Great cup from light to dark roasts. We liked it best on the lighter side of a medium roast, good shot at a hint of caramel (sweet and nutty) in the cup. Hints of citric acidity comingle with a nutty/caramel like tone with a sweet edge, reminiscent of a nice Honduran coffee. Clean cup, a bit brighter with a pinch of soft fruit at the lighter roasts, the contrasting nuttiness can come off a bit dry but smooths out with a longer setup. A lovely coffee from light to dark. Your personal tastes will dictate what level to roast these beans to, if in doubt, a nice medium roast provides the best balance and depth of flavors. Light roasts will have a lemony citric crispness balancing with a sweet edged nutty/caramel/chocolate/spice like undertone. Takes a longer setup for lighter roasts to shine but for those who like sweetness and brighter notes in coffee will enjoy the lighter roast levels. Medium roasts build the darker tones and mute a bunch of the citric, a chocolaty cup with a burnt sugar kick, just a pinch of crisp citric that will disappear as the coffee sets up. Hints of nuttiness and spice pop out more one can see a little hint of caramel. Medium roasts roasts are smooth with just a pinch of a citric crispness upfront. Darker roasts are full of bakers chocolate notes, more semi-sweet smoky with nutty accents. The spice will linger on the tongue in the aftertaste. Great bean for cold brew or espresso, but works for a classic Colombian drip brew as well.

A wonderful decaf! We recommend a medium to dark roast on these beans. Sweet edged and malty, good body and lower acidity. Medium roasts can show a little hint of soft fruit and nuttiness, darker roasts will get pretty bold with a roasty finish. A beautiful more sizzling cup: lemon, floral and soft fruit comingle with an African like malt/chocolate/spice note. Although this coffee sat in the fruit for a bit, this is not a very fruity cup, one may be able to detect just a slight berry taste but it will be more acidic raspberry or blueberry like. Very highly rated, but only for those who will like brighter coffees roasted on the lighter side. A very sweet cup with citric and stone fruit highlights, medium bodied and higher acidity. Being a high rated bean, it is very clean at lighter roasts, which we thought presented it best but a very tasty cup in the medium roast range as well. Medium roasts build a cup leaned towards chocolate and malt tones, taking the edge off the brightness but reducing the depth of flavors present.

A beautiful cup at the lighter roast points. Mild mannered comparatively to the Mosto processed lot, this bean is much more delicate, a bit lower acidity with a little more emphasis on the floral and stone fruit notes. Being a high rated bean, it is very clean (good) tasting at light roasts, which we thought presented it best. There is a little darker toned contrast at light roasts, hints of a chocolaty factor comingle with the fruitiness. Incredibly smooth and well defined cup at lighter than normal roast levels is what puts these beans into a category of its own.

A very clean well balanced cup good from light to dark roasts. Crisp acidity with a small hint of soft fruit, comingle with a more chocolaty cup profile with floral accents. Can be roasted from light to dark but our favorite was a nice medium roast. Lighter roasts: the acidity & floral tones are accentuated and will be the first tastes your tongue will notice, a pinch of an island fruit tone but pretty faint, balances with a little green-tea, chocolate & spice dark tone. From a medium roast on, the acidity is very gentle and balanced with a smooth to rough chocolaty cup profile, milk chocolate before 2nd crack, bakers chocolate and smoky into 2nd crack. Medium bodied and lower acidity, these beans as well as other Kona’s are mild cups comparatively to many other origins, be in for a delicate and tasty cup with layers of goodness.

Light roast are not recommended (for almost all Indo coffees). Medium roasts were nice and balanced, a little lemony acidity upfront mixing with a bunch of spice and hints of an earthy slightly peaty chocolaty factor; a decent roast point for pour-overs or drip. A clean, fresh and bright Kenya coffee. Light to dark this will make a tasty cup. Full of citric and floral tones with small hints of a fruitiness, good body with some buzzy acidity that will tingle your tongue. Lighter roasts do have some lemony goodness but it’s crisp and defined, not quite mouth puckering. Hints of black tea spice with a small herbal chocolaty factor are present even at lighter roasting and balance out the cup nicely. Sweet edged with some hints of a fruity factor between the lemony floral front end and chocolaty herbal spice undertones. Medium roasts and smooth and accentuate the chocolaty factor, muting up most of the acidity, a very easy to drink cup. A very clean, exotic and balanced cup of coffee. Kenyan coffees are known for their acidity and spice tones; this cup hit the classic Kenyan cup profile on the head without being overwhelming like some (very balanced in its tones). Not quite sizzling but a very noticeable lemony floral tone upfront at the light to medium roast points balanced with some herbal spice and fading into a nice chocolaty tone that lingers on the tongue. Fuller bodied and a bit darker toned than most Kenyan beans. Light roasts will swing the balance towards the floral citric side, darker roasts more towards the jazzy bakers chocolate alley. Holds up into 2nd crack for you dark roast fans. Low acidity and strong bittersweet chocolate tones with the traditional Kenyan spice note that leaves a very smoky tone on the pallet.

