will leave a dryness to the tongue, a bit floral in its aromatics but not in the cup. Just before to touching 2nd crack gets rid of almost all signs of any acidity and adds some complimenting smokiness to the cup profile. A very smooth cup from a medium roast to just before 2nd crack. Into 2nd crack will get some edgy strength that dark roast fans will like.

Silky smooth and clean tasting, fuller bodied with a creamy mouthfeel. Lower acidity chocolaty cup with a sweet edge. We liked it best from a medium to dark roast, but with a little longer setup, light roast fans can find joy with these beans. Definitely a chocolaty cup profile with some cool nutty and herbal/spice accents. If you roast before 2nd crack, which is preferred, one can balance in some melon and fruit acidity into the mix which is a big plus to the depth of flavor. Cup starts sweet at lighter roasts but will turn semi-sweet as you pushing into medium or dark roasts.

A wonderful light to medium roast coffee. Leans a bit more towards a washed processed coffee than natural. A very clean, sweet and delicate cup with medium to low acidity: chocolate, spice, tea and fruit tones comingle nicely at the different roast levels. Lighter roasts show just a small pinch of citric and fruit comingling with complex tea like undertones, a fuller body and sweeter edge. Medium roasts mute much of the tea like spice turning the cup more chocolaty and semi-sweet, hints of fruit as the cup cools but hardly noticeable while hot. Darker roasts are more of a semi-sweet chocolate bomb, could be a bit much without a splash of milk but works wonderfully for espresso or cold brew at the fuller roast levels.

A bit of lemony floral notes upfront giving the cup a nice sweet crispness at the lighter roast points, a small hint of a fruity overtone. Semi-sweet chocolate with spice notes balance the cup out, a bit on the herbal/tea side super light roasted but will develop into a plethora of tones as one pushes the roast towards medium or borderline dark, very full flavored coffee. Dark roasts themselves get real low acidity and fuller bodied, mainly chocolate like but the spicier accents will linger on the tongue. A bit lower acidity and best from a medium to dark roast. For an African this cup is more neutral and chocolaty, has a little more character still then classic Central American offerings. Comparatively to a milder Honduran or Mexican the cup has hints of semi-sweet spice notes that create a stronger and more complex cup. Medium to dark leans it on the chocolate like side while roasting in the light-medium shows a bit nuttier of a taste. Medium roasts produce just a hint of acidity mixing with the nutty/chocolate like tones, if lucky one can detect a hint of caramel/floral along side of the more potent chocolaty spice notes. A good daily drinking choice, exotic but not too exotic; medium to full bodied and smooth, lower acidity and darker toned. Darker roasts get a bit more rough and tumble, strong chocolate and spice with hints of smoke in the aftertaste. Medium to dark roast beans & a great daily drinker! This cup is very thick and creamy, filled with semi-sweet chocolate and nutty tones. A very easy to drink coffee. A hint of soft fruit can be seen at the light to medium roasts but pretty faint, not super noticeable until the cup cools. A bit of peppery spice at the darker roasts with some complimenting roasty and smoky tones. Lighter roasts will show some lemony acidity and can accentuate the fruitiness of the cup but often will come off a bit too dry. These beans are more about the creamy fuller bodied and smooth chocolate and nutty tones which will come out from medium roasts and beyond.

A wonderful old world natural filled with hints of floral/citric, rustic-chocolate, spice and a pinch of fruitiness. Compared to previous lots, these beans do have a little brightness in them, not high acidity, but not nearly as flat as some we have seen in the past. A rounded cup with medium brightness and body. Citric, floral, red-fruit, chocolate, earth & spice are the dominate tones. The citric/floral/fruit will be accentuated with lighter roasts. Chocolate, spice, earth with darker roasts. A lovely complex old world natural that brings your tongue back to the roots of coffee itself. We preferred the cup at light to medium roasts best. It has great chocolate tones at the fuller roast levels but a bit flat with more neutral chocolate notes. Having a hint of crispness and a touch of fruit at the light-medium roast levels gave it the balance we though it deserved.