A cool cup of Mexican coffee with unique (to Mexico) processing. Leaves the cup far from the traditional Mexican profile. Nice and sweet upfront with wonderful aromatics, a more fruit forward cup especially at lighter roasts. Bakers chocolate, malt, smoke and a bit of nuttiness comprise the darker tones. Very dependent on roast level, lighter roasts will be filled with more fruity and citric notes balancing with a nuttier, dryer, chocolaty undertone. Medium roasts are balanced and bring forward the more nutty and chocolaty character, muting the fruity and lemony/floral tones, they are still there in the cup, just more in the aftertaste than the first thing to hit your taste buds. Similar to the Sigri coffee but with just a pinch of brightness and no fruitiness, very clean in its profile. Smooth, rich and chocolaty with some spice note accents. Most would call it a pretty sweet chocolaty cup with a bit of spice. Very smooth cupping this year with minimal herbal tones or earthiness. Medium bodied with a sweeter edge, a cup almost anyone would enjoy. Kind of like a Sumatra coffee without all the earthy funk. Best served in the medium to dark roast levels but some will find joy at lighter roast points with a longer setup.

Definitely a chocolaty cup profile with some stronger nutty and herbal/spice accents. If you roast before 2nd crack, which is preferred, one can balance in a hint of soft fruit acidity (similar to the Sigri) into the mix which is a big plus to the depth of flavor. Sigri Natural is a very different, crazy unique lot!
Good from light to dark, very different tasting dependent on roast level. If you are a very fruit forward natural fan, sticking in the light to medium roast level is recommended. Contrary to many naturals, these beans rock at the fuller roast levels as well, touching or into second crack produces a very lively cup, not super roasty with incredible depth of flavor and good balance between light and dark tones.
Light roast themselves, are pretty citric, sweet and floral with almost a red wine vinegar herbal like quality. Can tell this is a very slow dry natural. A longer setup rid the cup of more astringent features, takes almost 5-12 days of resting for these funky naturals to mellow. Medium roasts get much more chocolaty with fruity overlays, very tasty. No missing the fruitiness assuming you are pre-second crack. Medium bodied with just a pinch of citric/floral crispness. Although we liked all the roast points, darker roasts were our favorite with its crazy depth of flavors, strong semi-sweet chocolate tones balancing with a barrel aged red fruit.

Good from light to dark. In general, the strongest offering out of the three, smooth, big bodied & creamy with semi-sweet chocolate notes, nutty accents and a bit of lingering spice in the aftertaste. Lighter roasting will show some stronger citric acidity comingling with stronger herbal notes, a hint of chocolate, good depth of flavors but will be a bit sharp and herbal for most. Medium roasting gets the fuller body and more chocolaty toned cup with a hint of spice, unlike the other two, this will still have a little hint of citric, leaving it a bit sweeter tasting. Darker roasting gets hefty bakers chocolate note with complimenting roasty notes, no signs of the brighter cup profile at lighter roasts. Although its the brighter of the PNG coffees, it has medium to low acidity comparatively to other origins.

This cup is nice and clean, a little fuller bodied and smooth with a sweeter edge. A great year for Peru coffees; the cup starts just a little citric, fairly low acidity only detectable at the lighter roast points, a little hint of soft fruit but mainly a pretty chocolaty cup profile with some nutty accents. Lighter roasts one can find a hint of caramel if you get lucky, and leans on the nuttier side, little citric will poke out. A nice medium roast will make anyone happy and provide good balance and smooth chocolate tones, low acidity – a good daily drinker. We thought best served in the medium roast range but will be tasty from light to dark: a very sweet cup at any roast point. Lighter roasts have some stronger citric/floral acidity, a little hint of a grape-skin like fruitiness and a spiced (herbal) chocolate undertone. Medium roasts build a much creamier cup profile, just a hint of crisp floral upfront that fades into a strawberry like fruitiness balanced with a spicier chocolate dark tone. Dark roasts themselves are a bit flat but still very sweet edged, hardly fruity but makes up for it with the fuller bodied more robust chocolate and spice notes.

A nice and clean taste, good from light to dark. Mostly these beans will appeal to medium-dark roast fans but being an exceptionally clean cup, it has some lovely balance and is quite tasty at lighter roasts. Similar to its Indonesian cousins (except washed processed), it gets real hefty into the dark roasts promoting smoky and chocolaty tones with stronger spice notes. Lighter roasting it is more delicate and floral, slightly fruity with some detectable lemony crispness, sweet edged, medium bodied with hints of a chocolaty factor.
